Toward the Development of Potentially Healthy Low-Energy-Density Snacks for Children Based on Pseudocereal and Pulse Flours

Life cycle assessment and energy return of investment of nutritionally-enhanced snacks supplemented with Spanish quinoa

The trend in the consumption of unconventional, more nutritious foods is leading to the globalization and decentralization of their production, giving rise to the adaptation and innovation of traditional products to make them healthier and more sustainable. This article focuses on quinoa and aims to estimate the environmental impacts of its production adapted to the Spanish conditions and of potential derived snacks enriched with this pseudo cereal by applying conventional and nutritional life cycle assessment (LCA) methodologies. Besides, an exhaustive study of the energy flows by measuring the cumulative energy demand and the calculation of the energy return of investment (EROI) is carried out to assess the most impactful aspect of the processing industries. The application of cradle to gate LCA revealed that polluting emissions of Spanish quinoa are rather similar to those of the Andean grain, with an impact on climate change of 1.03 kg CO2 eq./kg. However, high resource footprints were obtained, for instance a water deprivation potential of 60 m3/kg due to the scarcity in this country. Besides, the consideration of a nutrient profile model as functional unit led to the conclusion that quinoa-based snacks are generally more environmentally sustainable than their conventional counterparts in terms of climate change, resources consumption or water degradation. EROI scores were relatively low for all options, with only between 1.77 and 4.35 % of the energy invested returned, which evidences the unsustainable agricultural practices and low efficiency of processing units. Based on this research, producers can reorient production systems in support of nature, and consumers are able to guide their choices towards improved eating patterns.

Chickpeas and gut microbiome: Functional food implications for health

Chickpea is considered a rich source of nutrients, especially protein and dietary fibre. Besides, chickpea has potential benefits for the maintenance of gut health by improving intestinal integrity and serving as a source of energy for the gut microbiota. Moreover, chickpea consumption has been found to possess anti-cancer, anti-inflammatory, and antioxidant activity. On undergoing certain treatments like soaking, dehulling, roasting, and germination, the anti-nutritional profile of chickpeas can be reduced. Observing these benefits, this review explores the impact of chickpea and its components on maintaining gut health, emphasizing various benefits. Besides, the paper comprehensively covers the nutritional composition of chickpeas and factors influencing the bioavailability of its components concerning gut health. Additionally, it outlines the mechanisms through which chickpeas influence gastrointestinal health, providing valuable insights into complex processes and potential therapeutic applications. Furthermore, the review identifies contributions that can guide future research, encouraging further exploration of chickpeas' role in gut health and the development of interventions. As a result of the presented review, chickpeas can be used as an affordable source of food, which is nutritionally stable and prevents gastrointestinal diseases.

Gluten-Free Diet and Other Celiac Disease Therapies: Current Understanding and Emerging Strategies

A lifelong gluten-free diet (GFD) is the only treatment for celiac disease and other gluten-related disorders. Nevertheless, strict adherence to the GFD is often challenging due to concerns about social isolation, risk of gluten contaminations, high cost, poor quality and the taste of gluten-free products. Moreover, although the GFD is effective in achieving mucosal healing, it may lead to dietary imbalances due to nutrient deficiencies over a long period of time. To overcome these issues, several gluten-free wheat flours have been developed to create products that closely resemble their gluten-containing counterparts. Furthermore, given the critical importance of adhering to the GFD, it becomes essential to promote adherence and monitor possible voluntary or involuntary transgressions. Various methods, including clinical assessment, questionnaires, serology for celiac disease, duodenal biopsies and the detection of Gluten Immunogenic Peptides (GIPs) are employed for this purpose, but none are considered entirely satisfactory. Since adherence to the GFD poses challenges, alternative therapies should be implemented in the coming years to improve treatment efficacy and the quality of life of patients with celiac disease. The aim of this narrative review is to explore current knowledge of the GFD and investigate its future perspectives, focusing on technology advancements, follow-up strategies and insights into a rapidly changing future.
