Enzyme-Treated Soybean Meal Enhanced Performance via Improving Immune Response, Intestinal Morphology and Barrier Function of Nursery Pigs in Antibiotic Free Diets

Currently, although extruded full-fat soybean (EFS) and enzyme-treated soybean meal (ESBM) are both commonly used plant proteins in the diets of nursery pigs, there are few studies focusing on comparing the effect of ESBM and EFS on immune response and gut development of pigs. This study found that ESBM replacing EFS could enhance performance by improving immune response, antioxidant status, gut morphology, and barrier function of nursery pigs in antibiotic free diets. The results revealed that ESBM could be an effective plant protein resource to alleviate weaning stress in pigs.

Abstract

This study aims to investigate the effects of ESBM on performance, antioxidant status, immune response, and intestinal barrier function of nursery pigs in antibiotic free diets compared with EFS. A total of 32 Duroc × (Landrace × Yorkshire) barrows (initial body weight of 8.05 ± 0.66 kg, weaned on d 28) were selected and allocated to two treatments with 16 replicates per treatment and one pig per replicate using a complete random design. The treatments included an EFS group (basal diet + 24% EFS; EFS) and an ESBM group (basal diet + 15% ESBM; ESBM). Corn was used to balance energy and diets were iso-nitrogenous at about 18% crude protein. The experiment lasted for 14 days and pigs were slaughtered for sampling on d 14. Compared with EFS, pigs fed ESBM showed enhanced (p < 0.05) gain to feed ratio and average daily gain and a reduced (p < 0.05) diarrhea score. These pigs had increased (p < 0.05) contents of glutathione peroxidase, catalase, superoxide dismutase, IgG, interleukin-10, and ferric reducing ability of plasma, as well as decreased (p < 0.05) malondialdehyde, IL-6, IL-1β, tumor necrosis factor (TNF-α), interferon-γ, thiobarbituric acid-reactive substances, and diamine oxidase level in serum and TNF-α level in the jejunal mucosa. Moreover, these pigs also showed enhanced (p < 0.05) villus height/crypt depth in ileum, villus height in duodenum, protein expression of zonula-occludens-1 in jejunal mucosa, and fecal total volatile fatty acids and butyric acid contents. In conclusion, ESBM replacing EFS could enhance performance via improving immune response, antioxidant status, gut morphology, and barrier function of nursery pigs in antibiotic free diets.

Performance of allergen testing in a survey of frozen meals and meals ready-to-eat (MREs)

A 7-plex immunoassay capable of detecting cashew, egg, hazelnut, milk, peanut, shrimp, and soy allergens was used to screen meals ready-to-eat (MREs) and frozen meals that contained meat or poultry. The same food matrices were also evaluated using single individual allergen immunoassays. Multiplex and single allergen test results were compared with the allergen declared on the food label, which was considered the standard. For both the frozen meals (n = 113) and MREs (n = 24) each analytical method failed to detect allergens that were declared on product labels, but only in frozen meals were allergens detected that were not declared on the label. Undeclared allergens were detected for egg in 1.8% (2/113) and for soy in 7.1% (8/113) of frozen meals. Labelled allergens were not detected in 0.9% (1/113) of milk, 4.4% (5/113) of egg, and 15% (17/113) of soy allergens in frozen meals. Assay performance for evaluating allergens in MREs was poor.

Optimising the use of proteins from rich meat co-products and non-meat alternatives: Nutritional, technological and allergenicity challenges

An exponential growth in the global demand for high quality proteins over the next 20 years is expected, mainly due to global population growth and the increasing awareness toward protein rich foods for more nutritive diets. Coupled with this, is the pressing need for more sustainable approaches within a bio-economy mindset. Although meat production is expected to increase to address this rising demand, a better use of the currently available resources provided by the food, and specially, the meat industry is required. In this regard, despite the high-quality proteins and other nutrients found in meat co-products; they are currently underused and their valorisation needs to be revisited. Also, emerging protein sources need to be investigated to alleviate the environmental pressure coming from the meat industry. In this review, the main focus was attributed to (i) the current and forthcoming challenges for the use of meat co-products as meat replacers to produce a new range of meat derived products (with high nutritional value, improved technological properties and better consumer acceptance); (ii) their performance regarding to the non-animal origin proteins currently used as meat protein replacers; and (iii) the allergenicity of the proteins that might fall into the category of novel protein sources.

Detection of Sulfites in Fresh Meat Preparation Commercialised at Retail in Lazio Region

In Europe sulfur dioxide (SO₂) and sulfites in foods and beverages at concentrations of more than 10 mg kg^–1 or 10 mg L^–1 expressed as SO₂ equivalents are subject to mandatory labelling. In fresh meats the addition of sulfites is not admitted because of their unlawful use to give the product a more attractive appearance. Aim of the study was to detect sulfites in meat product sampled in 19 commercial shops of Lazio Region. In n=12 samples, sulfites were present at different concentrations and no indication for them was reported on the label. Sulfites concentrations ranged from 13.3 to 1278.9 mg kg^–1. The results of the present investigation underline the need for better controls by operators, not only under the food information but also in the consumers’ health perspective.
