Geographical and Varietal Traceability of Chinese Jujubes Based on Physical and Nutritional Characteristics

Quality analysis and geographical origin identification of Rosa roxburghii Tratt from three regions based on Fourier transform infrared spectroscopy

The study aimed to provide new information of Rosa roxburghii Tratt (RRT) for the production of functional foods and distinguish the geographical origins of RRT. The nutritional components of RRT from three regions in China, such as vitamin C, polysaccharides, total flavonoids, and total phenolics, and their antioxidant activities were analyzed by one-way ANOVA. The results of Fourier transform infrared spectroscopy (FT-IR) combined with principal component analysis (PCA), stepwise linear discriminant analysis (SLDA), k-nearest neighbor (k-NN), and support vector machine (SVM) were used to establish discriminant models to identify the geographical origin of RRT. The results of one-way ANOVA showed that the contents of some nutrients and antioxidant activity were significantly different among RRT from different regions and their FT-IR spectra also showed significant differences. The characteristic fingerprint bands of FT-IR (1679-1618 cm^-1and 1520-900 cm^-1) closely related to the geographical origins of RRT were screened out. Based on SLDA, a discriminant model was established to realize the classification and identification of RRT from different regions and the correct discrimination rate of the testing sample set obtained with the established model reached 100 %. Geographical factors caused the obvious differences in nutritional components and antioxidant activity in RRT. The characteristic fingerprint bands of RRT obtained with FT-IR could be used to identify the geographical origins of RRT more quickly and accurately.

Effects of cold plasma, high hydrostatic pressure, ultrasound, and high-pressure carbon dioxide pretreatments on the quality characteristics of vacuum freeze-dried jujube slices

Pretreatment combined with vacuum freeze-drying is an effective technique to extend the storage period of jujube fruits and reduce energy consumption and cost; however, the effects of pretreatment on the quality characteristics of jujube during vacuum freeze-drying remain unknown. In this study, the effects of cold plasma (CP), high hydrostatic pressure (HHP), ultrasound (US), high-pressure carbon dioxide (HPCD), and conventional blanching (BC) as pretreatments on the performance of vacuum freeze-dried jujube slices were investigated. The results indicated that the application of different pretreatments decreased the water activity and increased the rehydration capacity, owing to the pretreatment etching larger and more porous holes in the microstructure. Freeze-dried jujube slices pretreated with HPCD retained most of their quality characteristics (color, hardness, and volatile compounds), followed by the HHP- and US-pretreated samples, whereas samples pretreated with BC showed the greatest deterioration in quality characteristics, and hence, BC is not recommended as a pretreatment for freeze-dried jujube slices. Sensory evaluation based on hedonic analysis showed that jujube slices pretreated with HPCD and US were close to the control sample and scored highest. Compared to other pretreated samples and the control, freeze-dried jujube slices pretreated with HPCD showed the least degradation (4.93%) of cyclic adenosine monophosphate (cAMP), the highest contents of total phenol, total flavonoid, and l-ascorbic acid, and the highest antioxidant capacity. Partial least squares-discriminant analysis (PLS-DA) was performed to screen all the quality characteristic data of different pretreated samples, and 12 volatile compounds, including ethyl hexanoate and (E)-2-hexenal, along with color, l-ascorbic acid content, and cAMP content were found suitable to be used as discriminators for pretreated freeze-dried jujube slices. Therefore, non-thermal pretreatments, including HPCD, US, and HHP pretreatments, are promising techniques for the vacuum freeze-drying of jujube products.

The Fingerprint Identification of Asphalt Aging Based on 1H-NMR and Chemometrics Analysis

In this study, the chemical structure of asphalt aging was analyzed and identified based on ¹H-NMR quantitative technology and chemometrics analysis. The characteristic full component information of 30 samples before and after aging from 5 different oil sources was measured by ¹H-NMR, and the results were converted into a data matrix. This study used PCA, HAC, OPLS-DA, and Fisher discriminant analysis to evaluate the change rules of the chemical composition of asphalt from different oil sources after aging. The results showed that the ¹H-NMR spectra of 30 asphalt samples were very similar, and hydrogen could be divided into 4 categories according to the chemical shift: H_A, H_α, H_β, and H_γ. The shapes of ¹H-NMR of asphalt samples from different oil sources showed slight differences, while the shapes of the ¹H-NMR spectra of asphalt samples with different aging degrees from the same oil source was basically the same. The results of PCA and HAC analysis showed that the samples of the same asphalt and asphalt with similar oil sources before and after aging were still in the same category, and the spatial distance was very close, while the spatial distance of asphalts from different oil sources was very different. The Fisher discriminant function established by PCA and HAC can be used to distinguish asphalt samples from different oil sources with an accuracy of up to 100%.
