Challenges and opportunities of using Bos indicus cattle to meet consumers' demand for quality beef

Beef consumption is expected to increase worldwide, which necessitates the use of Bos indicus cattle that are well-adapted to harsher climates, like the tropics. Yet, beef from these cattle is considered inferior to that of Bos taurus breeds, primarily due to lowered tenderness values and reduced intramuscular fat content. However, the benefits of using Bos indicus genetics are numerous and undeniable. Herein, we explore how decreases in meat quality in these cattle may be offset by increases in livability. Further, we review the knowledge surrounding beef tenderness and explore the processes occurring during the early events of the transformation of muscle to meat that are different in this biological type and may be altered by stress. Growth rate, calpastatin activity and mitochondrial function will be discussed as they relate to tenderness. The opportunities of using Bos indicus cattle are of great interest to the beef industry worldwide, especially given the pressures for enhancing the overall sustainability and carbon footprint of this sector. Delivering a consistently high-quality product for consumers by exploiting Bos indicus genetics in a more sustainable manner will be proposed. Information on novel factors that influence the conversion of muscle to meat is explored to provide insights into opportunities for maximizing beef tenderization and maturation across all cattle. Exploring the use of Bos indicus cattle in modern production schemes, while addressing the mechanisms undergirding meat tenderness should provide the industry with a path forward for building greater demand through producing higher quality beef.

Electrochemical determination of free amino nitrogen in aged lean beef by the measurement of surplus acid after neutralization

In this study, an electroanalytical method, which is based on the concept of acid-base back titration and the electrochemical sensing of acids by means of the reduction of quinone, is proposed for determining free amino nitrogen (FAN) in lean beef samples. To perform the electrochemical determination of FAN in beef samples, the following voltammetric behaviors of 3,5-di-tert-butyl-1,2-benzoquinone (DBBQ) in the presence of acid have been applied: (1) A cathodic prepeak height of DBBQ caused by HCl (i_H) is proportional to the HCl concentration in the electrolyte solution. (2) i_H is linearly decreased with an increase in amino acids concentration in the electrolyte solution after the amino acids are neutralized by excess HCl. By the present electroanalytical method, FAN in a lean beef sample was determined to be 4.70 mgN g^-1 with a repeatability of 3.4% relative standard deviation (n = 5). This result by the present electroanalytical method was in good agreement with a colorimetric method using a ninhydrin reagent. Moreover, the present electroanalytical method was able to monitor increases of FAN in lean beef samples during wet-aging. These results demonstrate the present electroanalytical method could help in the development of an on-site analysis for estimating aged beef samples via the determination of FANs.

Use of Rapid Evaporative Ionisation Mass Spectrometry fingerprinting to determine the metabolic changes to dry-aged lean beef due to different ageing regimes

Rapid Evaporative Ionisation Mass Spectrometry (REIMS) was used to determine the impact of in-bag ageing regimes (stepwise-ageing at different air velocities and straight-dry-ageing) and trimming on the metabolic profile of dry-aged lean beef. Orthogonal projection to latent structures-discriminant analysis (OPLS-DA) models based on 1705 tentatively identified m/z features were found for ageing methods (Q² = 0.85), ageing time (0 vs. 21 days, Q² = 0.95) and sampling locations (surface meat vs. trimmings, Q² = 0.94). No significant (P > 0.05) difference in metabolites due to air velocities. Small metabolites such as dipeptides and amino acids were more abundant, especially on the surface of untrimmed lean beef, following 21 days of straight-dry-ageing. Stepwise-ageing produced different metabolic profiles from straight-dry-ageing, suggesting that the two methods may differ in dry-aged meat quality and flavour. This work demonstrates REIMS's potential for real time differentiation of meat on processing parameters.

Oxidative stability, proteolysis, and in vitro digestibility of fresh and long-term frozen stored in-bag dry-aged lean beef

Effect of air velocities, stepwise in-bag ageing and ageing time on the oxidative stability, proteolysis and digestibility of fresh and long-term frozen-stored dry-aged lean beef were studied. Increased air velocities and stepwise ageing regime had no effect (P > 0.05) on dry-aged beef lipid and protein oxidative stabilities and proteolysis pattern compared to control straight-dry-ageing. TBARS, protein carbonyl and free amino acids (FAAs) increased (P > 0.05) with ageing time. In-bag dry-ageing of beef improved its lipids and protein oxidative stability during long-term frozen storage compared to unaged beef. Improvement in beef protein digestibility was observed through increased release of FAAs and appearance of small protein fragments from SDS-PAGE in dry-aged samples compared to the unaged. The high lipid and protein oxidative stability of long-term frozen lean beef produced using stepwise in-bag ageing process suggest potential for the process to be used for producing dry-aged meat for export.
