A review of the production, quality, and safety of traditionally fermented cereal-based alcoholic beverages in Ethiopia

In Ethiopia, a diverse array of cereal-based alcoholic beverages is being prepared and consumed. These traditional fermented drinks are distinct to specific regions and are prepared by locals using locally available raw materials according to cultural traditions. Notable among these are Tella, Areki, Keribo, Borde, and Shamita, renowned for their nutritional benefits and their role in ensuring food security. This paper explores existing literature regarding the production, quality, and safety of traditional cereal-based alcoholic beverages in Ethiopia. Despite the widespread consumption of these beverages, they have yet to be commercialized, mainly due to their perceived low quality. The uncommercialized processes and products demand more attention, particularly in light of the country's inflationary pressures. Additionally, these traditional fermented beverages significantly enhance health due to the presence of bioactive compounds and their nutritional value. Standardizing and modernizing production methods by integrating scientific knowledge, such as optimizing fermentation practices, is essential to fully capitalize on these traditional beverages. Equipping local producers with this knowledge can facilitate the transition to larger scale production. Furthermore, continued research is essential to maintaining overall quality and safety standards. Therefore, it is crucial to concentrate on enhancing the nutritional value and quality of traditional cereal-based beverages in the future. By illuminating these aspects, this review aims to enhance understanding of the traditional Ethiopian alcoholic beverage industry and its potential for elevating quality and safety standards. Moreover, the review explores these beverages' cultural significance, consumption patterns, and associated health risks.

Postharvest Practices, Perceptions, and Knowledge of Mycotoxins among Groundnut Farmers in the Adamawa, Centre, and North Regions of Cameroon

In many parts of the world, including Cameroon, mycotoxin contamination of groundnuts remains a major constraint affecting their use as food. Understanding the contributing factors is an essential intervention to reduce contamination and people's exposure to these harmful toxins. The aim of this research was to identify the factors associated with the knowledge, perceptions, and postharvest practices of groundnut farmers in three production basins in Cameroon. Data were collected through surveys and analyzed using descriptive methods and logistic regression models. The results show that groundnut farmers are little aware of the existence of mycotoxins (12%) and totally unaware of the existence of aflatoxins (100%). Only 7.1% of these farmers are aware of the effects of mycotoxins on consumer health. After evaluation, the large majority of farmers scored poor marks for knowledge (86%) and practice (98.7%) in the management of mould and mycotoxins in groundnuts. Knowledge of mycotoxins was positively associated with the level of education [OR = 3.42; (95%-IC: 1.00-16.00); p < 0.05] and region [OR = 4.49; (95%-IC: 1.09-20.3); p < 0.05]. Farmers' good practices were linked to their production experience [OR = 6.06, (95% CI: 0.91-18.4), p = 0.035]. The use of mouldy groundnut for feed was associated with age [OR = 3.34, (95% CI: 1.14-10.2), p = 0.03], sex [OR = 0. 43, (IC-95%: 1.14-1.05), p = 0.026], marital status [OR = 0.35, (IC-95%: 0.14-0.79), p = 0.015], and production region [OR = 0.27, (IC-95%: 0.13-0.56)]. In conclusion, groundnut farmers had insufficient knowledge of mycotoxins, no knowledge of aflatoxins, and suboptimal handling and storage practices for this commodity. This contributes to increasing the risk of exposure for the population and requires mitigation measures, including awareness campaigns on mycotoxins, specifically aflatoxins, and capacity building for farmers in terms of storage and postharvest management of foodstuffs.

A Low-Cost, Portable Device for Detecting and Sorting Aflatoxin-Contaminated Maize Kernels

Aflatoxin contamination of maize is a major food safety issue worldwide. The problem is of special significance in African countries because maize is a staple food. This manuscript describes a low-cost, portable, non-invasive device for detecting and sorting aflatoxin-contaminated maize kernels. We developed a prototype employing a modified, normalized difference fluorescence index (NDFI) detection method to identify potentially aflatoxin-contaminated maize kernels. Once identified, these contaminated kernels can be manually removed by the user. The device consists of a fluorescence excitation light source, a tablet for image acquisition, and detection/visualization software. Two experiments using maize kernels artificially infected with toxigenic Aspergillus flavus were implemented to evaluate the performance and efficiency of the device. The first experiment utilized highly contaminated kernels (71.18 ppb), while mildly contaminated kernels (1.22 ppb) were used for the second experiment. Evidently, the combined approach of detection and sorting was effective in reducing aflatoxin levels in maize kernels. With a maize rejection rate of 1.02% and 1.34% in the two experiments, aflatoxin reduction was achieved at 99.3% and 40.7%, respectively. This study demonstrated the potential of using this low-cost and non-invasive fluorescence detection technology, followed by manual sorting, to significantly reduce aflatoxin levels in maize samples. This technology would be beneficial to village farmers and consumers in developing countries by enabling safer foods that are free of potentially lethal levels of aflatoxins.

Effects of stem cells and amniotic fluid on uterus and ovaries on a rat model with abdominal adhesions: a controlled study

Objective:

This study aimed to compare the effects of human umbilical cord mesenchymal stem cells (hUCMSCs), amniotic fluid (AF), and a combination of both on the uterus and ovaries in a rat model of abdominal adhesions.

Material and Methods:

This study was designed as a controlled study. Four groups, each consisting of six rats, were randomly formed. One group was designated as the control (CNT). hUCMSCs - applied (hUCSC), AF-applied (AMN), and a combination of both (hUCSC + AMN) were the experimental groups. All rats were given intraperitoneal talc powder to create adhesions. After 21 days, animals in experimental groups were further treated with hUCMSC, AF or a combination of these.

Results:

There was a statistically significant difference in primordial follicle count, endometrial gland number, and endometrial blood vessel count (p<0.05). AMN provided the best results in the endometrial vessel and primordial follicle count. The average endometrial gland count in AMN and hUCSC + AMN was similarly higher than CNT and hUCSC alone.

Conclusion:

There were significantly higher for counts for endometrial glands, endometrial blood vessels, and primordial follicles in the hUCSC, AMN and hUCSC + AMN groups compared to controls. Animals in the AMN group had the best result for endometrial vessel and highest primordial follicle count.

Validation of a HACCP community-based infants' complementary food safety assurance method in cash crop producing communities in Gedeo zone, Southern Ethiopia

A method based on a hazard analysis critical control point (HACCP)-based standard operating procedure (SOP) has been developed and implemented in community-based (CB) production of complementary foods (CFs) in agrarian regions in rural Ethiopia. The objective of this study was to validate the method in another setup, more specifically in cash crop (coffee and khat) producing communities in Southern Ethiopia. A quasi-experimental study was employed for the method validation. Two villages in the Gedeo zone, Southern Ethiopia were selected and a total of 40 mother-child pairs, 20 in each village, were involved in the study. Sociodemographic data, knowledge, and complementary feeding practices were collected using pretested questionnaires. The training was given to each mother for 1 h about community-based CFs production and implementation of the method. Then, 30 CF samples were collected and the level of aflatoxins (AFB1, AFB2, AFG1, and AFG2) was determined using a validated method. The majority (77.5%) of the mothers understand the importance of complementary feeding and give it to their infants beyond 6 months. Nearly two-thirds (62.5%) of the mothers had knowledge about the health impacts of aflatoxins, but the remaining 37.5% lacked awareness about the health risks of aflatoxins. Mothers were very well-motivated for the training and they promised to implement the knowledge and skill gained from the training for improving the nutritional status of their children. Overall, 23.3% of the CFs were contaminated by aflatoxins. AFB1 and AFG1 were detected in 6.7 and 16.7% of the CF samples, respectively. In cash crop-producing communities around the country, the HACCP-based SOP is easily validated in CB CFs production. Therefore, a scaleup of the method at the national level and beyond is recommended.
