Abstract
Tea bud detection is the first step in the precise picking of famous teas. Accurate and fast tea bud detection is crucial for achieving intelligent tea bud picking. However, existing detection methods still exhibit limitations in both detection accuracy and speed due to the intricate background of tea buds and their small size. This study uses YOLOv5 as the initial network and utilizes attention mechanism to obtain more detailed information about tea buds, reducing false detections and missed detections caused by different sizes of tea buds; The addition of Spatial Pyramid Pooling Fast (SPPF) in front of the head to better utilize the attention module's ability to fuse information; Introducing the lightweight convolutional method Group Shuffle Convolution (GSConv) to ensure model efficiency without compromising accuracy; The Mean-Positional-Distance Intersection over Union (MPDIoU) can effectively accelerate model convergence and reduce the training time of the model. The experimental results demonstrate that our proposed method achieves precision (P), recall rate (R) and mean average precision (mAP) of 93.38%, 89.68%, and 95.73%, respectively. Compared with the baseline network, our proposed model's P, R, and mAP have been improved by 3.26%, 11.43%, and 7.68%, respectively. Meanwhile, comparative analyses with other deep learning methods using the same dataset underscore the efficacy of our approach in terms of P, R, mAP, and model size. This method can accurately detect the tea bud area and provide theoretical research and technical support for subsequent tea picking.

Abstract
In recent years, the problem of food adulteration has become increasingly rampant, seriously hindering the development of food production, consumption, and management. The common analytical methods used to determine food authenticity present challenges, such as complicated analysis processes and time-consuming procedures, necessitating the development of rapid, efficient analysis technology for food authentication. Spectroscopic techniques, ambient ionization mass spectrometry (AIMS), electronic sensors, and DNA-based technology have gradually been applied for food authentication due to advantages such as rapid analysis and simple operation. This paper summarizes the current research on rapid food authenticity analysis technology from three perspectives, including breeds or species determination, quality fraud detection, and geographical origin identification, and introduces chemometrics method adapted to rapid analysis techniques. It aims to promote the development of rapid analysis technology in the food authenticity field.

Abstract
The geographical origin and the important nutrient contents greatly affect the quality of red raspberry (RRB, Rubus idaeus L.), a popular fruit with various health benefits. In this study, a chemometrics-assisted hyperspectral imaging (HSI) method was developed for predicting the nutrient contents, including pectin polysaccharides (PPS), reducing sugars (RS), total flavonoids (TF) and total phenolics (TP), and identifying the geographical origin of RRB fruits. The results showed that these nutrient contents in RRB fruits had significant differences between regions (P < 0.05) and could be well predicted based on the HSI full or effective wavelengths selected through competitive adaptive reweighted sampling (CARS) and variable iterative space shrinkage approach (VISSA). The best prediction results of PPS, RS, TF, and TP contents were achieved with the highest residual predictive deviation (RPD) values of 3.66, 3.95, 2.85, and 4.85, respectively. The RRB fruits from multi-regions in China were effectively distinguished by using the first derivative-partial least squares discriminant analysis (DER-PLSDA) model, with an accuracy of above 97%. Meanwhile, the fruits from three protected geographical indication (PGI) regions were successfully classified by using the orthogonal partial least squares discrimination analysis (OPLSDA) model, with an accuracy of above 98%. The study results indicate that HSI assisted with chemometrics is a promising method for predicting the important nutrient contents and identifying the geographical origin of red raspberry fruits.

Abstract
Pangenomes are a rich resource to examine the genomic variation observed within a species or genera, supporting population genetics studies, with applications for the improvement of crop traits. Major crop species such as maize (Zea mays), rice (Oryza sativa), Brassica (Brassica spp.), and soybean (Glycine max) have had pangenomes constructed and released, and this has led to the discovery of valuable genes associated with disease resistance and yield components. However, pangenome data are not available for many less prominent crop species that are currently under-utilised. Despite many under-utilised species being important food sources in regional populations, the scarcity of genomic data for these species hinders their improvement. Here, we assess several under-utilised crops and review the pangenome approaches that could be used to build resources for their improvement. Many of these under-utilised crops are cultivated in arid or semi-arid environments, suggesting that novel genes related to drought tolerance may be identified and used for introgression into related major crop species. In addition, we discuss how previously collected data could be used to enrich pangenome functional analysis in genome-wide association studies (GWAS) based on studies in major crops. Considering the technological advances in genome sequencing, pangenome references for under-utilised species are becoming more obtainable, offering the opportunity to identify novel genes related to agro-morphological traits in these species.

Abstract
Rice is one of the most important food crops in the world, and rice seed varieties are related to the yield and quality of rice. This study used near-infrared (NIR) hyperspectral technology with conventional machine learning methods (support vector machine (SVM), logistic regression (LR), and random forest (RF)) and deep learning methods (LeNet, GoogLeNet, and residual network (ResNet)) to establish variety identification models for five common types of rice seeds. Among the deep learning methods, the classification accuracies of most models were higher than 95%. This study further used the deep learning methods to establish variety identification models for 10 varieties of rice seeds without considering their types. Among them, the ResNet model had the best classification results. The classification accuracy on the test set was 86.08%. This study used the saliency map method to visualize each convolutional neural network (CNN) model to find the band region that contributed the most to the data. The results showed that the bands with the largest data contribution were mainly concentrated at approximately 1300-1400 nm and secondarily concentrated at approximately 1050-1250 nm. The overall results showed that NIR hyperspectral imaging technology combined with deep learning could effectively distinguish rice seeds of different varieties. This method provided an effective way to identify rice seed varieties in a quick and nondestructive manner.

Abstract
Food safety is one of the main challenges of the agri-food industry that is expected to be addressed in the current environment of tremendous technological progress, where consumers' lifestyles and preferences are in a constant state of flux. Food chain transparency and trust are drivers for food integrity control and for improvements in efficiency and economic growth. Similarly, the circular economy has great potential to reduce wastage and improve the efficiency of operations in multi-stakeholder ecosystems. Throughout the food chain cycle, all food commodities are exposed to multiple hazards, resulting in a high likelihood of contamination. Such biological or chemical hazards may be naturally present at any stage of food production, whether accidentally introduced or fraudulently imposed, risking consumers' health and their faith in the food industry. Nowadays, a massive amount of data is generated, not only from the next generation of food safety monitoring systems and along the entire food chain (primary production included) but also from the Internet of things, media, and other devices. These data should be used for the benefit of society, and the scientific field of data science should be a vital player in helping to make this possible.

Abstract
Cotton is a significant economic crop. It is vulnerable to aphids (Aphis gossypii Glovers) during the growth period. Rapid and early detection has become an important means to deal with aphids in cotton. In this study, the visible/near-infrared (Vis/NIR) hyperspectral imaging system (376-1044 nm) and machine learning methods were used to identify aphid infection in cotton leaves. Both tall and short cotton plants (Lumianyan 24) were inoculated with aphids, and the corresponding plants without aphids were used as control. The hyperspectral images (HSIs) were acquired five times at an interval of 5 days. The healthy and infected leaves were used to establish the datasets, with each leaf as a sample. The spectra and RGB images of each cotton leaf were extracted from the hyperspectral images for one-dimensional (1D) and two-dimensional (2D) analysis. The hyperspectral images of each leaf were used for three-dimensional (3D) analysis. Convolutional Neural Networks (CNNs) were used for identification and compared with conventional machine learning methods. For the extracted spectra, 1D CNN had a fine classification performance, and the classification accuracy could reach 98%. For RGB images, 2D CNN had a better classification performance. For HSIs, 3D CNN performed moderately and performed better than 2D CNN. On the whole, CNN performed relatively better than conventional machine learning methods. In the process of 1D, 2D, and 3D CNN visualization, the important wavelength ranges were analyzed in 1D and 3D CNN visualization, and the importance of wavelength ranges and spatial regions were analyzed in 2D and 3D CNN visualization. The overall results in this study illustrated the feasibility of using hyperspectral imaging combined with multi-dimensional CNN to detect aphid infection in cotton leaves, providing a new alternative for pest infection detection in plants.

Abstract
Foods are a mixture of substances capable of supplying the human body with nutrients, which, once metabolized, are used mainly for the production of energy, heat, replenishment, and growth material for organs and tissues, ensuring the normal performance of vital functions necessary for growth of the human body. Therefore, the study of the chemical composition of foods and the properties of their constituents helps to define their nutritional and commodity values. Furthermore, it allows for evaluation of the chemical modifications that the constituents of the food undergo following the treatments (Food Technology) to which they are subjected. Analytical chemistry is the branch of chemistry based on the qualitative and quantitative determination of compounds present in a sample under examination. Therefore, through its application, it is possible to determine the quality of a product and/or its nutritional value, reveal adulterations, identify the presence of xenobiotic substances potentially harmful to human health (heavy metals, IPA, pharmaceuticals, etc.). Furthermore, some foods, in particular those of plant origin, contain numerous substances, secondary metabolites, with huge beneficial effects for human health. These functional components can be taken both through a correct diet, but also obtained from different food matrices by technological or biotechnological processes for the formulation of both functional foods and/or nutraceutical products. This Special Issue brings together 10 original studies and two comprehensive reviews on the above topics, in particular: (i) processes of extraction, identification, and characterization of biologically active compounds from different food matrices, (ii) overview of the main techniques applied for the determination of food colors, (iii) newer and greener solid-liquid extraction techniques.

Abstract
The evaluation of tea quality tended to be subjective and empirical by human panel tests currently. A convenient analytical approach without human involvement was developed for the quality assessment of tea with great significance. In this study, near-infrared hyperspectral imaging (HSI) combined with multiple decision tree methods was utilized as an objective analysis tool for delineating black tea quality and rank. Data fusion that integrated texture features based on gray-level co-occurrence matrix (GLCM) and short-wave near-infrared spectral features were as the target characteristic information for modeling. Three different types of supervised decision tree algorithms (fine tree, medium tree, and coarse tree) were proposed for the comparison of the modeling effect. The results indicated that the performance of models was enhanced by the multiple perception feature fusion. The fine tree model based on data fusion obtained the best predictive performance, and the correct classification rate (CCR) of evaluating black tea quality was 93.13% in the prediction process. This work demonstrated that HSI coupled with intelligence algorithms as a rapid and effective strategy could be successfully applied to accurately identify the rank quality of black tea.

Abstract
The wine-making industry generates a considerable amount of grape pomace. Grape seeds, as an important part of pomace, are rich in bioactive compounds and can be reutilized to produce useful derivatives. The nutritional properties of grape seeds are largely influenced by the cultivar, which calls for effective identification. In the present work, the spectral profiles of grape seeds belonging to three different cultivars were collected by laser-induced breakdown spectroscopy (LIBS). Three conventional supervised classification methods and a deep learning method, a one-dimensional convolutional neural network (CNN), were applied to establish discriminant models to explore the relationship between spectral responses and cultivar information. Interval partial least squares (iPLS) algorithm was successfully used to extract the spectral region (402.74–426.87 nm) relevant for elemental composition in grape seeds. By comparing the discriminant models based on the full spectra and the selected spectral regions, the CNN model based on the full spectra achieved the optimal overall performance, with classification accuracy of 100% and 96.7% for the calibration and prediction sets, respectively. This work demonstrated the reliability of LIBS as a rapid and accurate approach for identifying grape seeds and will assist in the utilization of certain genotypes with desirable nutritional properties essential for production rather than their being discarded as waste.
