Abstract
Singapore is famous for its diverse, affordable, and exciting foodscape. This paper focuses on understanding the multifaceted role that the Singaporean food environment plays in working young adults' lives, and how young adults interact with this environment to make food choices. Using a focused ethnographic approach, including 33 semi-structured interviews and participant-observation, we explore the ways in which busy working young adults interact with the foodscape. The food environment provides young adults, who eat out frequently, with highly accessible food options that cater to their budgets and palates. They often dine at hawker centres and similar food establishments with colleagues, friends and family. These establishments offer accessible, affordable, and appealing food. Overall, the foodscape provides a source of popular entertainment through the exploration of diverse cuisines and novel shared social experiences. Young adults are heavy users of social media to maintain social networks and to explore the food environment. Capitalizing on this, food marketing on social media targets this group with the promotion of food-related experiences. While it may not always promote healthy eating, the Singaporean foodscape offers convenience, choice, entertainment, and sociality. In the process, it facilitates the formation of cultural and national identity and the protection of mental well-being through the maintenance and development of relationships, and a sense of belonging.

Abstract
The prevalence of inflammatory bowel disease (IBD) is increasing substantially in non-White races and ethnicities in the United States. As a part of promoting quality of life in patients with IBD, the optimization of food-related quality of life (FRQoL) is also indicated. It is known that the practices of food avoidance and restrictive eating are associated with a reduced FRQoL in IBD. Gaining insight into sociocultural influences on FRQoL will aid in the provision of culturally competent interventions to improve FRQoL in patients with IBD.

Abstract
This research aimed to understand the consumption practices of plant-based meat substitutes (PBMS). Semi-structured in-depth interviews were conducted with consumers and Social Practice Theory (SPT) was adopted as the theoretical framework to explore emerging themes relating to consumer practices. Findings indicate that consumers engage in a number of related practices that include the acquisition, preparation, and consumption of PBMS which were embedded within a larger network of practices that included storage, substitution, and food safety, as well as broader meat-based, meat-free, plant-based, and social and cultural practices. This paper highlights the importance of social and cultural structures in facilitating product awareness, and meaning and skill development in the context of dietary and behavioural change. Implications for research, marketing, and policymaking practices are discussed with regard to the marketing of plant-based meat substitutes as well as shifting consumer behaviour.

Abstract
African American women, in particular, have learned to navigate through a food consumption landscape that purposefully, and often aggressively, limits their choices and stigmatizes their resulting physical appearance, and renders them collectively unattractive and unworthy. While American women are challenged to subscribe to traditional slim body standards, a faction of Americans have differing opinions. African American (AA) women celebrate larger body types and defy weight stigma. When African Americans make food choices, taste and cost are not the only factors influencing those choices; the cultural role of food is also considered. We conducted semi-structured interviews with 12 African American girls to identify some of the consequences of this consumption practice that challenges what we argue is a hegemonic taste regime surrounding body size. This work further elucidates the ways in which the African American community has operationalized the concept of cultural capital around the issues of body image to create what we suggest is a type of emotional well-being. In addition to uncovering marketing channels promoting anti-obesity campaigns that would be more likely to capture their attention, our findings also reveal that AA girls embrace shapely bodies, despite not necessarily having one themselves, and overall possess a more positive body image than their Caucasian peers. Having shapely bodies was deemed more attractive among romantic interests and acceptable overall in the AA community regardless of the associated health risks associated with consuming unhealthy foods.

Abstract
PURPOSE OF REVIEW Food culture is a ubiquitous aspect of all societies. This review provides an overview of methods for measuring food culture, and emphasizes the importance of these measures not just for description, but also for strengthening public health practice, primarily through the development of better interventions; to monitor and evaluate changes in diet and nutrition; and for the development of strategies for sustainability and dissemination. RECENT FINDINGS Food culture measurement has enriched public health practice through its use of myriad approaches, including interviews, cultural domain analysis, visual methods, observation, time allocation studies, focus groups and community workshops, household studies, and textual analysis. Food culture measurement is essential for public health practice related to food and nutrition, and can lead to, among other outcomes, improved implementation research in nutrition, understanding household dynamics that impact nutritional outcomes, innovative textual analysis to identify food culture through language, and the selection of interventions conveyed through multiple strategies, including digital means, such as via social media.

Abstract
Most studies have suggested that dietary choices have effects on both the environment and human health; however, they have ignored food culture, which is both an "independent variable" and a "dependent variable" of diet choice. The purpose of this study is to explore a diet optimization path that meets nutritional needs and has little impact on the environment, while respecting the local food culture to a large extent. We took China's Xinjiang Uygur autonomous region (hereinafter referred to as "Xinjiang") as the case area because Xinjiang is a multiethnic region with a unique food culture characterized by a high proportion of mutton in meat. According to the study's calculation, the current diet in Xinjiang has a high carbon footprint (CF), water footprint (WF) and ecological footprint (EF) and does not present the nutritional structure of a balanced diet. Considering the trade-offs among environmental carrying capacity, health and food culture is the challenge of changing the local food structure. With the method of multi-objective optimization, we propose "optimal diets", which show potential for mitigating environmental impacts and improving the state of health. Most importantly, one of the optimized diets is most desirable because it considers the preservation of the existing food culture. This study demonstrates the feasibility of providing a route for diet transformation that has double benefits regarding the environment and health, or even triple benefits regarding the environment, health and cultural acceptability.

Abstract
Babushka informal markets selling several homemade gastronomic plant and animal-based products and culinary preparations, as well as wild and cultivated plants, and sometimes family butchered barnyard animals are extremely popular in Ukraine. In this field study that we conducted over a few years we inventoried the most relevant food plant products sold in these markets and we analysed how these markets represent remarkable food refugia for several local niche foods. In addition, we researched the historical and socio-economic reasons for the start, survival, and revival of this phenomenon, which had its origin during the Communist period. We furthermore evaluated similar recent trends in other Eastern European countries and especially those which had a very different post-Communist trajectory with the aim of addressing the possible factors affecting their survival and what could be done to preserve their existence. In particular, in a few of these countries (i.e. Azerbaijan) we observed how informal food markets represent experimental fields where gastronomic knowledge is not only “preserved”, but also reinvented, possibly in response to the preferences and requests of a city's customers.

Abstract
Opisthorchis viverrini (Ov) is a fish-borne parasite endemic in parts of Lao PDR, Cambodia, southern Vietnam and Northeast Thailand (Isaan) where an estimated 10 million people are infected. Human Ov infection, associated with hepatobiliary complications, including cholangiocarcinoma (CCA), occurs when infected fish are consumed raw or undercooked, a longstanding cultural tradition in the region. This mixed- methods descriptive study was carried out in Isaan villages around Lawa Lake, Khon Kaen Province, known for their Ov endemicity. Focus group discussions (FGDs) and in depth interviews (IDIs) were used to explore socio-cultural determinants underlying raw fish consumption practices, and global positioning system (GPS) devices to map local fish distribution networks. Qualitative data affirmed major socio-cultural and dietary lifestyle transitions occurring consequent on recent decades of modernization policies and practices, but also the persistence of Isaan traditional raw-fish eating practices and incorrect beliefs about infection risk avoidance. Fish traders/middlemen purchase most of the catch at the lakeshore and play the dominant role in district market fish distribution networks, at least for the larger and less likely infected, fish species. The lower economic value of the small potentially-infected cyprinid fish means local fishermen typically distribute them free, or sell cheaply, to family and friends, effectively concentrating infection risk in already highly Ov infected villages. Our study confirmed the persistence of traditional Isaan raw-fish meal practices, despite major ongoing socio-cultural lifestyle transitions and decades of Ov infection health education programs. We contend that diffuse socio-cultural drivers underpin this practice, including its role as a valued cultural identity marker. A "fish economics" factor was also evident in the concentration of more likely infected fish back into local villages due to their low economic value at district market level. The complexity of factors supporting "risky" fish-eating traditions in Isaan underscores the importance of integrated liver fluke infection control strategies to draw on transdisciplinary knowledge beyond biomedicine and also embrace participatory protocols for engaging communities in developing, implementing and evaluating interventions.

Abstract
Consuming a healthy diet forms an important component of diabetes management; however, adhering to a healthy diet is challenging. Dietary behaviour is often guided by socio-cultural, environmental and emotional factors, and not necessarily by physical and nutritional needs. This study explored Nepalese patients' perceptions of the impact of diet, diet management requirement for diabetes and how Nepalese food culture in particular influenced diet management. Interviews were conducted with Nepalese participants with type 2 diabetes in Sydney and Kathmandu; and data was thematically analysed. Diet was recognized as a cause of, and a key treatment modality, in diabetes. Besides doctors, participants in Nepal received a large amount of dietary information from the community. Dietary changes formed a major component of lifestyle modifications adopted after diagnosis, and mostly consisted of removal of foods with added sugar and foods with high total sugar content from the diet, and a reduction in overall quantity of foods consumed. Perceived dietary restriction requirements created social and emotional discomfort to patients. Most participants perceived the Nepalese food culture as a barrier to effective diet management. Meals high in carbohydrates, limited food choices, and food preparation methods were identified as barriers, particularly in Nepal. In Australia, participants reported greater availability and easier access to appropriate food, and healthier cooking options. The socio-cultural aspects of food behaviour, mainly, food practices during social events were identified as significant barriers. Although diet was acknowledged as an important component of diabetes care, and most adopted changes in their diet post-diagnosis, effective and sustained changes were difficult to achieve. Future public health campaigns and education strategies should focus on improving diet knowledge, awareness of food options for diabetes, and effective dietary management.

Abstract
Although the globalised food system delivers unparalleled food variety and quantity to most in the developed world it also disconnects consumers from where, how and by whom food is grown. This change in the food system has resulted in an acceptance of an anonymous and homogeneous food supply, which has contributed to over-consumption and the rise in diet-related diseases. 'Nutritionism' responds to this issue by maintaining that a 'healthy diet' can be achieved by consuming the correct balance of energy and nutrients, but with limited success. Yet, some food cultures can moderate the effects of the environmental drivers of increasing global obesity rates. This paper draws on this premise and presents an alternative eco-dietetic response, exploring people's meaning-making of food and food culture through local food networks. This research used narrative inquiry methodology and purposive sampling to gather stories through focus group conversations. Twenty people attended focus groups comprised of food procurers from one of three local food networks in the Canberra region: community gardens, a modified Community Supported Agriculture (CSA) and farmers' markets. The findings showed that those using local food networks enjoyed a 'contemporary relational food culture' that highlighted the importance of people, place and time, in their visceral experiences of food. The community gardeners made meaning of food through their connections to the earth and to others. The farmers' market and CSA food procurers valued the seasonal, local and ethical food produced by their beloved farmer(s). This paper provides qualitative evidence that local food networks enable people to enjoy multi-dimensional relationships to food. Further research is required to examine whether experiencing a contemporary relational food culture can lead to improved health outcomes for people and the planet.

Abstract
Transnational food retailers expanded to middle-income countries over recent decades responding to supply (liberalized foreign investment) and demand (rising incomes, urbanization, female workforce participation, and time poverty). Control in new markets diffuses along three axes: socio-economic (rich to poor), geographic (urban to rural), and product category (processed foods to fresh foods). We used a mixed method approach to study the progression of modern retail in Thailand on these three axes and consumer preferences for food retailing. In Thailand modern retail controls half the food sales but traditional fresh markets remain important. Quantitative questionnaires administered to members of a large national cohort study revealed around half of respondents were primarily traditional shoppers and half either utilized modern and traditional formats equally or primarily shopped at supermarkets. Fresh foods were mainly purchased at traditional retail formats and dry packaged foods at supermarkets. Qualitative interviews found price and quality of produce and availability of culturally important products to be significant reasons for continued support of fresh markets. Our results show socio-economic and geographic diffusion is already advanced with most respondents having access to and utilizing modern retail. Control of the fresh food sector by transnationals faces barriers in Thailand and may remain elusive. The short to mid-term outcome may be a bifurcated food system with modern and traditional retail each retaining market share, but fresh markets longer term survival may require government assistance as supermarkets become more established. Fresh markets supply affordable, healthy foods, and livelihoods for poorer Thais and are repositories of Thai food culture and social networks. If they survive they will confer cultural, social, economic, and health benefits.

Abstract
ETHNOPHARMACOLOGICAL RELEVANCE Traditional use of local wild and cultivated plants for making recreational tea in Estonia often borders with the medicinal use of the same plants. AIM OF THE STUDY The aim of this paper is to map the perceptions of plants used for making tea and to define the domains of recreational and medicinal teas in specific cultural settings. MATERIALS AND METHODS Between November 2011 and March 2012 the authors distributed electronic questionnaires on the use of wild food plants in childhood. The questionnaire was answered by 250 respondents. 178 of them reported the use of plants for making recreational teas. The responses were analysed according to the taxonomy of the used plants, the most frequently used taxa and families were detected, the influence of respondents' demographic data on the number of use reports was assessed and the overlapping of medicinal and recreational uses was discussed. RESULTS The study detected 69 vascular plant species, ten vascular taxa identified on the genera level only, and one lichen. The most popular families were Rosaceae, Asteraceae and Lamiacea, and 12 taxa were used by at least 10% of the respondents, while only one of them (Tilia) was used by more than 50% and one (Rubus idaeus) by over 33% of the respondents. The next ten most used taxa were: Rosa, Mentha, Primula veris, Matricaria, Achillea millefolium, Hypericum, Carum carvi, Urtica dioica, Thymus serpyllum and Fragaria. Of the 30 most used consolidated taxa mentioned in five or more use records, only four were used exclusively in one domain. CONCLUSIONS The majority of the used plants were situated on the recreational-medicinal continuum, which could be divided into two domains: recreational, medicinal and the "grey" area that lies around the borderline. The predominance of the cold and cold-related diseases on the spectrum treated by plants used for making recreational tea reflects the climatic conditions of the region and suggests that they are the most commonly self-treated diseases in the region, seen from the child's perspective.
