Abstract
The objective of the study was to characterise genetic parameters across months for different tick species and anatomical locations in South African Nguni cattle. Tick counts were conducted monthly, over a 2-year period, on 586 Nguni cattle under natural infestation, from four herds located in different provinces of South Africa. The counts were recorded for six species of ticks (Amblyomma hebraeum, Rhipicephalus evertsi evertsi, Rhipicephalus decoleratus and microplus (Boofilids), Rhipicephalus appendiculatus, Rhipicephalus simus and Hyalomma marginatum) attached on eight anatomical locations on the animals and were summed by species and anatomical location. Heritability estimates, phenotypic and genetic correlations were estimated on a monthly basis using mixed linear models, fitting univariate and bivariate sire models. Fixed effects considered were location, sex, year and age as a covariate. Tick counts were higher in the hot months, and A. hebraeum was the most dominant tick species. Heritability estimates for tick count varied by month and trait and ranged from 0 to 0.89. Genetic correlations were mostly positive, and low to high, with some negative correlations with high standard error. Phenotypic correlations were low to moderate. In general, high genetic correlations were observed between whole body count and the anatomical location counts, suggesting that it may not be necessary to conduct whole body counts. Counts from the belly and perineum appeared to be the most suitable surrogate traits for whole body count. These findings provide useful information for developing strategies for the practical implementation of genetic selection, as a supplement to the traditional tick control measures.

Abstract
The objective of this study was to determine the changes in biochemical indicators for nutritional stress from a herd of Boran and Nguni cows. A total of 40 cows (20 from each herd) were randomly selected for the study. The animals were identified according to their parities as follows: parity 1 (n = 8), parity 2 (n = 16), parity 3 (n = 8) and parity 4 (n = 8). Serum chemistry levels of glucose, total cholesterol, urea, creatinine, albumin, globulin, aspartate aminotransferase (AST), alanine aminotransferase (ALT), alkaline phosphatase (ALP), gamma glutylaminotransferase (GGT), leukocytes, erythrocytes, haemoglobin, packed cell volume (PCV) and platelet counts were determined for 12 consecutive months spanning across the wet and dry seasons. The Boran cows had different creatinine concentration levels at different parities. The Boran cows in parity 1 had the highest (P < 0.05) concentration of creatinine 87.2 ± 5.17 μmol/L than other cows in different parities within the herd. There were significant differences in enzymes such as AST, ALP and ALT among the herd and parities. Boran cows in parity 3 had the lowest (P < 0.05) AST concentration levels of 52.6 ± 3.48 U/L, Nguni cows in parity 4 had the highest concentration of ALP of 161.3 ± 8.10 U/L while Nguni cows in parity 1 had the highest concentration level of ALT 55.1 ± 1.56 U/L than all the cows within the same herd. The Nguni herd had significantly higher (P < 0.05) levels of creatinine in both the wet (97.8 ± 3.27 μmol/L) and dry seasons (108.7 ± 3.29 μmol/L) compared with the Boran herd. Cows from the Nguni herd maintained significantly higher amount of urea, creatinine, albumin and total protein in both the wet and dry seasons as compared with cows from the Boran herd. Cows from the Nguni herd maintained significantly higher amount of urea, creatinine, albumin and total protein in both the wet and dry seasons as compared with those from the Boran herd.

Abstract
Boran (n=15) and Nguni (n=15) cows were used in a study to determine the effect of breed, age and coat colour on the concentration of heat shock protein 90 (HSP90AB1), physiological rectal and skin temperature, and markers of health. The cows were exposed to summer heat stress and Boran cows had higher significant (P<0.05) skin temperature (35.1±0.42°C) as compared to the Nguni cows (36.0±0.38°C). Nguni cows had higher body thermal gradients than the Boran cows. Boran cows had thicker skin (P<0.05) and longer hairs (24.3±2.26mm) than their Nguni counterparts (20.2±2.00mm). The HSP90AB1 concentration was increased in Boran cows, although breed had no significant (P>0.05) influence. Significantly (P<0.05) high urea and total cholesterol was recorded in Boran cows. Coat colour had a significant (P<0.05) effect on the weight and rectal temperature of the study animals. Coat colour and age had no significant effect (P>0.05) on the concentration of HSP90AB1, although older cows (≥9 years) had higher concentrations (5.4±1.29ng/ml). Age had a significant (P<0.05) effect on packed cell volume, neutrophil/lymphocyte, urea, total protein and gamma-glutamyl transferase whereas cows with ≥9 years had more concentrations than young ones. Age significantly (P<0.05) influenced hair length, skin temperature and the thermal gradients. Breed was positively correlated (P<0.001) to coat colour, age, body condition score, weight and temperature humidity index while negatively correlated to urea and total cholesterol. It was concluded that Nguni cows were more adaptable to hot environments than the Boran cows as the latter were unable to balance thermal load between their bodies and the environment.

Abstract
Background Cymbopogon species are widely used as herbal remedies by the traditional healers living in Nkonkobe Municipality for the treatment and management of skin and respiratory infections. According to our survey, the plants seem to be very important because of the higher demands. Methods The leaves of C. validis and C. plurinodis were hydro-distilled and the resulted extracted oils were analyzed by GC/MS. Minimum inhibitory concentrations (MICs) ranging from 7.8 to 500.0 μg/ml of the extracted oils were tested against eight bacterial strains, using micro-well dilution method. The human Chang liver cell viability was determined using the CellTiter-Blue cell assay. Results GC-MS analysis of the C. validis essential oil amounted to 87.03%, major components identified were Linalyl alcohol (18.9%), 2-Nephthalenemethanol (6.67%), Longifolene (6.53%), Cubedol (6.08%). Total oil percentage of C. plurinodis was 81.47% and the main components were characterized as 3-Cyclohexane-1-ol (13.58%), Nerolidol (13.6%) and 2-Carene (12.6%). The essential oils from both plants were found to be active against the growth of Gram positive than the Gram negative bacterial tested. Lethal dose at 50 (LD50) of both plants showed 74.87 ± 1.41 and 81.66 ± 1.40 degree of toxicity at 24 h. Conclusion Both plants extracts were toxic to human Chang liver cell lines.

Abstract
The current review seeks to highlight the concerns that have been raised on pre-slaughter stress, contributing factors and its consequent effects on cattle behavioural responses and the quality of beef; inter-linking the activities involved from birth to slaughter. Such information is crucial in light of the consumer concerns on overall animal welfare, quality of meat and food security. Slaughter animals are exposed to different conditions during production and transportation to abattoirs on a daily basis. However; the majority of studies that have been done previously singled out different environments in the meat production chain, while conclusions have been made that the welfare of slaughter animals and the quality of meat harvested from them is dependent on the whole chain. Behaviour is a critical component used to evaluate the animals' wellbeing and it has been reported to have an effect on product quality. Apart from the influence of on-farm, transportation and abattoir conditions, the genetic background of the animal also affects how it perceives and responds to certain encounters. Stress activates the animals' hypothalamic-pituitary-adrenal activity, triggering release of various stress hormones such as catecholamines and cortisol, thus glycogen depletion prior slaughter, elevated ultimate pH and poor muscle-meat conversion. Pre-slaughter stress sometimes results to cattle attaining bruises, resulting to the affected parts of the carcass being trimmed and condemned for human consumption, downgrading of the carcass and thus profit losses.

Abstract
Dietary fatty acids (FA) consumed by sheep, like other ruminants, can undergo biohydrogenation resulting in high proportions of saturated FA (SFA) in meat. Biohydrogenation is typically less extensive in sheep than cattle, and consequently, sheep meat can contain higher proportions of omega (n)-3 polyunsaturated FA (PUFA), and PUFA biohydrogenation intermediates (PUFA-BHI) including conjugated linoleic acid (CLA) and trans-monounsaturated FAs (t-MUFA). Sheep meat is also noted for having characteristically higher contents of branched chain FA (BCFA). From a human health and wellness perspective, some SFA and trans-MUFA have been found to negatively affect blood lipid profiles, and are associated with increased risk of cardiovascular disease (CVD). On the other hand, n-3 PUFA, BCFA and some PUFA-BHI may have many potential beneficial effects on human health and wellbeing. In particular, vaccenic acid (VA), rumenic acid (RA) and BCFA may have potential for protecting against cancer and inflammatory disorders among other human health benefits. Several innovative strategies have been evaluated for their potential to enrich sheep meat with FA which may have human health benefits. To this end, dietary manipulation has been found to be the most effective strategy of improving the FA profile of sheep meat. However, there is a missing link between the FA profile of sheep meat, human consumption patterns of sheep FA and chronic diseases. The current review provides an overview of the nutritional strategies used to enhance the FA profile of sheep meat for human consumption.

Abstract
This study examined the fatty acid and mineral compositions of raw and cooked beef and liver from Bonsmara (BD) and non-descript (ND) cattle, raised on natural pasture. Samples were collected from 80 cows and thermal-processed at 65°C for 120 minutes and 85°C for 60 minutes using sous-vide techniques, and then analysed for fatty acid and mineral compositions. The results did not show differences in individual fatty acid composition of meat samples between the breed (P>0.05). However, the raw beef sample had higher content of monounsaturated fatty acids (MUFA , 40.22% ± 3.79 ND, 42.53% ± 2.39 BD) and lower content of polyunsaturated fatty acids (PUFA , 11.02% ± 5.47 ND, 10.13% ± 6.73 BD) than liver (MUFA , 20.11% ± 4.76 ND, 21.08% ± 2.46 BD; PUFA , 30.73% ± 5.20 ND, 31.11% ± 2.37 BD) (P<0.05). The PUFA /MUFA and n-6/n-3 ratios, atherogenicity and desaturase indices were comparable between breeds, but higher in beef than liver. The total percentage of saturated fatty acid, MUFA and PUFA retained after cooking were numerically higher in liver than in beef (P>0.05). The results further revealed higher contents of Na, Mg, and Zn in raw beef than liver. However, the content of Na, Mg, and Zn in the beef and liver were not significantly (P>0.05) affected after cooking. Based on the PUFA proportion of the total lipids in beef (11.02%) and liver (31.11%) and n-6/n-3 PUFA ratio in beef (2.54) and liver (1.34), consumption of liver and beef from cattle raised on pasture could be beneficial to human health. Additionally, application of sous-vide technique can be used to minimize the nutritional losses in beef and liver.

Abstract
Information obtained from abattoirs on the causes of lung condemnation is important in preventing the spread of zoonotic diseases and for promoting food security. In this study, we assessed the causes of lung condemnation in cattle at three abattoirs represented as ANA, QTA and EBA to evaluate the financial losses associated with lung condemnation. A retrospective study (n = 51 302) involving the use of abattoir slaughter records of 2010-2012 and an active abattoir survey (n = 1374) was conducted from July to December 2013. The retrospective study revealed the main causes of lung condemnation as pneumonia (1.09%, 2.21% and 0.77%), emphysema (1.12%, 1.14% and 1.1.6%) and abscessation (0.71%, 1.06% and 0.77%), from ANA, QTA and EBA, respectively. The combined monetary loss because of lung condemnation during the period 2010 to 2012 was estimated as ZAR 85 158 (USD 7939) for the abattoirs surveyed. Conversely, during the active abattoir survey, agonal emphysema (15%, 15% and 23%) and improper eviscerations with faecal contamination (10%, 38% and 42%) were the major factors that led to lung condemnation at ANA, QTA and EBA, respectively. Other causes of lung condemnations were haemorrhage (10%) for QTA and pleurisy (12%) for EBA. The weight loss of lungs during the active abattoir survey was 6450 kg, while the associated monetary loss was estimated as ZAR 29 025 (USD 2706). This study identified major causes of lung condemnation as pleuritis, improper evisceration, pneumonia, abscesses, haemorrhages and lung worms and their associated monetary losses. The results of this study may be useful as baseline data for future comparison in similar surveys, for tracking of some zoonotic diseases affecting lungs and for further research in the Eastern Cape Province or other provinces of South Africa.

Abstract The objective of the study was to determine the effects of animal class and genotype of cattle on Muscularis longissimus thoracis et lumborum (LTL) nanostructure, ultimate pH (pHu), colour and tenderness of beef. We found significant positive relationships between distance travelled (DT) and meat temperature (Tm) (p less than 0.01); lairage duration (LDhr) and lightness of colour (L*) (p less than 0.01); ambient temperature (Ta) and L* (p less than 0.05) and LDhr and yellowness (b*) (p less than 0.05) of beef from Bonsmara cattle. Positive linear relationships were observed between DT and Tm (p less than 0.05) and DT and L* (p less than 0.01) of the non-descript cattle. There were no significant relationships between pre-slaughter stress and other beef quality parameters (pHu, Warner– Bratzler shear force [WBSF], redness [a*] and b*) of Bonsmara, Nguni and non-descript cattle. Muscle fibres differed among class and genotype and had an effect on meat quality. The Bonsmara, non-descript and Nguni cows and heifers had visible skeletal muscle fibres which were thin and long, promising improved tenderness of beef. Genotype and class had significant effects on meat quality parameters (Tm, pHu, L*, a*, b* and WBSF). The first important principal components as they appeared from the analysis were pHu, Tm, L*, a*, b* and WBSF. Therefore, animal class did not affect the nanostructure of beef; instead, meat tenderness was enhanced by the longer and visible muscle fibres. Nguni cattle produced meat of superior quality to that of the Bonsmara and the non-descript cattle.

Abstract
The use of medicinal plants plays a major role in the primary health care of animals in South Africa. A survey was conducted to document medicinal plants used to control parasites in goats in Kwezi and Ntambethemba villages in the Eastern Cape Province, South Africa. Information from 50 farmers and 3 herbalists was obtained through the use of a structured questionnaire, and a snowball sampling technique was used to identify key informants. The obtained data were analysed using PROC FREQ of SAS (2003), and fidelity level values were determined to estimate the healing potential of the mentioned plants. The survey revealed nine plant species belonging to eight families that were used to control parasites in goats. Asphodelaceae (22.22%) was the most frequently used plant family. Leaves were the most used plant parts, constituting 60.38%. They were prepared either as infusions or decoctions of single plants or in mixtures. Aloe ferox, Acokanthera oppositifolia and Elephantorrhiza elephantina were the plants having the highest fidelity level for their use to control parasites, each scoring 100%, followed by Albuca setosa (83.33%). The study revealed low knowledge about ethno-veterinary medicine in the study area. It also revealed that information on ethno-veterinary medicine in this area is mostly confined to older people and there is danger that this knowledge can be lost before being passed on to other generations. Therefore, there is an urgent need to document information on these plant species so that the future generation can benefit. Further investigation should be carried out to validate the efficacy and safety of the above-mentioned plants so as to provide cheap alternative ways of controlling parasites.

Abstract
The current review focuses on characterization and conservation efforts vital for the development of breeding programmes for indigenous beef cattle genetic resources in Southern Africa. Indigenous African cattle breeds were identified and characterized using information from refereed journals, conference papers and research reports. Results of this current review reviewed that smallholder beef cattle production in Southern Africa is extensive and dominated by indigenous beef cattle strains adaptable to the local environment. The breeds include Nguni, Mashona, Tuli, Malawi Zebu, Bovino de Tete, Angoni, Landim, Barotse, Twsana and Ankole. These breeds have important functions ranging from provision of food and income to socio-economic, cultural and ecological roles. They also have adaptive traits ranging from drought tolerant, resistance to ticks and tick borne diseases, heat tolerance and resistance to trypanosomosis. Stakeholders in the conservation of beef cattle were also identified and they included farmers, national government, research institutes and universities as well as breeding companies and societies in Southern Africa. Research efforts made to evaluate threats and opportunities of indigenous beef cattle production systems, assess the contribution of indigenous cattle to household food security and income, genetically and phenotypically characterize and conserve indigenous breeds, and develop breeding programs for smallholder beef production are highlighted. Although smallholder beef cattle production in the smallholder farming systems contributes substantially to household food security and income, their productivity is hindered by several constraints that include high prevalence of diseases and parasites, limited feed availability and poor marketing. The majority of the African cattle populations remain largely uncharacterized although most of the indigenous cattle breeds have been identified.

Abstract
The study determined the effect of sex and time to slaughter on cortisol and creatine kinase levels, and pork quality in commercial crossbred pigs. Saliva samples were before collected transportation, on arrival at the abattoir, and after a 20 hour lairage period. Cortisol levels from saliva (SC), serum (SeC) and urine (UC) were determined. Creatine kinase (CK) levels were determined from serum samples. Fifteen boars vs. 15 gilts were immediately slaughtered on arrival (SOA), and the other 15 boars vs. 15 gilts were rested for 20 h before slaughter. Meat quality parameters were also determined. In both sexes, SC significantly increased in response to time to slaughter. There was a significant interaction of sex and time to slaughter on SeC. Gilts had higher CK levels and lower muscle L* values than boars. There were correlations among baseline SC, SeC, UC and most meat quality parameters. Time to slaughter influenced levels of SC, UC, CK and pork quality between boars and gilts.

Abstract
This study investigated the breast meat proximate composition and quality indicators in relation to response of broilers to the following dietary treatments (T): positive control (+C; with 668 mg salinomycin and 500 mg zinc bacitracin per kg of feed); Moringa oleifera leaf meal (MOLM) was fed at a low level (ML; 1–5 g/kg feed, depending on growth stage), a medium level (MM, 3 times the low level) or a high level (MH, 5 times the low level); and a negative control (–C; without supplementation) for 35 days. At postmortem, the carcass weight, and breast muscle pH at 45 min (pH45) and 24 h (pH24) were recorded. At 36 h postmortem, breast muscles were excised, weighed and stored in a refrigerator at 4°C to measure pH, colour (CIE-L*, lightness; a*, redness; and b*, yellowness) and cumulative drip loss over eight consecutive days. Chroma (C*) and hue angle (h) were calculated. The –C had the highest (P > 0.05) dressing percentage and chilled carcass weight, and ML had the lowest. Breast meat fat and energy contents were highest (P < 0.05) in +C and MOLM supplemented diets, and lowest in -C. Dietary treatments had no effect on pH at postmortem and during storage over time. Cumulative drip loss increased with each day of storage, and it was highest (P < 0.05) in +C and lowest in MH. Dietary supplementation of MOLM significantly (P < 0.05) reduced lightness, but increased redness, yellowness, chroma and the hue angle during storage over time. In conclusion, dietary supplementation of M. oleifera leaf meal had positive effects on proximate composition and shelf-life quality indicators of broiler breast meat.
