Technical note: Exit velocity as a measure of cattle temperament is repeatable and associated with serum concentration of cortisol in Brahman bulls1

Relationships among performance, residual feed intake, and temperament assessed in growing beef heifers and subsequently as 3-year-old, lactating beef cows

Seventy-four beef heifers were used to evaluate relationships among performance, residual feed intake (RFI), and temperament measured as growing heifers (Phase 1) and subsequently as 3-yr-old lactating beef cows (Phase 2) in the same cohort. In both phases, females were housed in a covered facility and fed similar forage-based diets, and individual feed intakes, BW, BCS, chute scores (CS), exit velocities (EV), and pen scores (PS) were collected throughout the 70-d feeding trials. In Phase 2, cows were milked on trial d 14 (lactation d 28 ± 3.5) and trial d 70 (lactation d 84 ± 3.5) to determine energy-corrected milk (ECM) production. Ultrasonic backfat thickness (BF), and ribeye area (REA) were evaluated on d 0 and 70 of the trial in Phase 2. Heifers were ranked by RFI and placed into Low (<0.5 SD mean RFI; n = 27), Medium (within ± 0.5 SD; n = 23), and High (>0.5 SD mean RFI; n = 24) RFI groups. Body weight, BCS, and ADG were similar among all RFI groups; however, daily DMI differed for all groups (P < 0.01) and was greater (10.76 ± 0.24 kg/d) for High, intermediate (9.88 ± 0.25 kg/d) for Medium, and less (8.52 ± 0.23 kg/d) for Low RFI heifers. When cow performance was analyzed based on RFI rank as heifers, BW, BCS, ADG, RFI, d 14 and d 70 ECM, BF, and REA were similar among RFI groups; however, cows that were most efficient as heifers (Low) had decreased (P < 0.05) daily DMI values (10.30 ± 0.41 kg/d) compared with cows that ranked Medium (11.60 ± 0.44 kg/d) or High (11.50 ± 0.43 kg/d) as heifers. The Pearson rank correlation between Phase 1 and 2 RFI was r = 0.13 (P = 0.30), and Pearson rank correlations showed no relationship (P > 0.1) between RFI and temperament. Phase 1 CS was negatively associated with ADG in Phase 1 (r = -0.28; P = 0.02) and 2 (r = -0.32; P = 0.01), and positively associated with d 14 (r = 0.24; P = 0.04) and 70 (r = 0.25; P = 0.03) ECM. Phase 2 CS was negatively associated with Phase 2 ADG (r = -0.29; P = 0.01) and positively associated with d 14 (r = 0.46; P = 0.001) and 70 (r = 0.33; P = 0.004) ECM. Phase 2 PS also tended to be negatively associated with DMI in Phase 1 (r = -0.20; P = 0.096) and 2 (r = -0.20; P = 0.08). In this study, heifers that were most feed efficient subsequently consumed less feed as lactating cows and maintained similar performance. Feed efficiency was not associated with differences in temperament; however, more excitable females had poorer BW gains and tended to have reduced feed intakes but produced more ECM.

Effects of temperament and acclimation to handling on feedlot performance of Bos taurus feeder cattle originated from a rangeland-based cow-calf system

Two experiments evaluated the effects of temperament and acclimation to handling on performance of Angus × Hereford feeder cattle reared in extensive rangeland systems until weaning. In Exp. 1, 200 calves (n = 97 for yr 1; n = 103 for yr 2) were evaluated for temperament at weaning (average age ± SE = 152 ± 1 d) by chute score and exit velocity. Chute score was assessed on a 5-point scale according to behavior during chute restraining. Exit score was calculated by dividing exit velocity into quintiles and assigning calves a score from 1 (slowest) to 5 (fastest). A temperament score was calculated for each calf by averaging chute and exit scores. Calf temperament was classified according to temperament score as adequate (≤3) or excitable (>3). After weaning, calves were assigned to a 40-d preconditioning followed by growing (139 d) and finishing (117 d) phases until slaughter. Weaning BW was decreased (P = 0.04) in excitable calves compared with adequate calves. No differences were detected (P ≥ 0.21) for ADG during preconditioning, growing, and finishing phases; hence, excitable calves tended (P = 0.09) to have decreased HCW compared with adequate calves. In Exp. 2, 60 steers (initial age ± SE = 198 ± 2 d) were weighed and evaluated for temperament score 35 d after weaning (d -29). On d -28, steers were ranked by these variables and assigned to receive an acclimation treatment or not (control). Acclimated steers were processed through a handling facility twice weekly for 4 wk (d -28 to -1) whereas control steers remained undisturbed on pasture. On d 0, all steers were transported for 24 h and returned to the research facility (d 1). On arrival, steers were ranked by BW within treatment and randomly assigned to 20 feedlot pens for a 28-d feedlot receiving period. Acclimated steers had decreased temperament score and plasma cortisol compared with controls on d 0 (P = 0.02). During feedlot receiving, acclimated steers had decreased ADG (P < 0.01) and G:F (P = 0.03) and tended to have decreased DMI (P = 0.07) compared with controls. Acclimated steers had greater plasma haptoglobin on d 4 (P = 0.04) and greater ceruloplasmin from d 0 to 10 (P ≤ 0.04) and tended to have greater cortisol on d 1 (P = 0.08) than controls. In conclusion, temperament affects productivity of beef operations based on Bos taurus feeder cattle reared in extensive rangeland systems until weaning whereas acclimation to handling ameliorated cattle temperament but did not benefit feedlot receiving performance.

Genetic associations between flight speed and growth traits in Nellore cattle

The aim of the present study was to estimate genetic parameters for flight speed and its association with growth traits in Nellore beef cattle. The flight speed (FS) of 7,402 yearling animals was measured, using a device composed of a pair of photoelectric cells. Time interval data (s) were converted to speed (m/s) and faster animals were regarded as more reactive. The growth traits analyzed were weaning weight (WW), ADG from weaning to yearling age, and yearling scrotal circumference (SC). The (co)variance components were estimated using REML in a multitrait analysis applying an animal model. The model included random direct additive genetic and residual effects, fixed effects of contemporary groups, age of dam (classes), and age of animal as covariable. For WW, the model also included maternal genetic and permanent environmental random effects. The direct heritability estimate for FS was 0.26 ± 0.05 and direct heritability estimates for WW, SC, and ADG were 0.30 ± 0.01, 0.48 ± 0.02, and 0.19 ± 0.01, respectively. Estimates of the genetic correlation between FS and the growth traits were -0.12 ± 0.07 (WW), -0.13 ± 0.08 (ADG), and -0.11 ± 0.07 (SC). Although the values were low, these correlations showed that animals with better temperaments (slower FS) tended to present better performance. It is possible to infer that longterm selection for weight and scrotal circumference can promote a positive genetic response in the temperament of animals. Nevertheless, to obtain faster genetic progress in temperament, it would be necessary to perform direct selection for such trait. Flight speed is an easily measured indicator of temperament and can be included as a selection criterion in breeding programs for Nellore cattle.

Effects of temperament and acclimation to handling on reproductive performance of Bos taurus beef females

Two experiments evaluated the effects of temperament and acclimation to handling on reproductive performance of Bos taurus beef females. In Exp. 1, 433 multiparous, lactating Angus × Hereford cows were sampled for blood and evaluated for temperament before the breeding season. Cow temperament was assessed by chute score and exit velocity. Chute score was assessed on a 5-point scale according to behavioral responses during chute restraining. Exit score was calculated by dividing exit velocity into quintiles and assigning cows with a score from 1 to 5 (1 = slowest, 5 = fastest cows). Temperament score was calculated by averaging chute and exit scores. Cows were classified for temperament type according to temperament score (≤ 3 = adequate, > 3 = aggressive). Plasma cortisol concentrations were greater (P < 0.01) in cows with aggressive vs. adequate temperament. Cows with aggressive temperament had reduced (P ≤ 0.05) pregnancy and calving rate and tended to have reduced (P = 0.09) weaning rate compared with cows with adequate temperament. Hence, kilogram of calf born per cow was reduced (P = 0.05) and kilogram of calf weaned per cow tended to be reduced (P = 0.08) in aggressive cows. In Exp. 2, 88 Angus × Hereford heifers (initial age = 206 ± 2 d) were weighed (d 0 and 10) and evaluated for temperament score (d 10). On d 11, heifers were ranked by these variables and assigned to receive or not (control) an acclimation treatment. Acclimated heifers were processed through a handling facility 3 times weekly for 4 wk (d 11 to 39; Mondays, Wednesdays, and Fridays), whereas control heifers remained undisturbed on pasture. Heifer puberty status, evaluated via plasma progesterone concentrations, was assessed on d 0 and 10, d 40 and 50, 70 and 80, 100 and 110, 130 and 140, 160 and 170, and 190 and 200. Blood samples collected on d 10 and 40 were also analyzed for plasma concentrations of cortisol and haptoglobin. Temperament score was assessed again on d 40 and d 200. Acclimated heifers had reduced (P = 0.01) concentrations of cortisol and haptoglobin on d 40 and reduced (P = 0.02) exit velocity on d 200 compared with control heifers. Puberty was hastened in acclimated heifers compared with control (P = 0.01). Results from this study indicate that B. taurus beef cows with aggressive temperament have impaired reproductive performance compared with cohorts with adequate temperament, whereas acclimation to human handling after weaning hastens reproductive development of replacement heifers.

Scientific Opinion on the welfare of cattle kept for beef production and the welfare in intensive calf farming systems

Information given in previous Opinions "Welfare of cattle kept for beef production" (SCAHAW, 2001) and "The risks of poor welfare in intensive calf farming systems" (EFSA, 2006) is updated and recent scientific evidence on the topics reviewed. Risks of poor welfare are identified using a structured analysis, and issues not identified in the SCAHAW (2001) beef Opinion, especially effects of housing and management on enteric and respiratory diseases are reviewed. The Opinion covers all systems of beef production, although the welfare of suckler cows or breeding bulls is not considered. The Chapter on beef cattle presents new evidence and recommendations in relation to heat and cold stress, mutilations and pain management, digestive disorders linked to high concentrate feeds and respiratory disorders linked to overstocking, inadequate ventilation, mixing of animals and failure of early diagnosis and treatment. Major welfare problems in cattle kept for beef production, as identified by risk assessment, were respiratory diseases linked to overstocking, inadequate ventilation, mixing of animals and failure of early diagnosis and treatment, digestive disorders linked to intensive concentrate feeding, lack of physically effective fibre in the diet, and behavioural disorders linked to inadequate floor space, and co-mingling in the feedlot. Major hazards for white veal calves were considered to be iron-deficiency anaemia, a direct consequence of dietary iron restriction, enteric diseases linked to high intakes of liquid feed and inadequate intake of physically effective fibre, discomfort and behavioural disorders linked to inadequate floors and floor space.

A comparison of commonly used and novel electronic techniques for evaluating cattle temperament

A comparison of commonly used and novel electronic techniques for evaluating cattle temperament. Can. J. Anim. Sci. 92: 21–31. The temperament of steers (n=28) was assessed using five quantitative techniques including: flight time, flight distance, electronic (strain-gauge and accelerometer) tests, and three visual scores (VS) made during entry, restraint and exit from a squeeze chute. The objective of this study was to determine the most important predictive parameters based on those measurements and evaluate the relationship between the techniques. Flight time and distance were correlated with exit VS (r=−0.51, and 0.41, P<0.05; n=56), but were not related to restraint VS. Data from strain-gauge and accelerometer sensors were used to generate parameters such as peak response and area under the curve that were correlated with all three VS. Regression models using VS as the dependent variable and a combination of 2 to 5 parameters from the strain-gauge and accelerometer tests as independent variables predicted temperament with values of 29 to 65 or 41 to 57%, respectively. When all techniques, excluding VS, were used as independent variables, model accuracy increased to 72, 81 and 77% for restraint, exit and the sum of all VS, respectively. These findings suggest the objective measures of temperament assessed in this study could be used to identify highly reactive animals.

Pharmacokinetics and physiologic effects of intramuscularly administered xylazine hydrochloride-ketamine hydrochloride-butorphanol tartrate alone or in combination with orally administered sodium salicylate on biomarkers of pain in Holstein calves following castration and dehorning

OBJECTIVE

To determine the pharmacokinetic parameters of xylazine, ketamine, and butorphanol (XKB) administered IM and sodium salicylate (SAL) administered PO to calves and to compare drug effects on biomarkers of pain and distress following sham and actual castration and dehorning.

ANIMALS

40 Holstein bull calves from 3 farms.

PROCEDURES

Calves weighing 108 to 235 kg (n = 10 calves/group) received one of the following treatments prior to sham (period 1) and actual (period 2) castration and dehorning: saline (0.9% NaCl) solution IM (placebo); SAL administered PO through drinking water at concentrations from 2.5 to 5 mg/mL from 24 hours prior to period 1 to 48 hours after period 2; butorphanol (0.025 mg/kg), xylazine (0.05 mg/kg), and ketamine (0.1 mg/kg) coadministered IM immediately prior to both periods; and a combination of SAL and XKB (SAL+XKB). Plasma drug concentrations, average daily gain (ADG), chute exit velocity, serum cortisol concentrations, and electrodermal activity were evaluated.

RESULTS

ADG (days 0 to 13) was significantly greater in the SAL and SAL+XKB groups than in the other 2 groups. Calves receiving XKB had reduced chute exit velocity in both periods. Serum cortisol concentrations increased in all groups from period 1 to period 2. However, XKB attenuated the cortisol response for the first hour after castration and dehorning and oral SAL administration reduced the response from 1 to 6 hours. Administration of XKB decreased electrodermal activity scores in both periods.

CONCLUSIONS AND CLINICAL RELEVANCE

SAL administered PO through drinking water decreased cortisol concentrations and reduced the decrease in ADG associated with castration and dehorning in calves.

Evaluation of tropically adapted straightbred and crossbred cattle: postweaning gain and feed efficiency when finished in a temperate climate

Beef cows in the subtropical USA must be adapted to the stressors of the environment, typically supplied by using Brahman (Br) breeding. Calves produced in the region, however, are usually grown and finished in more temperate regions, and have a perceived reputation for poor ADG and feed efficiency during finishing. Compromised fertility and carcass quality often associated with the Br have increased interest in tropically adapted Bos taurus breed types. The objective of this study was to evaluate 3 breeds [An = Angus (Bos taurus, temperate); Br (B. indicus, tropical); and Ro = Romosinuano (B. taurus, tropical)] and all possible crosses during various segments of post-weaning growth, and for feed efficiency during the finishing phase. Steer calves (n = 473) born over 3 yr were weaned in late September, backgrounded for at least 21 d (BKG), shipped 2,025 km to El Reno, OK, in October, fed a preconditioning diet for 28 d (RCV), grazed wheat (Triticum aestivum L.) pasture from November to May (WHT), finished on a conventional feedlot diet (FIN), and serially harvested after approximately 95, 125, and 150 d on feed. Body weight and ADG during each segment were tested using a mixed model that included calf age at weaning, year (Y), breed of sire (SB), breed of dam (DB), and interactions. In addition, winter treatment (continuous wheat or reduced grazing of wheat with supplement) was included for the wheat and feedlot phases. Sire within SB × SB [and pen (barn × year) for feedlot phase] were considered random. The SB × DB interaction was significant for all traits (P < 0.01) except exit velocity taken at weaning and ADG during FIN, but both traits were affected by 3-way interactions with Y or harvest group. Tropically-adapted purebred steers had greater (P < 0.01) ADG than AnAn through weaning and BKG in FL but the reverse was true during the RCV and WHT segments. Similar, but less pronounced results were noted for F(1) steers with 100% tropical influence compared with those with only 50%. Heterosis was numerically greater for most traits for An × Br (11 to 64%) compared with An × Ro and Br × Ro (3 to 42%), which were similar. In a subset of the steers (n = 261), G:F was not influenced by level of tropical breeding, but tropically adapted steers were more efficient (P < 0.05) by residual feed intake. No heterosis was evident. These data show that in temperate zones, winter is the period when productivity of tropically adapted cattle is compromised.

Associations between response to handling and growth and meat quality in frequently handled Bos taurus beef cattle

Fearful behavioral responses to handling (temperament) are undesirably associated with ADG and meat quality in infrequently handled Bos indicus cattle. It has never been assessed whether these relationships exist in calmer Bos taurus breeds in systems where handling is more frequent. Such systems predominate in some countries where beef production is a major agricultural activity. During fattening, 144 crossbred cattle from Limousin and Aberdeen Angus sires were assessed for temperament using 4 approaches: response to movement along a race (race score; 4 occasions), restraint in a crush (crush score; 4 occasions), flight speed from the crush (flight speed; 4 occasions), and isolation in a pen with a human (isolation score; 1 occasion in yr 1, 2 occasions in yr 2). Measurements of ADG were made between birth and slaughter and between 16 and 18 mo of age during fattening. Fattening occurred indoors on a complete mixed diet fed for ad libitum intake. Meat quality was measured by pH, color, and Volodkevitch shear force and by a sensory panel. The repeatability of temperament traits was 0.17 (race score), 0.35 (crush score), 0.51 (flight speed), and 0.36 (isolation score). The proportion of the total variance of temperament traits attributable to the sire and the social group was low (0.003 to 0.402). However, the sire did affect behavior in all tests apart from the crush score (ranging from P = 0.02 to P < 0.001). Correlations between behavior in the different tests (ranging from r = 0.21 to 0.54, and P = 0.02 to P < 0.001) apart from between-flight speed and isolation score indicate that fearful behavior was consistently shown across assessment methods. A calm response in the crush score test was associated with a greater ADG during fattening (P = 0.05), whereas a calm response during the isolation test was associated with a greater ADG in cold carcass weight (P = 0.02). Animals with a calm isolation score had less tender meat as judged by the sensory panel (P = 0.03), but no other effects were apparent between temperament and meat quality measures, although several tendencies (0.06 ≤ P ≤ 0.10) were found. Temperament did not appear to relate to meat quality in this study of frequently handled Bos taurus genotypes, which is in contrast to other studies using different beef production systems. Genetic correlations between temperament and meat quality under these conditions could, although not measured in this study, still exist in the absence of phenotypic correlations.

Temperament and hypothalamic-pituitary-adrenal axis function are related and combine to affect growth, efficiency, carcass, and meat quality traits in Brahman steers

Associations between temperament, stress physiology, and productivity were studied in yearling Brahman steers (n = 81). Steers differed in calpain system gene marker status; 41 were implanted with a hormonal growth promotant at feedlot entry. Temperament was assessed with repeated measurements of flight speed (FS) and crush score (CS) during 6 mo of backgrounding at pasture and 117 d of grain finishing. Adrenal responsiveness was assessed with ACTH challenge, with plasma samples collected immediately before and 60 min after challenge. Steers with higher FS and CS had higher prechallenge plasma cortisol, glucose, lactate, and nonesterified fatty acid concentrations. The ACTH-induced cortisol response was unrelated to FS or CS, but glucose remained higher after challenge in flightier steers. The hormonal growth promotant reduced adrenal responsiveness; tenderness genotype had no effect. When temperament assessments and cortisol concentrations before and after challenge were combined in a principal components analysis, four vectors accounting for 38%, 25%, 18%, and 9% of the variation were identified. The first vector had significant loadings on temperament and prechallenge cortisol; increasing scores were associated with increased plasma glucose, lactate, and nonesterified fatty acid and with reductions in BW and feedlot growth rates, carcass fatness, and muscle pH. The second vector loaded only on ACTH-induced cortisol response; increased scores related to increased residual feed intake, number of daily feed sessions, and meat marbling score. The third and fourth vectors had different loadings on FS and CS and appeared to identify different aspects of temperament measured by FS or CS. Fewer associations were found between the third or fourth vectors and productivity traits, possibly because of lower variance accounted for by these vectors. In conclusion, temperament was related to prechallenge cortisol but not to ACTH-induced cortisol response. Principal components analysis separated these traits into separate components, which in turn had different relations with productivity traits. The largest component of temperament was described similarly by FS and CS, but there were smaller components that these described differently. There were some temperament-related differences in the metabolic status of the steers which were not related to the variation in cortisol, suggesting involvement of the sympatho-adrenal-medullary axis in these temperament-related effects.

Working chute behavior of feedlot cattle can be an indication of cattle temperament and beef carcass composition and quality

The relationship between working chute temperament and beef carcass quality traits were measured on 183 crossbred feedlot steers. Steers were weighed and sorted into 16 pens and weighed every 28 days. Temperament was evaluated as exit velocity (EV), chute score (CS), and catch score (CAPS). Tissue samples were collected for DNA profile including docility (IGENITY®, Merial Limited, Duluth, GA, U.S.A). Steers were harvested at 14 to 16 months of age (606 ± 52 kg). Exit velocity increased and CS and CAPS values declined over time. Steers receiving a lower CAPS score had more marbling (P = 0.02). Ribeye steaks from steers with a slow first recorded EV were more tender (P = 0.02) than steaks from faster EV steers. IGENITY® docility index had a positive (P = 0.09) correlation (r = 0.15) with Warner-Bratzler shear force (WBS) indicating a higher docility index was loosely associated with tougher meat.

Cattle temperament: persistence of assessments and associations with productivity, efficiency, carcass and meat quality traits

Relationships between temperament and a range of performance, carcass, and meat quality traits in young cattle were studied in 2 experiments conducted in New South Wales (NSW) and Western Australia (WA), Australia. In both experiments, growth rates of cattle were assessed during backgrounding on pasture and grain finishing in a feedlot. Carcass and objective meat quality characteristics were measured after slaughter. Feed intake and efficiency during grain finishing were also determined in NSW. Brahman (n = 82 steers and 82 heifers) and Angus (n = 25 steers and 24 heifers) cattle were used in the NSW experiment. In NSW, temperament was assessed by measuring flight speed [FS, m/s on exit from the chute (crush)] on 14 occasions, and by assessing agitation score during confinement in the crush (CS; 1 = calm to 5 = highly agitated) on 17 occasions over the course of the experiment. Brahman (n = 173) and Angus (n = 20) steers were used in the WA experiment. In WA, temperament was assessed by measuring FS on 2 occasions during backgrounding and on 2 occasions during grain feeding. At both sites, a hormonal growth promotant (Revalor-H, Virbac, Milperra, New South Wales, Australia) was applied to one-half of the cattle at feedlot entry, and the Brahman cattle were polymorphic for 2 calpain-system markers for beef tenderness. Temperament was not related (most P > 0.05) to tenderness gene marker status in Brahman cattle and was not (all P > 0.26) modified by the growth promotant treatment in either breed. The Brahman cattle had greater individual variation in, and greater correlations within and between, repeated assessments of FS and CS than did the Angus cattle. Correlations for repeated measures of FS were greater than for repeated assessments of CS, and the strength of correlations for both declined over time. Average FS or CS for each experiment and location (NSW or WA × backgrounding or finishing) were more highly correlated than individual measurements, indicating that the average values were a more reliable assessment of cattle temperament than any single measure. In Brahman cattle, increased average FS and CS were associated with significant (P < 0.05) reductions in backgrounding and feedlot growth rates, feed intake and time spent eating, carcass weight, and objective measures of meat quality. In Angus cattle, the associations between temperament and growth rates, feed intake, and carcass traits were weaker than in Brahmans, although the strength of relationships with meat quality were similar.

Temperament influences endotoxin-induced changes in rectal temperature, sickness behavior, and plasma epinephrine concentrations in bulls

This study was designed to determine the influence of temperament on endotoxin-induced changes in body temperature, sickness behavior, and stress hormone concentrations in cattle. Brahman bulls were selected based on temperament score measured 28 d prior to weaning. In dwelling recording devices were used to monitor rectal temperature, and jugular catheters were used to collect blood samples to determine cortisol and epinephrine concentrations before and after LPS administration (0.5 μg/kg body weight). Temperamental bulls had the lowest peak rectal temperature and sickness behavior scores relative to the Calm and Intermediate bulls. Prior to the administration of LPS, Temperamental bulls had greater cortisol and epinephrine concentrations than Calm or Intermediate bulls. Cortisol concentrations increased following LPS administration but were not affected by temperament. Epinephrine concentrations peaked 1 h after LPS administration in Calm bulls. Temperamental bulls did not exhibit an epinephrine response to LPS challenge. These data demonstrate that the temperament of calves can modulate the physiological, behavioral, and endocrine responses of pre-pubertal Brahman bulls to endotoxin challenge. Specifically, temperament differentially affected the rectal temperature, sickness behavior and epinephrine, but not cortisol, responses to LPS challenge.

Impacts of individual animal response to heat and handling stresses on Escherichia coli and E. coli O157:H7 fecal shedding by feedlot cattle

The reduction of foodborne pathogens in cattle destined for human consumption will require knowledge of the factors that impact the carriage and shedding of these organisms. The objective of this work was to investigate the effects of heat and handling stress levels on the fecal shedding of Escherichia coli O157:H7 and generic E. coli by feedlot cattle. In year 1, 128 feedlot heifers were evaluated for heat tolerance five times per week during the 84-day finishing period from May through August. Heat stress measurements included respiration rate, panting score, and visual assessments. In year 2, panting scores were taken for a group of 256 finishing feedlot heifers on days in July and August for which the temperature humidity index (THI) was predicted to be in the "emergency" category (THI > or = 84). For both years, animals were weighed and temperament scored to assess handling stress on a 28-day schedule. At the same time, rectal fecal samples were collected from each animal individually. The presence and concentrations of E. coli O157:H7 and concentrations of generic E. coli in feces were determined. There were no clear trends between the heat stress levels or temperament scores (as an indicator of response to handling) with either fecal generic E. coli concentrations or E. coli O157:H7 concentrations or prevalence in feces, indicating that neither heat nor handling stress contributes to the food safety risk associated with E. coli O157:H7-positive cattle.

Effects of acclimation to human interaction on performance, temperament, physiological responses, and pregnancy rates of Brahman-crossbred cows

The objective of this study was to evaluate, over 2 consecutive years, the effects of acclimation to human interaction on performance, temperament, plasma concentrations of hormones and metabolites, and pregnancy rates of Brahman-crossbred cows. A total of 160 Braford and 235 Brahman x British cows were assigned to the 2-yr study. Approximately 45 d after weaning (August 2006) in yr 1, cows were evaluated for BW, BCS, and temperament (chute score, pen score, and exit velocity), stratified by these measurements in addition to breed and age, and randomly allocated to 14 groups (Braford = 8; Brahman x British = 6). Groups were randomly assigned to the control or acclimation treatment. In yr 2, cows were reevaluated within 45 d after weaning (August 2007) for BW, BCS, and temperament, stratified, and divided into 14 groups similarly as in yr 1, but in such a way that cows received the same treatment assigned in yr 1. Cows were acclimated to human interaction from August to January, and the acclimation process consisted of the same person visiting groups twice weekly and offering approximately 0.05 kg of range cubes per cow (as-fed basis). In January of both years, cow temperament, BW, and BCS were reassessed and cows were exposed to a 90-d breeding season. Blood samples were collected at the beginning of the acclimation period (August) and breeding season (January) for determination of plasma cortisol, IGF-I, and acute phase proteins. A treatment x breed interaction was detected during yr 1 (P < 0.01) for pregnancy analysis because acclimated Braford cows conceived earlier and at a greater percentage (P < 0.01) compared with control cows. According to values obtained at the beginning of breeding and pooled across treatments and breeds, IGF-I concentrations and BCS affected quadratically (P < 0.05), and concentrations of ceruloplasmin and haptoglobin decreased linearly (P < 0.05), the probability of pregnancy during both years. Temperament and cortisol concentrations decreased the probability of pregnancy linearly (P < 0.05) during yr 1 (only Braford cows for cortisol analysis) and affected the probability of pregnancy quadratically (P < 0.05) during yr 2. Results from this study indicate that acclimation did not affect cow temperament and physiological responses but did increase pregnancy rates of Braford cows during yr 1. Further, measurements and physiological responses associated with temperament influenced the probability of cows becoming pregnant during the breeding season.

Effect of breed composition on phenotypic residual feed intake and growth in Angus, Brahman, and Angus x Brahman crossbred cattle

The influence of additive and nonadditive genetic effects and temperament on 4 postweaning feed intake and growth traits was evaluated in a group of 581 bull, heifer, and steer calves born in 3 Florida herds in 2006 and 2007. Calves had breed compositions ranging from 100% Angus (A) to 100% Brahman (B). They were randomly allocated to 24 pens each year by herd (Brooksville, Gainesville, Marianna, FL), sire group (A, 3/4 A 1/4 B, Brangus, 1/2 A 1/2 B, 1/4 A 3/4 B, and B), and sex (bull, heifer, and steer) in a GrowSafe automated feeding facility at Marianna. Calves were fed a concentrate diet during the 21-d adjustment and the 70-d trial periods. Individual feed intakes were recorded daily, and BW, chute scores, and exit velocities were recorded every 2 wk. Traits were phenotypic daily residual feed intake (RFI), mean daily feed intake (DFI), mean daily feed conversion ratio (FCR), and postweaning BW gain. Phenotypic RFI was computed as the difference between actual and expected feed intakes. Calves were assigned to 3 RFI groups: high (RFI greater than 0.9 kg of DM/d), low (RFI less than -0.9 kg of DM/d), and medium (RFI between mean +/- 0.9 kg of DM/d; SD = 1.8 kg of DM/d). The mixed model included the fixed effects of contemporary group (herd-year-pen), RFI group (except when trait was RFI), age of dam, sex of calf, age of calf, B fraction of calf, heterozygosity of calf, mean chute score, and mean exit velocity. Brahman fraction and heterozygosity of calf were nested within sex of calf for RFI and within RFI group for DFI, FCR, and postweaning BW gain. Random effects were sire and residual. Feed efficiency tended to improve (decreased RFI) as the B fraction increased. However, calves required larger amounts of feed per kilogram of BW gain (larger FCR) as the B fraction increased. Postweaning BW gain tended to decrease as the B fraction increased. Temperament traits were unimportant for all traits except exit velocity for DFI, suggesting perhaps a lack of variation for temperament traits in this herd, or that calves became accustomed to the level of handling pre- and postweaning, thus decreasing behavioral differences among them.

Identification of quantitative trait loci affecting cattle temperament

In addition to its potential contribution to improving animal welfare, the study of the genetics of cattle behavior may provide more general insights into the genetic control of such complex traits. We carried out a genome scan in a Holstein x Charolais cross cattle population to identify quantitative trait loci (QTL) influencing temperament-related traits. Individuals belonging to the second-generation of this population (F(2) and backcross individuals) were subjected to 2 behavioral tests. The flight from feeder (FF) test measured the distance at which the animal moved away from an approaching human observer, whereas the social separation (SS) test categorized different activities which the animal engaged in when removed from its penmates. The entire population was genotyped with 165 microsatellite markers. A regression interval mapping analysis identified 29 regions exceeding the 5% chromosome-wide significance level, which individually explained a relatively small fraction of the phenotypic variance of the traits (from 3.8% to 8.4%). One of the significant associations influencing an FF test trait on chromosome 29 reached the 5% genome-wide significance level. Eight other QTL, all associated with an SS test trait, reached the 1% chromosome-wide significance level. The location of some QTL coincided with other previously reported temperament QTL in cattle, whereas those that are reported for the first time here may represent general loci controlling temperament differences between cattle breeds. No overlapping QTL were identified for the traits measured by the 2 different tests, supporting the hypothesis that different genetic factors influence behavioral responses to different situations.

Influence of transportation stress and animal temperament on fecal shedding of Escherichia coli O157:H7 in feedlot cattle

To test the influence of transportation stress and temperament on shedding of Escherichia coli O157:H7, cattle (n=150) were classified at various stages of production as Excitable, Intermediate or Calm based on a variety of disposition scores. Presence of E. coli O157:H7 was determined by rectal swabs from live animals and from colons collected postmortem. Percentage of cattle shedding E. coli O157:H7 at arrival at the feedlot was approximately equal among temperament groups. Before shipment to the processing facility, a higher (P=0.03) proportion of cattle from the Calm group shed E. coli O157:H7 compared to the other temperament groups. When pooled across all sampling periods, cattle from the Calm group had a greater percentage test positive for E. coli O157:H7. Neither the acute stressor of transportation nor a more excitable temperament led to increased shedding of E. coli O157:H7 in cattle.

Functional characteristics of the bovine hypothalamic-pituitary-adrenal axis vary with temperament

Hypothalamic-pituitary-adrenal (HPA) axis function, in Brahman heifers of differing temperament, was evaluated using separate challenges with CRH and ACTH. Exit velocity (EV) measurement was used to classify heifer temperament as calm [C; consisted of 6 slowest heifers (EV=1.05+/-0.05 m/s)] or temperamental [T; 6 fastest heifers (EV=3.14+/-0.22 m/s)]. During the 6 h prior to CRH challenge, areas under the ACTH (P=0.025) and cortisol (P<0.001) curves were greater in the temperamental heifers. Baseline cortisol (P<0.001) but not ACTH (P=0.10) differed between temperament groups. Following CRH challenge, areas under the ACTH (P=0.057) and cortisol (P<0.01) response curves were greater in the calm animals. The same animals were subjected to an ACTH challenge 14 d following their utilization in the CRH stimulation experiment. Prior to ACTH challenge, baseline cortisol concentrations were higher (P<0.001) in the temperamental heifers (T=18+/-2.6, C=4.3+/-0.6 ng/mL). Following ACTH administration, area under the cortisol response curve was greater (P=0.07) in the calm heifers. After declining below baseline concentrations during the post-challenge recovery period, cortisol in temperamental animals was again greater (P=0.02) than in the calm heifers. These data demonstrate that cattle with an excitable temperament exhibit increased stress responsiveness to handling, increased baseline adrenal function but not increased basal pituitary function, and a muted responsiveness to pharmacological stimulus. Thus, functional characteristics of the HPA axis vary with animal temperament.

Genetic and phenotypic relationships of feeding behavior and temperament with performance, feed efficiency, ultrasound, and carcass merit of beef cattle

Feeding behavior and temperament may be useful in genetic evaluations either as indicator traits for other economically relevant traits or because the behavior traits may have a direct economic value. We determined the variation in feeding behavior and temperament of beef cattle sired by Angus, Charolais, or Hybrid bulls and evaluated their associations with performance, efficiency, and carcass merit. The behavior traits were daily feeding duration, feeding head down (HD) time, feeding frequency (FF), and flight speed (FS, as a measure of temperament). A pedigree file of 813 animals forming 28 paternal half-sib families with about 20 progeny per sire was used. Performance, feeding behavior, and efficiency records were available on 464 animals of which 381 and 302 had records on carcass merit and flight speed, respectively. Large SE reflect the number of animals used. Direct heritability estimates were 0.28 +/- 0.12 for feeding duration, 0.33 +/- 0.12 for HD, 0.38 +/- 0.13 for FF, and 0.49 +/- 0.18 for FS. Feeding duration had a weak positive genetic (r(g)) correlation with HD (r(g) = 0.25 +/- 0.32) and FS (r(g) = 0.42 +/- 0.26) but a moderate negative genetic correlation with FF (r(g) = -0.40 +/- 0.30). Feeding duration had positive phenotypic (r(p)) and genetic correlations with DMI (r(p) = 0.27; r(g) = 0.56 +/- 0.20) and residual feed intake (RFI; r(p) = 0.49; r(g) = 0.57 +/- 0.28) but was unrelated phenotypically with feed conversion ratio [FCR; which is the reciprocal of the efficiency of growth (G:F)]. Feeding duration was negatively correlated with FCR (r(g) = -0.25 +/- 0.29). Feeding frequency had a moderate to high negative genetic correlation with DMI (r(g) = -0.74 +/- 0.15), FCR (r(g) = -0.52 +/- 0.21), and RFI (r(g) = -0.77 +/- 0.21). Flight speed was negatively correlated phenotypically with DMI (r(p) = -0.35) but was unrelated phenotypically with FCR or RFI. On the other hand, FS had a weak negative genetic correlation with DMI (r(g) = -0.11 +/- 0.26), a moderate genetic correlation with FCR (r(g) = 0.40 +/- 0.26), and a negative genetic correlation with RFI (r(g) = -0.59 +/- 0.45). The results indicate that behavior traits may contribute to the variation in the efficiency of growth of beef cattle, and there are potential correlated responses to selection to improve efficiency. Feeding behavior and temperament may need to be included in the definition of beef cattle breeding goals, and approaches such as the culling of unmanageable cattle and the introduction of correct handling facilities or early life provision of appropriate experiences to improve handling will be useful.
