Potential Use of Edible Insects in Complementary Foods for Children: A Literature Review

Background: Childhood malnutrition is an important public health problem. Animal protein provides essential amino acids in a more adequate pattern than plant-based protein. However, the production of sufficient animal-sourced protein to feed the growing world population is a serious challenge. This review aims to explore the evidence on the use of edible insects as an alternative source of protein and micronutrients in complementary foods for children and their potential to address childhood malnutrition. Methods: Searches were conducted in two electronic databases PubMed and Cochrane. The reference lists of included studies were also searched. Results: Twelve studies were included in this review. All insect-enriched formulations (e.g., biscuits, cereals, porridge, paste, etc.) exceeded the daily recommended amount of protein and fat for children’s complementary foods and showed good acceptability. Only two studies assessed the efficacy of insect-enriched foods on nutritional indicators and found no effect on the reduction of stunting and wasting. However, one study found improvements in the haemoglobin levels and fewer cases of anaemia in the intervention group. Conclusions: Insect-enriched complementary foods for children are safe, acceptable and have the potential to tackle micronutrient deficiencies. More studies are needed to examine their effect on nutritional status in children.

Nutritional Quality and Safety of Complementary Foods Developed from Blends of Staple Grains and Honey Bee Larvae (Apis mellifera)

Complementary foods must be adequate to satisfy the nutritional needs of the growing child together with breastfeeding. This study was aimed at evaluating the nutritional composition, microbial safety, and sensory quality of extruded complementary foods developed from blends of staple grains and insect bee larva (Apis mellifera). Teff, maize, soybean, and bee larva samples were milled to flour and blended before extrusion as follows: ComF01 (57% maize, 29% teff, and 14% soybean) and ComF02 (58% maize, 29% teff, and 13% bee larvae) using NutriSurvey software (version, 2007). Nutrient composition, microbial, and sensory analyses of developed flour blends were conducted using standard methods. The proximate composition of moisture, fat, fiber, carbohydrate, and energy was significantly different between the developed and commercial wean-mix foods. ComF02 recorded the highest fat content (14.3 g/100 g), energy (427.18 kcal/100 g), and vitamins A (706 μg/100 g), B3 (8.2 mg/100 g), and B9 (86.7 mg/100 g) while ComF01 had the highest protein content (12.56 g/100 g). Iron (40.94 mg/100 g) and calcium (68.20 mg/100 g) were the minerals with the highest content in ComF02. Both ComF01 and ComF02 met the recommended dietary allowance of nutrients for infants aged 6-12 months. Overall, the present study showed that bee larvae can be used to develop complementary foods that are nutritionally adequate, microbiologically safe, and sensory acceptable meeting the dietary allowance of infants at an acceptable level compared to conventional cereal-based foods.

Impact of Storage and Packaging Material on the Nutritional, Product Properties and Microbial Count of Extruded Snacks

Background:

The extrusion cooking is the most widely used process so the development and consumption of extruded snack products having health and nutritious benefits would help increase the health status of the population.

Objective:

The aim of this study was to investigate the effect of storage days on physical, microbial activity and sensory characteristics of extruded snacks and kinetics of extruded snacks.

Methods:

Extruded snacks were produced by extrusion cooking at optimized conditions of temperature, moisture and screw speed of 110°C, 12% (db) and 200 rpm. The products were packed in lowdensity polyethylene (LDPE) and laminated pouches (LP) and were stored at an accelerated temperature condition of 40 ± 2°C. The storage stability in terms of quality parameters such as moisture, hardness, bulk density, color, lateral expansion, sensory characteristics and total plate count was investigated.

Results:

An increase (p≤0.05) in the value of moisture, bulk density, a*, and total plate count was observed during the storage period, whereas hardness, L*, b*, ΔE and sensory characteristics showed significant (p≤0.05) decreased order with storage period. No significant effect on the lateral expansion of the extruded product was observed. A significant decrease in total carbohydrate, fat and protein content was found during the storage period. The average sensory score and microbial analysis suggested that extruded snacks packed in LDPE pouches can only be acceptable up to the 60th day and extruded snacks packed in LP can be acceptable to more than 90th day. The kinetics of color and hardness suggest first order kinetics.

Conclusion:

Overall investigation suggested that extruded snacks were more stable in the LP as compared to LDPE pouches.

Functional Response of the Predators Alloeocranum biannulipes (Hemiptera: Reduviidae) and Teretrius nigrescens (Coleoptera: Histeridae) Feeding on Dinoderus porcellus (Coleoptera: Bostrichidae) Infesting Yam Chips

The functional response and some predation parameters of the predators Alloeocranum biannulipes Montrouzier & Signoret (Hemiptera: Reduviidea) and Teretrius nigrescens Lewis (Coleoptera: Histeridae) were evaluated at five different densities of larvae and pupae of Dinoderus porcellus Lesne (Coleoptera: Bostrichidae) with the aim to understand their roles in the biological control of this major pest of stored yam chips. Experiments were performed in petri dishes at 25 ± 1 °C, 60 ± 10% RH, and a photoperiod of 12:12 (L:D) h in a controlled temperature room. Both predators showed Type II of functional response with respect to larvae, determined by a logistic regression model. However, T. nigrescens significantly killed more larvae of D. porcellus compared with A. biannulipes. This behavior, however, changed to a linear functional response (Type I), when pupae of D. porcellus were offered to both predators, possibly because of their immobility. In addition, there was no significant difference between T. nigrescens and A. biannulipes in terms of the killed pupae. Parameters of the Holling disc equation for both predators were estimated. Estimated handling time on larvae of D. porcellus for T. nigrescens and A. biannulipes was 0.254 and 0.677 h and the rate of searching efficiency was 0.289 and 0.348 h-1, respectively. Results indicated that T. nigrescens was a more suitable candidate for augmentative release for D. porcellus control than A. biannulipes. However, semifield studies are required to draw firm conclusions.
