Incorporation of Lipids into Wheat Bran Cellulose/Wheat Gluten Composite Film Improves Its Water Resistance Properties

Physicochemical and antimicrobial properties of soy protein isolate films incorporating high internal phase emulsion loaded with thymol

Oil-in-water (O/W) high internal phase (HIP) emulsion was prepared to investigate its effects on the physicochemical properties and antimicrobial properties of soy protein isolate (SPI)-based films. The particle size and migration degree of oil droplets in the SPI film-forming solution with HIP emulsion and the films were lower than those with conventional O/W emulsion or oil. The SPI-based emulsion films with HIP emulsion containing 30 % oil had the lowest water vapor permeability (1.15 × 10-10 g·m-1·s-1·Pa-1), glass transition temperature (40.93 °C) and tensile strength (4.47 MPa), and the highest transparency value (12.87) and elongation at break (160.83 %). The antimicrobial test of the SPI-based emulsion films loaded with thymol showed that the thymol encapsulation efficiency, sustained release effect, and growth inhibition effect on microbes were higher for the films with HIP emulsion than those for the films with O/W emulsion or oil.

Lipid incorporated biopolymer based edible films and coatings in food packaging: A review

This critical review aims to offer a comprehensive overview of the functional properties, roles, and fabrication techniques associated with lipid-based materials in food packaging. It explores the unique advantages of lipids, including waxes, resins, and fatty acids, in providing effective water vapor, gas, and microbial barriers. When integrated with other biopolymers, such as proteins and polysaccharides, lipid-based composite films demonstrate superior thermal, mechanical, and barrier properties. The review also covers the application of these innovative coatings in preserving a wide range of fruits and vegetables, highlighting their role in reducing moisture loss, controlling respiration rates, and maintaining firmness. Furthermore, the safety aspects of lipid-based coatings are discussed to address consumer and regulatory concerns.

A critical review on protein-based smart packaging systems: Understanding the development, characteristics, innovations, and potential applications

The use of packaging in the food industry is essential to protect food and improve its shelf life. However, traditional packaging, based on petroleum derivatives, presents some problems because it is non-biodegradable and is obtained from nonrenewable sources. In contrast, protein-based smart packaging is presented as an environmentally friendly strategy that also permits obtaining packaging with excellent characteristics for the formation of smart films and coatings. This review aims to summarize recent developments in smart packaging, focusing on edible films/coatings materials, originating from animal and plant protein sources. Various characteristics like mechanical, barrier, functional, sensory, and sustainability of packaging systems are discussed, and the processes used for their development are also described. Moreover, relevant examples of the application of these smart packaging technologies in muscle foods and some innovations in this area are presented. Protein-based films and coatings from plant and animal origins have great potential to enhance food safety and quality, and reduce environmental issues (e.g., plastic pollution and food waste). Some characteristics of the packages can be improved by incorporating polysaccharides, lipids, and other components as antioxidants, antimicrobials, and nanoparticles in protein-based composites. Promising results have been shown in many muscle foods, such as meat, fish, and other seafood. These innovative smart packaging systems are characterized by their renewable and biodegradable nature, and sustainability, among other features that go beyond typical protection barriers (namely, active, functional, and intelligent features). Nonetheless, the utilization of protein-based responsive films and coatings at industrial level still need optimization to be technologically and economically valid and viable.

Assessment of properties of gluten‐based edible film formulated with beeswax and DATEM for hamburger bread coating

Using edible films and coatings is one of the effective methods of improving the quality of bread. The aim of the present work was the development of gluten-based films containing lipids to be applied as bread coating, intending to improve quality and delay staleness. In this study, two types of lipids including beeswax and DATEM (diacetyl tartaric ester monoglycerides) were incorporated into gluten film at different levels. The findings showed that inserting both lipids together into gluten for film preparation, weakened the developed films in terms of mechanical and moisture barrier properties. Adding DATEM to the gluten film formulae decreased the elongation at the break and the tensile strength of the film. Using gluten-beeswax coatings for hamburger bread, compared to gluten-DATEM coatings, indicated a significant decrease in the hardness and staling feature. Moreover, applying sorbate as a preservative along with the solvents used in the film preparation prevented the growth of mold during the bread shelf life. In conclusion, the findings in this study indicated that the type and levels of lipids added to the edible gluten-based films and coatings affected the film properties and coated hamburger bread quality, significantly.

Preparation and Characterization of Cellulose Nanofibers from Banana Pseudostem by Acid Hydrolysis: Physico-Chemical and Thermal Properties

Cellulose is a biopolymer that may be derived from a variety of agricultural wastes such as rice husks, wheat straw, banana, and so on. Cellulose fibril that is reduced in size, often known as nanocellulose (NC), is a bio-based polymer with nanometer-scale widths with a variety of unique properties. The use of NC as a reinforcing material for nanocomposites has become a popular research issue. This research paper focuses on the production of banana pseudostem cellulose nanofiber. Nano-sized fiber was obtained from banana pseudostem through several processes, namely, grinding, sieving, pre-treatment, bleaching, and acid hydrolysis. The product yield was found to be 40.5% and 21.8% for Musa acuminata and Musa balbisiana, respectively, by the weight of the raw fiber. The reduction in weight was due to the removal of hemicellulose and lignin during processing. Transmission electron microscopy (TEM) analysis showed that the average fiber size decreased from 180 µm to 80.3 ± 21.3 nm. Finally, FTIR analysis showed that the fibers experienced chemical changes after the treatment processes.
