Abstract
The world-wide-dispersed Rhododendron is a tiny, evergreen plant with vivid red or pale pink blossoms that is a member of the Ericaceae family and is well-known for its stunning flowers. To improve yogurt's nutritional profile and sensory qualities, this study investigates an innovative application of Rhododendron flower powder (RFP). The potential health benefits of Rhododendron flowers, which are a rich source of bioactive compounds such as polyphenols and antioxidants, have attracted attention. Consequently, the physicochemical, phytochemical, and sensory qualities of fortifying yogurt with RFP at various concentrations were studied. The results showed that the texture and color of the yogurt were highly influenced by the addition of RFP. The addition of this functional ingredient also resulted in a significant increase in the yogurt's polyphenol content and antioxidant capacity. These findings demonstrate the suitability of RFP in yogurt formulations as a functional food ingredient, being a good source of phenolics.

Rhododendron is a resourceful, evergreen shrub or a small tree with an ornate display
of scarlet red or pale pink flowers that belongs to the family Ericaceae. Rhododendron
plants are traditionally used to treat numerous human ailments like blood dysentery, headache,
asthma, cough, stomachache, fever, inflammation and fungal infections. Rhododendron also
has economic, medicinal, and pharmacological importance. Rhododendron has been regarded
as a rich source of secondary metabolites. Apart from aesthetic and sacred values, from past
times, Rhododendron juice was prepared from the flowers to curb allergies, treat diabetes and
deal with inflammations. Recent studies have shown several promising activities particularly
relaxant, digestive enzyme, antioxidant, antimicrobial, antispasmodic, anticancer and antagonistic
effects. With the rapidly growing popularity of Rhododendron arboreum, it is important
to have a comprehensive reference for its nutritional benefits with the growing search for natural
and healthy foods. This work aimed to review the recent advances in research carried out to
date for the purposive evaluation of the nutritional quality and potential health benefits of Rhododendron
arboreum for its utilization in food processing industries for composing novel value-
added products, to achieve high consumer acceptability and health benefits.

Abstract
A numerous types of tree flowers are present in nature and few of them such as Rhdodendron, Bauhinia, Mahua, Gulmohar, Palash, Sesbania, Woodfordia, Simbal, etc. are being utilized traditionally as food and medicine by the localities of India. These flowers are rich in phytochemical (flavonoids, anthocyanins, phenolic acids, carotenoids, tannins, saponins) and possessing numerous health benefits (antioxidant activity, anti-inflammation, anti-cancer activity, anti-diabetic activity, hepatoprotective activity). However, because of the low availability (i.e. short blooming period and at limited places) and poor post-harvest life, these flowers are commonly utilized by the local people as food and medicines during their respective flowering times only. A few attempts have been made toward the utilization of some tree flowers (Mahduca longifolia, Rhododendron arboretum), but others are still unexplored and need to be exploited to achieve food and nutritional security as well increase the opportunity of employment and improvement in the socio-economic status of the local tribes. Therefore, to achieve this, the present review was aimed to review and document the status of common edible tree flowers, their phytochemicals potential and, health benefits as well as their utilization as food and medicines.
