What Nudge Techniques Work for Food Waste Behaviour Change at the Consumer Level? A Systematic Review

Nudging Toward Sustainable Food Consumption at University Canteens: A Systematic Review and Meta-Analysis

INTRODUCTION

This systematic literature review and meta-analysis investigated the effectiveness of the nudging approach toward sustainable food consumption in the university canteen context.

METHODS

The systematic literature search was carried out in 5 databases, Web of Science, PubMed, Scopus, ProQuest, and the Royal Library, identifying 14 eligible studies and selecting 9 articles containing adequate information for meta-analysis. The nudging strategies were classified using the typology of interventions in the proximal physical microenvironments framework that resulted in 5 different intervention types: availability, position, size, presentation, and information that belonged to either intervention class-altering properties or placement.

RESULTS

The study identified presentation, availability, and information as the most promising nudge intervention for achieving sustainable food consumption at the university canteen or similar settings. Nudging by altering the properties had a small effect size (d = 0.16), and nudging by altering placement showed a medium effect size (d = 0.21).

DISCUSSION

Nudging interventions implemented after understanding consumers' current behavior showed positive effectiveness toward sustainable food consumption rather than implementing random nudges.

CONCLUSIONS AND IMPLICATIONS

It is important that future studies aim to achieve sustainable food consumption by understanding canteen user food preferences and food choice motives before designing a nudging strategy.

Improving recycling sorting behaviour with human eye nudges

This paper tests whether visual nudges help direct attention towards existing instructions designed to increase waste sorting accuracy. The study was conducted in a quasi-experimental setting over a period of 9 weeks in two buildings of a large UK university campus. Two treatments on recycling behaviour were tested against a control group: one considered the impact of visual nudges in the form of human eyes; the other one combined human eye with pre-existing sorting instructions. Results show that for mixed recycling the combination of visual and information nudges decreased sorting errors by 7 percentage points. In contrast, visual nudges alone increased sorting errors by 4.5 percentage points. These findings indicate that, when combined, information and a visual nudge are cost-effective tools to significantly improve waste sorting behaviour. This paper adds to existing experimental evidence based on neuroscientific theories.

Effects of a Nudging Cue Targeting Food Choice in a University Cafeteria: A Field Study

Many students approaching adulthood often choose high-calorie food products. Concurrently, health interventions applied during this life phase can potentially lead to a healthier lifestyle. Nudge health interventions in experimental cafeteria settings have been found to improve eating behavior effectively, yet research in real-world settings is lacking. Accepting nudges as health interventions impacts nudge effectiveness. The present study applies a pretest-posttest design for a period of three consecutive weeks (no nudge, nudge, no nudge), testing the effectiveness of the so-called Giacometti cue on the number of calories purchased in a real-world cafeteria. Students were exposed to the nudge during the intervention week when entering the cafeteria and when choosing their meals. After purchasing a meal, their choice was recorded, and they completed a questionnaire. The Giacometti cue immediately reduced the number of calories purchased (comparing weeks one and two). After nudge removal, an effect was identified, increasing the number of calories purchased (comparing weeks two and three). Contrary to expectations, higher nudge acceptance resulted in more calories purchased. Neither awareness of the nudge's presence when buying food nor the interaction between acceptance and awareness played a role. We explore potential explanations for the Giacometti cue's effects.

Investment priorities for research and innovation in urban agri-food systems: Toward more resilient cities in the Global South

Urban and peri-urban agriculture (UPA) is widely distributed throughout the Global South. Despite urban population growth and diversifying food habits, UPA delivers an important part of urban food supply, as well as other types of services to cities, such as employment and waste reuse. Nevertheless, the extent and importance of UPA varies between different urban areas, while challenges like limited recognition, land conversion, and water pollution and competition threaten the potential of UPA to contribute to urban resilience. Key investment priorities for research and innovation for overcoming current challenges include incentivized peri-urban zoning, urban allocation of productive lands, and increasing capacities for controlled environment agriculture (CEA). Innovative repositioning of food marketing can help to strengthen supply of healthy food from UPA production, increase decent employment, and turn food markets into nutrition hubs. Priority innovations for contributing to the circular bioeconomy of cities include scaling the safe use of wastewater for irrigation through investments in the adoption of multiple risk-barrier approaches and scaling UPA-based ecosystem services for valorising solid waste and environmental management. Innovations in urban governance are required to support these processes by bringing food systems into urban planning through food mapping and the multisectoral platforms for dialogue and policy formulation across city regions and with vertical levels of government.

Measuring “Nudgeability”: Development of a Scale on Susceptibility to Physical Activity Nudges among College Students

Background: The current college lifestyle create more opportunities for students to develop unhealthy behaviors, especially physical inactivity. Nudging could be an effective tool to improve physical activity behaviors by changing college settings. One-nudge-fits-all leads to ineffective nudges, so it is necessary to develop a reliable and valid instrument capable of measuring the “nudgeability” of physical activity nudges for college students, which is for a higher level of nudge efficacy. Method: Developing the College Physical Activity Nudges Susceptibility Scale (CPANSS) that integrated the nudge method with the Likert scale, which is the first attempt to measure the susceptibility to nudges directly by a scale. There are four steps for developing CPANSS, including Scale Dimensions, Item Generation, Exploratory Factor Analysis (n = 294), and Confirmatory Factor Analysis (n = 293) with appropriate procedures. Results: The five-factor 21-item CPANSS with good reliability and validity fitted the data reasonably well. Conclusion: The CPANSS was to provide a new tool for policymakers to design effective nudges in changing and promoting physical activity in college settings, and to provide a method for scholars to promote other healthy behaviors for different target groups.

Predicting the Intention to Sort Waste at Home in Rural Communities in Lebanon: An Application of the Theory of Planned Behaviour

Low- and middle-income countries (LMICs) such as Lebanon have limited technical, economic, and social infrastructures to manage municipal solid waste properly. Understanding what motivates citizens to sort waste at home is paramount to designing effective, efficient, and equitable waste management interventions. Within the solid waste management project “RES-Q” in Southern Lebanon, we investigated the socio-cognitive predictors of waste sorting in a sample of 767 households from the targeted area using the Theory of Planned Behaviour (TPB). Perceived behavioural control (β = 0.96, p < 0.001), perceived norms (β = −0.30, p < 0.001), and current behaviour (β = 0.06, p < 0.001) were the strongest predictors of intention; attitude toward separating waste was not a significant predictor (β = 0.04, p = 0.3881). Consequently, future behavioural interventions should build capability and opportunity to perform the behaviour before normalising it. For example, citizens should receive bins and bags to separate waste and be shown how to perform the behaviour and how easy and convenient it is to increase their behavioural control. In parallel, waste collection and treatment infrastructures must be in place so that citizens can see that sorting waste is a social norm. These actions will ensure the success of future behavioural interventions within the RES-Q project and beyond.

Are You "Nudgeable"? Factors Affecting the Acceptance of Healthy Eating Nudges in a Cafeteria Setting

Research has identified nudging as a promising and effective tool to improve healthy eating behavior in a cafeteria setting. However, it remains unclear who is and who is not “nudgeable” (susceptible to nudges). An important influencing factor at the individual level is nudge acceptance. While some progress has been made in determining influences on the acceptance of healthy eating nudges, research on how personal characteristics (such as the perception of social norms) affect nudge acceptance remains scarce. We conducted a survey on 1032 university students to assess the acceptance of nine different types of healthy eating nudges in a cafeteria setting with four influential factors (social norms, health-promoting collaboration, responsibility to promote healthy eating, and procrastination). These factors are likely to play a role within a university and a cafeteria setting. The present study showed that key influential factors of nudge acceptance were the perceived responsibility to promote healthy eating and health-promoting collaboration. We also identified three different student clusters with respect to nudge acceptance, demonstrating that not all nudges were accepted equally. In particular, default, salience, and priming nudges were at least moderately accepted regardless of the degree of nudgeability. Our findings provide useful policy implications for nudge development by university, cafeteria, and public health officials. Recommendations are formulated for strengthening the theoretical background of nudge acceptance and the susceptibility to nudges.
