Abstract
Mycotoxins frequently contaminate a variety of food items, posing significant concerns for both food safety and public health. The adverse consequences linked to poisoning from these substances encompass symptoms such as vomiting, loss of appetite, diarrhea, the potential for cancer development, impairments to the immune system, disruptions in neuroendocrine function, genetic damage, and, in severe cases, fatality. The deoxynivalenol (DON) raises significant concerns for both food safety and human health, particularly due to its potential harm to vital organs in the body. It is one of the most prevalent fungal contaminants found in edible items used by humans and animals globally. The presence of harmful mycotoxins, including DON, in food has caused widespread worry. Altered versions of DON have arisen as possible risks to the environment and well-being, as they exhibit a greater propensity to revert back to the original mycotoxins. This can result in the buildup of mycotoxins in both animals and humans, underscoring the pressing requirement for additional investigation into the adverse consequences of these modified mycotoxins. Furthermore, due to the lack of sufficient safety data, accurately evaluating the risk posed by modified mycotoxins remains challenging. Our review study delves into conjugated forms of DON, exploring its structure, toxicity, control strategies, and a novel animal model for assessing its toxicity. Various toxicities, such as acute, sub-acute, chronic, and cellular, are proposed as potential mechanisms contributing to the toxicity of conjugated forms of DON. Additionally, the study offers an overview of DON's toxicity mechanisms and discusses its widespread presence worldwide. A thorough exploration of the health risk evaluation associated with conjugated form of DON is also provided in this discussion.

Abstract
Zearalenone (ZEN), one of the most common mycotoxins in cereals, poses a severe health risk to humans. In this study, electrochemical oxidation and reduction degraded ZEN in solution completely within 8 min and 20 min. The structure of ZEN products was elucidated by mass spectrometry (MS), and their toxicity was evaluated by ECOSAR software and cytotoxicity assay. From simulation, electrochemical oxidation products had lower acute and chronic toxicity, and the product at 9.0 V is not harmful (LC50/EC50 greater than 100 mg/L, ChV greater than 10 mg/L). CCK-8 assay further confirmed their less cytotoxicity. To our surprise, LC50, EC50, and ChVs of all electrochemical reduction products were lower than 1 mg/L, and cell viabilities were less than ZEN, meaning the higher toxicity of electrochemical reduction products. On this Basis, electrochemical oxidation was applied in ZEN contaminated wheat with a degradation rate of 92.32 ± 2.37%, indicating its potential to degrade ZEN practically.

Modification of Deoxynivalenol by a Fungal Laccase Paired with Redox Mediator TEMPO. Toxins (Basel) 2022; 14:toxins14080548. Abstract
Mycotoxins such as deoxynivalenol introduce a health risk to the food supply and are costly to manage or avoid. Technologies for reducing or eliminating the toxicity of deoxynivalenol could be useful in a variety of processes, such as in preserving the value as animal feed of byproducts of ethanol production. We characterized transformation products of deoxynivalenol that were formed by the combination of a fungal laccase paired with the chemical mediator 2,2,6,6-tetramethylpiperidine-N-oxyl (TEMPO), using chromatography, mass spectrometry, and nuclear magnetic resonance spectroscopy. Alcohol groups at the C3 and C15 positions of deoxynivalenol were oxidized to ketones, and the chemical mediator became covalently linked to the C4 position. Conditions experienced during gas chromatography led to the dissociation of TEMPO, forming 3,15-diketodeoxynivalenol. Understanding the range of possible modifications to deoxynivalenol and other trichothecenes is a necessary step toward effective remediation of contaminated grain.

Abstract
Mycotoxins are fungi-produced secondary metabolites that can contaminate many foods eaten by humans and animals. Deoxynivalenol (DON), which is formed by Fusarium, is one of the most common occurring predominantly in cereal grains and thus poses a significant health risk. When DON is ingested, it can cause both acute and chronic toxicity. Acute signs include abdominal pain, anorexia, diarrhea, increased salivation, vomiting, and malaise. The most common effects of chronic DON exposure include changes in dietary efficacy, weight loss, and anorexia. This review provides a succinct overview of various sources, biosynthetic mechanisms, and genes governing DON production, along with its consequences on human and animal health. It also covers the effect of environmental factors on its production with potential detection, management, and control strategies.

Evaluation of Electrochemical Methods for Poultry Slaughterhouse Wastewater Treatment. SUSTAINABILITY 2020. Abstract
Understanding the efficiency of different wastewater treatment technologies tested under real conditions is essential for successful decision making by engineers and managers. In this study, real poultry slaughterhouse wastewater coming from defeathering, cooling, and evisceration processes was treated using a lab-scale electrochemical process by use of iron-iron (Fe-Fe), iron-graphite (Fe-Gr) and aluminum-graphite (Al-Gr) electrode combinations. A water quality index (WQI) was developed and used as a tool for evaluating and classifying the effectiveness of different electrode combinations. The Al-Gr electrode combination showed an impressive performance achieving an “excellent” status for all of the three studied sources of wastewater with a WQI ranging from 13 to 34. The Fe-Gr electrode combination showed an “excellent” status performance for the wastewater from the cooling process as classified by the WQI and “good water” class for the defeathering and evisceration processes. The lower performance, which was highly affected by the increase in turbidity, was observed for the Fe-Fe electrode combination with a “poor water” status for the wastewater coming from defeathering and cooling processes and “good water” status for evisceration process.
