Relationships between longissimus glycolytic potential and swine growth performance, carcass traits, and pork quality

The relationships between glycolytic potential and growth performance, carcass traits, and pork quality were investigated in a group of 72 pigs from the same genetic line. Glycolytic potential (GP) was determined on live-animal biopsy samples and postmortem samples taken from the longissimus muscle, and free glucose concentration was measured on the exudate from the longissimus muscle taken postmortem. The mean live-animal and postmortem GP and free glucose values were 201.6 micromol/g (range = 113.8 to 301.1), 149.8 micromol/g (range = 91.0 to 270.5) and 110.1 mg/dL (range = 30.0 to 406.0), respectively. Correlations between live-animal and postmortem GP and free glucose ranged from 0.47 to 0.70; however, all three measures were weakly related to growth and carcass traits (r = 0.03 to -0.22; P > 0.05). Correlations of GP and free glucose values with fresh pork quality measurements were moderate (r = 0.23 [P < 0.05] to -0.63 [P < 0.001]). Regression analysis suggested that a one standard deviation increase in live-animal and postmortem GP and free glucose resulted in an increase in L* values (0.99, 1.32, and 2.05, respectively) and drip loss (0.85, 1.10, and 1.39 percentage units, respectively), as well as a decrease in ultimate pH (0.05, 0.11, and 0.16, respectively). Correlations between GP and cooking loss and tenderness and juiciness scores ranged between 0.16 (P > 0.05) to 0.34 (P < 0.01). Free glucose concentration showed no relationship (P > 0.05) with cooking loss, tenderness, and juiciness. Regression analysis suggested that a one standard deviation increase in live-animal and postmortem GP increased cooking loss (1.26% and 1.65%, respectively) and would improve taste panel tenderness (0.54 and 0.44, respectively) and juiciness (0.40 and 0.48, respectively) scores. Increasing GP and free glucose was also associated with decreased longissimus fat and protein, and increased moisture contents (r = 0.14 [P > 0.05] to -0.45 [P < 0.001]). Overall, relationships with fresh meat quality characteristics were stronger for free glucose values than either live-animal or postmortem GP. Results from this study indicate that decreasing longissimus GP and free glucose concentrations may improve pork color and water-holding capacity.

Growth, nutrient utilization, and body composition of dairy calves fed milk replacers containing different amounts of protein

Male Holstein calves < 1 wk of age were allowed a 2-wk adaptation period after purchase, and then were blocked by BW and assigned randomly within block to either a baseline slaughter group or one of four experimental groups (n = 8 to 9 per group). Treatments were isocaloric milk replacers (12.5% solids) fed at 12% of BW that contained 16.1, 18.5, 22.9, or 25.8% CP (DM basis) from whey protein sources. After a 6-wk feeding period, all calves were slaughtered and the weights and chemical composition of the viscera-free carcasses (VFC; including head, hide, feet, and tail) were determined. Gain of BW (0.38, 0.45, 0.56, and 0.62 kg/d) and gain:feed ratio (0.51, 0.59, 0.71, and 0.78) increased linearly (P < 0.001) as dietary CP increased; rate of change in body length, wither height, and heart girth also increased linearly (P < or = 0.05). Balance measurements conducted during wk 3 and 4 of the experimental period showed that both absorbed N (16.9, 20.0, 25.8, and 30.6 g/d) and retained N (7.6, 9.0, 13.2, and 15.6 g/d) increased linearly (P < 0.001) as dietary CP increased. Retained N as a percentage of absorbed N increased linearly (P < 0.01) as dietary CP increased (44.3, 44.7, 50.7, and 50.9%), whereas biological value was unaffected (71.1, 68.7, 69.5, and 67.3%; P = 0.26). Digestible energy and ME represented 94.5 and 89.7% of intake energy, respectively, and were not affected by dietary CP content. Plasma urea N concentration increased linearly (2.9, 3.3, 4.6, and 6.0 mg/dL) as dietary CP increased. Contents of water (68.2, 69.1, 70.2, and 70.5%; P < 0.001) and protein (19.6, 20.0, 20.0, and 20.2%; P < 0.10) in VFC increased linearly, whereas contents of fat (7.2, 6.2, 5.5, and 5.2%; P < 0.001) and ash (5.1, 5.2, 4.8, and 4.7%; P < 0.02) decreased linearly as dietary CP increased. Trends in visceral tissue composition were similar to those for VFC. The content of water in VFC tissue gain increased, whereas contents of fat and energy decreased, as dietary CP increased. Final VFC energy and gain of energy in VFC were not affected by dietary CP. At similar initial ME intakes, increasing dietary CP (i.e., increasing protein: energy) linearly increased ADG, gain:feed, N retention, and deposition of lean tissue in VFC, demonstrating that diet composition can markedly affect components of body growth in preruminant dairy calves.

Effect of dietary leucine level on growth performance, and carcass and meat quality in finishing pigs

The effect of feeding corn-soybean meal-based diets with two levels of supplemental leucine (0 vs. 2%) on growth, carcass, and pork quality characteristics was evaluated in 40 individually fed finishing pigs over a 39-d feeding period (78.4 ± 3.46 to 114.8 ± 7.30 kg liveweight). Supplemental dietary leucine reduced weight gain (8.7%; P < 0.05), but had no effect (P > 0.05) on feed intake or gain:feed ratio. Feeding diets with 2% supplemental leucine increased (P < 0.05) longissimus fat content and marbling scores in both barrows and gilts. Key words: Finishing pigs, dietary leucine, intramuscular fat

Effects of protein deprivation on subsequent growth performance, gain of body components, and protein requirements in growing pigs

Forty-eight barrows were used in a 2 x 6 factorial arrangement to test a hypothesis that feeding a protein-deficient diet affects subsequent growth response by altering the efficiency of protein utilization. Barrows were individually fed either a 9% crude protein (CP) diet or an 18% CP diet from 20 to 30 kg of body weight (BW) (depletion phase). From 30 to 45 kg BW (realimentation phase), pigs were fed one of six experimental diets with CP levels of 11.8, 13.1, 14.3, 15.6, 18.8, and 21.8%. Four pigs were slaughtered at 20 kg BW to determine initial body composition. Four pigs from each treatment in depletion phase (a total of eight) were slaughtered at 30 kg BW, and all pigs from each treatment in realimentation phase (a total of 36) were slaughtered at 45 kg BW for subsequent compositional analysis. Pigs were bled at 20, 30, and 40 kg BW for blood urea nitrogen (BUN), insulin-like growth factor (IGF)-I, and IGF-binding protein (IGFBP) assays. Pigs were given three times the maintenance digestible energy requirement (3 x 120 kcal BW(-0.75) x d(-1)) in three equal meals daily. The feed allowance was adjusted every 3 d. During the depletion phase, pigs fed the 18% CP diet grew faster and more efficiently (P < 0.01) and gained more (P < 0.01) water and protein than did pigs fed the 9% CP diet. Pigs fed the 18% CP diet showed higher (P < 0.01) BUN values, IGF-I concentrations, and IGFBP ratios than pigs fed the 9% CP diet. During the realimentation phase, pigs fed the 9% CP diet during the depletion phase grew faster (P < 0.05), tended to grow more efficiently (P = 0.066), gained more water (P < 0.01), and tended to gain more protein (P = 0.068) than pigs fed the 18% CP diet during the depletion phase. Pigs fed the 9% CP diet during the depletion phase tended (P = 0.069) to have a higher protein requirement during the realimentation phase than pigs fed the 18% CP diet during the depletion phase. When measured at 40 kg BW, pigs fed the 9% CP diet had a lower (P < 0.05) BUN than pigs fed the 18% CP diet during the depletion phase. However, the plasma IGF-I concentration and IGFBP ratio at 40 kg BW were not affected by dietary CP level fed during the depletion phase. This study indicates that pigs fed a protein-deficient diet exhibit compensatory growth. During the period of compensatory growth, the requirement of CP for those pigs is higher than that of pigs previously fed an adequate diet. This study also suggests BUN can be used as an indicator of protein utilization efficiency and compensatory growth.

The impact of longissimus glycolytic potential and short-term feeding of magnesium sulfate heptahydrate prior to slaughter on carcass characteristics and pork quality

The objective of this study was to compare the effects of longissimus glycolytic potential (GP) and of time of feeding of supplemental magnesium sulfate heptahydrate on carcass and pork quality traits. The study was carried out in a 2 x 2 x 4 factorial arrangement; the treatments were sex (castrate vs gilt), GP (Low [normal] vs High), and time of feeding of magnesium sulfate-fortified diets (0 [control] vs 2 vs 3 vs 5 d prior to slaughter). Glycolytic potential was determined on a biopsy sample of longissimus from the live animal prior to the start of the study. A total of 144 pigs were allotted to the feeding-time treatments on the basis of sex (castrate and gilt), weight, and GP. Pigs were placed in individual pens and had free access to water. Prior to the start of the study, pigs were given ad libitum access to a standard finisher diet. During the study, animals were fed at a fixed level of 2.75 kg of a standard finisher diet/day; the fortified diet contained 3.2 g/d of additional magnesium. At the end of the feeding period, animals were transported to a commercial packing facility and slaughtered within 15 min of arrival. Fresh meat quality was measured on the longissimus. There were no treatment interactions. Carcass traits were similar across time of feeding treatments. Backfat thickness at the last lumbar vertebra and 10th rib were lower (P < 0 .05) for High than for Low GP pigs. High GP pigs had lower ultimate pH (P < 0.001) and higher drip (P < 0.05) and purge loss (P < 0.01) than Low GP pigs. Drip loss was reduced (P < 0.05) for pigs fed the magnesium-fortified diet for 5 and 2 but not for 3 d compared to controls (8.98, 7.29, 7.89, and 7.41 for the 0-, 2-, 3-, and 5-d treatments, respectively, SEM 0.447). Purge loss was similar for all of the time of feeding treatments. Longissimus L* values were lower (P < 0.05) for the 2-d treatment than for the controls. Results from this study suggest an inconsistent effect of short-term feeding of magnesium sulfate on muscle color and drip loss in pigs with both Low (normal) and High GP.

Creatine monohydrate supplementation and the quality of fresh pork in normal and halothane carrier pigs

The objective of this research was to examine the impact of supplementation with creatine monohydrate (CMH) on the quality of various muscles from normal and heterozygous halothane carrier pigs. Twenty-nine crossbred pigs, 16 normal (NN) and 13 halothane carrier (Nn) genotypes, were supplemented with 0 or 25 g x pig(-1) x d(-1) of CMH for 5 d before slaughter. Supplemented pigs gained 2.26 kg more weight (P < 0.05) during 5 d of supplementation. There were trends (P < 0.10) toward higher objective marbling scores and lower cooking loss for supplemented pigs. The 45-min pH was 0.27 units higher (P < 0.05) for supplemented pigs in the semimembranosus; CMH supplementation did not influence (P > 0.05) drip loss or muscle composition. Supplementation with CMH also resulted in lower L* values in two ham muscles, semitendinosus (5.15 units) (P < 0.05) and semimembranosus (1.95 units) (P < 0.10) for Nn carcasses. Genotype had significant effects on most quality indicators, with Nn carcasses producing lower-quality lean as evidenced by less desirable subjective and objective color and higher drip losses. Genotype also affected the composition of several muscles, with the NN carcasses having more fat and less moisture.

Early-weaning and postweaning nutritional management affect feedlot performance, carcass merit, and the relationship of 12th-rib fat, marbling score, and feed efficiency among Angus and Wagyu heifers

Twelve 3/4 Angus (Angus) and 12 Wagyu-cross (1/2 Wagyu x 1/2 Angus) (Wagyu) heifers were weaned at 180 d of age and grazed on endophyte-infected tall fescue for 16 mo before entering the feedlot as 2-yr-olds. Twelve 3/4 Angus heifer calves and 12 Wagyu-cross heifer calves from the following year's calf crop were weaned at 142 +/- 4.1 d of age, immediately adjusted to an 80% concentrate diet, and finished as calves. All heifers were fed a common finishing diet until an estimated 50% of their respective group would grade USDA low Prime or better based on ultrasound predictions. Ultrasound measurements of s.c. and i.m. fat depots were recorded at 60-d intervals throughout the finishing period. Heifers finished as calves had higher (P = 0.02) marbling scores at any given fat thickness and gained more efficiently (P < or = 0.01) at any given marbling score than heifers finished as 2-yr-olds. Gain:feed decreased quadratically (P < or = 0.05) as 12th-rib fat thickness increased for Angus and Wagyu heifers. Gain:feed decreased linearly (P < or = 0.01) for Wagyu calves and quadratically (P < or = 0.01) for Angus calves as 12th-rib fat thickness increased. However, these differences in slope were not different (P = 0.34) as a result of breed among heifers finished as calves. Marbling score increased linearly (P < or = 0.01) as 12th-rib fat thickness increased for Angus and Wagyu heifers finished as 2-yrolds or as calves. However, Wagyu heifers, regardless of age at feedlot entry, had a higher marbling score (P < or = 0.05) at any given 12th-rib fat thickness than Angus heifers. Finishing early-weaned heifers as calves as opposed to 2-yr-olds results in i.m. fat deposition during a period of more efficient growth. Additionally, including Wagyu genetics into the breeding of early-weaned heifers finished as calves or as 2-yr-olds results in higher marbling scores at any 12th-rib fat thickness.

Effect of different protein sources on growth and carcass traits in growing-finishing pigs

Crossbred gilts (n = 180) and barrows (n = 180) from the Louisiana State University (LSU) Agricultural Center and the University of Illinois (UI) were used to compare the effect of soybean meal in swine diets, relative to other protein sources, on growth performance and carcass traits of growing-finishing pigs. Four replications with five pigs each at each location were allotted to nine dietary treatments: soybean meal control (SBM), crystalline AA (corn-AA), extruded soybeans (ESB), canola meal (CAN), peanut meal (PNT), sunflower meal (SFLR), ground peas, meat and bone meal (MBM), and poultry by-product meal (PLTY). The diets were formulated to meet or exceed NRC nutrient requirements and to have equal Lys:ME according to dietary phase and sex. Corn was the grain source in all diets and the protein sources were the sole source of supplemental protein in all diets except when AA were added to meet the requirement. Pigs (three per pen at each location) were killed at an average final BW of 114 kg in the LSU or UI Meat Science Laboratories. Pigs fed SBM had greater (P < 0.05) ADG than pigs fed the corn-AA, CAN, SFLR, MBM, or PLTY and greater (P < 0.05) ADFI relative to pigs fed the corn-AA, ESB, MBM, or PLTY. Gain:feed was decreased (P < 0.05) in pigs fed corn-AA or SFLR but increased (P < 0.05) in pigs fed ESB compared with pigs fed the SBM diet. Loin muscle area was decreased (P < 0.05) in pigs fed the corn-AA or MBM diets compared with pigs fed the SBM diet. Tenth-rib backfat thickness was greater (P < 0.10) in pigs fed corn-AA, peas, or MBM than in those fed SBM. The NPPC percentage acceptable quality lean and kilograms of lean were decreased (P < 0.10) in pigs fed corn-AA, peas, or MBM compared with those fed SBM. Results from this experiment suggest that pigs fed SBM have equal or better growth performance and carcass traits than pigs fed other protein sources.

Early weaning and postweaning nutritional management affect feedlot performance of angus x simmental heifers and the relationship of 12th rib fat and marbling score to feed efficiency

Early-weaned Angus x Simmental heifers were used to evaluate the effects of postweaning nutritional management on feedlot performance, carcass merit, and the relationship of intramuscular and subcutaneous fat deposition to the feed efficiency among heifers fed for a high-quality market. Sixteen heifers were weaned at 73+/-5.5 d of age and grazed on endophyte-infected tall fescue for 18 mo before entering the feedlot (early-weaned-P). Eighty heifers from the following year's calf crop were weaned at 71+/-5.5 d of age and allowed either ad libitum access to a 25% concentrate diet (early-weaned-25C) or limit-fed a 90% concentrate diet (early-weaned-90C) to achieve a similar ADG. Following a 119-d growing period, 16 early-weaned-90C and 16 early-weaned-25C calves were paired based on BW and growth rate and individually fed during the finishing period along with the early-weaned-P heifers. Ultrasound measurements of s.c. and i.m. fat were recorded at approximately 60-d intervals throughout the finishing period. Feed efficiency was regressed against s.c. and i.m. fat, and i.m. fat was regressed on s.c. fat. Despite a similar ADG, early-weaned-90C calves gained more efficiently (P < or = 0.05) in the feedlot than early-weaned-25C calves. Heifers finished as yearlings tended (P < or = 0.10) to gain faster but gained less efficiently (P < or = 0.01) than early-weaned-90C heifers finished as calves. The rate of s.c. and i.m. fat deposition was similar between early-weaned-90C and early-weaned-25C heifer calves. The calves were grouped together for comparison to yearlings. Feed efficiency decreased quadratically (P < or = 0.01) as s.c. fat cover increased. The rate at which feed efficiency decreased relative to increasing s.c. fat cover was similar regardless of age at feedlot entry. However, heifers finished as calves gained more efficiently (P < or = 0.01) than yearlings at any given fat thickness. Feed efficiency decreased linearly (P < or = 0.01) as i.m. fat increased among heifers finished as calves. Additionally, heifers finished as calves deposited i.m. fat at a faster rate relative to s.c. fat (P < or = 0.01) than yearlings. These data suggest that heifers finished as calves produce high-quality carcasses with less s.c. fat cover while gaining more efficiently than heifers finished as yearlings.

Factors influencing consumer demand for U.S. pork exported to the Republic of Korea (South Korea)

The potential market for single-ribbed bellies and Boston butts in South Korea was characterized and quantitative selection criteria were identified for use by U.S. packers when selecting pork for export. South Korean retail meat market managers and traders/wholesalers in Seoul and Pusan were interviewed and asked to identify the quality attributes that are considered when making pork-purchasing decisions. In addition, pork labeling characteristics and meat display case measurements and space allocations were recorded in each retail store. Data from box labels were recorded in retail storage coolers to characterize pork products currently being merchandized in South Korea. Sample retail packages of belly and butt slices were collected and sent to a commercial laboratory for analysis of iodine values, ether-extractable fat content, total aerobic plate count (APC), total coliform count (TCC), and generic Escherichia coli count (ECC). No quality attributes of U.S. products exceeded the expectations of retailers. Quality attributes of U.S. pork products that exceeded the expectations of traders included presence of foreign material, marbling, tenderness, juiciness, flavor, and overall eating satisfaction. Traders/wholesalers assigned negative ratings for overall workmanship and adherence to purchase criteria for U.S. pork products. Retail APC for South Korean belly samples were higher (P < 0.05) than APC for U.S. belly samples. Retail TCC and ECC for butts and belly samples and APC for butt samples did not differ by country of origin. Retail prices for South Korean bellies were higher (P < 0.05) than prices for retail U.S. and Danish bellies. Pork butt prices did not differ (P > 0.05) by country of origin. Beef, pork, and poultry products comprised 66.8, 27.8, and 5.4%, respectively, of the total meat display case frontage. U.S. beef products occupied, on average, 18% of the total beef display area, whereas U.S. pork products comprised 2.6% of the total pork display case area.

Effect of starter feeding program on growth performance and gains of body components from weaning to market weight in swine

Three experiments were conducted to test the hypothesis that different starter feeding programs (High, high quality; Low, low quality) will affect growth performance and body composition of pigs from weaning to market weight and that this effect may be influenced by gender (barrows or gilts) and breed (F, Yorkshire-Duroc x Hampshire; P, PIC Camborough 15 x PIC line 405). In Exp. 1, 21 +/- 4-d-weaned F pigs (n = 90) were used in a 2 (High or Low) x 2 (barrows or gilts) factorial design. In Exp. 2, 21 +/- 3-d-weaned pigs (n = 184) were used in a 2 (F or P) x 2 (High or Low) x 2 (barrows or gilts) factorial design. In Exp. 3, 21 F pigs from each gender and feeding program treatment were killed at d 0, 3, 7, 14, 42, 82, or 152 postweaning for evaluating body composition. Two starter feeding programs (High or Low) were applied to pigs for 6 wk postweaning. Pigs from both High and Low treatments were provided the same corn-soybean meal-based diets for the growing and finishing periods. Although the ADG of all pigs receiving the High treatment during the early starter period were higher (P < .01) than those of the Low, the terminal BW of F barrows were similar between High and Low (Exp. 1 and 2) and those of gilts were similar between High and Low (Exp. 2) (P > .80). However, the BW of P pigs receiving the High treatment, regardless of gender, tended to be heavier than those receiving the Low (Exp. 2) and F barrows receiving the High treatment tended to be heavier than those receiving the Low (Exp. 1). For the first 7 d postweaning, the High-fed pigs gained more protein (P < .05) and lost less fat (P < .05) than Low-fed pigs. During the growing-finishing period, the Low-fed pigs exhibited compensatory protein gain and achieved a body protein content similar (P < .60) to High-fed pigs by termination. Protein gains from weaning to termination between High- and Low-fed pigs were not different in Exp. 2 and 3. The protein gain of gilts was higher (P < .05) than that of barrows. Similarly, fat gain within genders was not affected by starter feeding program. Fat gain of gilts, however, was lower (P < .08) than that of barrows in Exp. 3. In conclusion, the nutritional quality of the starter feeding program affected growth performance immediately after weaning but did not affect protein gain over the entire production period.

The effect of the Halothane and Rendement Napole genes on carcass and meat quality characteristics of pigs

The objective of this study was to determine the effects of the Halothane (N) and Rendement Napole (RN) genes on carcass and meat quality characteristics in pigs. Halothane and RN carrier (Nn/RN- rn+) Hampshire boars (n = 4) were mated to dams that were homozygous for the normal allele of both genes (NN/rn+ rn+) to produce progeny of four genotypes: 1, NN/rn+ rn+ (n = 31); 2, Nn/rn+ rn+ (n = 27); 3, NN/RN- rn+) (n = 30); and 4, Nn/RN- rn+ (n = 23). A DNA test was used to determine Halothane genotype, and longissimus glycolytic potential was used to predict the RN genotype. Pigs were reared under standard conditions to approximately 120 kg live weight and slaughtered at a commercial plant, and carcass characteristics and meat quality were evaluated. Halothane carriers (Nn/ _ _), in comparison to Halothane normal (NN/_ _) pigs, had shorter carcasses, lower longissimus ultimate pH, higher Minolta L* and b* values, and greater drip loss. Rendement Napole gene carriers (_ _/RN- rn+) had higher L* and b* values and drip and cooking loss and lower longissimus ultimate pH than homozygous recessive animals (_ _/rn+ rn+). There were Halothane x RN genotype interactions (P < 0.05) for subjective color, firmness, and marbling scores, and for shear force. Animals that were normal for both genes (NN/rn+ rn+) had the highest subjective scores for color (2.60, 1.88, 1.85, and 1.95, SE = 0.181, P < 0.05), firmness (2.53, 2.03, 2.10, and 1.89, SE = 0.182, P < 0 .05), and marbling (2.11, 1.44, 1.53, and 1.55, SE = 0.153, P < 0 .05) for genotypes 1, 2, 3, and 4, respectively, suggesting darker, firmer muscle with a higher level of marbling for this genotype. Shear force was highest for Nn/rn+ rn+ animals (3.83, 4.41, 3.79, and 3.70, respectively, SE = 0.172, P < 0.05). Gilts had less s.c. backfat thickness, greater longissimus muscle area, and lower subjective marbling scores than barrows. There was no effect (P > 0.05) of gender on other meat quality traits. This study illustrates the negative effects of the Halothane and RN genes on fresh pork quality and suggests that in combination the detrimental effects of the two genes are additive for ultimate pH, objective color, and water-holding capacity.

Quantification of pork belly and boston butt quality attribute preferences of South Korean customers

U.S. packers must have quantitative criteria for selection of pork bellies and Boston butts for export to South Korea. Pork bellies (IMPS 409A) and Boston butts (IMPS 409A, 406B, 407) were selected from normal production in a U.S. pork packing plant and transported to Seoul, South Korea, via seafreighter in refrigerated containers (frozen < -5 degrees C) or via air freight (fresh > 0 degrees C; frozen < -5 degrees C). Participants at the Seoul Food Show were surveyed about their preferences for specific quality attributes of these cuts. Bellies were selected to differ in seam fat content (low = < 20%, moderate = 20 to 40%, high = > 40% extractable fat), lean color (pale = L* > 50, medium = L* 48-50, dark = L* < 48), weight (3.36, 4.04, or 5.36 kg), state of refrigeration and packaging (frozen, poly-wrapped; chilled, poly-wrapped; frozen, vacuum-packaged; chilled, vacuum-packaged), shape (round, wavy, square), and belly thickness (3.81, 4.32, or 4.90 cm). Boston butts were selected to differ in USDA marbling score (Slight, Small, Modest, Moderate, and Slightly Abundant), seam fat content (low = < 10%, moderate = 10 to 20% fat, high = > 20% extractable fat), lean color (pale = L* > 44, medium = L* 40-42, dark = L* < 38), weight (2.91, 3.82, or 4.66 kg), state of refrigeration and packaging (frozen, poly-wrapped; chilled, poly-wrapped; frozen, vacuum-packaged; chilled, vacuum-packaged), and shape (square, oblong, round). In Seoul, pork subprimals were tempered (if frozen), sliced, and arrayed by quality attribute and category in a retail display case. Over 4 d of testing, attendees (n = 210) of the food show were asked to rate the displayed samples for each quality attribute on a standardized ballot. Mid-weight (3.82 kg) Boston butts that displayed Moderate or higher USDA marbling scores with moderate amounts of seam fat, Japanese lean color scores of 2 or 4, round geometric shape, and that were vacuum-packaged and transported to Korea in the freshly chilled state best characterized the quality attribute preferences of respondents. Pork bellies that exhibited moderate amounts of seam fat, Japanese lean color scores of 3, square shape, belly thickness of 3.94 cm, approximate weight of 4.04 kg, and that were vacuum-packaged and transported to Korea in the freshly chilled state best met the quality needs of South Korean customers.

Frequency of the Rendement Napole RN- allele in a population of American Hampshire pigs

A total of 204 purebred Hampshire pigs were obtained from 23 breeders. These animals were the progeny of 41 sires and 123 dams. A sample of purebred Yorkshire (n = 24) pigs were also used in the study. Animals were classified by glycolytic potential determined on a live-animal longissimus muscle biopsy sample. Hampshire pigs (n = 176) with glycolytic potential greater than 185 micromol/g (x = 238.8 micromol/g; SD = 29.54) were classified as heterozygous or homozygous for the dominant RN- allele (RN-rn+ or RN-RN-, respectively), whereas cohorts (n = 28) with glycolytic potential less than 185 micromol/g (x = 141.3 micromol/g; SD = 24.48) were considered as homozygous normal (rn+rn+). All Yorkshire pigs (n = 24) had a mean glycolytic potential level of 146.1 micromol/g (SD = 20.18) and were considered as homozygous normal (rn+rn+). The Hardy-Weinberg equilibrium yielded frequencies of .630 and .370 for the dominant RN- allele and normal rn+ alleles in the Hampshire population, respectively, and genotypic frequencies of .397 (RN-RN-), .466 (RN-rn+), and .137 (rn+rn+). Hampshires with glycolytic potential > or = 185 micromol/g had significantly lower longissimus muscle ultimate pH, intramuscular fat, subjective marbling scores, and percentage of protein (P < .001) and had greater longissimus muscle percentage of moisture (P < .001), drip loss (P < .01), and cooking loss (P < .001) than rn+rn+ Hampshires and Yorkshires. These data suggest the RN- allele exists at a high frequency within the American Hampshire breed. Higher glycolytic potential levels, which accompany the allele, may cause decreased meat quality.

Influence of sire line and halothane genotype on growth performance, carcass characteristics, and meat quality in pigs

Progeny of three commercial sire lines mated to the same halothane negative crossbreed dam line were compared for growth, carcass and meat quality characteristics. Sire line A (halothane reactor) produced halothane carrier progeny; line C was halothane negative and produced negative progeny; line B (a cross between lines A and C) was a halothane carrier line that produced both carrier (BNn) and negative (BNN) progeny within the same litter. Line A pigs grew more slowly (P ≤ 0.05) and consumed less feed (P ≤ 0.05) than the progeny of the other lines (885, 1049, 1057 and 1082 g d−1 and 2.37, 2.82, 2.72 and 2.79 kg d−1 for lines a, BNN, BNn and C respectively). However, gain:feed was similar for all lines. Dressing percentage was similar for lines A, BNn and BNN (77.42, 77.62 and 77.00% respectively) but lower for line C (75.31%: P ≤ 0.05). Line differences for linear carcass measurements, lean cut yield and fat-free lean content were relatively small. Line A had higher shear force than the others (4.32, 3.21, 3.57, and 3.30 kg for A, BNN, BNn and C, respectively; P ≤ 0.05) and lines A and BNn had reduced taste panel tenderness and juiciness (P ≤ 0.05) compared with lines BNN and C. This study highlights commercially important differences between sire lines for pork quality traits. the variation in pork quality within this study resulted from the halothane gene and, potentially, other single genes that affect meat quality parameters. Effect of dietary lysine level and environmental temperature during the finishing phase on the intramuscular fat content of pork

This study was designed to investigate the effects of dietary lysine level on the intramuscular fat content of the longissimus in finishing pigs reared at two environmental temperatures. Seventy-two hybrid gilts were individually penned and given ad libitum access to either a diet formulated to meet their lysine requirement (6.4 g/kg lysine) or a lysine-deficient diet (4.8 g/kg). Pigs were held at one of two environmental temperatures (thermoneutral [18 degrees C] or hot [32 degrees C]). The study was carried out between approximately 90 and 126 kg live weight; pigs in the thermoneutral and hot environments were on test for 5 and 7 wk, respectively. There were no interactions between dietary lysine level and environmental temperature. Dietary lysine content did not influence feed intake or average daily gain; however, pigs on the lysine-deficient diet had a poorer gain:feed ratio than those fed to requirement (P < .01). High environmental temperature decreased feed intake (P < .001) and average daily gain (P < .01) but improved gain:feed ratio (P < .01). Backfat at the 10th rib was increased and loin eye area and estimated percentage lean in the carcass were decreased for pigs on the lysine-deficient diet. The higher environmental temperature resulted in an increase in carcass length but had no effect on other carcass measurements or intramuscular fat. Feeding the lysine-deficient diet resulted in an increase of .55 percentage unit in longissimus intramuscular fat content (P < .01); however, there was no difference in subjective marbling scores between the diets. Warner-Bratzler shear force values were not affected by dietary lysine level or environmental temperature. Results from this study suggest that feeding of lysine-deficient diets at the end of the finishing period can increase intramuscular fat deposition under thermoneutral and hot conditions.

Influence of dietary selenium source on growth performance, and carcass and meat quality characteristics in pigs

Inorganic (sodium selenite) and organic (selenium-enriched yeast) dietary selenium sources were compared in a performance study using 48 growing–finishing pigs. There was no effect of selenium source on growth and meat-quality traits. Performance and carcass traits of early-weaned steers receiving either a pasture growing period or a finishing diet at weaning

A 2-yr study was conducted to evaluate 1) steers fed ad libitum high concentrate after weaning (CONC), or 2) steers grown on pasture for 82 d, followed by high-concentrate finishing (PAST), on the performance and carcass traits of 74 early-weaned (117 d of age) steers. Potential breed differences were evaluated using crossbred steers of three types: 1) 3/4 Angus x 1/4 Simmental (BRI), 2) 3/4 Simmental x 1/4 Angus (CON), and 3) 1/2 Wagyu x 1/4 Angus x 1/4 Simmental (WAG). Steers were randomly assigned within breed to the two treatments. There was no interactions (P > .10), so the data were pooled over years. The CONC steers had an ADG that was .17 kg/d higher (P = .0001), intake 1.09 kg/d lower (P = .0001), and gain:feed ratio .013 unit better (.190 vs .177, P = .008) than PAST steers overall. Growing treatment did not affect total concentrate consumed (P = .97). The BRI steers required 31 d less than did CON steers (P = .008), and 23 d less than WAG steers (P = .05) when fed to a constant fat end point (1.1 cm). The BRI steers exhibited an ADG .16 kg/d higher (P = .0003), tended (P = .07) to have an ADG intake .49 kg/d higher, and exhibited gain:feed .01 unit better (.189 vs 180) than WAG steers. When compared with CON steers, BRI steers consumed 310 kg less total concentrate (P = .0003). No differences (P > .38) were observed between growing treatments for carcass characteristics or sensory attributes except that CONC steers tended (P = .11) to improve percentage of steers grading Average Choice or higher by 47% over PAST steers. The WAG steers had a 76-unit higher marbling score (1,000 = Small00, 1,100 = Modest00) (P = .006) than BRI steers, resulting in 19% more (P = .09) steers grading > or = Choice and 82% more (P = .03) grading > or = Average Choice. Liver (P = .15) and rumen (P = .01) weights as a percentage of hot carcass weight were reduced for CONC steers. The CONC steers had higher gain, lower intake, better efficiency, reduced liver and rumen weights, and consumed the same amount of total concentrate when compared with PAST steers. The BRI steers had less finishing days and lower daily intake compared with CON steers. The WAG steers had more days finishing, lower gain, lower intake, more undesirable efficiencies, consumed the same amount of total concentrate, and improved quality grades compared with BRI steers.

Pork carcass composition: II. Use of indicator cuts for predicting carcass composition

Right sides of 30 pork carcasses were fabricated into indicator cuts (Boston butt, picnic, anterior belly, posterior belly, anterior loin, posterior loin, and ham) and used to determine carcass composition by physical dissection and chemical analysis of soft tissue. Linear measures and chemical composition of whole-side grind were collected from left sides. Dissection of indicator cuts to predict dissectable composition of the side were much better indicators than linear measures (R2 = .70 to .94). Chemical analyses of soft tissue (lean + lipid) from the loin and anterior belly were better predictors of fat-free lean and extractable lipid composition of the side than linear measures; 89% of the variation in dissectable lean of the side was explained by the use of dissectable components of the anterior loin. The loin served as the best overall indicator cut across the various end points evaluated; 92% of the variation in dissectable lean of the side was explained using dissectable components of the shoulder. The anterior belly was a good indicator for percentage of dissectable lean, fat, fat-free lean, and extractable lipid.

Pork carcass composition: I. Interrelationships of compositional end points

Thirty pork carcasses were used to evaluate the interrelationships between compositional end points and the accuracy of predicting various end points from one another. Right sides were fabricated into Boston butt, picnic, anterior belly, posterior belly, anterior loin, posterior loin, and ham. Carcass composition was determined on the right side using physical dissection and chemical analyses of soft tissue. Left sides were ground (whole-side grind). Linear measures and chemical composition were made on left sides. Using dissectable components, high (r > .85) correlations occurred between percentage of fat-free lean and percentage of lipid, percentage of dissectable fat, and lipid in the whole-side grind; between weights of dissectable lean and fat-free lean; and between weights of lipid in the whole-side grind and lipid, dissectable fat, and dissectible lean. Dissectable lean percentage and fat (percentage and weight) could be predicted using weight of lipid, weight of fat-free lean, and side weight. Any physical measure could be accurately estimated from any compositional end point (r2 = .79 to .93). Regression equations using 10th-rib linear measures and hot carcass weights predicted compositional end points with R2 > or = .80, with the exception of dissectable lean (R2 = .56).

Feed intake pattern of group-housed growing-finishing pigs monitored using a computerized feed intake recording system

The feed intake pattern and growth performance of boars, barrows, and gilts fed diets differing in lysine and protein content were measured on 120 crossbred pigs from 27 (SD 3.7) to 81.5 (SD 9.2) kg live weight. The pigs were housed in eight mixed-sex groups with five pigs of each sex in each group. They were fed from an electronic feed station that recorded individual meal sizes and the time and duration of visits to the feeder for each animal in the group. Four dietary treatments were compared. During the grower period (27 to 55 kg), diets ranged in lysine content form .98 to 1.31%; for the remainder of the study, lysine content was .88 to 1.18%. Barrows had a greater (P < .01) number of meals per day than the other two sexes (7.4 vs 7.0 vs 7.0 +/- .10, respectively), but there were no significant differences among sexes for daily feed intake or other feed intake traits. Daily feed intake increased with dietary lysine content, largely because of increased meal sizes resulting from longer feeder occupation times at each visit. Visits to the feeder were greatest between 0900 and 1100 and lowest between 2000 and 0400. Correlations between feeding pattern and growth traits were relatively low. Repeatabilities of feeding pattern traits were generally higher when measured over shorter time periods. These results suggest a change in feeding behavior with increasing dietary lysine levels and a relatively small effect of sex on feeding pattern for mixed-sex groups of 15 pigs fed from a single electronic feed station.

Incubation temperature effects on physical characteristics of normal, dark, firm and dry, and halothane-carrier pork longissimus

Pigs (n = 18) were selected to represent three different muscle conditions (six pigs per condition): normal: dark, firm, and dry; and halothane carrier. A 45-cm-long longissimus section was excised from each side of the carcass at 30 min postmortem and cut into six sections. Right side sections were assigned to the intermediate temperature incubation (23 degrees C), and left side sections were designated high temperature incubation (40 degrees C). Sections were randomly assigned to incubation times (0, 1, 2, 4, 6, or 8 h). The 0 h section from each incubation treatment was designated as a control and was placed directly into a 4 degree C cooler. Temperature and pH were evaluated on the control section and for each loin section a the end of the incubation time. Color (L*, a*, and b* values), percentage of purge loss, water-holding capacity, and drip loss were determined. Incubation treatment did not alter pH decline in dark, firm, and dry muscle; however, high temperature increased pH decline in normal and halothane carrier samples. Results suggest that there is a strong interaction between pH and temperature that affects pork quality attributes. High incubation temperature had a negative effect on most quality variables; however, muscle condition (normal or halothane carrier) had limited effects on muscle quality.
