Changes in the Composition of Atlantic Salmon upon the Brown Seaweed (Saccharina latissima) Treatment

Monitoring the metabolite content of seasoned zucchinis during storage by NMR-based metabolomics

This study applied 1H NMR metabolomics to monitor the metabolite content of baked and seasoned zucchinis packaged in both compostable and plastic trays. Polar extracts of samples stored at 4 °C up to 35 days were investigated to check for metabolite changes upon shelf life. The evolution of the integral values of only the main metabolites responsible for sample differentiation (lactate, acetate, malate, α and β glucose and sucrose) were further analysed and compared. In particular, the evaluation of lactate and acetate amount, considered markers of fermentation progress, showed a comparable performance for the two types of packaging in preserving the freshness of seasoned zucchinis, confirming the maintenance of food product composition within the declared shelf life period in the recommended storage conditions. Albeit preliminary, the results support the NMR metabolomics as a tool for identifying candidate metabolites to monitor the shelf life of foods, thereby improving the understanding of molecular changes during storage.

Application of NMR spectroscopy for the detection and quantification of phthalic acid in fish muscles: The case of Atlantic Cod from Norwegian Sea

Plastic litter might contain phthalates that can be transferred to marine environment or can be introduced into the marine food chain. Phthalic acid is the final product of phthalate decomposition in marine organisms. Here we used NMR spectroscopy to determine and quantify phthalic acid and dimethyl phthalate in fish muscles. Spike-and-recovery experiments were carried out to confirm assignment of phthalates resonance signals in NMR spectra and to evaluate the method specificity, accuracy, and linearity. The LOQ and LOD of the rapid ¹H NMR experiment with a standard setting were respectively 23.0 and 8.0 mg of phthalic acid in kg of fish muscles. Phthalic acid was detected in 13 out of 113 Atlantic cod and none in farmed Atlantic salmon from Norwegian sea.

Biomolecules from Macroalgae-Nutritional Profile and Bioactives for Novel Food Product Development

Seaweed is in the spotlight as a promising source of nutrition for humans as the search for sustainable food production systems continues. Seaweed has a well-documented rich nutritional profile containing compounds such as polyphenols, carotenoids and polysaccharides as well as proteins, fatty acids and minerals. Seaweed processing for the extraction of functional ingredients such as alginate, agar, and carrageenan is well-established. Novel pretreatments such as ultrasound assisted extraction or high-pressure processing can be incorporated to more efficiently extract these targeted ingredients. The scope of products that can be created using seaweed are wide ranging: from bread and noodles to yoghurt and milk and even as an ingredient to enhance the nutritional profile and stability of meat products. There are opportunities for food producers in this area to develop novel food products using seaweed. This review paper discusses the unique properties of seaweed as a food, the processes involved in seaweed aquaculture, and the products that can be developed from this marine biomass. Challenges facing the industry such as consumer hesitation around seaweed products, the safety of seaweed, and processing hurdles will also be discussed.

Chemical-Based Methodologies to Extend the Shelf Life of Fresh Fish-A Review

Due to its characteristics, fresh fish is a highly perishable food with a very short shelf-life under refrigeration. Several methods have been introduced to slow down its deterioration, such as by means of oxygen depletion of the food package (vacuum packaging), or by changing the natural atmosphere that is in contact with the fresh fish (modified atmosphere packaging), or by the use of chemicals generally recognized as safe: such compounds can be directly applied (by dipping or spraying) or incorporated into packaging materials and slowly migrate to the product, exerting a hurdle effect against microbial development and lipid oxidation (active packaging). This review aims to cover the most recent advances in chemical-based approaches for fresh fish preservation, applied either singly or in combination. Vacuum packaging, modified atmosphere, and active packaging preservation methodologies are presented, along with the inclusion of chemical additives, such as organic acids and natural extracts, and their combination with icing systems. Advantages and disadvantages of these methodologies and their impact on fresh fish quality and shelf-life are discussed, reaching the conclusion that both are positively influenced overall. Indeed, the contribution of chemical-based strategies for fresh fish preservation is undeniable, and is expected to be a research topic of increasing interest in the future.

Novel postharvest processing strategies for value-added applications of marine algae

Marine algae are regarded as a promising nutrients resource in future as they can be sustainably cultured without land and high investment. These macroalgae are now widely processed into food and beverages, fertilizers and animal feed. Furthermore, bioactive compounds such as polysaccharides and polyphenols in seaweeds have proven to have antibacterial, antiviral and antifungal properties that can be utilized in cosmeceuticals, nutraceuticals and pharmaceuticals. As a key procedure in seaweed production, the postharvest process not only requires more laboured and energy but also affect the quality of the final product significantly. This article reviewed all current postharvest processes and technologies of seaweed and addressed potential postharvest strategies for seaweed production. © 2021 Society of Chemical Industry.

Growth and spoilage metabolites production of a mesophilic Aeromonas salmonicida strain in Atlantic salmon (Salmo salar L.) during cold storage in modified atmosphere

AIMS

The aim of the study was to quantify the growth kinetic parameters and spoilage-associated metabolites of an inoculated strain of Aeromonas salmonicida in pre-rigor filleted Atlantic salmon (Salmo salar L.) stored in vacuum (VP) or modified atmosphere (MAP 60/40% CO₂ /N₂ ) at 4 and 8°C.

METHODS AND RESULTS

The maximum growth rate of A. salmonicida in VP salmon stored at 4°C was 0·56 ± 0·04 day^-1 with no detectable lag-phase and the concentration of Aeromonas reached 8·33 log CFU per g after 10 days. The growth rates and maximum population density of Aeromonas in MAP salmon were lower but the applied atmosphere did not inhibit the growth. A selection of metabolites associated with fish spoilage were quantified using ¹ H nuclear magnetic resonance (NMR) spectroscopy. The concentration of trimethylamine (TMA) was significantly affected by storage time and temperature, packaging atmosphere and inoculation with A. salmonicida (General Linear Model (GLM), P < 0·001 for all factors).

CONCLUSION

The study presents preliminary results on A. salmonicida as a potential spoilage organism in vacuum-packaged salmon during cold storage. The combination of refrigeration and a packaging atmosphere consisting of 60/40 % CO₂ /N₂ did not completely inhibit the growth but prevented the formation of TMA.

SIGNIFICANCE AND IMPACT OF THE STUDY

Little information is available on the spoilage potential of Aeromonas spp. in minimally processed salmon products under different packaging conditions. The study clearly demonstrates the importance of hurdle technology and provides data to further elucidate the significance of Aeromonas spp. as a spoilage organism.
