In-Line Estimation of Fat Marbling in Whole Beef Striploins (Longissimus lumborum) by NIR Hyperspectral Imaging. A Closer Look at the Role of Myoglobin

Validation of a handheld near-infrared spectrophotometer for measurement of chemical intramuscular fat in Australian lamb

The objective of the study was to independently validate a calibrated commercial handheld near infrared (NIR) spectroscopic device and test its repeatability over time using phenotypically diverse populations of Australian lamb. Validation testing in eight separate data sub-groups (n = 1591 carcasses overall) demonstrated that the NIR device had moderate precision (R2 = 0.4-0.64, RMSEP = 0.70-1.22%) but fluctuated in accuracy between experimental site demonstrated by variable slopes (0.50-0.94) and biases (-0.86-0.02). The repeatability experiment (n = 10 carcasses) showed that time to scan post quartering affected NIR measurement from 0 to 24 h (P < 0.001). On average, NIR IMF% was 0.97% lower (P < 0.001) at 24 h (4.01% ± 0.166), compared to 0 h. There was no difference (P > 0.05) between Time 0 and 1 h or Time 0 and 4 h or between replicate scans within each time point. This study demonstrated the SOMA NIR device could predict lamb chemical IMF% with moderate precision and accuracy, however additional work is required to understand how loin preparation, blooming and surface hydration affect NIR measurement.

Diagnosing the cage of covariance to increase understanding and robustness of spectroscopic calibration models

When vibrational spectroscopy is used for quantification purposes, multivariate analysis is often used to extract information from covariances between the spectra and any given reference values. In complex samples, there is a high risk that the constituents covary with each other. In such scenarios many methods may confuse the analytes and use signal from several analytes, rather than just the analyte of interest. While this allows the method to use more signal, and thus have a better effective signal-to-noise ratio, it also makes them less robust to changes to the chemical composition in the samples. This effect has been termed the cage of covariance. In order to avoid cage of covariance to affect predictive performances, it is highly important to have simple diagnostic tools to analyze and review this effect. Therefore, in the present paper, a systematic overview of tools for diagnosing and quantifying the cage of covariance in spectroscopic calibration models is provided. A collection of previously published methods with some expansions is provided, as well as two completely new tools: covariance ratio and virtual spiking. Practical applications of the tools on three different datasets are also shown.

Differences in toughness and aging potential of longissimus lumborum muscles between Hanwoo cow, bull and steer

Thirty Hanwoo cattle including bulls, cows, and steers (n = 10 each) were slaughtered and investigated for carcass traits (weight, meat color, fat color, yield index, maturity, marbling score, back-fat thickness, and firmness) and meat quality. The meat quality such as: pH, color, cooking loss, fatty acid, thiobarbituric acid reactive substance, warner-bratzler shear force, tensile tests, and texture profiles were analyzed on longissimus lumborum (LL) muscles of the carcasses at different aging times (3 d and 21 d). The results showed that steers and cows had higher back-fat thickness and marbling score, and a lower firmness (p < 0.001) than bulls. Bulls exhibited a lower meat quality indicating by higher cooking loss, thiobarbituric acid reactive substance content, warner-bratzler shear force and tensile test values (p < 0.01). Regarding the sensory property, the bull meat also had higher hardness, and lower tenderness, juiciness and flavor scores than the cow or steer meat (p < 0.01). Additionally, the bull meat had a higher polyunsaturated fatty acid and a lower monounsaturated fatty acid contents (p < 0.01). With increased aging time, the meat tenderness was improved in all the genders. Taken together, the present study demonstrated that the gender and aging time affected the carcass traits, fatty acid and sensory quality of beef. Postmortem aging could improve the meat tenderness of all genders especially bulls.

Across countries implementation of handheld near-infrared spectrometer for the on-line prediction of beef marbling in slaughterhouse

Only few studies have used Near-Infrared (NIR) spectroscopy to assess meat quality traits directly in the chiller. The aim of this study was therefore to investigate the ability of a handheld NIR spectrometer to predict marbling scores on intact meat muscles in the chiller. A total of 829 animals from 2 slaughterhouses in France and Italy were involved. Marbling was assessed according to the 3G (Global Grading Guaranteed) protocol using 2 different scores. NIR measurements were collected by performing 5 scans at different points of the Longissimus thoracis. An average MSA marbling score of 330-340 was obtained in the two countries. The prediction models provided a R² in external validation between 0.46 and 0.59 and a standard error of prediction between 83.1 and 105.5. Results did provide a moderate prediction of the marbling scores but can be useful in the European industry context to predict classes of MSA marbling.

Non-Destructive Techniques for the Analysis and Evaluation of Meat Quality and Safety: A Review

With the continuous development of economy and the change in consumption concept, the demand for meat, a nutritious food, has been dramatically increasing. Meat quality is tightly related to human life and health, and it is commonly measured by sensory attribute, chemical composition, physical and chemical property, nutritional value, and safety quality. This paper surveys four types of emerging non-destructive detection techniques for meat quality estimation, including spectroscopic technique, imaging technique, machine vision, and electronic nose. The theoretical basis and applications of each technique are summarized, and their characteristics and specific application scope are compared horizontally, and the possible development direction is discussed. This review clearly shows that non-destructive detection has the advantages of fast, accurate, and non-invasive, and it is the current research hotspot on meat quality evaluation. In the future, how to integrate a variety of non-destructive detection techniques to achieve comprehensive analysis and assessment of meat quality and safety will be a mainstream trend.
