Unlocking the elemental signature of European tea gardens: Implications for tea traceability

This study presents a comprehensive analysis of the elemental profiles of tea leaves coming from plants grown in several European gardens, with a focus on the bioaccumulation of essential and potentially toxic trace elements in relation to processing and location of tea garden. Samples were collected from various gardens across Europe, including Portugal, the Azores, Germany, the Netherlands, and Switzerland. Elemental analysis was conducted on fresh tea leaves, dried leaves, and leaves processed for the production of green and black tea, along with soil samples from the root zones of tea plants. The results reveal no significant differences in elemental content based on the processing of tea leaves. However, distinct elemental profiles were observed among tea leaves of plants grown in gardens from different European regions. Utilizing chemometric and machine learning tools, the study highlights the potential of these elemental profiles for enhancing the traceability of tea products.

Biological Potential and Mechanisms of Tea's Bioactive Compounds in Tea: An Updated Review

BACKGROUND

Tea (Camellia sinensis) has a rich history and is widely consumed across many countries, and is categorized into green tea, white tea, oolong tea, yellow tea, black tea, and dark tea based on the level of fermentation. Based on a review of previous literature, the commonly recognized bioactive substances in tea include tea polyphenols, amino acids, polysaccharides, alkaloids, terpenoids, macro minerals, trace elements, and vitamins, which have been known to have various potential health benefits, such as anticancer, antioxidant, anti-inflammatory, anti-diabetes, and anti-obesity properties, cardiovascular protection, immune regulation, and control of the intestinal microbiota. Most studies have only pointed out the characteristics of tea's bioactivities, so a comprehensive summary of the pharmacological characteristics and mechanisms of tea's bioactivities and their use risks are vital.

Enhancing the Chemical Composition of Kombucha Fermentation by Adding Indian Gooseberry as a Substrate

Kombucha is a fermented tea beverage obtained by the symbiosis of yeast, acetic acid bacteria and some lactic acid bacteria, and it has many health benefits. The aim of this study was to investigate the potential of adding Indian gooseberry as a substrate to enhance the chemical properties of kombucha. In this study, traditional kombucha made from green tea was compared to kombucha made from green tea blended with various forms of Indian gooseberry, including whole fruit, dried fruit and juice. The fermentation was performed for 21 days and samples were collected every 3 days to enumerate the total number of yeast and bacteria. Physical and chemical properties, including total soluble solids, alcohol content, pH, acetic acid content, total phenolic and flavonoid content, antioxidant activity and organic acids, were analyzed. The results revealed that the dried Indian gooseberry kombucha (DIGK) demonstrated significantly high total phenolic content and total flavonoid content. In addition, DIGK had the highest D-Saccharic acid-1,4 lactone (DSL) on the 9th day of fermentation. This discovery suggests that dried Indian gooseberry can be used as an alternative substrate for kombucha fermentation to create a new type of kombucha beverage with enhanced chemical properties.
