Physicochemical, Functional, and Nutraceutical Properties of Eggplant Flours Obtained by Different Drying Methods

The Effect of Water Stress on Bioactive Compounds in Australian-Grown Black Sesame

Sesame is an emerging crop of interest in Australia and has attracted widespread interest due to the health-benefitting properties of its bioactive compounds, including fatty acids, lignans, and polyphenols. This study aimed to investigate the impact of drought stress on these bioactive compounds, using eleven cultivars of black sesame seeds grown in Australia. Specific varieties responded positively to water deficit (WD) conditions, showing increased levels of TPC, FRAP, CUPRAC, and lignans. Varieties 1, 4, 7, and 12 showed significantly increased FRAP values ranging from 158.02 ± 10.43 to 195.22 ± 9.63 mg TE/100 g DW in the WD treatment compared to the well-watered (WW) treatment, whereas varieties 7, 10, 12, 13, and 18 demonstrated the highest CUPRAC values of all varieties (2584.86 ± 99.68-2969.56 ± 159.72 mg TE/100 g) across both WW and WD conditions, with no significant variations between irrigation regimes. Moreover, lignan contents (sesamin and sesamolin) were higher in varieties 1, 2, 5, and 8 grown in WD conditions. Compared to the optimal unsaturated to saturated fatty acid ratio (Σ UFA/Σ SFA ratio) of 0.45, all sesame genotypes showed superior ratios (ranging between 1.86 and 2.34). Moreover, the ω-6/ω-3 PUFA ratio varied from 33.7-65.5, with lower ratios in varieties 2, 4, 5, 8, and 18 under WD conditions. The high levels of phenolic compounds and healthy fats suggest the potential of black sesame to be incorporated into diets as a functional food. Furthermore, the enhanced phytochemistry of these cultivars in WD conditions is promising for widespread adoption. However, larger trial studies to confirm these findings across different geographic locations and seasons are warranted.

Micro- and nanoencapsulation of natural phytochemicals: Challenges and recent perspectives for the food and nutraceuticals industry applications

Worldwide, there has been growing interest in the research, development, and commercialization of functional bioactive components and nutraceuticals. As a result of consumer awareness of the relationship between diet, health, and disease, the consumption of plant-derived bioactive components has recently increased in the past two decades. Phytochemicals are bioactive nutrient plant chemicals in fruits, vegetables, grains, and other plant foods that may provide desirable health benefits beyond essential nutrition. They may reduce the risk of major chronic diseases, cardiovascular diseases, cancer, osteoporosis, diabetes, high blood pressure, and psychotic diseases and have antioxidant, antimicrobial, and antifungal properties, cholesterol-lowering, antithrombotic, or anti-inflammatory effects. Phytochemicals have been recently studied and explored for various purposes, such as pharmaceuticals, agrochemicals, flavors, fragrances, coloring agents, biopesticides, and food additives. These compounds are known as secondary metabolites and are commonly classified as polyphenols, terpenoids (terpenes), tocotrienols and tocopherols, carotenoids, alkaloids and other nitrogen-containing metabolites, stilbenes and lignans, phenolic acids, and glucosinates. Thus, this chapter aims to define the general chemistry, classification, and essential sources of phytochemicals, as well as describe the potential application of phytochemicals in the food and nutraceuticals industry, explaining the main properties of interest of the different compounds. Finally, the leading technologies involving micro and nanoencapsulation of phytochemicals are extensively detailed to protect them against degradation and enhance their solubility, bioavailability, and better applicability in the pharmaceutical, food, and nutraceutical industry. The main challenges and perspectives are detailed.

Different leafy vegetable cropping systems regulate growth, photosynthesis, and PSII functioning in mono-cropped eggplant by altering chemical properties and upregulating the antioxidant system

Continuous cropping of eggplant threatened regional ecological sustainability by facilitating replanting problems under mono-cropping conditions. Therefore, alternative agronomic and management practices are required to improve crop productivity at low environmental cost for the development of sustainable agricultural systems in different regions. This study examined changes in soil chemical properties, eggplant photosynthesis, and antioxidant functioning in five different vegetable cropping systems over a 2-year period., 2017 and 2018. The results showed that welsh onion-eggplant (WOE), celery-eggplant (CE), non-heading Chinese cabbage-eggplant (NCCE), and leafy lettuce-eggplant (LLE) rotation systems significantly impacted growth, biomass accumulation, and yield than fallow-eggplant (FE). In addition, various leafy vegetable cropping systems, WOE, CE, NCCE, and LLT induced significant increases in soil organic matter (SOM), available nutrients (N, P, and K), and eggplant growth by affecting the photosynthesis and related gas exchange parameters with much evident effect due to CE and NCCE. Moreover, eggplant raised with different leafy vegetable rotation systems showed higher activity of antioxidant enzymes, resulting in lower accumulation of hydrogen peroxide and hence reduced oxidative damage to membranes. In addition, fresh and dry plant biomass was significantly increased due to crop rotation with leafy vegetables. Therefore, we concluded that leafy vegetable crop rotation is a beneficial management practice to improve the growth and yield of eggplant.

Effect of pretreatments and solar tunnel dryer zones on functional properties, proximate composition, and bioactive components of pumpkin (Cucurbita maxima) pulp powder

Pumpkin fruits are large in size and need to be cut into pieces for use. The quality and storage life of cuts rapidly deteriorated. Big size fruits can be converted to shelf stable product to minimize postharvest loss using solar driers. However, drying temperature and RH in long solar tunnel drier not uniform and may affects quality of dried products. Therefore this research work aimed to investigate the effects of pre-drying treatments and solar tunnel dryer zones on the functional properties, proximate composition, and bioactive components of pumpkin pulp powder. Three groups of pumpkin slices were pre-treated in 1% citric acid (20 min), 2% salt (20 min) solutions, and the other group blanched at 65 °C in 1% salt solution (2 min), untreated sample used as a control. Pre-treated samples then dried in three zones of tunnel solar drier (zone I, zone II and zone III). Treatment combinations were laid down in factorial RCBD replicated 3 times. Results showed that pulp powder from salt pre-treated slice and dried at zone III results in the highest values of shrinkage, rehydration ratio, water holding capacity, and bulk density. Moisture content decreased from zone I to III, and with salt blanching in range of 8.2 to 6.4%, no effect in crude fat content, slices pre-treated in 2% salt solution results is better crude protein and fiber contents in zones. Better retention of total polyphones, beta-carotene, ascorbic acid, with high DPPH scavenging activity and lowest IC₅₀ values were observed for salt pre-treated sample but dried in zone II of the drier. In general relatively better functional properties, proximate composition and bioactive compounds of the powder can be preserved when slices pre-treated in 2% salt solution and dried in zone II of solar tunnel drier characterized by 54.9 ± 3.7 °C, RH value of 31.4 ± 3.4% and air velocity of 0.45 m/s.

Eggplant Flour Addition in Cookie: Nutritional Enrichment Alternative for Children

This research aimed to evaluate the effect of adding different levels of eggplant flour in cookie on the physicochemical and nutritional characteristics and to verify the sensory acceptability among children. Four eggplant flour cookie formulations were prepared: EF0 (or standard), EF2.5, EF5.0, and EF7.5 (Eggplant Flour 0, 2.5, 5.0 and 7.5%, respectively). The sensory acceptability, physicochemical and nutritional composition were evaluated. The eggplant flour addition of 7.5% to cookie reduced the acceptability (p > 0.05). The samples EF5.0 and EF7.5 showed higher diameter, expansion and thermal factor, while the EF0 and EF2.5 had higher thickness (p < 0.05). The flour addition significantly increased the hardness, Water activity (Aw), Titratable Acidity (TA) and Soluble Solids (SS) in the cookie, however, L* a* and b*, pH and SS/TA ratio values were reduced (p < 0.05). Increased levels of ash, dietary fibers, ascorbic acid, anthocyanins, total phenolic compounds and antioxidant activity were verified on the cookie after eggplant flour addition. Meanwhile, there was a reduction in energy and carbohydrate values. It is concluded that eggplant flour addition up to 5% in cookie maintains the sensory acceptability similar to the standard product when evaluated by children. In addition, it can be considered a viable alternative to improve most of the physicochemical and nutritional characteristics of the product.

Potential of biosynthesized zinc oxide nanoparticles to control Fusarium wilt disease in eggplant (Solanum melongena) and promote plant growth

In this study, a novel, non-toxic, eco-friendly zinc oxide nanoparticles (ZnO-NPs) was used instead of the synthetic fungicides widely used to control the destructive phytopathogenic fungus Fusarium oxysporum, the causative agent of wilt disease in Solanum melongena L. Herein, the biosynthesized ZnO-NPs was carried out by Penicillium expansum ATCC 7861. In vitro, mycosynthesized ZnO-NPs exhibited antifungal activity against Fusarium oxysporum. In vivo, ZnO-NPs suppressed Fusarium wilt disease in cultivated Solanum melongena L. by decreasing the disease severity with 75% of plant protection. Moreover, ZnO-NPs stimulated the recovery of eggplant as an indicated by improving of morphological and metabolic indicators including plant height(152.5%), root length(106.6%), plant fresh biomass (146%), chlorophyll a (102.8%), chlorophyll b (67.86%), total soluble carbohydrates (48.5%), total soluble protein (81.8%), phenol (10.5%), antioxidant activity and isozymes compared with infected control. Therefore, this study suggests using mycosynthesized ZnO-NPs as an alternative to synthetic fungicides not only to eradicate the Fusarium wilt disease in cultivated eggplant (Solanum melongena) but also to promote the growth parameters and metabolic aspects.

Solanum Fruits: Phytochemicals, Bioaccessibility and Bioavailability, and Their Relationship With Their Health-Promoting Effects

The Solanum genus is the largest in the Solanaceae family containing around 2,000 species. There is a great number of edibles obtained from this genus, and globally, the most common are tomato (S. lycopersicum), potato (S. tuberosum), and eggplant (S. melongena). Other fruits are common in specific regions and countries, for instance, S. nigrum, S. torvum, S. betaceum, and S. stramonifolium. Various reports have shown that flavonoids, phenolic acids, alkaloids, saponins, and other molecules can be found in these plants. These molecules are associated with various health-promoting properties against many non-communicable diseases, the main causes of death globally. Nonetheless, the transformations of the structure of antioxidants caused by cooking methods and gastrointestinal digestion impact their potential benefits and must be considered. This review provides information about antioxidant compounds, their bioaccessibility and bioavailability, and their health-promoting effects. Bioaccessibility and bioavailability studies must be considered when evaluating the bioactive properties of health-promoting molecules like those from the Solanum genus.

Physicochemical Characteristics, Microstructure and Health Promoting Properties of Green Banana Flour

This study aimed to investigate the proximate composition, mineral content, functional properties, molecular structure, in vitro starch digestibility, total phenolic content (TPC), total flavonoid content (TFC) and antioxidant activity (DPPH, FRAP) of green banana flour (GBF) cultivars grown in South Africa. With proximate composition, Finger Rose and Pisang Awak had the highest protein (4.33 g/100 g) and fat (0.85 g/100 g) content, respectively. The highest ash content (3.50 g/100 g) occurred with both Grand Naine and FHIA-01 cultivars. Potassium and copper were the most abundant and least minerals, respectively. Pisang Awak cultivar had the highest water absorption capacity (67.11%), while Du Roi had the highest swelling power (0.83 g/g) at 90 °C. Scanning electron microscopy (SEM) images revealed that starch granules from all GBF cultivars were irregular in shape and they had dense surfaces with debris. All the GBF cultivars had similar diffraction patterns with prominent peaks from 15°-24° diffraction angles. The resistant starch (RS) and amylose content of the FHIA-01 cultivar indicates that the GBF has the potential to lower risks of type 2 diabetes and obesity. The highest TPC, TFC and antioxidant activity occurred with the Grande Naine cultivar. Based on their functional characteristics, the Grand Naine and FHIA-01 GBF cultivars could potentially be used as raw materials for bakery products as well as for the fortification of snacks.

Biochemical Composition of Eggplant Fruits: A Review

Eggplant is one of the most important vegetable crops known for its nutritive benefits due to the abundance of various bioactive compounds, which include proteins, vitamins, minerals, carbohydrates, phenolics, and dry matter content. In addition, eggplant has significant pharmaceutical properties that have been recently recognized. Eggplant produces secondary metabolites, including glycoalkaloids, antioxidant compounds, and vitamins, which appear to be the major source of its health benefits. It has been reported that there is a considerable correlation between the regular use of phytochemicals and the defense against diseases. Therefore, researchers must analyze the biochemical composition of eggplants to obtain more information about their nutritional quality and health benefits. In this review, an attempt is made to explain the qualitative and quantitative aspects of different biochemicals present in eggplant, in addition to their beneficial health effects.

CONTENIDO DE POLIFENOLES, CAPACIDAD ANTIOXIDANTE Y TOXICIDAD DE Solanum ferrugineum (SOLANACEAE) CON POTENCIAL MEDICINAL

Solanum ferruginium es una planta que crece en lugares perturbados como maleza, es de uso medicinal poco utilizada que presenta un gran potencial como fuente de antioxidantes debido a su alto contenido en polifenoles. Debido a esto se analizó el contenido de polifenoles, flavonoides, proantocianidinas y capacidad antioxidante in vitro (ensayo de captación de radicales DPPH) en hojas, tallos y planta completa de tres localidades (Las agujas, Parque el Nabo y Bosque la Primavera) de Zapopan, Jalisco, así como su toxicidad subcronica en hojas. En general se observó diferencia significativa (p£ 0,05), en las muestras de las tres localidades, las hojas presentaron el mayor contenido de polifenoles (15,3±0,7 a 22±0,4 mg expresado como equivalente de ácido gálico (EAG/g) en muestras de Parque el Nabo, flavonoides (7,8±0,3 a 13,3±0,3 mg EC/g) y proantocianidinas (3,4±0,1 a 4,2±0,05 mg expresado como equivalente de catequina (EC/g) en el Bosque la Primavera. La capacidad antioxidante fue similar en todas las muestras, con valores de 8,3 a 17 µg/mL de concentración media inhibitora (CI50). En la prueba toxicológica, los ratones no mostraron signos de toxicidad a ninguna dosis por efecto de la administración de la planta en estudio, por lo que la dosis letal media (DL50) es > 15 000 mg/kg de peso corporal. El contenido de polifenoles y actividad antioxidante en S. ferruginium sobre todo en hojas indican un alto potencial con propiedades farmacológicas además de su inocuidad, por lo que es importante realizar estudios de sus compuestos fenólicos individuales, antes de ser utilizada en farmacología.

Acaricidal Efficacy of Jasmine and Lavender Essential Oil or Mustard Fixed Oil against Two-Spotted Spider Mite and Their Impact on Growth and Yield of Eggplants

Abstract

Eggplant is repeatedly attacked by numerous pests, particularly two-spotted spider mite (TSSM), which considerably decline plant productivity. Synthetic acaricides are frequently applied for controlling TSSM, resulting in environmental pollution. The utilization of rational novel substances which repel or prevent TSSM establishment represents a sustainable eco-friendly to reduce the utilization of agrochemicals. A greenhouse investigation was done for assessing the bio-acaricidal activity of mustard (Brassica juncea L.) fixed oil (MFO), jasmine (Jasminum grandiflorum L.) essential oil (JEO), or lavender (Lavandula angustifolia L.) essential oil (LEO), and their influences on eggplant growth and productivity. The results demonstrated that JEO represents the most acaricidal properties against TSSM followed by MFO and/or LEO compared to control. Spraying with natural oils significantly improved eggplant growth, i.e., plant height, number of leaves, and branches/plant, in addition to the leaf area and relative leaf dry mass of the 3rd–5th upper leaves. The JEO had the strongest positive effect compared with other oils or control. Additionally, Natural oils application significantly increased photosynthetic pigment, chlorophyll _a:b ratio, and nitrogen, phosphorus, potassium, ascorbic acid, and phenols. The application of oils increased yield and its quality. In this study, JEO (2.5 mL/l) is shown to be extremely promising for the progress of new eco-friendly acaricides, improving plant growth and increasing eggplant yield.

Eggplant Fruit (Solanum melongena L.) and Bio-Residues as a Source of Nutrients, Bioactive Compounds, and Food Colorants, Using Innovative Food Technologies

Consumers are very concerned with following a healthy diet, along with some precautions that may influence environmental impact. Solanum melongena L. is one of the most consumed vegetables due to its excellent nutritional value and antioxidant action. Associated with its high consumption, considerable amounts of agro-food wastes are produced. This work targets the valorization of this matrix, through the use of its bio-residues to study the obtention of coloring pigments, applying innovative technologies. Its nutritional value, chemical composition, and bioactive potential were evaluated, and the ultrasound-assisted extraction to obtain coloring pigments of high industrial interest was optimized. Considering the results, low contents of fat and carbohydrates and energy value were evident, as well as the presence of compounds of interest (free sugars, organic acids, unsaturated fatty acids, and phenolic acids). In addition, the antioxidant and antimicrobial potential was detected. Response surface methodology was performed to optimize the extraction of natural pigments, showing a concentration of 11.9 mg/g of anthocyanins/g of extract, applying optimal conditions of time, solvent, and solid/liquid ratio of 0.5 min, 68.2% (v/v) and 5 g/L, respectively. S. melongena proved to be a good source of bioactive compounds and natural pigments, which can generate great interest in the food industry.

Effect of Intermittent Microwave Volumetric Heating on Dehydration, Energy Consumption, Antioxidant Substances, and Sensory Qualities of Litchi Fruit during Vacuum Drying

To examine the processing characteristics and high quality of an improved microwave vacuum drying system, litchi fruits were dried using intermittent microwave volumetric heating while microwave vacuum drying at 2 W/g was carried out for comparison; the intermittent microwave heating profiles were set as (1) 5 min drying-on, 5 min drying-off; (2) 5 min drying-on, 10 min drying-off; and (3) 5 min drying-on, 15 min drying-off. Energy consumption during drying was determined, and physicochemical properties such as moisture content, vitamin C, total phenolics, color, and sensory evaluation of dried products were assessed. In microwave vacuum drying, intermittent microwave volumetric heating was found to be energy-efficient (about 32 KJ/g to 45 KJ/g) and saved at least 31% of energy consumption compared with microwave vacuum drying as well as decreasing product browning. In addition, microwave volumetric heating had no substantial effects on sugar and protein contents, while antioxidants were affected significantly (p ≤ 0.05). Moreover, sensory evaluation showed that intermittent microwave-assisted vacuum drying (IMVD) increased the acceptance of the dried product compared with microwave vacuum drying (MVD).
