Electromagnetic fields effects on microbial growth in cocoa fermentation: A controlled experimental approach using established growth models

Understanding the effects of electromagnetic fields is crucial in the fermentation of cocoa beans, since through precise control of fermentation conditions the sensory and nutritional properties of cocoa beans could be improved. This study aimed to evaluate the effect of oscillating magnetic fields (OMF) on the kinetic growth of the core microbial communities of the Collections Castro Naranjal (CCN 51) cocoa bean. The data was obtained by three different models: Gompertz, Baranyi, and Logistic. The cocoa beans were subjected to different OMF strengths ranging from 0 mT to 80 mT for 1 h using the Helmholtz coil electromagnetic device. The viable microbial populations of lactic acid bacteria (LAB), acetic acid bacteria (AAB), and yeast (Y) were quantified using the colony-forming unit (CFU) counting method. The logistic model appropriately described the growth of LAB and Y under magnetic field exposure. Whereas the Baranyi model was suitable for describing AAB growth. The microbial populations in cocoa beans exposed to magnetic fields showed lower (maximum specific growth rate (μmax), values than untreated controls, with AAB exhibiting the highest average growth rate value at 5 mT and Y having the lowest average maximum growth rate value at 80 mT. The lower maximum specific growth rates and longer lag phases when exposed to magnetic fields compared to controls demonstrate the influence of magnetic fields on microbial growth kinetics.

Kinetics of different bioreactor systems with Acidithiobacillus ferrooxidans for ferrous iron oxidation

The relative performance of two biofilm-based airlift reactors using different kinds of packing materials and one fixed bed biofilm reactor with a homemade packing material of high specific area (~ 1000 m2/m3) was addressed. The bioreactors operated under ferrous iron loading rates in the range of 8–120 mol Fe(II)/m3 h. Acidithiobacillus ferrooxidans cells immobilized in the three bioreactors afforded the reactions for an extended period of 120 days of continuous operation at the dilution rates of 0.2, 0.4, 0.7, 1 and 1.2 h−1. The maximum ferrous iron oxidation rates achieved in this study at a hydraulic residence time of 1.2 h were about 91, 68 and 51 mol Fe(II)/m3 h for the fixed bed, airlift1, and airlft2 bioreactors. The performance data from the fixed-bed bioreactor offered a higher potential for ferrous iron oxidation because of fast biofilm development, the formation of a thick biofilm, and lower sensitivity to shear, which enhanced the startup time of the bioreactor and the higher reactor productivity. Proper kinetic models were also presented for both the startup period and the steady-state process.

Rapid mineralisation of the Organic Fraction of Municipal Solid Waste

The effect of pH, C/N ratio, addition of a microbial consortium (MC) and temperature upon mineralisation of Organic Fraction of Municipal Solid Waste (OFMSW) was studied; mineralisation was measured through the CO2 production rate and total CO2 formation. Through this process up to 432.9mg of CO2g(-1) initial dry matter (IDM) after 2days of treatment was obtained. It was found that under a slightly acidic pH (5-6) and C/N of 30, the mineralisation process was accelerated. Moreover, temperature (27-50°C) had no effect on the total CO2 produced. The highest CO2 production rate (5.28d(-1)) was observed at 27°C, C/N ratio of 30 and 8% of microbial consortium; it is at least 3.52 times higher than that reported (1.5d(-1)). The highest release of reducing sugars was determined at 50°C, possibly due to an increase in hydrolytic enzymes. Results suggest the potential use of rapid mineralisation of OFMSW for further friendly environmental processes.
