Application of ATR-FTIR for Green Arabica Bean Shelf-Life Determination in Accelerated Storage

Coffee bean oxidation is associated with enzymatic and non-enzymatic browning, the degradation of desirable aromatic compounds, the development of undesirable flavors, increased susceptibility to microbial spoilage, and volatile compound losses. This study investigated natural dry process (DP) and honey process (HP) green coffee beans stored in GrainPro® bags for 0, 5, 10, and 20 days under accelerated storage conditions at 30 °C, 40 °C, and 50 °C with relative humidity of 50%. A kinetic model was used to estimate the shelf life of the green coffee beans. DP recorded durability of 45.67, 29.9, and 24.92 days at 30 °C, 40 °C, and 50 °C, respectively, with HP 60.34, 38.07, and 19.22 days. Partial least squares (PLS) analysis was performed to build the models in order to predict the shelf life of coffee based on peroxide (PV) and thiobarbituric acid reactive substances (TBARS) values. In terms of prediction with leave-one-out cross-validation (LOOCV), PLS provided a higher accuracy for TBARS (R2 = 0.801), while PV was lower (R2 = 0.469). However, the auto-prediction showed good agreement among the observed and predicted values in both PV (R2 = 0.802) and TBARS (R2 = 0.932). Based on the variable importance of projection (VIP) scores, the ATR-FTIR peaks as 3000-2825, 2154-2150, 1780-1712, 1487-2483, 1186-1126, 1107-1097, and 1012-949 cm-1 were identified to be the most related to PV and TBARS on green coffee beans shelf life. ATR-FITR showed potential as a fast and accurate technique to evaluate the oxidation reaction that related to the loss of coffee quality during storage.

Classification for GM and Non-GM Maize Kernels Based on NIR Spectra and Deep Learning

The classification of GM and non-GM maize kernels is fundamental for further analysis of the gene action in maize. Therefore, a complete and novel detection scheme based on near-infrared spectra was designed to distinguish GM and non-GM maize kernels. Hyperspectral images (935–1720 nm) of 777 maize kernels from 3 kinds were captured, and the average spectra of the maize kernels were extracted for modeling analysis. The classical modeling methods based on feature engineering were first studied, and the backpropagation neural network–genetic algorithm model showed the best performance with a prediction accuracy of 0.861. Then, novel modeling methods based on deep learning were developed. To dig out the interactive information between different bands and match the application scenarios, the original spectra were transformed into two-dimensional matrices before establishing the deep learning models. A modified convolution neural network (i.e., VGG net) with dilated convolution was finally constructed to classify the maize kernels, and the prediction accuracy reached 0.961. This research provides a referential and novel way to detect GM maize kernels. Future research will improve the detection scheme for monitoring unauthorized GM organisms by introducing the visualization technology of deep learning.

Relationship between Continuum of Hurst Exponents of Noise-like Time Series and the Cantor Set

In this paper, we have modified the Detrended Fluctuation Analysis (DFA) using the ternary Cantor set. We propose a modification of the DFA algorithm, Cantor DFA (CDFA), which uses the Cantor set theory of base 3 as a scale for segment sizes in the DFA algorithm. An investigation of the phenomena generated from the proof using real-world time series based on the theory of the Cantor set is also conducted. This new approach helps reduce the overestimation problem of the Hurst exponent of DFA by comparing it with its inverse relationship with α of the Truncated Lévy Flight (TLF). CDFA is also able to correctly predict the memory behavior of time series.

Nondestructive Detection for Egg Freshness Based on Hyperspectral Scattering Image Combined with Ensemble Learning

Scattering hyperspectral technology is a nondestructive testing method with many advantages. Here, we propose a method to improve the accuracy of egg freshness, research the influence of incident angles of light source on the accuracy, and explain its mechanism. A variety of weak classifiers classify eggs based on the spectra after preprocessing and feature wavelength extraction to obtain three classifiers with the highest accuracy. The three classifiers are used as metamodels of stacking ensemble learning to improve the highest accuracy from 96.25% to 100%. Moreover, the highest accuracy of scattering, reflection, transmission, and mixed hyperspectral of eggs are 100.00%, 88.75%, 95.00%, and 96.25%, respectively, indicating that the scattering hyperspectral for egg freshness detection is better than that of the others. In addition, the accuracy is inversely proportional to the angle of incidence, i.e., the smaller the incident angle, the camera collects a larger proportion of scattering light, which contains more biochemical parameters of an egg than that of reflection and transmission. These results are very important for improving the accuracy of non-destructive testing and for selecting the incident angle of a light source, and they have potential applications for online non-destructive testing.
