Current situation and future prospects for global beef production: overview of special issue

An association weight matrix identified biological pathways associated with bull fertility traits in a multi-breed population

Using seven indicator traits, we investigated the genetic basis of bull fertility and predicted gene interactions from SNP associations. We used percent normal sperm as the key phenotype for the association weight matrix-partial correlation information theory (AWM-PCIT) approach. Beyond a simple list of candidate genes, AWM-PCIT predicts significant gene interactions and associations for the selected traits. These interactions formed a network of 537 genes: 38 genes were transcription cofactors, and 41 genes were transcription factors. The network displayed two distinct clusters, one with 294 genes and another with 243 genes. The network is enriched in fertility-associated pathways: steroid biosynthesis, p53 signalling, and the pentose phosphate pathway. Enrichment analysis also highlighted gene ontology terms associated with 'regulation of neurotransmitter secretion' and 'chromatin formation'. Our network recapitulates some genes previously implicated in another network built with lower-density genotypes. Sequence-level data also highlights additional candidate genes relevant to bull fertility, such as FOXO4, FOXP3, GATA1, CYP27B1, and EBP. A trio of regulatory genes-KDM5C, LRRK2, and PME-was deemed core to the network because of their overarching connections. This trio probably influences bull fertility through their interaction with genes, both known and unknown as to their role in male fertility. Future studies may target the trio and their target genes to enrich our understanding of male fertility further.

Effects of Dietary Crude Protein Level of Concentrate Mix on Growth Performance, Rumen Characteristics, Blood Metabolites, and Methane Emissions in Fattening Hanwoo Steers

This study aimed to investigate the effect of varying levels of dietary crude protein (CP) on growth performance, rumen characteristics, blood metabolites, and methane emissions in fattening Hanwoo steers. Twenty-four steers, weighing 504 ± 33.0 kg (16 months old), were assigned to four dietary treatments with different CP concentrations (15, 18, 19, and 21% of CP on a dry matter (DM) basis). A linear increasing trend in the average daily gain (ADG) was observed (p = 0.066). With increased dietary CP levels, the rumen ammonia concentration significantly increased (p < 0.001), while the propionate proportion linearly decreased (p = 0.004) and the proportions of butyrate and valerate linearly increased (p ≤ 0.003). The blood urea exhibited a linear increase (p < 0.001), whereas the blood non-esterified fatty acids and cholesterol showed a linear decrease (p ≤ 0.003) with increasing dietary CP. The methane concentration from eructation per intake (ppm/kg), forage neutral detergent fiber (NDF) intake, total NDF intake, and ADG exhibited linear decreases (p ≤ 0.014) across the treatments. In conclusion, increasing the dietary CP up to 21% in concentrates demonstrated a tendency to linearly increase the ADG and significantly decrease the propionate while increasing the butyrate. The methane concentration from eructation exhibited a tendency to linearly decrease with increasing dietary CP.

Phenotypic relationships between meat quality parameters and residual feed intake in Japanese black Wagyu cattle

Japanese black Wagyu cattle are renowned for producing some of the world's most highly valued and recognized beef with exceptional marbling. Therefore, the primary focus of genetic selection for Wagyu cattle has historically been on meat quality, particularly achieving high marbling levels. However, even when the price of the final product is high, production costs also remain high, especially considering that most of the feed has to be imported. The objective of this study was to evaluate phenotypic relationships between feed efficiency, specifically residual feed intake (RFI), as the most utilized efficiency index in cattle, and various meat quality parameters in Japanese black cattle in order to determine if a common phenotypic selection for these parameters could be feasible. For this, a total of 39 Wagyu cattle were evaluated for feed efficiency over their entire fattening period (900 d), with a focus on RFI as a key indicator. Animals were fed high-starch diets with vitamin A deprivation to achieve the desired marbling. Results revealed positive correlations between feed efficiency and meat quality in Wagyu cattle. Specifically, animals with higher feed efficiency exhibited superior meat quality traits, including firmness, marbling, and overall meat rating. When comparing the 20 most extreme RFI individuals (10 most and 10 least efficient), we observed that efficient RFI animals showed increased marbling levels (+13.2%, P = 0.05) and ranking quality (+12%, P = 0.06) of the meat. In conclusion, this research contributes to understanding the interplay between feed efficiency and meat quality in Japanese black Wagyu cattle. Phenotypic correlations observed suggest the possibility of incorporating RFI criteria into genetic selection programs without compromising the prized meat quality traits of Wagyu beef.

Bee Pollinator Mortality Due to Pesticide-Laden Particulate Matter from Beef Cattle Feedyards

Wild and managed bees are critical for the stability of trophic webs, angiosperm reproduction, and agricultural productivity. Unfortunately, as many as 40% of crop pollinators are in a steep decline due to habitat loss and exposure to agrochemicals. Pyrethroids, neonicotinoids, and macrocyclic lactones are among the many agrochemicals toxic to pollinating insects that are used extensively in industrial beef cattle feeding operations throughout the world. Fugitive feedyard particulate matter (PM) transports agrochemicals into the surrounding environs. To determine the impact of agrochemical-laden feedyard particulate matter on bee pollinators, we conducted in situ experiments wherein honeybees and mason bees were placed downwind and upwind of feedyards (N = 40). Concurrent, colocated total suspended particulate matter samples contained multiple insecticides and parasiticides including pyrethroids, neonicotinoids, and macrocyclic lactones, in significantly higher concentrations downwind of feedyards (bifenthrin, 8.45 ± 4.92; permethrin, 1032.34 ± 740.76; clothianidin, 3.61 ± 1.48; imidacloprid, 73.32 ± 47.52; thiamethoxam, 5.81 ± 3.16; abamectin, 0.45 ± 0.29; ivermectin, 8.88 ± 5.06 ng/g). Honeybees and mason bees sited downwind of feedyards always experienced higher mortality than those correspondingly sited upwind, and male mason bees experienced significantly higher mortality compared to females when both were sited downwind. Bees occurring downwind of beef cattle feedyards for 1 h are 232-260% more likely to die than those occurring upwind. Thus, agrochemicals used on and emitted from beef cattle feedyards are significant threats to bee pollinators.

Review: Effect of Experimental Diets on the Microbiome of Productive Animals

The microorganisms that inhabit the gastrointestinal tract are responsible for multiple chains of reactions that affect their environment and modify the internal metabolism, their study receives the name of microbiome, which has become more relevant in recent years. In the near future, the challenges related to feeding are anticipated to escalate, encompassing the nutritional needs to sustain an overpopulated world. Therefore, it is expected that a better understanding of the interactions between microorganisms within the digestive tract will allow their modulation in order to provide an improvement in the immune system, feed efficiency or the promotion of nutritional characteristics in production animals, among others. In the present study, the main effects of experimental diets in production animals were described, emphasizing the diversity of the bacterial populations found in response to the diets, ordering them between polygastric and monogastric animals, and then describing the experimental diets used and their effect on the microorganisms. It is hoped that this study will help as a first general approach to the study of the role of the microbiome in production animals under different diets.

Livelihood Capitals and Opportunity Cost for Grazing Areas' Restoration: A Sustainable Intensification Strategy in the Ecuadorian Amazon

Land use change in pastures is considered one of the leading drivers of tropical deforestation in the Ecuadorian Amazon Region (EAR). To halt and reverse this process, it is necessary to understand, among other factors, the local livelihoods, income from grazing area and the appropriate options to foster sustainable production, incorporating the land-sparing and land-sharing approach. This work was conducted using 167 household surveys along an altitudinal gradient within the buffer and transition zone of the Sumaco Biosphere Reserve (SBR) in the EAR. The results of a comparative analysis of the main capital variables (human, social, natural, financial, and physical), and the opportunity cost of grazing area assessment provides the following key findings: (a) the concepts of land sparing and land sharing should be considered as complementary local strategies, including household livelihoods and the opportunity cost of the grazing area; (b) we should encourage markets with differentiated restoration rights, based on households engaged in low grazing areas' opportunity costs, and making less impact on capitals' livelihood a key element of economic and conservation initiatives; and (c) sectoral policy implications, including moderate intensification and technological improvements to strengthen the pastureland-sparing and -sharing approach, are discussed.

Characteristics of Physiological Parameters of Japanese Black Calves Relate to Carcass Weight

This study aimed to identify the growth performance and blood factors associated with carcass weight in Japanese Black calves based on 675 performance tests and field carcass records. We measured the body weight, withers height, and chest girth at the start of fattening age (approximately 8-10 months) and analyzed eight blood factors, including vitamins and metabolites. Single- and two-trait animal models were used to estimate the heritability and genetic correlations. The heritability estimates for growth performance were moderate to high (ranging from 0.48 to 0.74), and those for blood metabolites were low to moderate (ranging from 0.19 to 0.51). Estimates for genetic correlations of carcass or body weight with body weight, withers height, and chest girth were high (ranging from 0.42 to 0.80). The body weight and withers height at 8 months of age are possibly closely related to the final carcass weight. The blood metabolites associated with body weight were vitamin E in steers (castrated males) and β-carotene in heifers. Our findings indicate that body measurements and blood metabolites measured during the growing period could be used to determine the nutritional and physiological status of cattle as well as predict carcass weight.

Physiological roles and regulation of hepatic angiopoietin-like protein 3 in Japanese Black cattle (Bos taurus) during the fattening period

Angiopoietin-like protein 3 (ANGPTL3) is expressed predominantly in the liver and plays a major role in regulating the circulating triglyceride and lipoprotein fraction concentrations by inhibiting lipoprotein lipase (LPL) activity. Given these physiological roles, ANGPTL3 may play an important role in metabolic changes related to fat accumulation during the fattening period in Japanese Black. This study aimed to reveal the physiological roles of hepatic ANGPTL3 in Japanese Black steers (Bos taurus) during the fattening period and investigate the regulatory effects of hepatic ANGPTL3. To investigate the gene expression and protein localization of ANGPTL3, 18 tissue samples were collected from tree male Holstein bull calves aged 7 wk. Biopsied liver tissues and blood samples were collected from 21 Japanese Black steers during the early (T1; 13 mo of age), middle (T2; 20 mo), and late fattening phases (T3; 28 mo). Relative mRNA expression, blood metabolite concentrations, hormone concentrations, growth, and carcass traits were analyzed. To identify the regulatory factors of hepatic ANGPTL3, primary bovine hepatocytes collected by two Holstein calves aged 7 wk were incubated with insulin, palmitate, oleate, propionate, acetate, or beta-hydroxybutyric acid (BHBA). The ANGPTL3 gene was most highly expressed in the liver, with minor expression in the renal cortex, lungs, reticulum, and jejunum in Holstein bull calves. In Japanese Black steers, relative ANGPTL3 mRNA expressions were less as fattening progressed, and blood triglyceride, total cholesterol, and nonesterified fatty acid (NEFA) concentrations increased. Relative ANGPTL8 and Liver X receptor alpha (LXRα) mRNA expressions decreased in late and middle fattening phases, respectively. Furthermore, relative ANGTPL3 mRNA expression was positively correlated with ANGPTL8 (r = 0.650; P < 0.01) and ANGPTL4 (r = 0.540; P < 0.05) in T3 and T1, respectively, and LXRα showed no correlation with ANGPTL3. Relative ANGTPL3 mRNA expression was negatively correlated with total cholesterol (r = -0.434; P < 0.05) and triglyceride (r = -0.645; P < 0.01) concentrations in T3 and T1, respectively; There was no significant correlation between ANGTPL3 and carcass traits. Relative ANGTPL3 mRNA expression in cultured bovine hepatocytes was downregulated in oleate treatment. Together, these findings suggest that ANGPTL3 downregulation in late fattening phases is associated with the changes in lipid metabolism.

Promotion and sustainable development of beef cattle farming industry in agro-pasture ecotone areas, Inner Mongolia of China: A comparison between two fattening systems

The agro-pasture ecotone is distributed all around the world. In these areas, the productive land forces are decreasing, and due to the irrational economic activities and the vulnerable ecological environment in these regions occurs land degradation. This study focuses on the effect of two different fattening approaches of beef cattle and output from the economic point of view by using a cost-benefit analysis technique in the eastern agro-pasture ecotone of Inner Mongolia, China. This study considers the environmental, social, and economic costs as input factors and concludes that both fattening systems have different characteristics. The result shows that the intensive farming system has more fluctuation and instability in terms of the number of animals due to the feed shortage in the local area. In comparison, the continuous fattening system is much more efficient and sustainable in terms of cost management and benefit analysis due to the local condition of the area. The empirical results indicate that the beef cattle industry has a high marginal return. Our research highlights the need to prioritize local resources and incorporate feed-intensity analysis in livestock.

The Investigation of Protein Profile and Meat Quality in Bovine Longissimus thoracic Frozen under Different Temperatures by Data-Independent Acquisition (DIA) Strategy

The influence of freezing on the protein profile and quality traits in bovine Longissimus thoracic (LT) muscle was investigated by the data-independent acquisition (DIA) technique. Compared to fresh meat, a total of 262 proteins were identified as differential abundance proteins (DAPs) in four frozen groups (−12 °C, −18 °C, −38 °C, and −80 °C). According to the bioinformatics analysis, most of the DAPs in the significant Go terms and the KEGG pathway were structure proteins and enzymes. Proteome changes in the frozen bovine muscle at −12 °C and −18 °C were more significant than those at −38 °C and −80 °C. The result was consistent with the deterioration trend of the meat quality. The correlation analysis revealed that 17 proteins were correlated closely with the color, shear force, thawing loss, and cooking loss of the frozen meat, which could be used as putative biomarkers for frozen meat quality. MYO18A and ME3 are newly discovered proteins that are associated with frozen beef quality. In addition, CTTN and SERPINB6 were identified in frozen groups, which exhibited a significant inverse correlation with thawing loss (p < 0.01). These findings reveal the quality changes induced by freezing at the protein molecular level and provide new insights into the control of quality deterioration.

Changes in the liver transcriptome and physiological parameters of Japanese Black steers during the fattening period

We investigated the physiological changes during the fattening period and production characteristics in Japanese Black steers bred and raised using the typical feeding system in Japan. Here, 21 Japanese Black steers aged 12 months were used, with experimental period divided into early (12–14 months of age), middle (15–22 months), and late fattening phases (23–30 months). The liver transcriptome, blood metabolites, hormones, and rumen fermentation characteristics were analyzed. Blood triglyceride and non-esterified fatty acid concentrations increased, whereas blood ketone levels decreased, with fattening phases. Blood insulin increased with fattening phases and was positively correlated with carcass weight and marbling in late fattening phases. Rumen fermentation characteristics showed high propionate levels and low butyrate levels in late fattening phases, likely due to increased energy intake. Genes related to glucose metabolism, such as SESN3, INSR, LEPR, and FOXO3, were down-regulated in late fattening phases. Genes related to lipid metabolism, such as FABP4, were up-regulated, whereas FADS1 and FADS2 were down-regulated. These findings suggest that the physiological changes resulted from changes in the energy content and composition of diets. Liver metabolism changed with changes in fat metabolism. Insulin was strongly associated with physiological changes and productivity in Japanese Black cattle.

Invasion of the Land of Samurai: Potential Spread of Old-World Screwworm to Japan under Climate Change

Temperatures have fluctuated dramatically throughout our planet’s long history, and in recent decades, global warming has become a more visible indicator of climate change. Climate change has several effects on different economic sectors, especially the livestock industry. The Old-world screwworm (OWS), Chrysomya bezziana (Villeneuve, 1914), is one of the most destructive insect pests which is invading new regions as a result of climate change. The economic loss in livestock business due to invasion of OWS was previously assessed by FAO in Iraq to be USD 8,555,000. Other areas at risk of invasion with OWS in the future include Japan. Therefore, maximum entropy implemented in MaxEnt was used to model predictive risk maps of OWS invasion to Japan based on two representative concentration pathways (RCPs), 2.6 and 8.5, for 2050 and 2070. The Area Under Curve (AUC) indicates high model performance, with a value equal to 0.89 (±0.001). In addition, the True Skill Statistics (TSS) value was equal to 0.7. The resulting models indicate the unsuitability of the northern territory of Japan for invasion by OWS. The main island’s southern costs show high and very high invasion suitability, respectively, and both Kyushu and Okinawa are at high risk of invasion with OWS. The predicted risk maps can be considered a warning sign for the Japanese quarantine authority to hasten a control program in order to protect the livestock industry from this devastating pest.

Animal board invited review - Beef for future: technologies for a sustainable and profitable beef industry

The global consumption, notably in developing countries, and production of beef are increasing continuously, and this requires the industry to improve performance and to reduce the environmental impact of the production chain. Since the improvement in efficiency and the highest impacts occur at farm level, it is appropriate to focus on the profitability and environmental sustainability of these enterprises. In many areas of the world, beef production is economically and socially relevant because it accounts for a significant portion of the agricultural production and represents a vital economic activity in mountain and hill districts of many regions, where few alternatives for other agricultural production exist. Due to the important role in the agricultural and food economy worldwide, the future of the beef industry is linked to the reduction of ecological impacts, mainly adopting the agroecological mitigation practices, and the simultaneous improvement of production performances and of product quality. This review analyses the technical and managerial solutions currently available to increase the efficiency of the beef industry and, at the same time, to reduce its environmental impacts in response to the growing concerns and awareness of citizens and consumers.

Environmental impacts of animal-based food supply chains with market characteristics

Animal-based food supply chains lead to significant environmental impacts, which can be influenced by production systems, distribution networks and consumption patterns. To develop strategy aimed at reducing the environmental impact of animal-based food supply chains, the common environmental hotspots among different types of food, the role of transport logistics and the consequence of end market need to be better understood. Life cycle assessment was adopted to model three types of animal-based food chains (beef, butter and salmon), with specific technologies, high spatial-resolution logistics and typical consumption patterns for three markets: local, regional (intra-European) and international. The results confirmed that the farm production stage usually had the greatest environmental impact, except when air transport was used for distribution. Potentially, the role of end market also can significantly influence the environmental impacts. To understand more, three improvement options were examined in detail with regard to hotspots for climate change: novel feed ingredients (farm production stage), sustainable aviation fuel (transport and logistics stage) and reduction of wasted food (consumption and end of life stage). Significant reduction was achieved in the salmon system by sustainable aviation fuel (64%) and novel feed (15%). Minimizing food waste drove the greatest reduction in the beef supply chain (23%) and the international butter supply chain can reduce 50% of GHG mission by adopting sustainable aviation fuel. Combined interventions could reduce GHG emission of animal-based food supply chains by 15% to 82%, depending on market, transport and food waste behaviour. The results show that eco-efficiency information of animal-based foods should include the full supply chain. The effective mitigation strategy to achieve the greatest reduction should not only consider the impacts on-farm, but also detail of the downstream impacts, such as food distribution network and consumption patterns.

Introducing the World's First Global Producer Price Indices for Beef Cattle and Sheep

Global finished cattle and sheep production and prices are becoming increasingly volatile due to various demand, supply, animal disease, and environmental factors. With beef and sheep production systems being globally connected, an approach monitoring the developments of global meat prices as received by producers becomes increasingly important. This paper presents four global price indices for beef and sheep meat based on prices received by livestock producers obtained from 33 beef and 20 sheep producing countries. These indices are: finished cattle, weaner cattle and lambs producer price indices, as well as a lambs and sheep producer price index—all using an internationally standardized approach. These global indices and associated country and regional indices are used to monitor and explain developments in global beef cattle, lambs, and sheep prices over the index period 2000–2019. The global farmgate cattle and sheep prices have been mainly impacted by developments in global supply and demand, as well as changes in international market access. However, factors which are more local in nature, such as droughts, diseases, local economic developments, exchange rates and policy interventions, have also had a considerable impact on price developments.

Abstract

While international beef and sheep meat price developments are usually measured with meat trade prices (provided by FAO), no comparable information exists on world average of national prices that producers receive for livestock. This paper aims to fill this gap by introducing a set of global producer price indices representing cattle, lambs, and sheep prices as received by producers: the agri benchmark of weaner cattle, finished cattle, lambs and lambs and sheep price indices. These Laspeyres, production-weighted indices measure changes in global farm gate prices as provided annually by the agri benchmark Beef and Sheep Network, with this paper covering prices between 2000 and 2019. The results showed that growing Asian imports, local economic developments in South America, the interconnection with the dairy sector in Europe, growth of beef consumption in China and exchange rates shifts are the key factors that drove developments of global beef producer prices over the past 20 years. Droughts in Oceania and the rapid rise in China’s sheep meat prices are highly reflected in the Global Lambs and Lambs and Sheep Meat Price indices. The indices indicate whether cattle and sheep producers globally are receiving more, or less, for the commodity and may increase or reduce production and investment accordingly. This will be of more use if there were similar producer price indices for competing enterprises, such as dairy and cropping, and for competing proteins, such as pigs, poultry, and fish.

Ruminal Protozoal Populations of Angus Steers Differing in Feed Efficiency

The rumen protozoa have been demonstrated to enhance methanogenesis and impact intraruminal recycling of microbial protein. However, they are also known to contribute to fiber degradation and the stabilization of ruminal pH changes. The apparent metabolic impact of ciliated protozoa in the rumen may contribute to the variation in feed efficiency. This study examined the relationship between the rumen protozoa and feed efficiency in beef steers. We monitored feed intake and body weight for a 70-day feed efficiency trial. Following the trial, rumen content was collected, protozoal DNA was extracted from the content, and the relationship between protozoa community diversity and species abundance with feed efficiency was examined. The ciliated protozoal community diversity differed between low- and high-feed efficient steers. Greater abundances of unidentified protozoa genera were detected in the low-feed efficient steers. These data suggest that unidentified protozoa and ciliated protozoal community diversity influence feed efficiency in beef steers.

Abstract

Feed accounts for as much as 70% of beef production costs, and improvement of the efficiency with which animals convert feed to product has the potential to have substantial financial impact on the beef industry. The rumen microbiome plays a key role in determining feed efficiency; however, previous studies of rumen microbiota have not focused on protozoal communities despite the estimation that these organisms represent approximately 50% of rumen content biomass. Protozoal communities participate in the regulation of bacterial populations and nitrogen cycling—key aspects of microbiome dynamics. The present study focused on identifying potential associations of protozoal community profiles with feed efficiency. Weaned steers (n = 50) 7 months of age weighing approximately 260 kg were adapted to a growing ration and GrowSafe for 2 weeks prior to a 70-day feed efficiency trial. The GrowSafe system is a feeding system that monitors feed intake in real time. Body weights were collected on the first day and then every 7 days of the feed efficiency trial, and on the final day, approximately 50 mL of rumen content were collected via orogastric tubing and frozen at −80 °C. Body weight and feed intake were used to calculate residual feed intake (RFI) as a measure of feed efficiency, and steers were categorized as high (n = 14) or low (n = 10) RFI based on ±0.5 standard deviations about the mean RFI. Microbial DNA was extracted, and the eukaryotic component profiled by amplification and sequencing of 18S genes using degenerate primers that can amplify this locus across a range of protists. The taxonomy of protozoal sequences was assigned using QIIME 1.9 and analyzed using QIIME and SAS 9.4 with significance determined at α ≤ 0.05. Greater abundances of unassigned taxa were associated with high-RFI steers (p = 0.03), indicating a need for further study to identify component protozoal species. Differences were observed between low- and high-RFI steers in protozoal community phylogenetic diversity, including weighted beta-diversity (p = 0.04), Faith’s phylogenetic diversity (p = 0.03), and observed Operational taxonomic unit (OTU) (p = 0.03). The unassigned taxa and differences in phylogenetic diversity of protozoal communities may contribute to divergences observed in feed efficiency phenotypes in beef steers.

Assessing Nigerian Butchers' Knowledge and Perception of Good Hygiene and Storage Practices: A Cattle Slaughterhouse Case Analysis

In Nigeria, the National Agency for Food and Drug Administration and Control (NAFDAC) guides the inspection and production of beef meat and prescribes the good practices pertinent to beef products’ handling, processing, and packaging. Specifically, good hygiene practice (GHP) assures beef product safety and consumer protection, whereas good storage practice (GSP) assures the continuity of hygiene activities within the storage stages. Relevant literature about butchers’ knowledge and perception of good hygiene and storage practices within Nigeria slaughterhouses remains scant. This current study, therefore, assessed butchers’ knowledge and perception of good hygiene and storage practices through a cattle slaughterhouse case analysis. The selected cattle slaughterhouse serves the increasingly thriving Nsukka beef market in Enugu State, Nigeria. Content validation was utilised to authenticate the questionnaire items, which were administered face-to-face to the respondents (i.e., the butchers). The questionnaire included a total of 30 questions. The results showed that the butchers were male (Freq. = 100%, n = 50), acquired their knowledge informally (Freq. = 88%, n = 44), were largely with more than 5 years of slaughterhouse experience (Freq. = 82%, n = 41), and were strongly (p < 0.0001) familiar with good hygiene (Freq. = 96%, n = 48) and storage (Freq. = 98%, n = 49) practices. The butchers provided examples that demonstrated knowledge and perception aspects of GHP and GSP. The perception aspects of GHP and GSP were correlated more, compared to knowledge and knowledge versus perception. Very conscious of their knowledge and perception of good hygiene and storage practices, the butchers herein have to strive for continuous improvement in their slaughterhouse activities to assure beef quality and consumer safety.

Researching Human-Cattle Interaction on Rangelands: Challenges and Potential Solutions

Simple Summary

Research investigating the influence of human-animal interactions on beef cattle production and welfare often occurs during stress-inducing contexts, such as restraint and transport. Given that beef cattle which graze on expansive rangelands do not frequently interact with humans, assessment of animal response to humans may be inaccurate if they are only recorded during such stressful context. Future research aimed at identifying the causes and impacts of individual human–cattle relationships may consider conducting experiments while the cattle are in a low stress context, such as while ruminating, resting, or, grazing. By adapting methods used to research wildlife response to humans, researchers may be able to better understand how animal personality and previous experience can influence cattle production and welfare.

Abstract

Human-animal interaction (HAI) research spans across many scientific fields and animal taxa. For livestock species, HAI research tends to focus on animals that are managed in close proximity with humans such as poultry, dairy cattle, and swine. Given the nature of rangeland cattle production, HAI research with beef cattle often occurs in and around the processing environment. This high arousal context may skew behavioral and physiological responses by the animals due to the potentially negative interaction. The aim of this review is to describe cattle production on rangelands, examine the considerations and limitations of current HAI research used to evaluate interaction quality or traits of rangeland cattle, identify contexts in which rangeland cattle interact with humans, and provide recommendations for improving future HAI research with rangeland cattle. Current research delineating individual differences in response to humans by beef cattle occur during routine husbandry and management on rangelands (pragmatic) and in a research context (experimental). Human-cattle interactions can be distinguished based on the quality and goal of the interaction into four broad categories: human presence, human approach, human contact, and restraint. Limitations of HAI research with rangeland cattle are identified and reconciled by recommendations for HAI research that can take place outside of the processing environment (i.e., while cattle are ruminating, resting or grazing on rangelands).

Transforming growth factor-β superfamily and interferon-τ in ovarian function and embryo development in female cattle: review of biology and application

Survival of the embryo and establishment of a pregnancy is a critical period in the reproductive function of female cattle. This review examines how the transforming growth factor-β (TGFB) superfamily (i.e. bone morphogenetic protein (BMP) 15, growth differentiation factor (GDF) 9, anti-Müllerian hormone (AMH)) and interferon-τ (IFNT) affect ovarian function and embryo development. The oocyte in a primary follicle secretes BMP15 and GDF9, which, together, organise the surrounding granulosa and theca cells into the oocyte-cumulus-follicle complex. At the same time, the granulosa secretes AMH, which affects the oocyte. This autocrine-paracrine dialogue between the oocyte and somatic cells continues throughout follicle development and is fundamental in establishing the fertilisation potential and embryo developmental competency of oocytes. The early bovine embryo secretes IFNT, which acts at the uterine endometrium, corpus luteum and blood leucocytes. IFNT is involved in the maternal recognition of pregnancy and immunomodulation to prevent rejection of the embryo, and supports progesterone secretion. Manipulation of BMP15, GDF9, AMH and IFNT in both invivo and invitro studies has confirmed their importance in reproductive function in female cattle. This review makes the case that a deeper understanding of the biology of BMP15, GDF9, AMH and IFNT will lead to new strategies to increase embryo survival and improve fertility in cattle. The enhancement of oocyte quality, early embryo development and implantation is considered necessary for the next step change in the efficiency of natural and assisted reproduction in cattle.

Network analysis and functional estimation of the microbiome reveal the effects of cashew nut shell liquid feeding on methanogen behaviour in the rumen

The effects of cashew nut shell liquid (CNSL) feeding on the methane (CH4 ) emission and the ruminal microbiome of Lai Sind beef cattle were investigated. Changes in the methane production and rumen microbiome by CNSL feeding were monitored by a respiration chamber and 16S rRNA gene amplicon sequencing respectively. The results demonstrated that CNSL feeding mitigated 20.2%-23.4% of the CH4 emission in vivo without apparent adverse effects on feed intake and feed digestibility. The rumen fluid analysis revealed a significant increase in the proportion of propionate in the total short-chain fatty acids. The relative abundance of methanogen (order Methanobacteriales) decreased significantly, indicating the direct inhibitory effect of CNSL on methanogens. The predicted function of the rumen microbiome indicated that carbohydrate and lipid metabolisms including propionate production were upregulated by CNSL feeding, whereas CH4 metabolism was downregulated. A network analysis revealed that methanogen changed its partner bacteria after CNSL feeding. The δ13 C of CH4 ranged from -74.2‰ to -66.6‰ with significant fluctuation by CNSL feeding, in agreement with the shift of the rumen microbiome. Our findings demonstrate that CNSL feeding can mitigate the CH4 emission from local cattle production systems in South-East Asia by modifying the rumen microbiome and its function.

Genome-wide association study and pathway analysis for fat deposition traits in nellore cattle raised in pasture-based systems

Genome-wide association study (GWAS) is a powerful tool to identify candidate genes and genomic regions underlying key biological mechanisms associated with economically important traits. In this context, the aim of this study was to identify genomic regions and metabolic pathways associated with backfat thickness (BFT) and rump fat thickness (RFT) in Nellore cattle, raised in pasture-based systems. Ultrasound-based measurements of BFT and RFT (adjusted to 18 months of age) were collected in 11,750 animals, with 39,903 animals in the pedigree file. Additionally, 1,440 animals were genotyped using the GGP-indicus 35K SNP chip, containing 33,623 SNPs after the quality control. The single-step GWAS analyses were performed using the BLUPF90 family programs. Candidate genes were identified through the Ensembl database incorporated in the BioMart tool, while PANTHER and REVIGO were used to identify the key metabolic pathways and gene networks. A total of 18 genomic regions located on 10 different chromosomes and harbouring 23 candidate genes were identified for BFT. For RFT, 22 genomic regions were found on 14 chromosomes, with a total of 29 candidate genes identified. The results of the pathway analyses showed important genes for BFT, including TBL1XR1, AHCYL2, SLC4A7, AADAT, VPS53, IDH2 and ETS1, which are involved in lipid metabolism, synthesis of cellular amino acids, transport of solutes, transport between Golgi Complex membranes, cell differentiation and cellular development. The main genes identified for RFT were GSK3β, LRP1B, EXT1, GRB2, SORCS1 and SLMAP, which are involved in metabolic pathways such as glycogen synthesis, lipid transport and homeostasis, polysaccharide and carbohydrate metabolism. Polymorphisms located in these candidate genes can be incorporated in commercial genotyping platforms to improve the accuracy of imputation and genomic evaluations for carcass fatness. In addition to uncovering biological mechanisms associated with carcass quality, the key gene pathways identified can also be incorporated in biology-driven genomic prediction methods.

Pesticides Used on Beef Cattle Feed Yards Are Aerially Transported into the Environment Via Particulate Matter

Considering the recent discovery of veterinary pharmaceutical aerial transport from industrial cattle feeding operations via particulate matter, the objective of this study is to determine the extent to which insecticides are also transported into the environment by total suspended particulates emanating from beef cattle feed yards. Of 16 different pesticides quantified in particulate matter samples collected from beef cattle feed yards, permethrin was detected most frequently at >67% of particulate matter samples and at a mean concentration of 1211.7 ± 781.0 (SE) ng/m³. Imidacloprid was detected at a mean concentration of 62.8 ± 38.2 (SE) ng/m³ or equivalent to published concentrations in dust from treated seed planting activities. When insecticide concentrations observed in this study are projected to all United States of America feed yards, the resulting particulate matter (669,000 kg) could contain enough insecticides (active ingredient mass basis) to kill over a billion honeybees daily. Furthermore, a novel transport pathway for macrocyclic lactone entry into the environment was identified. These data raise concern that nontarget organisms may be exposed to potentially toxic levels of pesticides from beef cattle feed yards.

Chemistry, safety, and regulatory considerations in the use of nitrite and nitrate from natural origin in meat products - Invited review

Nitrite and nitrate have been traditionally used for the preservation of meat products because of the effective antimicrobial action of nitrite against Clostridium botulinum, the outgrowth of its spores as well as other bacteria. However, the use of nitrite and nitrate has been questioned in last half century due to the possible generation of N-nitrosamines through reaction of nitrite with secondary amines. Nitrite replacement strategies began in the 70s addressing these issues and instigated searches for natural alternatives to nitrate and nitrite, or for natural sources of nitrite and nitrate such as vegetable extracts. These alternatives have been considered by producers and consumers as an attractive practice even though they may also have some risks. This manuscript reviews and discusses the chemistry, safety, and regulatory considerations in the use of nitrite and nitrate from natural origin for the preservation of meat products.

Ruminal Fermentation Pattern, Bacterial Community Composition, and Nutrient Digestibility of Nellore Cattle Submitted to Either Nutritional Restriction or Intake of Concentrate Feedstuffs Prior to Adaptation Period

Beef cattle are key contributors to meat production and represent critical drivers of the global agricultural economy. In Brazil, beef cattle are reared in tropical pastures and finished in feedlot systems. The introduction of cattle into a feedlot includes a period where they adapt to high-concentrate diets. This adaptation period is critical to the success of incoming cattle, as they must adjust to both a new diet and environment. Incoming animals are typically reared on a variety of diets, ranging from poor quality grasses to grazing systems supplemented with concentrate feedstuffs. These disparate pre-adaptation diets present a challenge, and here, we sought to understand this process by evaluating the adaptation of Nellore calves raised on either grazing on poor quality grasses (restriction diet) or grazing systems supplemented with concentrate (concentrate diet). Given that nutrient provisioning from the diet is the sole responsibility of the ruminal microbial community, we measured the impact of this dietary shift on feeding behavior, ruminal fermentation pattern, ruminal bacterial community composition (BCC), and total tract digestibility. Six cannulated Nellore bulls were randomly assigned to two 3 × 3 Latin squares, and received a control, restriction, or concentrate diet. All cohorts were then fed the same adaptation diet to mimic a standard feedlot. Ruminal BCC was determined using Illumina-based 16S rRNA amplicon community sequencing. We found that concentrate-fed cattle had greater dry matter intake (P < 0.01) than restricted animals. Likewise, cattle fed concentrate had greater (P = 0.02) propionate concentration during the adaptation phase than control animals and a lower Shannon’s diversity (P = 0.02), relative to the restricted animals. We also found that these animals had lower (P = 0.04) relative abundances of Fibrobacter succinogenes when compared to control animals during the pre-adaptation phase and lower abundances of bacteria within the Succinivibrio during the finishing phase, when compared to the control animals (P = 0.05). Finally, we found that animals previously exposed to concentrate were able to better adapt to high-concentrate diets when compared to restricted animals. Our study presents the first investigation of the impact of pre-adaptation diet on ruminal BCC and metabolism of bulls during the adaptation period. We suggest that these results may be useful for planning adaptation protocols of bulls entering the feedlot system and thereby improve animal production.

High-density diet improves growth performance and beef yield but affects negatively on serum metabolism and visceral morphology of Holstein steers

The objective of this study was to evaluate the effect of different dietary densities on growth performance, carcass characteristics, meat quality, serum metabolism, ruminal papillae morphology and liver injuries of steers. For this purpose, a total of eighteen Holstein steers were randomly fed one of the three diets: high energy and protein diet (H), standard energy and protein diet (C), and low energy and protein diet (L) for 11 months fattening with three-step finishing strategy. Steers fed with H diet had higher (p < .05) average daily gain, feed efficiency, hot carcass weight, serum aspartate aminotransferase to alanine aminotransferase ratio, and monounsaturated fatty acids along with continuous low ruminal pH value, severer hepatic steatosis and ruminal papillae parakeratosis. Meanwhile, steers fed L diet increased the proportion of C20:0, C22:6n-3, saturated fatty acids and n-3 polyunsaturated fatty acids along with lower n-6 to n-3 ratio in longissimus dorsi muscle as compared to that of steers fed H diet. Dietary densities did not influence (p > .10) proximate nutrients and sensory characteristics of beef. The present study indicates that Holstein steers could achieve better growth and carcass performance under high-density diet, whereas they are under threat of visceral injuries and metabolic disorders. This study gives comprehensive relationship between productivity and animal health and suggests that a proper diet should be adopted for fattening Holstein steers in consideration of both beef quality and quantity and animal health.

Cluster analysis of beef production distribution in Europe

Fragmentation and poor connection within the beef production industry affects its positive contribution to the economy, land management, and development of rural areas. Despite the third place in world beef production European countries have achieved one of the best results in environmental management of cattle breeding worldwide. On the other side there is a huge variability of beef and veal production on national and regional level, reflecting the varied geographical, economic and social requirements of different European regions. Even in case of moderate beef consumption (16 kg per capita per year) in the European Union, meat as the source of proteins of animal origin is connected to higher value added, higher employment, profit and incomes in agriculture comparing to crop production. On the other side it also requires higher investments and represents a greater risk. Different levels of agrarian subsidies and the efficiency of their use exacerbate the differences in the production of beef and veal in the countries of the European Union. In submitted paper we investigated beef production distribution similarity of selected countries in Europe. Quantitative approach was applied using cluster analysis in accordance with the Ward's minimum variance method with previous computation of similarity of the territories through the Euclidean distance. Three clusters representing the beef production similarity among the explored countries were visualised by dendrograms within observed steps in the year 2008 and the year 2017. Order of similarity and dissimilarity in beef production according to the Euclidean distance values of all the possible pairs of the districts from the whole data set in observed countries was processed for examined period of time. Finally, the heat maps were constructed to demonstrate the similaritity between each pair of the comprised countries. Obtained results could serve as a valuable resource for meat producers to understand the time dynamics impact and differences in level of beef production in European countries.
