Sustainable microalgal biomass as a potential functional food and its applications in food industry: a comprehensive review

Microalgae (MA) are the most abundant seaweeds with high nutritional properties. They are accepted as potential biocatalysts for the bioremediation of wastewater. They are widely used in food, feed, and biofuel industries and can potentially be food for future generations. MA-based purification of wastewater technology could be a universal alternative solution for the recovery of resources from wastewater for low-cost biomass feedstock for industry. They provide a wide range of functional components, viz. omega-3 fatty acids, along with a plenteous number of pigments such as ß-carotene, astaxanthin, lutein, phycocyanin, and chlorophyll, which are used extensively as food additives and nutraceuticals. Further, proteins, lipids, vitamins, and carbohydrates are described as nutritional characteristics in MA. They are investigated as single-cell protein, thickening/stabilizing agents, and pigment sources in the food industry. The review emphasizes the production and extraction of nutritional and functional components of algal biomass and the role of microalgal polysaccharides in digestion and nutritional absorption in the gastrointestinal tract. Further, the use of MA in the food industry was also investigated along with their potential therapeutic applications.

Infrared Irradiation Drying Impact on Bee Pollen: Case Study on the Phenolic Composition of Eucalyptus globulus Labill and Salix atrocinerea Brot. Pollens

Bee pollen is commonly reputed as a rich source of nutrients, both for bees and humans. Its composition is well balanced and can be taken as a stand-alone food or as supplement, including for the elderly owing its low caloric value. However, storage conditions frequently lead to product degradation, namely due to the high moisture content that enable the proliferation of molds and bacteria. Herein, an infrared (IR)-based technology is proposed as a mean to determine moisture content, setting also a new scalable approach for the development of a drying technology to be used for bee pollen processing, which can be carried out in a short time, without impacting the phenolic and flavonoid content and associated bioactive effects. Proof-of-concept was attained with an IR moisture analyzer, bee pollen samples from Eucalyptus globulus Labill and Salix atrocinerea Brot. being selected as models. Impact of the IR radiation towards the phenolic and flavonoid profiles was screened by HPLC/DAD profiling and radical scavenging ability by the DPPH assay. The IR-based approach shows good reproducibility while simultaneously reducing drying time and energy consumption, thus implying a low environmental impact and being suitable for industrial scale-up once no degradation has been found to occur during the radiation process.

Functional foods and bioactive ingredients harnessed from the ocean: current status and future perspectives

With an increase in life expectancy and decrease of quality-of-life couple with the high prevalence of diseases, diet is expected to play a key function in sustaining human health. Nutritionists, food technologists and medical experts are working in synergy to cater for the increasing demand of food with associated therapeutic benefits, commonly known as functional food, that may improve well-being and reduce the risk of diseases. Interestingly, the marine ecosystem, due to its abundant and phenomenal biodiversity of marine organisms, constitutes a vital source of a panoply of healthy foods supply for the thriving functional food industry. Marine organisms such as seaweeds, sea cucumbers, sponges, and mollusks amongst others are sources of thousands of biologically active metabolites with antioxidant, anti-parasitic, antiviral, anti-inflammatory and anticancer properties. Given the growing number of research and interest to probe into the therapeutic roles of marine products, this review was designed to provide a comprehensive summary of the therapeutic properties of marine organisms (macroalgae, sea cucumbers and fish among others) which are consumed worldwide, in addition to their potentials and as sources of functional ingredients for developing novel food and fostering wellness. The gap between research development and actual commercialization, and future prospects of marine-based products also summarized to some extent.
