Abstract
Effects of ripeness (nearly ripe, ripe, fully ripe) and cultivar ('Blink', 'Polka' and 'Senga Sengana') on colour and chemical composition of strawberry fruits and their suitability for jam production, evaluated as stability during storage at 4 and 20°C for 3 and 6months, were investigated. Quality traits of fruits and jams were significantly affected by both ripeness stage and cultivar. However, after 6months of storage, particularly at 20°C, the effects of fruit ripeness and cultivar were considerably reduced. During jam storage, anthocyanins, ascorbic acid, chroma and hue were least stable in jams made from the least ripe fruits. Quality traits in jams made from 'Senga Sengana' were best preserved during storage, while quality and chemical composition in jams made from 'Blink' changed the most. In conclusion, fully ripe fruits were best suited for jam processing. Storage at low temperature was preferable and 'Senga Sengana' was the most and 'Blink' the least suitable cultivar for processing.

Abstract
Ellagitannins and ellagic acid conjugates are polyphenols present in the human diet, in particular strawberries (Fragaria spp.). The first aim of this study was isolation and structural characterization of casuarictin and 3-O-methyl ellagic acid 3'-O-α-rhamnopyranoside, which were found to be abundant in Fragaria spp., along with agrimoniin. The second aim was accurate profiling and quantification of 26 ellagitannins and ellagic acid conjugates in six Fragaria x ananassa cultivars and two Fragaria vesca species. The third aim was to describe the ellagitannins behavior during fruit ripening from the green stage to over-ripeness. It was shown that there are major qualitative and quantitative differences in the amount and profile of ellagitannins and ellagic acid conjugates between Fragaria spp. Genotype is a major factor in defining ellagitannin concentration and patterns between strawberries, and variable behavior of the genotypes was observed, in the context of a significant drop in ellagitannins during ripening.

Abstract
BACKGROUND Diets high in fruit and vegetables are known to have significant health benefits. This is in part due to the presence of phytochemicals, which possess potential protective health benefits. This study focuses on the ability of strawberries to be bred for higher anthocyanin content. This is a major contributor to the characteristic colour and nutritional value of ripe strawberries, together with phenolic acids, ascorbic acid and total antioxidant capacity. RESULTS Anthocyanins in five commercial strawberry cultivars and three breeding lines were assessed. This led to the discovery of one breeding line (BL 2006-221) as an exceptional source of anthocyanins (~1 g kg(-1) fresh weight), with approximately double the levels of current commercial cultivars. Temperature was shown to influence anthocyanin extraction, with 40 °C being the best extraction temperature using the accelerated solvent extraction (ASE) method. Hue angle and anthocyanin concentration showed a good correlation (r(2) = 0.69). CONCLUSION The new breeding line BL 2006-221 has the potential to be used in the development of phytochemically rich strawberry cultivars. Using hue angle as a screening tool for total anthocyanin concentration and extraction of anthocyanins from strawberries by ASE at 40 °C would support such cultivar development.

Abstract
Strawberry cultivars grown at different locations in Europe showed genotype- and environment-dependent variation in total phenol and anthocyanin contents. This study focused on the compositional diversity of tannins from these cultivars using a high-throughput liquid chromatography-mass spectrometric (LC-MS) technique. Cultivars grown in Germany showed differences in the relative amounts of proanthocyanidins (PACs) and ellagitannins (ETs). Cultivars grown at three different European locations showed differences in their PAC/ET balance. 'Elsanta' grown in Switzerland had higher levels of ET-derived than PAC-derived signals compared to 'Elsanta' grown in Germany and Denmark. The trend to increased ET-derived signals was also noted for 'Clery' grown in Switzerland over Germany and was apparent for 'Korona' grown in Denmark over Germany. The altered ET/PAC balance was confirmed by conventional LC-MS analysis, which highlighted specific changes in composition rather than a general increase in ET components. These findings are discussed with respect to the environmental conditions at the different European locations.

Abstract
After pollination outdoors, individual bilberry plants from two Northern and two Southern clones were studied for climatic effects on berry yield and quality in a controlled phytotrone experiment at 12 and 18 °C. At each temperature, the following light treatments were tested: (1) 12 h natural light, (2) 24 h natural light, and (3) 24 h natural light plus red light. The first experimental year there was no difference in yield between temperatures; however, the second experimental year the berry yields was significantly higher at 18 °C. Berry ripening was faster in the Northern than in the Southern clones at 12 °C. Northern clones also showed significantly higher contents of total anthocyanins, all measured anthocyanin derivatives, total phenolics, malic acid and sucrose. Metabolic profiling revealed higher levels of flavanols, hydroxycinnamic acids, quinic acid and carbohydrates at 12 °C.

Abstract
The strawberry (Fragaria X ananassa, Duch.) represents a relevant source of micronutrients, such as minerals, vitamin C, folate and phenolic substances, most of which are natural antioxidants and contribute to the high nutritional quality of the fruit. All these compounds are essential for health and, in particular, strawberry phenolics are best known for their antioxidant and anti-inflammatory action, and possess directly and indirectly antimicrobial, anti-allergy and anti-hypertensive properties, as well as the capacity to inhibit the activities of some physiological enzymes and receptor properties. The main objective of this article is to review and update the current knowledge on the potential impact of the strawberry on human health, with particular attention on compounds and their possible mechanisms of action.

Abstract
Strawberries are a common and important fruit in the Mediterranean diet because of their high content of essential nutrients and beneficial phytochemicals, which seem to have relevant biological activity in human health. Among these phytochemicals, anthocyanin and ellagitannins are the major antioxidant compounds. Although individual phytochemical constituents of strawberries have been studied for their biological activities, human intervention studies using whole fruits are still lacking. Here, the nutritional contribution and phytochemical composition of the strawberry are reviewed, as is the role played by the maturity, genotype, and storage effects on this fruit. Specific attention is focused on fruit absorption, metabolism, and the possible beneficial biological activity on human health.

Abstract
Epidemiological studies suggest that consumption of fruit rich in phenolic compounds is associated with health-protective effects due to their antioxidant properties. For these reasons quality evaluation has become an important issue in fruit industry and in breeding programs. Phytochemical traits such as total phenolics, flavonoids, anthocyanins, L-ascorbic acid, sugar content and relative antioxidant capacity (RAC) were analyzed over four years in flesh fruit of an F1 population “Venus” × “Big Top” nectarines. Other traits such as harvesting date, yield, fruit weight, firmness, soluble solids concentration (SSC), pH, titratable acidity (TA) and ripening index (RI) were also determined in the progeny. Results showed high variability among genotypes for all analyzed traits. Total phenolics and flavonoids showed significant positive correlations with RAC implying that both are important antioxidant bioactive compounds in peaches. We found genotypes with enhanced antioxidant capacity and a better performance than progenitors, and in consequence the best marketability.

Abstract
BACKGROUND The aim of the present work was to evaluate the phytochemical profile and the antioxidant activity of strawberry fruit (cv. Camarosa) upon postharvest ripening at room temperature (20 °C) and to correlate them with qualitative attributes. RESULTS 'Camarosa' fruit retained an appreciable postharvest performance for up to 1 day shelf life; thereafter substantial quality deterioration was observed. An increased phenolic content, mainly attributed to hydroxycinnamic acids, flavonols and anthocyanins, was monitored after 3 days maintenance at 20 °C. The chromatographic fingerprint of athocyanins showed that pelargonidin-3-glucoside was the major anthocyanin, which increased with the increase of shelf life period, while cyanidin-3-glucoside and pelargonidin-3-rutinoside were found at lower concentrations. The potent radical scavenging activity, evaluated with four in vitro assays, showed a higher antioxidant capacity after 3 and 1 days of shelf life. In addition, the antioxidant effect of strawberry fruit extracts on lipid substrates and on an emulsion system showed a significant inhibition in the formation of conjugated diene hyperoxides. Interestingly, no direct correlation between the phytochemical profile and the quality attributes exist. CONCLUSION 'Camarosa' fruit had acceptable quality attributes for fresh consumption and at the same time a high phytochemical content up to 1 day shelf life. The over-ripe fruit continued to be an excellent reservoir of natural antioxidants, pointing to its potential use as food antioxidant and nutritional supplement.

Abstract
Significant increases in the plasma total antioxidant capacity (TAC) have already been reported after acute intake of strawberries. In addition, antihaemolitic effects of strawberry extracts have been recently demonstrated in vitro, revealing that part of the antioxidant properties of strawberry bioactive compounds could lie in their localisation within cell membranes. However, there is a lack of research evidence from in vivo protracted strawberry consumption studies. We carried out a 16-day pilot study where 12 healthy subjects ingested 500g of antioxidants-rich strawberries daily, and we evaluated the potential effects of fruit consumption on biomarkers of plasma and cellular antioxidant status. A significant increase in fasting plasma TAC and in serum vitamin C concentrations were progressively observed during the period of strawberry supplementation. An enhanced resistance to haemolysis was also observed in both AAPH-treated and untreated erythrocytes, collected during and after the period of strawberry consumption. The results obtained in this work suggest that regular consumption of antioxidant-rich strawberries may exert an improvement on the plasma antioxidant status and an increase on the antihaemolitic defenses of human erythrocytes.
