Abstract
Two experiments were conducted to determine the effect of increasing dietary CaO on ruminal fermentation, diet digestibility, performance, and carcass characteristics of feedlot steers fed 60% dried distillers grains with solubles ( DDGS: ). In Exp. 1, 120 steers were allotted by weight (355 ± 7.9 kg) to 1 of 4 treatments containing 60% DDGS, 20% corn silage, 13.5 to 14.4% ground corn, 4% supplement, and 0 to 2.5% limestone on DM basis to determine the effects of CaO on performance and carcass characteristics. Treatments consisted of 0, 0.8, 1.6, or 2.4% CaO inclusion in the diet (DM basis), with CaO replacing limestone. Steers were slaughtered at a target BW of approximately 641 kg. In Exp. 2, 4 steers (initial BW = 288 ± 3 kg) were randomly allotted to the same diets in a 4 × 4 Latin square design (14-d periods) to determine the effects of CaO on ruminal pH, VFA, and nutrient digestibility. Statistical analyses were conducted using the MIXED procedure of SAS. Inclusion of CaO at 0.8, 1.6, and 2.4% increased ADG by 5.0, 3.9, and 0%, respectively, compared to 0% CaO (quadratic; P = 0.03). Intake was linearly decreased (P = 0.04) and G:F was linearly increased (P = 0.02) by CaO inclusion. Dressing percentage increased as CaO increased from 0 to 1.6% and then decreased for 2.4% CaO (quadratic; P < 0.01). In Exp. 2, steers fed 0% CaO had the greatest prefeeding ruminal pH, steers fed 0 and 0.8% CaO exhibited the most rapid postfeeding decline in ruminal pH, and steers fed 2.4% CaO exhibited a relatively stable ruminal pH throughout the 24-h period (treatment × time; P ≤ 0.01). Acetate, butyrate, and total VFA concentrations increased linearly (P ≤ 0.05) at 0, 3, 6, and 12 h postfeeding with increasing CaO. Propionate at 3 h postfeeding increased from 0 to 1.6% CaO and decreased from 1.6 to 2.4% CaO (quadratic; P = 0.10). Urine pH increased linearly (P ≤ 0.01) while urine output and urine ammonia decreased linearly (P ≤ 0.05) as CaO inclusion increased. Apparent NDF digestibility tended to increase (P = 0.07) and ADF digestibility did (P = 0.01) increase linearly with increasing concentrations of CaO. In conclusion, CaO improved ruminal pH variation, increased fiber digestibility, and decreased metabolic acid load in cattle fed 60% DDGS-based diets. Inclusion of CaO up to 1.6% was effective in improving performance of feedlot cattle.

Abstract
Finishing Holstein young bulls exclusively on pasture generally results in very lean carcass and meat, but corn supplementation is expected to simultaneously improve carcass traits and intramuscular lipids (IML). The expected increase in IML would allow for a larger 18:2c9,t11 (CLA) deposition in meat without affecting the n-3 PUFA present in LM phospholipids (PL). Holstein bulls (n = 33) with initial BW of 423 ± 52.4 kg reared exclusively on pasture were assigned to 1 of 3 finishing period (85 d) diets: finished exclusively on pasture (P0) or finished on pasture and individually supplemented with 4 (P4) or 8 kg/d (P8) of ground corn. Final BW (546 ± 56.3 kg) was not affected (P > 0.05) by corn supplementation, but ADG increased (P < 0.01) with the increasing corn supplementation level from 1.23 kg/d for P0 to 1.44 kg/d for P4 and to 1.67 kg/d for P8. Subcutaneous fat depth in P0 bulls was 0.8 mm and increased (P < 0.001) in both P4 (2.9 mm) and P8 (2.7 mm) bulls, but no difference (P = 0.73) was observed between P4 and P8 bulls. Similarly, the IML increased with corn supplementation, from 1.84 g/100 g muscle in P0 to 2.96 in P4 and to 3.24 in P8, but no difference (P = 0.55) was found between P4 and P8 bulls. Corn supplementation decreased (P < 0.01) 18:1t11 in neutral lipids (NL) but not 18:2c9,t11 (P > 0.34). The 18:1t10 (mg/g total NL fatty acid [FA] ± SEM) were 2.5 ± 0.13 in P0, 5.5 ± 1.68 in P4, and 14.8 ± 3.18 in P8 bulls, being greater in P8 compared with P4 (P = 0.02). Total FA in muscle PL and SFA were unaffected, but increasing corn supplementation resulted (P < 0.001) in an increase of 18:2n-6 in PL by replacement of mostly the 18:1c9 and 18:3n-3. Notably, the total number of cis double bonds present in FA of PL remained constant (P = 0.74) with corn supplementation. Compared with P0, corn supplementation maintained (P > 0.05) the high n-3 PUFA content in meat (mg/100 g meat) and increased the 18:2c9,t11 (P = 0.028) and 18:1c9 (P < 0.001). However, increasing corn supplementation from 4 to 8 kg/d increased the 18:1t10 (P = 0.031) and had no effect on 18:2c9,t11. Therefore, supplementing grass-finished Holstein bulls with moderate amounts of ground corn (4 kg/d) increased carcass fat cover and IML, maintained n-3 PUFA, and increased 18:2c9,t11 content in meat, whereas greater corn supplementation (8 kg/d; P8) resulted in no further improvements.

Abstract
A U.S. consumer (n = 642) study (Baltimore, MD; Phoenix, AZ; and Lubbock, TX) was conducted to compare consumer sensory scores of U.S. beef (83 USDA Choice [Choice] and 96 USDA Select [Select]) and Canadian beef (77 AAA and 82 AA) strip loins. Strip loins (n = 338) were obtained from beef processors in Canada and the United States and were wet aged until 21 d postmortem at 2°C. Marbling scores were assigned at 21 d and loins were paired according to quality grades and marbling score. Strip loins were fabricated into 2.54-cm thick steaks; steaks were vacuum packaged and frozen until further evaluations. Proximate analysis was performed to compare fat, moisture, and protein. Choice and Canadian AAA had similar marbling scores and intramuscular fat. Both Choice and Canadian AAA had greater (P < 0.05) marbling scores and intramuscular fat than Canadian AA, but Select strip loins had intermediate values that were not different from any of the other grades (P > 0.05). Consumers' opinions did not differ when comparing equivalent grades (Choice with Canadian AAA and Select with Canadian AA), but they rated Choice and Canadian AAA more palatable than Select and Canadian AA for all sensory attributes (P < 0.05). Regarding percentage of acceptability and likelihood to buy score, consumers indicated a preference and greater probability to buy (P = 0.001 and P = 0.004, respectively) strip loin steaks from higher quality grade carcasses (Choice and Canadian AAA) than lower quality grade carcasses (Select and Canada AA). Additionally, consumers gave their opinion of Canadian beef, where its quality and safety were rated as "good" to "excellent" for both attributes (76.72% and 88.36%, respectively; P < 0.05), feeling confident in beef that is imported from Canada. In the same way, consumers indicated that country-of-origin labeling was a minimal factor influencing their beef steak purchasing decisions. Results from this consumer study indicated U.S. consumers could not differentiate between U.S. and Canadian beef within comparable quality grades; however, strip loin steaks from higher quality grades were more palatable than lower quality grades according to consumer scores for eating quality traits.

Abstract
Two hundred fifty-two cross-bred yearling steers (406 ± 24 kg BW) were used in a completely randomized block design with a 2 × 2 factorial arrangement of treatments (7 pens/treatment) to evaluate the effects of dietary Saccharomyces cerevisiae fermentation product (SFP) and monensin (MON) on growth performance and carcass characteristics. Dietary treatments arranged as a 2 × 2 factorial were 1) with or without SFP and 2) with or without MON. Finishing diets contained 19.7% of DM as dried distiller's grains with solubles. Both SFP and MON were added in the total mixed ration in place of an equal amount of cornmeal (DM basis; target intake = 2.8 g of SFP and 33 mg of MON/kg of dietary DM). Each treatment group was offered ad libitum access to a transition ration from d 1 to 8 and then to the finishing ration from d 9 to 125. Body weights were collected on d 0, 28, 56, 84, 110, and 125. Initial and final BW was an average of 2-d weights (d -1 and 0 and d 124 and 125, respectively). Steers were shipped for harvest on d 125. Overall ADG was decreased (P = 0.03) in steers supplemented with SFP, but final BW was similar among treatments. Feeding SFP was associated with lighter (P < 0.01) HCW and a greater (P = 0.01) number of carcasses grading USDA Choice. Twelfth rib fat thickness was not affected by SFP (P = 0.82) or MON (P = 0.35), but numerical decreases in 12th rib fat thickness among cattle receiving SFP or MON alone contributed to a tendency (P = 0.07) for greater 12 rib fat thickness when SFP and MON were provided. There was no effect of treatment on cost of gain (P ≥ 0.21). The effects of SFP in the current study may have been limited in heavy yearling steers due to consumption of a finishing diet containing 19.7% dried distiller's grains with solubles.

Abstract
Feedlot and carcass data from steers (n = 16,700) and heifers (n = 6,357) originating from 16 different states and fed in 17 feedlots located in southwest Iowa were used to evaluate the accuracy of the USDA frame score for predicting final BW of fed cattle. Frame score was recorded by USDA or state personnel for cattle either before leaving the state of origin or on arrival at the terminal feedlot. Mixed model procedures were used to investigate relationships between USDA frame score and measures of live performance and carcass traits. Other fixed effects included in the model included USDA muscle score, sex, age classification on feedlot entry (calf: ≤270 d of age, yearling: 271-365 d of age, and long yearling: >365 d of age), BCS on feedlot arrival, number of treatments for respiratory disease, hide color, and site of frame or muscle scoring; the interactions of sex × frame score and hide color × frame score were also included; fat thickness was included as a fixed effect (covariate) in the analysis of ADG, final BW, days on feed, LM area, marbling score, and quality grade. Random effects included in the model were year of feedlot arrival and feedlot in which cattle were fed. The system accurately projects the minimum target final BW for large frame steers and heifers; however, the final BW of the smallest medium frame steers and heifers exceeds the target minimum final BW by 35 and 40 kg, respectively. When frame score was assigned post facto based on actual final BW (adjusted to 1.27 cm fat thickness), it was determined that large frame was over-assigned by graders (62 vs. 35% for steers and 54 vs. 32% for heifers, actual score vs. postharvest score, respectively), medium frame was underassigned (37 vs. 51% and 46 vs. 58% for steers and heifers), and small frame was underassigned (0.7 vs. 15% and 0.6 vs. 10% for steers and heifers; K = 0.01, P < 0.01). Across sexes, of the cattle assigned to small, medium, or large frame score, 40, 59, and 43% actually had final BW (adjusted to 1.27 cm fat thickness) within the guidelines for the target final BW of each of the frame scores (P < 0.01). The present frame score system accurately reflects the modern feedlot cattle population; however, adjustments in the assignment of frame scores to reflect changes in technologies and final weights may be warranted.

Abstract
The objective of this study was to evaluate the influence of corn silage (CS) or sugarcane (SC) additions to finishing diets on voluntary intake, apparent digestibility, animal performance, and LM fatty acid (FA) composition in crossbred Holstein × Zebu bulls. Forty-two bulls (initial BW 328 ± 39.2 kg and an initial age of 23.5 mo) were used in this experiment. A completely randomized design was used to examine roughage source (CS vs. SC) and ratio of concentrate (CO) on nutrient utilization and production. The experimental diets consisted of 1) 60% CS and 40% CO on DM basis fed for 84 d (CS60:40), 2) 60% CS and 40% CO on DM basis fed for 42 d and 40% CS and 60% CO on DM basis fed for 42 d (CS reverse diet [CSR]), 3) 40% CS and 60% CO on DM basis fed for 84 d (CS40:60), 4) 60% SC and 40% CO on DM basis fed for 84 d (SC60:40), 5) 60% SC and 40% CO on DM basis fed for 42 d and 40% SC and 60% CO on DM basis fed for 42 d (SC reverse diet [SCR]), and 6) 40% SC and 60% CO on DM basis fed for 84 d (SC40:60). Dry matter and NDF intakes were greater (P < 0.01) in bulls fed CS-based diets than bulls fed SC-based diets. The greatest (P < 0.01) DM and CP digestibility were observed in bulls fed SC-based diets. Bulls fed CSR and CS40:60 had greater (P < 0.01) ADG than bulls fed SC-based diets. However, ADG was similar (P = 0.52) in bulls fed CS60:40, CSR, and SC40:60 diets. The percentage of C18:3 n-3 and C20:5 n-3 were greater (P < 0.01) in LM of bulls fed SC-based diets. The percentage of CLA was greater (P < 0.01) in LM of bulls fed SC60:40 than those fed CS-based diets. The findings of the present study indicate that SC40:60 can replace CS60:40 and CSR in finishing diets and, moreover, roughage source significantly altered the FA composition of crossbred Holstein × Zebu bulls LM.

Abstract
In 2008, the discovery of elevated levels of dioxins and PCBs in a porcine fat sample taken as part of the national residues monitoring programme led to the detection of a major feed contamination incidence in the Republic of Ireland. To estimate additional exposure to dioxins and PCBs due to the contamination incident, all data associated with the contamination incident were collected and reviewed. An exposure model was devised that took into account the proportion of contaminated product reaching the final consumer during the contamination incident window and which utilised all additional information that became available after the incident occurred. Exposure estimates derived for both dioxins and PCBs showed that the body burden of the general population remained largely unaffected by the contamination incident and only approximately 10% were exposed to elevated levels of dioxins and PCBs. Whilst this proportion of the population experienced quite a significant additional load to the existing body burden, the estimated exposure values do not suggest that these would be associated with adverse health effects, based on current knowledge. The exposure period was also limited in time to approximately 3 months, following the recall of contaminated meat immediately on detection of the contamination.

Abstract
This study investigated the occurrence, concentration and key characteristics of Listeria monocytogenes in beef chain samples (n=1100) over a 2-year period (July 2007-June 2009). Listeria monocytogenes was isolated from bovine hides (27%), pre-chill carcasses (14%) and ground beef (29%), but not from ready-to-eat (RTE) beef. The concentration of the pathogen in the majority (95%) of contaminated samples was low and detected by enrichment only. The highest concentrations recovered (100-200 CFU/g) were in ground beef samples. The most commonly isolated serotype group was 1/2a (58%) followed by 4b (12%), 1/2b (10%) and 1/2c (6%). A small portion (<5%) isolates had demonstrated resistance to key anti-microbials including ampicillin, vancomycin and gentamycin which are recommended treatment options for listeriosis. Pulsed-field gel electrophoresis showed indistinguishable profiles for a number of isolates recovered from the hide and carcass (after slaughter and dressing) of the same animals, highlighting the role of hides as a source of contamination. Equally, indistinguishable pulsotypes for isolates recovered at different stages and time points (up to 6 months apart) in the beef chain demonstrated the persistence of specific clones in the factory, process and distribution environments. Overall, the study demonstrated a high prevalence of clinically significant L. monocytogenes entering and progressing along the beef chain and highlights the needs to control cross-contamination during beef processing and distribution and the need for thorough cooking of raw beef products.

Abstract
Campylobacter species are one of the leading causes of foodborne disease in the United States. Campylobacter jejuni and Campylobacter coli are the two main species of concern to human health and cause approximately 95% of human infections. Molecular typing methods, such as pulsed-field gel electrophoresis (PFGE) and multilocus sequence typing (MLST) are often used to source track foodborne bacterial pathogens. The aim of the present study was to compare PFGE and MLST in typing strains of C. jejuni and C. coli that were isolated from different Oklahoma retail meat sources. A total of 47 Campylobacter isolates (28 C. jejuni and 19 C. coli) isolated from various retail meat samples (beef, beef livers, pork, chicken, turkey, chicken livers, and chicken gizzards) were subjected to pulsed-field gel electrophoresis (PFGE) and multilocus sequence typing (MLST). PFGE was able to group the 47 Campylobacter isolates into two major clusters (one for C. jejuni and one for C. coli) but failed to differentiate the isolates according to their source. MLST revealed 21 different sequence types (STs) that belonged to eight different clonal complexes. Twelve of the screened Campylobacter isolates (8 C. jejuni and 4 C. coli) did not show any defined STs. All the defined STs of C. coli isolates belonged to ST-828 complex. The majority of C. jejuni isolates belonged to ST-353, ST-607, ST-52, ST-61, and ST-21 complexes. It is worthy to mention that, while the majority of Campylobacter isolates in this study showed STs that are commonly associated with human infections along with other sources, most of the STs from chicken livers were solely reported in human cases. In conclusion, retail meat Campylobacter isolates tested in this study particularly those from chicken livers showed relatedness to STs commonly associated with humans. Molecular typing, particularly MLST, proved to be a helpful tool in suggesting this relatedness to Campylobacter human isolates.

Abstract
The current NRC model to estimate DMI is based on a single equation related to metabolic size and net energy density of the diet; this equation was a significant improvement over previous models. However, observed DMI by grazing animals can be conceptualized by a function that includes animal demand, largely determined by metabolic or linear size, physiological state, genetics, or any combination of these. Even in the database used to generate the current NRC equation, DMI by cows is poorly predicted at the extremes. In fact, across a wide range of actual DMI, predicted DMI is rather flat, indicating an insensitivity of prediction, so the model requires further refinement. A broad-based database was developed that includes pasture and confinement studies with growing, nonlactating, and lactating cattle. New equations are presented for consideration in the new model. It was found that the premise behind earlier NRC equations based on diet digestibility and BW are sound but that for cows, additional drivers based on milk production or calf performance were stronger than BW. Future models should be based on multiple variables, including functions for physiological state, animal suitability to the environment, and activity to modify the predicted DMI. Further, the model could possibly account for imbalances of protein to energy, particularly as they relate to ruminal function. Further, the issue of how reference data were collected (pen vs. pasture) and how the methods or constraints influence DMI must be evaluated. Overall, the new NRC model needs to be more robust in its ability to account for the wide variation in the environment, dietary characteristics, and metabolic demands.

Abstract
Iron status is associated with cognitive performance and intervention trials show that iron supplementation improves mental function in iron-deficient adults. However, no studies have tested the efficacy of naturally iron-rich food in this context. This investigation measured the hematologic and cognitive responses to moderate beef consumption in young women. Participants (n=43; age 21.1±0.4 years) were randomly assigned to a beef or non-beef protein lunch group [3-oz (85 g), 3 times weekly] for 16 weeks. Blood was sampled at baseline, and weeks 8 and 16, and cognitive performance was measured at baseline and week 16. Body iron increased in both lunch groups (p<0.0001), with greater improvement demonstrated in women with lower baseline body iron (p<0.0001). Body iron had significant beneficial effects on spatial working memory and planning speed (p<0.05), and ferritin responders (n=17) vs. non-responders (n=26) showed significantly greater improvements in planning speed, spatial working memory strategy, and attention (p<0.05). Lunch group had neither significant interactions with iron status nor consistent main effects on test performance. These findings support a relationship between iron status and cognition, but do not show a particular benefit of beef over non-beef protein consumption on either measure in young women.

Abstract
Aquaporin 2 (AQP2) is a small, integral tetrameric plasma membrane protein that is expressed in mammalian kidneys. The specific constitution of this protein and its selective permeability to water means that AQP2 plays an important role in hypertonic urine production. Immunolocalization of AQP2 has been studied in humans, monkeys, sheep, dogs, rabbits, rats, mice and adult cattle. We analyzed the expression of AQP2 in kidneys of 7-month-old Polish-Friesian var. black and white male calves. AQP2 was localized in the principal cells of collecting ducts in medullary rays penetrating the renal cortex and in the collecting ducts of renal medulla. AQP2 was expressed most strongly in the apical plasma membrane, but expression was observed also in the intracellular vesicles and basolateral plasma membrane. Our study provides new information concerning the immunolocalization of AQP2 in calf kidneys.

Abstract
The conversion of muscle into meat is a complex process of major concern for meat scientists due to its influence on the final meat quality. The aim of this study was to investigate the occurrence of autophagic processes in the conversion of muscle into meat. Our findings demonstrated, for the first time, the occurrence of autophagic processes in the muscle tissue at early postmortem period (2 h to 24 h) in both beef breeds studied (Asturiana de los Valles and Asturiana de la Montaña) showing significant time-scale differences between breeds, which could indicate a role of this process in meat maturation. These breeds have different physiological features: while Asturiana de los Valles is a meat-specialized breed showing high growth rate, an elevated proportion of white fibers in the muscle and low intramuscular fat level, Asturiana de la Montaña is a small- to medium-sized rustic breed adapted to less-favored areas, showing more red fibers in the muscle and a high intramuscular fat content.

Abstract
The aim of this study was to develop an analytical method for detection of imidocarb [1,3-bis[3-(4,5-dihydro-1h-imidazol-2-yl)phenyl]urea] in beef and milk using high-performance liquid chromatography (HPLC) with diode-array detection (DAD). Imidocarb was separated on a reversed-phase column (4.6×250 mm, 5 μm) with a mobile phase consisting of 85:15 (v/v) 0.1% trifluoroacetic acid/acetonitrile. The flow rate was 1 ml/min, and the column temperature was maintained at 20°C. Detection was carried out at 260 nm using a DAD detector. The analytical samples were extracted using a solid-phase extraction (SPE) method. The calibration curves showed good linearity (r≥0.998). Limits of quantifications (LOQs) were 0.15 mg/kg in beef and 0.025 mg/kg in milk. Intra- and inter-day precisions were 3.2-6.1 and 1.4-6.9%, respectively, and the accuracy (recovery) was 80.4-82.2% and 80.1-89.5% in beef and milk, respectively. Thus, an analytical protocol using SPE extraction followed by HPLC with DAD was successfully developed, which demonstrated acceptable precision and recovery.

Abstract
The potassium inwardly rectifying channel, subfamily J, member 11 (KCNJ11) gene was investigated as a candidate for meat tenderness based on the effects reported on muscle for KCNJ11 gene knockout in rat models and its position in a quantitative trait locus (QTL) for meat tenderness in the bovine genome. Sequence variations in the KCNJ11 gene were described by sequencing six amplified fragments, covering almost the entire gene. We identified single nucleotide polymorphisms (SNP) and validated them by different approaches, taking advantage of simultaneous projects that are being developed with the same Nelore population. By sequencing the KCNJ11 in Nelore steers representing extreme phenotypes for Warner-Bratzler shear force (WBSF), it was possible to identify 22 SNPs. We validated two of the identified markers by genotyping the whole population (n = 460). Analysis of association between genotypes and WBSF values revealed a significant additive effect of a SNP at different meat aging times (P ≤ 0.05). In addition, an association between the expression levels of KCNJ11 and WBSF was found, with lower expression levels of KCNJ11 associated with more tender meat (P ≤ 0.05). The results showed that the KCNJ11 gene is a candidate mapped to a QTL for meat tenderness previously identified on BTA15 and may be useful to identify animals with genetic potential to produce tender meat. The effect of KCNJ11 observed on muscle is potentially due to changes in activity of KATP channels, which in turn influence the flow of potassium in the intracellular space, allowing establishment of the membrane potential necessary for muscle contraction.

Abstract
Meat quality traits are economically important because they affect consumers' acceptance, which, in turn, influences the demand for beef. However, selection to improve meat quality is limited by the small numbers of animals on which meat tenderness can be evaluated due to the cost of performing shear force analysis and the resultant damage to the carcass. Genome wide-association studies for Warner-Bratzler shear force measured at different times of meat aging, backfat thickness, ribeye muscle area, scanning parameters [lightness, redness (a*), and yellowness] to ascertain color characteristics of meat and fat, water-holding capacity, cooking loss (CL), and muscle pH were conducted using genotype data from the Illumina BovineHD BeadChip array to identify quantitative trait loci (QTL) in all phenotyped Nelore cattle. Phenotype count for these animals ranged from 430 to 536 across traits. Meat quality traits in Nelore are controlled by numerous QTL of small effect, except for a small number of large-effect QTL identified for a*fat, CL, and pH. Genomic regions harboring these QTL and the pathways in which the genes from these regions act appear to differ from those identified in taurine cattle for meat quality traits. These results will guide future QTL mapping studies and the development of models for the prediction of genetic merit to implement genomic selection for meat quality in Nelore cattle.

Abstract
The study investigated the dietary impact of 18:3n-3 vs. 18:2n-6 on fatty acid- and micronutrient concentration of beef muscle and the extent of diet- and processing-induced changes of lipid- and micronutrient concentrations of beef products made thereof (German Corned beef (GCB), tea sausage spread (TSS), scalded sausage (SS)). Beef and beef products were obtained from German Holstein bulls which either received a control diet consisting of maize silage and concentrate with soybean meal (41%), or an experimental diet of grass silage and concentrate plus rapeseed cake (12%) and linseed oil (3%). The study revealed that upon an 18:3n-3 vs. 18:2n-6 intervention the amounts of 18:3n-3, EPA and Σn-3 LC-PUFA were significantly increased by 2.6, 2.3 and 1.7 fold, respectively. Experimental diet significantly increased β-carotene contents, and the γ-tocopherol contents were decreased. During beef processing, n-3 PUFA from beef were found to be product-specifically transferred into the corresponding beef products. 18:3n-3 and Σn-3 LC-PUFA contents were found to be 1.4 and 1.5 times higher in GCB from grass silage- than maize silage-fed bulls. The trace element contents in GCB (iron, copper, zinc, selenium) were not affected by the diet; however γ-tocopherol contents were decreased by experimental diet. In conclusion, dietary n-3 PUFA were completely transferred into beef products unaffected by beef processing conditions.

Abstract
After the disastrous incident of the Fukushima Daiichi Nuclear Power Station, various agricultural, livestock and fishery products have been inspected for radioactive contamination with cesium in Japan. In this study, radioactive cesium was measured in various edible parts of cattle to verify the current inspection method for cattle, in which the neck tissues are generally used as samples. Radioactive cesium concentration in the short plate, diaphragm, liver, lung, omasum, abomasum and small intestine were lower and sirloin, tenderloin, top round meat and tongue were higher than that in the neck. There was no significant difference between the other organs (heart, kidney, lumen and reticulum) and the neck. Ninety-five percent upper tolerance limits of the relative concentration to the neck were 1.88 for sirloin, 1.74 for tenderloin, 1.87 for top round and 1.45 for tongue. These results suggest that a safety factor of 2 is recommended for the radioactivity inspection of cattle to prevent a marketing of meat with higher cesium than the legal limit. Re-inspection should be conducted using another part of muscle, for example, top round, when suspicious levels of 50-100 Bq/kg are detected in the neck.

Abstract
BACKGROUND An important controversy in the relationship between beef tenderness and muscle characteristics including biochemical traits exists among meat researchers. The aim of this study is to explain variability in meat tenderness using muscle characteristics and biochemical traits available in the Integrated and Functional Biology of Beef (BIF-Beef) database. The BIF-Beef data warehouse contains characteristic measurements from animal, muscle, carcass, and meat quality derived from numerous experiments. We created three classes for tenderness (high, medium, and low) based on trained taste panel tenderness scores of all meat samples consumed (4,366 observations from 40 different experiments). For each tenderness class, the corresponding means for the mechanical characteristics, muscle fibre type, collagen content, and biochemical traits which may influence tenderness of the muscles were calculated. RESULTS Our results indicated that lower shear force values were associated with more tender meat. In addition, muscles in the highest tenderness cluster had the lowest total and insoluble collagen contents, the highest mitochondrial enzyme activity (isocitrate dehydrogenase), the highest proportion of slow oxidative muscle fibres, the lowest proportion of fast-glycolytic muscle fibres, and the lowest average muscle fibre cross-sectional area. Results were confirmed by correlation analyses, and differences between muscle types in terms of biochemical characteristics and tenderness score were evidenced by Principal Component Analysis (PCA). When the cluster analysis was repeated using only muscle samples from m. Longissimus thoracis (LT), the results were similar; only contrasting previous results by maintaining a relatively constant fibre-type composition between all three tenderness classes. CONCLUSION Our results show that increased meat tenderness is related to lower shear forces, lower insoluble collagen and total collagen content, lower cross-sectional area of fibres, and an overall fibre type composition displaying more oxidative fibres than glycolytic fibres.

Abstract
The global livestock industry is charged with providing sufficient animal source foods to supply the global population while improving the environmental sustainability of animal production. Improved productivity within dairy and beef systems has demonstrably reduced resource use and greenhouse gas emissions per unit of food over the past century through the dilution of maintenance effect. Further environmental mitigation effects have been gained through the current use of technologies and practices that enhance milk yield or growth in ruminants; however, the social acceptability of continued intensification and use of productivity-enhancing technologies is subject to debate. As the environmental impact of food production continues to be a significant issue for all stakeholders within the field, further research is needed to ensure that comparisons among foods are made based on both environmental impact and nutritive value to truly assess the sustainability of ruminant products.

Abstract
To assess tradeoffs between environmental sustainability and changes in food production on agricultural land in Canada the Unified Livestock Industry and Crop Emissions Estimation System (ULICEES) was developed. It incorporates four livestock specific GHG assessments in a single model. To demonstrate the application of ULICEES, 10% of beef cattle protein production was assumed to be displaced with an equivalent amount of pork protein. Without accounting for the loss of soil carbon, this 10% shift reduced GHG emissions by 2.5 TgCO₂e y(-1). The payback period was defined as the number of years required for a GHG reduction to equal soil carbon lost from the associated land use shift. A payback period that is shorter than 40 years represents a net long term decrease in GHG emissions. Displacing beef cattle with hogs resulted in a surplus area of forage. When this residual land was left in ungrazed perennial forage, the payback periods were less than 4 years and when it was reseeded to annual crops, they were equal to or less than 40 years. They were generally greater than 40 years when this land was used to raise cattle. Agricultural GHG mitigation policies will inevitably involve a trade-off between production, land use and GHG emission reduction. ULICEES is a model that can objectively assess these trade-offs for Canadian agriculture.

Abstract
Foods contaminated with Escherichia coli O157:H7 cause more than 63,000 foodborne illnesses in the United States every year, resulting in a significant economic impact on medical costs and product liabilities. Efforts to reduce contamination with E. coli O157:H7 have largely focused on washing, application of various antibacterial chemicals, and gamma-irradiation, each of which has practical and environmental drawbacks. A relatively recent, environmentally-friendly approach proposed for eliminating or significantly reducing E. coli O157:H7 contamination of foods is the use of lytic bacteriophages as biocontrol agents. We found that EcoShield™, a commercially available preparation composed of three lytic bacteriophages specific for E. coli O157:H7, significantly (p < 0.05) reduced the levels of the bacterium in experimentally contaminated beef by ≥ 94% and in lettuce by 87% after a five minute contact time. The reduced levels of bacteria were maintained for at least one week at refrigerated temperatures. However, the one-time application of EcoShield™ did not protect the foods from recontamination with E. coli O157:H7. Our results demonstrate that EcoShield™ is effective in significantly reducing contamination of beef and lettuce with E. coli O157:H7, but does not protect against potential later contamination due to, for example, unsanitary handling of the foods post processing.

Abstract
A spring calving herd consisting of about 350 beef cows, 14-16 breeding bulls, 60 replacement heifers and 112 steers were used to compare the whole-farm GHG emissions among calf-fed vs. yearling-fed production systems with and without growth implants. Carbon footprint ranged from 11.63 to 13.22 kg CO₂e per kg live weight (19.87-22.52 kg CO₂e per kg carcass weight). Enteric CH₄ was the largest source of GHG emissions (53-54%), followed by manure N₂O (20-22%), cropping N₂O (11%), energy use CO₂ (9-9.5%), and manure CH₄ (4-6%). Beef cow accounted for 77% and 58% of the GHG emissions in the calf-fed and yearling-fed. Feeders accounted for the second highest GHG emissions (15% calf-fed; 35-36% yearling-fed). Implants reduced the carbon footprint by 4.9-5.1% compared with hormone-free. Calf-fed reduced the carbon footprint by 6.3-7.5% compared with yearling-fed. When expressed as kg CO₂e per kg carcass weight per year the carbon footprint of calf-fed production was 73.9-76.1% lower than yearling-fed production, and calf-fed implanted was 85% lower than hormone-free yearling-fed. Reducing GHG emissions from beef production may be accomplished by improving the feed efficiency of the cow herd, decreasing the days on low quality feeds, and reducing the age at harvest of youthful cattle.

Simple Summary The environmental impact of three beef production systems was assessed using a deterministic model. Conventional beef production (finished in feedlots with growth-enhancing technology) required the fewest animals, and least land, water and fossil fuels to produce a set quantity of beef. The carbon footprint of conventional beef production was lower than that of either natural (feedlot finished with no growth-enhancing technology) or grass-fed (forage-fed, no growth-enhancing technology) systems. All beef production systems are potentially sustainable; yet the environmental impacts of differing systems should be communicated to consumers to allow a scientific basis for dietary choices. Abstract This study compared the environmental impact of conventional, natural and grass-fed beef production systems. A deterministic model based on the metabolism and nutrient requirements of the beef population was used to quantify resource inputs and waste outputs per 1.0 × 109 kg of hot carcass weight beef in conventional (CON), natural (NAT) and grass-fed (GFD) production systems. Production systems were modeled using characteristic management practices, population dynamics and production data from U.S. beef production systems. Increased productivity (slaughter weight and growth rate) in the CON system reduced the cattle population size required to produce 1.0 × 109 kg of beef compared to the NAT or GFD system. The CON system required 56.3% of the animals, 24.8% of the water, 55.3% of the land and 71.4% of the fossil fuel energy required to produce 1.0 × 109 kg of beef compared to the GFD system. The carbon footprint per 1.0 × 109 kg of beef was lowest in the CON system (15,989 × 103 t), intermediate in the NAT system (18,772 × 103 t) and highest in the GFD system (26,785 × 103 t). The challenge to the U.S beef industry is to communicate differences in system environmental impacts to facilitate informed dietary choice.

Abstract
This study was developed and validated for the determination of oxyclozanide residue concentrations in beef and commercial milk, using high-performance liquid chromatography system. Oxyclozanide was successfully separated on a reverse phase column (Xbridge-C18, 4.6×250 mm, 5 µm) with a mobile phase composed of acetonitrile and 0.1% phosphoric acid (60:40, v/v%). This analytical procedure involved a deproteinization process using acetonitrile for beef and 2% formic acid in acetonitrile for commercial milk, dehydration by adding sodium sulfate to the liquid analytical sample, and a defatting process using n-hexane; after these steps, the extract was exposed to a stream of nitrogen dryness. The final extracted sample was dissolved in the mobile phase and filtered using a 0.45 µm syringe filter. This method had good selectivity and recovery (70.70±7.90-110.79±14.95%) from the matrices. The LOQs ranged from 9.7 to 9.8 µg/kg for beef and commercial milk. The recoveries met the standards set by the CODEX guideline.
