Food Quality Assessed by Chemometrics

Chemometrics, health and environmental risk assessments of commonly consumed biscuits in Lagos and Ibadan metropolises, Southwestern Nigeria

The United Nations' Agenda 2030 for sustainable development calls, amongst others, for universal action toward ending malnutrition and ensuring healthy living and well-being for all. So, efforts have intensified to attain the sustainable development goal-2 targets on stunting and wasting in children. Reported herein, therefore, is the quantification of metals in biscuits. Biscuits are commonly consumed snacks world-over and have become sources of nourishment for children and adults due to growing sedentary lifestyles and hectic school/work schedules. Nine metals (Pb, Ni, Cu, Co, Zn, Fe, Na, Mg and Ca) were assayed in six biscuit types (crackers, cookies, shortcakes, digestives, cabins and wafers) via wet digestion and flame atomic absorption spectrophotometry, and the ensuing data subjected to multivariate analyses (analysis of variance, Tukey's test, Pearson correlation, and principal component and hierarchical cluster analyses). The highest concentrations of macrominerals were found in the wafers (Ca), crackers (Na) and cabins (Mg) whereas the micronutrients peaked in the cookies (Fe, Zn), crackers (Cu), shortcake (Co) and wafers (Ni), respectively. The metal levels in the sampled biscuits were all safe for consumption, except for Pb at 0.83 ± 0.76-2.3 ± 1.3 mg/kg. Similarly, the health risk assessments of ingesting metals from the biscuits exposed Pb as potentially liable to cause adverse non-carcinogenic and carcinogenic health effects in children (aged 4-20 years) but Co and Ni exhibited borderline non-carcinogenic and carcinogenic health risks, respectively, in children. Gratifyingly, the ecological risk assessments to evaluate the likelihood of wastes, from expired and/or egested potentially toxic metals-contaminated biscuits, to cause damage to ecology were categorized as low. Nonetheless, constant evaluation and monitoring remain germane.

NMR-Based Approaches in the Study of Foods

In this review, the three different NMR-based approaches usually used to study foodstuffs are described, reporting specific examples. The first approach starts with the food of interest that can be investigated using different complementary NMR methodologies to obtain a comprehensive picture of food composition and structure; another approach starts with the specific problem related to a given food (frauds, safety, traceability, geographical and botanical origin, farming methods, food processing, maturation and ageing, etc.) that can be addressed by choosing the most suitable NMR methodology; finally, it is possible to start from a single NMR methodology, developing a broad range of applications to tackle common food-related challenges and different aspects related to foods.

The Application of Chemometrics in Metabolomic and Lipidomic Analysis Data Presentation for Halal Authentication of Meat Products

The halal status of meat products is an important factor being considered by many parties, especially Muslims. Analytical methods that have good specificity for the authentication of halal meat products are important as quality assurance to consumers. Metabolomic and lipidomic are two useful strategies in distinguishing halal and non-halal meat. Metabolomic and lipidomic analysis produce a large amount of data, thus chemometrics are needed to interpret and simplify the analytical data to ease understanding. This review explored the published literature indexed in PubMed, Scopus, and Google Scholar on the application of chemometrics as a tool in handling the large amount of data generated from metabolomic and lipidomic studies specifically in the halal authentication of meat products. The type of chemometric methods used is described and the efficiency of time in distinguishing the halal and non-halal meat products using chemometrics methods such as PCA, HCA, PLS-DA, and OPLS-DA is discussed.

Variable selection in the chemometric treatment of food data: A tutorial review

Food analysis covers aspects of quality and detection of possible frauds to ensure the integrity of the food. The arsenal of analytical instruments available for food analysis is broad and allows the generation of a large volume of information per sample. But this instrumental information may not yet give the desired answer; it must be processed to provide a final answer for decision making. The possibility of discarding non-informative and/or redundant signals can lead to models of better accuracy, robustness, and chemical interpretability, in line with the principle of parsimony. Thus, in this tutorial review, we cover aspects of variable selection in food analysis, including definitions, theoretical aspects of variable selection, and case studies showing the advantages of variable selection-based models concerning the use of a wide range of non-informative and redundant instrumental information in the analysis of food matrices.

Research progress on mutton origin tracing and authenticity

With the globalization of the food market and the convenience of food transportation between countries, consumers are increasingly worried about the source and safety of the food they eat. Traceability has been identified as an important tool for ensuring food safety and quality. This review mainly introduces the principles of five food traceability technologies, summarizes the progress in mutton application, comprehensively compares and analyzes the five traceability technologies, and discusses their application prospects, advantages and disadvantages. It is aimed at promoting research and application of traceability technology in mutton safety, promoting establishment and improvement of food traceability system.

D-α-Tocopherol-Based Micelles for Successful Encapsulation of Retinoic Acid

All-trans-retinoic acid (ATRA) represents the first-choice treatment for several skin diseases, including epithelial skin cancer and acne. However, ATRA's cutaneous side effects, like redness and peeling, and its high instability limit its efficacy. To address these drawbacks and to improve ATRA solubilization, we prepared ATRA-loaded micelles (ATRA-TPGSs), by its encapsulation in D-α-tocopheryl-polyethylene-glycol-succinate (TPGS). First, to explore the feasibility of the project, a solubility study based on the equilibrium method was performed; then, six ATRA-TPGS formulations were prepared by the solvent-casting method using different TPGS amounts. ATRA-TPGSs showed small sizes (11-20 nm), low polydispersity, slightly negative zeta potential, and proved good encapsulation efficiency, confirmed by a chemometric-assisted Fourier transform infrared spectroscopy (FTIR) investigation. ATRA-TPGS stability was also investigated to choose the most stable formulation. Using Carbopol^® 980 as gelling agent, ATRA-TPGS-loaded gels were obtained and analyzed for their rheological profiles. Ex vivo release studies from ATRA-TPGSs were performed by Franz cells, demonstrating a permeation after 24 h of 22 ± 4 µ cm^-2. ATRA-TPGSs showed enhanced cytotoxic effects on melanoma cells, suggesting that these formulations may represent a valid alternative to improve patient compliance and to achieve more efficacious therapeutic outcomes.

Biodegradable and Compostable Shopping Bags under Investigation by FTIR Spectroscopy

In the recent years, plastic-based shopping bags have become irregular and progressively replaced by compostable ones. To be marketed, these “new plastics” must possess suitable requirements verified by specific bodies, which grant the conformity mark, and the approved physicochemical properties are periodically verified. The fast, inexpensive, non-destructive, easy to use, and reproducible Fourier-Transform infrared (FTIR) spectroscopy is a technique routinely applied to perform analysis in various industrial sectors. To get reliable information from spectral data, chemometric methods, such as Principal Component Analysis (PCA), are commonly suggested. In this context, PCA was herein performed on 4, 5, and 21 × 3251 matrices, collecting the FTIR data from regular and irregular shopping bags, including three freshly extruded films from the Italian industry MecPlast, to predict their compliance with legislation. The results allowed us to unequivocally achieve such information and to classify the bags as suitable for containing fresh food in bulk or only for transport. A self-validated linear model was developed capable to estimate, by acquiring a single FTIR spectrum if, after the productive process, the content of renewable poly-lactic-acid (PLA) in a new produced film respect the expectations. Surprisingly, our findings established that among the grocery bags available on the market, irregular plastic-based shopping bags continue to survive.
