Scale-Up and Long-Term Study of Electrodialysis with Ultrafiltration Membrane for the Separation of a Herring Milt Hydrolysate

A review on the processing of functional proteins or peptides derived from fish by-products and their industrial applications

To understand the production and characteristics of protein hydrolysates pertaining to individual fish species, we selected and analyzed the most important commercial fish species according to the market value based on the Statistics on International Exports of Fishery Commodities by Food and Agriculture Organization. Accordingly, salmon, shrimp, cod, tuna, squid, and herring are marine species with high global value. Peptides obtained from their by-products were predominant in hydrophobic amino acids such as alanine, phenylalanine, methionine, proline, valine, tyrosine, tryptophan, leucine, and isoleucine. Bioactive peptides are short with a length of 2-20 amino acids. They remain inactive when they are within their parent proteins. Low molecular weight (0.3-8 kDa) peptides from hydrolyzed protein are easily digestible, readily absorbed by the body and are water-soluble. The hydrophobic nature contributes to their bioactivity, which facilitates their interactions with the membrane lipid bilayers. Incomplete hydrolysis results in low yields of hydrophobic amino acids. The glycosylation type of the resulting peptide fragment determines the different applications of the hydrolysate. The degree of conservation of the glycosidic residues and the size of the peptides are influenced by the method used to generate these hydrolysates. Therefore, it is crucial to explore inexpensive novel methodologies to generate bioactive peptides. According to the current studies, a unified approach (in silico estimation coupled with peptidomics) can be used for the identification of novel peptides with diverse physiological and technological functions. From an industrial perspective, the reusability of immobilized enzymes and membrane separation techniques (e.g., ultrafiltration) on marine by-products can offer low operating costs and higher yield for large-scale production of bioactive peptides. This review summarizes the production processes and essential characteristics of protein hydrolysates from fish by-products and presents the advances in their application.

Research progress on extraction technology and biomedical function of natural sugar substitutes

Improved human material living standards have resulted in a continuous increase in the rate of obesity caused by excessive sugar intake. Consequently, the number of diabetic patients has skyrocketed, not only resulting in a global health problem but also causing huge medical pressure on the government. Limiting sugar intake is a serious problem in many countries worldwide. To this end, the market for sugar substitute products, such as artificial sweeteners and natural sugar substitutes (NSS), has begun to rapidly grow. In contrast to controversial artificial sweeteners, NSS, which are linked to health concepts, have received particular attention. This review focuses on the extraction technology and biomedical function of NSS, with a view of generating insights to improve extraction for its large-scale application. Further, we highlight research progress in the use of NSS as food for special medical purpose (FSMP) for patients.

Membrane applications in the food industry

Current trends in the food industry for the application of membrane techniques are presented. Industrial solutions as well as laboratory research, which can contribute to the improvement of membrane efficiency and performance in this field, are widely discussed. Special attention is given to the main food industries related to dairy, sugar and biotechnology. In addition, the potential of membrane techniques to assist in the treatment of waste sources arising from food production is highlighted.

Effects of Herring Milt Hydrolysates and Fractions in a Diet-Induced Obesity Model

Over the past years, promising results from studies have shown that herring milt hydrolysates (HMH) can counter immune-metabolic disorders associated with obesity. However, more studies must corroborate these results. Thus, three commercial hydrolysates (HMH1, HMH2, and HMH3) as well as the fractions of two of them (HMH4 and HMH5) obtained by electrodialysis with ultrafiltration membranes (EDUF) were evaluated in vivo at higher doses compared to a previous study. To achieve this, seven groups of mice were fed for 8 weeks with either a control Chow diet or an obesogenic diet rich in fat and sucrose (HFHS) and supplemented by daily gavage with water or 312.5 mg/kg of one of the five HMH products. In summary, HMH supplements had no impact on weight gain. In the insulin tolerance test (ITT), HMH2 and its HMH5 fraction significantly reduced the blood sugar variation (p < 0.05). However, during the glucose tolerance (OGTT), HMH2 supplement increased the hyperinsulinemia variation (p < 0.05) induced by the HFHS diet. HMH1, HMH2, and HMH5 supplements generated potentially beneficial changes for health in the gut microbiota. These results reveal that HMH do not counteract obesity effects but may decrease certain physiological effects induced by obesity.
