Thermal stratification controls taste and odour compounds by regulating the phytoplankton community in a large subtropical water source reservoir (Xin'anjiang Reservoir)

2-Methylisoborneol (2-MIB) and geosmin are compounds released by algae that significantly degrade reservoir water quality, posing a threat to both the safety of drinking water and the quality of aquatic products sourced from these environments. However, few studies have explored how enhanced thermal stratification affects the occurrence and regulation of odorants in large drinking water reservoirs. Through systematic monitoring and investigation of Xin'anjiang Reservoir, we found that enhanced thermal stratification promotes filamentous cyanobacteria, particularly Leptolyngbya sp., as the primary contributor to 2-MIB production within the 1-10 m layer of the water column. The highest 2-MIB concentration, 92.5 ng/L, was recorded in the riverine region, which was 2.54 and 14.52 times higher than that in the transitional and central parts of the reservoir, respectively. Temperature indirectly impacted algal growth and odorant production by modulating TN/TP ratios. Geosmin concentration responded rapidly to relatively low TN/TP ratios (< 25). Our findings suggest that phosphorus control in estuaries should be enhanced during thermal stratification period. In summary, our study provides valuable insights to inform pragmatic water intake strategies and the distribution and release of odorants caused by thermal stratification. This is particularly relevant in the context of future global warming and extremely high temperatures during the warm season.

Methane oxidation of residual landfill gas in a full-scale biofilter: human health risk assessment of volatile and malodours compound emissions

A human health risk assessment was performed to evaluate if a biofilter for the biological methane oxidation reduces the risk from exposure to landfill gas emissions and improves the air quality mitigating odour emissions from an aftercare landfill. Accordingly, three different scenarios of landfill gas management were defined, 9 volatile organic compounds (VOCs) (cyclohexane, n-hexane, 2-methylpentane, 3-methylpentane, benzene, xylenes, toluene, dichlorodifluoromethane, vinyl chloride) were identified and using the CALPUFF dispersion model; the pollutant concentration at eleven sensitive receptors was determined. Consequently, the risk (for cancer and non-cancer compounds) was assessed applying the methodology proposed by USEPA 2009. From one hand, to determine concentration and emission rates of VOCs and hydrogen sulphide, a sample of raw landfill gas and three air samples from the biofilter surface were collected with dynamic flux chamber method and analysed in accordance with US EPA, 1986 and USEPA TO-15, 1999. To the other hand, odour emissions were assessed based both on chemical and dynamic olfactometric measurements (EN 13725:2003). The field surveys results showed a reduction of the cancer risk on average by 79% and of the hazard quotient on average by 92%. In contrast, the results of olfactometry measurements showed a lower efficiency on odour reduction than the target value of 70%. Nonetheless, the odour concentration was always far below 300 uo_E m^-3 at the biofilter surface and odour concentration never exceed 1 uo_E m^-3 at the sensitive receptors.

Comparison of flavour qualities of three sourced Eriocheir sinensis

Flavour qualities of three edible parts of three types of Chinese mitten crab from different areas were examined. The flavour profiles detected by E-tongue and E-nose showed that differences existed in tastes and odours among wild-caught crabs (WC), Yangcheng crabs (YC) and Chongming crabs (CM). The total free amino acids contents of WC were all at the highest level in meat, gonads and hepatopancreas. Ovaries had the highest nucleotides content and equivalent umami concentration (EUC) than other tissues in both female and male. The EUC was the highest in all parts of WC, followed by YC and CM. The total content of nine key volatile compounds was the highest for WC in the gonads and hepatopancreas; in the muscle, they were the highest in female YC and male CM, but the lowest for WC.

Analysis of human male armpit sweat after fenugreek ingestion: Characterisation of odour active compounds by gas chromatography coupled to mass spectrometry and olfactometry

In this study, the strong "maple-syrup" odour which appears after fenugreek ingestion was investigated. Headspace solid-phase microextraction (HS-SPME) was applied to extract volatile odourant compounds from human male armpit sweat samples. Two male volunteers were considered who have similar diet; they had to ingest fenugreek infusion over the same period of time. The HS-SPME extracts obtained were then analysed by gas chromatography coupled either to mass spectrometry (GC-MS) or flame ionisation detection and olfactometry (GC-O). In that latter case, a panel of eight assessors was used, and the detection frequency methodology was applied. A total of 44 compounds could be identified in sweat samples, with a wide range of chemical structures, some of them being reported for the first time in human armpit sweat. Eight compounds appearing only after fenugreek ingestion could be identified: 2,5-dimethylpyrazine, β-pinene, 3-octen-2-one, camphor, terpinen-4-ol, 4-isopropyl-benzaldehyde, neryl acetate and β-caryophyllene. Due to their odourant notes, such compounds should be responsible for the strong "maple-syrup" odour present in sweat after fenugreek ingestion. GC-O confirmed the role of some odourant compounds in the "maple-syrup" odour of sweat, especially 2,5-dimethylpyrazine which was the best perceived odour. Among these eight compounds, some of them were previously reported in the fenugreek seeds, namely β-pinene, 3-octen-2-one and camphor.
