Abstract
There is a pressing need for a transition toward more sustainable diets, which has become a shared priority for both consumers and businesses. Innovation is becoming increasingly widespread across all facets of the food supply chain. This innovation spans various domains related to production, including sustainable cultivation methods as well as new food technologies like gene editing, new product development like functional foods, and revitalizing underutilized and genetically diverse varieties to preserve biodiversity. However, not all innovative efforts are accepted by consumers and survive in markets. The interwoven and long agri-food supply chains often obscure the feedback loop between production and consumption. Consequently, it is important to understand to what extent consumers embrace these food innovations and form new eating habits. This review aims to investigate the consumer response to novel foods, focusing on behavioral factors, which have yet to receive as much attention as sensory factors. Peer-reviewed empirical articles from the last decade are examined inductively to develop a bird's-eye view of the behavioral barriers to and drivers of consumer acceptance of novel foods. In addition, strategies to overcome the identified challenges associated with the behavioral barriers are reviewed and examined. Based on this, the study links cognitive biases with behavioral factors influencing consumer acceptance of novel foods. This study concludes that the inconvenience associated with abandoning established eating habits is typically perceived as a loss, and avoiding this inconvenience is deemed more worth the risk than the potential gains associated with novel food consumption. This study suggests that framing and placing pro-diversity labels could serve as effective behavioral interventions for marketing strategists and food policymakers.

Abstract
Traditional Romanian food products are an integral part of local culture and spirituality. These food traditions have been formed over the centuries and represent a particularly important part ofthe development of a circular economy in rural areas. In order to contribute to the development of this sector of activity we conducted a study on consumer perception of traditional Romanian food products. The purpose of this work was to identify the structure of the studies and the future directions of research related to the image of traditional food products through the bibliometric study, as well as the identification of consumer trends, of these products through a survey based on the questionnaire. The results obtained indicate that traditional Romanian food products are consumed by the majority of respondents participating in the survey and that this sector ofactivity has continuity in its development and presents a clear interest among citizens.

Abstract
The importance of wild food resources, particularly from our forests, is increasingly recognized in the context of food systems transformation and derived products are increasingly also entering modern food supply chains. The transformation of a wild, solely traditionally used resource to a product available in retail, however, has consequences, not all of which are currently well understood. Using the rapidly increasing commercialization of baobab fruit products in Malawi as a case study we, therefore, aim to shed light on aspects such a transformation may have on product quality and supply chain organization. Using a mixed-methods approach a total of 68 baobab value chain actors targeting either formal or informal markets were interviewed, focusing on perceived baobab quality characteristics as well as linkages across the value chain, concurrently collecting product samples if the interviewees had these at hand. The baobab supply chain was shown to have elongated in recent years, with a variety of actors now active on the scene, including baobab collectors, a variety of traders often directly picking up baobab resources at source, microenterprises producing baobab ice lollies for informal markets, or more formal juice processors targeting retail outlets. A broad variety of harvest, storage, or processing practices was observed and product quality differed widely, whereas mycotoxins were detected in two of the analyzed samples. Storage of baobab products can last several months with harvesting activities peaking in April, yet sales dominating in the hot months toward the end of the year. Dryness was commonly identified as the most important quality indicator, but other factors such as cracks in the shell were more heavily disputed amongst different value chain actors. Although different quality standards have to be observed to be able to sell in formal retail outlets, risks of low-quality baobab entering formal retail outlets remains with the majority of more formal baobab processors obtaining their raw material via informal pathways. There is a dire need to strengthen the institutional framework and enabling environment to foster the best-possible integration of forest resources into prevailing agri-food systems and enable the production of high-quality products for both the formal and the informal sector.

The Future of Food: Domestication and Commercialization of Indigenous Food Crops in Africa over the Third Decade (2012–2021). SUSTAINABILITY 2022. Abstract
This paper follows the transition from ethnobotany to a deeper scientific understanding of the food and medicinal properties of African agroforestry tree products as inputs into the start of domestication activities. It progresses on to the integration of these indigenous trees as new crops within diversified farming systems for multiple social, economic and environmental benefits. From its advent in the 1990s, the domestication of indigenous food and non-food tree species has become a global programme with a strong African focus. This review of progress in the third decade is restricted to progress in Africa, where multi-disciplinary research on over 59 species has been reported in 759 research papers in 318 science publications by scientists from over 833 research teams in 70 countries around the world (532 in Africa). The review spans 23 research topics presenting the recent research literature for tree species of high priority across the continent, as well as that in each of the four main ecological regions: the humid zone of West and Central Africa; the Sahel and North Africa; the East African highlands and drylands; and the woody savannas of Southern Africa. The main areas of growth have been the nutritional/medicinal value of non-timber forest products; the evaluation of the state of natural resources and their importance to local people; and the characterization of useful traits. However, the testing of putative cultivars; the implementation of participatory principles; the protection of traditional knowledge and intellectual property rights; and the selection of elite trees and ideotypes remain under-researched. To the probable detriment of the upscaling and impact in tropical agriculture, there has been, at the international level, a move away from decentralized, community-based tree domestication towards a laboratory-based, centralized approach. However, the rapid uptake of research by university departments and national agricultural research centres in Africa indicates a recognition of the importance of the indigenous crops for both the livelihoods of rural communities and the revitalization and enhanced outputs from agriculture in Africa, especially in West Africa. Thus, on a continental scale, there has been an uptake of research with policy relevance for the integration of indigenous trees in agroecosystems and their importance for the attainment of the UN Sustainable Development Goals. To progress this in the fourth decade, there will need to be a dedicated Centre in Africa to test and develop cultivars of indigenous crops. Finally, this review underpins a holistic approach to mitigating climate change, as well as other big global issues such as hunger, poverty and loss of wildlife habitat by reaping the benefits, or ‘profits’, from investment in the five forms of Capital, described as ‘land maxing’. However, policy and decision makers are not yet recognizing the potential for holistic and transformational adoption of these new indigenous food crop opportunities for African agriculture. Is ‘political will’ the missing sixth capital for sustainable development?

Abstract
The African baobab (Adansonia digitata L.) is a multipurpose orphan tree species of the semi-arid and sub-humid Sub-Saharan Africa where it plays an important role in rural livelihoods. Its wide distribution and dense nutrition properties make it an important species for food and nutrition security in Africa. However, despite the increasing interest in the species over the past two decades, the full potential of baobab remains underexploited. This review highlights strides made over the past 20 years (2001–2020) towards harnessing and unlocking the potential values of baobab in Benin, West Africa, to contribute to food and nutrition security. Challenges and threats are identified, and next steps suggested to guide research and development initiatives for orphan tree fruit species like baobab to address hunger and malnutrition in Africa.

Abstract
The baobab tree (Adansonia digitata L.) is an integral component of many dryland farming systems in sub-Sahara Africa. Such traditional agroforestry systems can foster a variety of benefits; besides positive livelihood implications baobab can particularly address food security objectives due to its highly nutritious fruits. However, many bottlenecks persist inhibiting the broader potential of indigenous trees in farming systems and their increased utilisation and commercialisation. We suggest that traditional farming systems with baobab trees can be advanced by stimulating the emergence of local markets for baobab products while promoting businesses and innovations aimed at meeting the arising market demand. Increasing the perceived value of local agroforestry products in combination with facilitating additional commercialisation pathways will in turn lead to food security and livelihood benefits. Using a multi-stakeholder approach such considerations were put into practice in Kilifi, Kenya, by initiating a community-based enterprise development producing high-quality baobab powder and oil. Initial results demonstrate behavioural changes, an improved practical knowhow with regard to baobab management and utilisation, and an increased consumption of baobab, which may already contribute to food security objectives. Baobab is increasingly seen as a valuable resource as opposed to 'food for the poor' and a tree possessed by evil spirits. This may lay the groundwork for further value addition activities and enterprise development in the communities. With baobab being a common, yet so far underutilised feature of local farming systems in Kilifi, activities based on its increasing commercialisation can be complementary and easily integrable to prevailing livelihood strategies.

Abstract
The importance of forests to safeguard agricultural production through regulating ecosystem services such as clean water, soil protection, and climate regulation is well documented, yet the contributions of forests and trees to provide food for the nutritional needs of the increasing human population has not been fully realized. Plants, fungi, and animals harvested from forests have long provided multiple benefits—for nutrition, health, income, and cultural purposes. Across the globe, the main element of “forest management” has been industrial wood production. Sourcing food from forests has been not even an afterthought but a subordinate activity that just happens and is largely invisible in official statistics. For many people, forests ensure a secure supply of essential foods and vital nutrients. For others, foraging forests for food offers cultural, recreational, and diversified culinary benefits. Increasingly, these products are perceived by consumers as being more “natural” and healthier than food from agricultural production. Forest-and wild-sourced products increasingly are being used as key ingredients in multiple billion dollar industries due to rising demand for “natural” food production. Consumer trends demonstrate growing interests in forest food gathering that involves biological processes and new forms of culturally embedded interactions with the natural world. Further, intensifying calls to “re-orient” agricultural production provides opportunities to expand the roles of forests in food production; to reset food systems by integrating forests and trees. We use examples of various plants, such as baobab, to explore ways forests and trees provide for food security and nutrition and illustrate elements of a framework to encourage integration of forests and trees. Forests and trees provide innovative opportunities and technological and logistical challenges to expand food systems and transition to a bioeconomy. This shift is essential to meet the expanding demand for secure and nutritious food, while conserving forest biodiversity.
