Influence of Freezing Parameters on the Formation of Internal Porous Structure and Its Impact on Freeze-Drying Kinetics

Mangosteen Pericarp Processing Technology to Create Economic Value and Reduce Biowaste

This research comparatively investigates different mangosteen pericarp processing schemes. The experimental pericarp processing schemes were hot air drying (HAD; control), quick freezing/HAD (QF + HAD), slow freezing/HAD (SF + HAD), and slow freezing/freeze-drying (SF + FD). For freezing, the QF temperature was -38 °C for 2 h and that of SF was -25 °C for 2 weeks. For drying, the HAD temperature was 60 °C for 7 h. In the FD process, the primary and secondary temperatures were -20 °C and 50 °C for 48 h. The experimental results showed that the freezing method (i.e., QF and SF) affected the physical properties (moisture content, water activity, and color) of dried mangosteen pericarp. The antioxidant activities (DPPH and ABTS) of the SF + HAD scheme (28.20 and 26.86 mg Trolox/g DW of mangosteen pericarp) were lower than the SF + FD scheme (40.68 and 41.20 mg Trolox/g DW of mangosteen pericarp). The α-mangostin contents were 82.3 and 78.9 mg/g DW of mangosteen pericarp for FD and HAD, respectively; and the corresponding TPC were 1065.57 and 783.24 mg GAE/g DW of mangosteen pericarp. The results of this study suggest that the drying process had a negligible effect on bioactive compounds. Essentially, the SF + HAD technology is the most operationally and economically viable scheme to process mangosteen pericarp.

Optimization of Supercritical Carbon Dioxide Extraction of Polyphenols from Black Rosehip and Their Bioaccessibility Using an In Vitro Digestion/Caco-2 Cell Model

The fruits of Rosa pimpinellifolia are rich sources of (poly)phenols, however they are underutilized due to the limited information available. The influence of the pressure, temperature, and co-solvent concentration (aqueous ethanol) of the supercritical carbon dioxide extraction (SCO₂-aqEtOH) on the extraction yield, total phenolic-, total anthocyanin-, catechin-, cyanidin-3-O-glucoside contents, and total antioxidant activity of black rosehip was investigated simultaneously. The maximum obtained total phenolic and total anthocyanin contents under the optimized extraction conditions (280 bar, 60 °C and 25% ethanol, v/v) were 76.58 ± 4.25 mg gallic acid equivalent and 10.89 ± 1.56 mg cyanidin-3-O-glucoside equivalent per g of the dry fruits, respectively. The optimal extract obtained by SCO₂-aqEtOH was compared to two other extraction procedures: ultrasonication using ethanol as solvent (UA-EtOH) and pressurized hot water extraction (PH-H₂O). The bioaccessibility and cellular metabolism of the phenolic compounds in the different black rosehip extracts were assessed using an in vitro digestion coupled with a human intestinal Caco-2 cell model. The in vitro digestive stability and cellular uptake of the phenolic compounds had no significant difference among the different extraction methods. The results of this study confirm the efficiency of SCO₂-aqEtOH extraction for phenolic compounds and, in particular, for anthocyanins, and could be used to produce new functional food ingredients from black rosehip with high antioxidant power containing both hydrophilic and lipophilic compounds.

Experimental Study of the Impact of Pore Structure on Drying Kinetics and Sublimation Front Patterns

Freeze-drying frozen maltodextrin solutions with solid contents of 5% and 30% (w/w) was experimentally investigated using neutron imaging at PSI Villigen/Switzerland. Different solid contents, as well as annealing at −5 °C for 11 h, were used to modify the porous structure of the samples, which was quantified using X-ray computed tomography. Annealing of the 5% (w/w) sample, with a pore size distribution (PSD) of 23.7 ± 11.1 µm, yielded a very open pore space with high porosity (ε = 0.96) and a PSD of 33.0 ± 27.0 µm. In contrast, the higher solid content resulted in small, lamellar, narrow pores with high anisotropy and a porosity of ε = 0.65, as well as a PSD of 13.5 ± 4 µm. In operando neutron imaging was used to show the impact of the structure of frozen maltodextrin on the overall drying kinetics and shape of the sublimation front during freeze-drying. For this purpose, a freeze-drying stage was employed, which allowed a novel approach to time- and space-resolved monitoring of the ice phase. The sublimation front propagation was quantitatively analyzed based on ice saturation profiles and sublimation rates. The dependence of drying velocity on structure is nicely demonstrated by the data. In addition, it is shown that the sublimation front widened during freeze-drying, resulting in either rather concave or convex shape depending on morphological parameters.

Comparison of Knudsen Diffusion and the Dusty Gas Approach for the Modeling of the Freeze-Drying Process of Bulk Food Products

Freeze-drying is generally used to achieve high quality products and preserve thermal sensitive components; however, it is also considered as a high energy and costly process. Modeling of the process can help to optimize the process to reduce these drawbacks. In this work, a mathematical model is presented to predict the heat and mass transfer behavior for freeze-drying of porous frozen food particles during freeze-drying to optimize the process. For the mass transfer, a comparison between Knudsen diffusion and the more complex dusty-gas approach is performed. Simulation results of a single particle are validated by experiments of single-layer drying to extend the usage of this model from a single particle to a particle bed. For the moisture transfer, adaption parameters are introduced and evaluated. A comparison shows a good agreement of the model with experimental results. The results furthermore suggest a strong correlation of the drying kinetics with pore size and particle porosity. An increase in the pore diameter strongly improves the overall mass transfer rates and hence is a suitable parameter for an effective increase of the drying rates in freeze-drying.
