Abstract
Although goat meat has several health benefits than other red meats but comsumers reluctant it due to its unpleasant flavor. This study aimed to investigate the odorant of goat meat as well as compare the quality traits of meat regarding sex status. The loin meats [non-castrated male (NCM), castrated male (CM), and female (FM)] were collected and stored at 4°C in a laboratory refrigerator and analyzed on the 1st, 5th, and 8th consecutive days. The moisture content was the lowest and the protein content was highest in FM (p<0.05). Fat and ash content in NCM and FM were similar while lowest in CM. The CIE L* was significantly higher in NCM, but there were no significant differences of CIE a* and CIE b* within groups at initial day. The color intensity increased on the 5th storage day and decreased again after the 8th storage day, except in NCM. NCM displayed the highest thiobarbituric acid reactive substances value (p<0.05), whereas CM displayed a higher pH value than other groups throughout the storage period. Indole levels were the highest in NCM (0.031 mg/kg); however, skatole levels were not significant differences across all treatments (p>0.05). No significant difference was observed in the fatty acid composition between NCM and CM (p>0.05), whereas a significant difference was observed in FM (p<0.05). Most of the water-soluble metabolites showed significant differences between sexes. Overall, sex status effects on quality properties of meat and castration can improve the overall sensory acceptance by reducing goaty flavor of Korean native black goat meat.

Abstract
The objective of this study was to see how dried Mitragyna speciosa Korth leaves (DKTL) affected growth, hematological parameters, carcass characteristics, muscle chemical composition, and fatty acid profile in finishing goats. In a randomized complete block design, twenty crossbred males (Thai Native x Boer) weaned goats (17.70 ± 2.50 kg of initial body weight (BW)) were provided to the experimental animals (5 goats per treatment) for 90 days. Individual dietary treatments of 0, 2.22, 4.44, and 6.66 g/d of DKTL on a dry matter basis were given to the goats. The diets were provided twice daily as total mixed rations ad libitum. In comparison to the control diet, DKTL supplementation had no effect on BW, average daily gain (ADG), feed conversion ratio (FCR), carcass composition, meat pH, or meat color (p > 0.05). After DKTL treatment, the hot carcass weight, longissimus muscle area, oleic acid (C18:1n9), monounsaturated fatty acid (MUFA), and protein content increased, but saturated fatty acids (SFA) and ether extract decreased (p < 0.05). To summarize, DKTL supplementation can improve goat meat quality.

Abstract
Sustainable goat breeding plays an important role in the economy of marginal areas. The present study aimed to compare performances and meat quality traits in kids of a native Apulian genotype (Garganica) in comparison with two Mediterranean breeds (Maltese and Derivata di Siria). Kids suckled dam milk until they were 21 (±2) days old, hence three groups of 12 male kids per each genotype were made. The kids received a pelleted feed ad libitum in addition to dam milk and were slaughtered at 60 days of age. The Maltese kids showed the lowest net cold-dressing percentage, with statistical differences compared to Garganica and Derivata di Siria. Meat obtained from Garganica kids showed a rosy color due to a significantly lower a* index and were also more tender since a lower WBS was recorded in comparison with the other two genotypes. As for the nutritional value of meat, the best n-6/n-3 ratio was found for the Derivata di Siria breed. In conclusion, Garganica kid meat showed the lowest content of SFA and atherogenic index, with potential beneficial effects for human health.

Abstract
Goat genotype may alter the net energy and protein requirements for maintenance (NEm and NPm, respectively) and weight gain (NEg and NPg).This study was designed to investigate and quantify the effect of goat type on NEm, NPm, NEg and NPg, and quantify the net requirements for energy and protein for dairy, meat and indigenous growing male goats. For that, comparative slaughter studies were gathered and a meta-analytical approach was used. Two distinct databases were organized: one composed of 233 individual records from 11 studies of meat (n = 81), dairy (n = 97) and indigenous (n = 55) growing male goats weighing from 4.50 to 51.0 kg, to depict NEm and NPm; and another database composed of 239 individual records from nine studies of meat (n = 87), dairy (n = 97) and indigenous (n = 55) growing male goats weighing from 4.30 to 51.0 kg, to depict NEg and NPg. Our findings showed that NEm of meat goats was 8.5% greater (336 ± 10.8 kJ/kg0.75 of empty BW; EBW) than dairy and indigenous goats (310 ± 8.20 kJ/kg0.75 EBW; P < 0.05). Whereas, NPm was not affected by goat type (1.92 ± 0.239 g/kg EBW; P = 0.91). The NPg was 185.1 ± 1.82 g/kg of EBW gain for goats weighing 5 kg BW and 192.5 ± 4.33 g/kg of EBW gain for goats weighing 45 kg BW, and thus did not change across goat type (P = 0.12). On the other hand, NEg increased from 7.29 ± 0.191 to 11.9 ± 0.386 MJ/kg of EBW in male dairy goats, and from 7.32 ± 0.144 to 15.7 ± 0.537 MJ/kg of EBW in meat and indigenous growing male goats weighing between 5 and 45 kg BW. When body protein was used as a predictor in the allometric equation instead of EBW seeking to account for the degree of maturity, goat type differences disappeared; however, this predictor showed a high variation among individuals. In conclusion, energy and protein requirements for gain in distinct goat types reflect on body composition differences. Future research should focus on better understanding the maturity degree and its consequences in the energy requirement of growing male goats and better depict the goat type effect on it, as well as on the efficiency of utilization.

Abstract
The objective was to evaluate the use of condensed tannin (CT)-rich ground pine bark (PB) in grain mixed diets on meat goat growth performance, blood metabolites, and carcass characteristics. Twenty four Kiko crossbred (Capra aegagrus hircus) growing male kids (BW = 36.9 ± 2.5 kg) at approximately 8 months of age were assigned randomly to 2 treatments with 3 replicates per treatment and 4 goats per replicate. The goats were fed grain mixed diets composed of either 30% bermudagrass hay (BGH) plus concentrate (control) or 30% PB plus concentrate. Diets were fed at 1.2% of BW. In addition, all goats grazed a crabgrass/bermudagrass (CB)-based pasture. The feeding trial lasted for 55 d. Using ground PB as a supplement did not negatively affect BW, average daily gain (ADG), carcass characteristics, meat pH, and meat color compared to the control diet. Plasma gamma-glutamyl transferase (P = 0.03), glucose (P < 0.01) and Ca concentrations (P = 0.04) were higher for PB than for BGH, respectively. The 30% PB supplementation does not negatively affect animal performance, blood metabolites, and carcass parameters.

Abstract
The aim of this study was to determine meat quality characteristics and fatty acid composition of Korean native black goats (KNBG) finished on intensive feeding of alfalfa (ALF) and conventional feeding of commercial concentrate pellets (CCP) with low-energy common grasses. Ten KNBG (12 months old) were divided into two groups and subjected to either ALF or CCP treatments. The goats were slaughtered after 6 months of feeding with experimental diets to investigate meat quality characteristics and fatty acid compositions of longissimus lumborum muscle. There were no significant differences in proximate chemical composition, collagen, or myoglobin content between ALF and CCP groups of goats. Meat color, water-holding capacity, or tenderness was not significantly different between the two groups either. However, proportions of monounsaturated fatty acids and polyunsaturated fatty acids were significantly (p<0.05) different between the two groups. The proportion of oleic acid was significantly (p<0.05) higher in ALF goat whereas proportion of linoleic and arachidonic acids were significantly (p<0.05) higher in CCP goat. Results suggest that KNBG finished with intensive feeding of alfalfa could produce goat meat with desirable fatty acids for human diets.
