Abstract
Inclusion of distillers grains (DG) in cattle diets has been shown to increase fecal shedding of Escherichia coli O157:H7. It is hypothesized that altered gut fermentation by DG may be responsible for the positive association. Therefore, feed additives affecting ruminal or hindgut fermentation of DG also may affect fecal shedding of E. coli O157:H7. The objectives of the study were to evaluate effects of monensin (33 or 44 mg/kg of DM), supplemental urea (0, 0.35, or 0.70% of DM), and ractopamine (0 or 200 mg/steer daily administered during the last 42 d of finishing) in a steam-flaked corn grain-based diet containing 30% wet sorghum DG on fecal shedding of E. coli O157:H7. Seven hundred twenty crossbred beef steers, housed in 48 pens (15 steers/pen), were assigned to dietary treatments in a randomized complete block design with a 2 × 3 × 2 factorial treatment arrangement. Fresh pen floor fecal samples (10 per/pen) were collected every 2 wk for 14 wk (July through November) and cultured for E. coli O157:H7. Isolation of E. coli O157:H7 was by selective enrichment of fecal samples in an enrichment broth, immunomagnetic separation, followed by plating onto a selective medium. Samples that yielded sorbitol-negative colonies, which were positive for indole production, O157 antigen agglutination, and contained rfbE, fliC, and stx2 were considered positive for E. coli O157:H7. Fecal prevalence data were analyzed as repeated measures using negative binomial regression to examine effects and interactions of sampling day, urea, monensin, and ractopamine. Mean fecal prevalence of E. coli O157:H7 was 7.6% and ranged from 1.6 to 23.6%. Cattle fed monensin at 44 mg/kg of feed had less (P = 0.05) fecal E. coli O157:H7 prevalence than cattle fed 33 mg/kg (4.3 vs. 6.8%). Although the reason for the reduction is not known, it is likely because of changes in the microbial ecosystem induced by the greater amount of monensin in the hindgut. Supplemental urea at 0.35 or 0.70% had no effect (P = 0.87) on fecal shedding of E. coli O157:H7. Fecal prevalence of E. coli O157:H7 were 5.3, 5.7, and 5.9% for groups fed 0, 0.35, and 0.7% urea, respectively. The inclusion of ractopamine at 0 or 200 mg/(animal•d) had no effect (P = 0.89) on fecal prevalence of E. coli O157:H7 (4.4 vs. 4.0%). Additional research is needed to confirm the reduction in fecal shedding of E. coli O157:H7 in cattle fed monensin at 44 mg/kg of feed compared with cattle fed 33 mg/kg of feed.

Abstract
Two studies were conducted to evaluate effects of wet distillers grains with solubles (WDG) and dietary concentration of alfalfa hay (AH) on performance of finishing beef cattle and in vitro fermentation. In both studies, 7 treatments were arranged in a 2 × 3 + 1 factorial; factors were dietary concentrations (DM basis) of WDG (15 or 30%) and AH (7.5, 10, or 12.5%) plus a non-WDG control diet that contained 10% AH. In Exp. 1, 224 beef steers were used in a randomized complete block (initial BW 342 kg ± 9.03) finishing trial. No WDG × AH interactions were observed (P > 0.12). There were no differences among treatments in final shrunk BW or ADG (P > 0.15), and DMI did not differ with WDG concentration for the overall feeding period (P = 0.38). Increasing dietary AH concentration tended (P < 0.079) to linearly increase DMI, and linearly decreased (P < 0.05) G:F and calculated dietary NE(m) and NE(g) concentrations. Carcasses from cattle fed 15% WDG had greater yield grades (P = 0.014), with tendencies for greater 12th-rib fat (P = 0.054) and marbling score (P = 0.053) than those from cattle fed 30% WDG. There were no differences among treatments (P > 0.15) in HCW, dressing percent, LM area, KPH, proportions of cattle grading USDA Choice, and incidence of liver abscesses. In Exp. 2, ruminal fluid was collected from 2 ruminally cannulated Jersey steers adapted to a 60% concentrate diet to evaluate in vitro gas production kinetics, H(2)S production, IVDMD, and VFA. Relative to the control substrate, including WDG in substrates increased (P < 0.01) H(2)S production and decreased total gas production (P = 0.01) and rate of gas production (P = 0.03). Increasing substrate WDG from 15 to 30% increased (P < 0.05) H(2)S production and decreased (P < 0.001) total gas production, with a tendency (P = 0.073) to decrease IVDMD and fractional rate of gas production (P = 0.063). Treatments did not significantly affect (P > 0.09) molar proportions or total concentration of VFA. Results indicate that including 15 or 30% WDG in steam-flaked corn-based diets did not result in major changes in feedlot performance or carcass characteristics, but increasing AH concentration from 7.5 to 12.5% in diets containing WDG decreased G:F. Including WDG in substrates decreased rate and extent of gas production and increased H(2)S production. Changes in various measures of in vitro fermentation associated with AH concentrations were not large.

Abstract
Two hundred forty Angus crossbred steers were used to determine the influence of feeding various quantities of wet and dry distillers grains to finishing steers on carcass characteristics, meat quality, retail-case life of ground beef, and fatty acid profile of LM. Three replications of 5 dietary treatments were randomly applied to 15 pens in each of 2 yr. A finishing diet containing dry-rolled corn, soybean meal, and alfalfa hay was fed as the control diet. Wet distillers grains with solubles (DGS) or dry DGS was added to the finishing diets at either 20.0 or 40.0% of the dietary DM to replace all soybean meal and part of the cracked corn in treatment diets. Carcasses of steers fed DGS had greater (P < 0.05) fat thickness (1.47 vs. 1.28 cm), greater (P < 0.05) USDA yield grades (3.23 vs. 2.94), and smaller (P < 0.05) percentage of yield grades 1 and 2 (41.1 vs. 60.4%) than carcasses of steers fed the control diet. Longissimus muscle from steers fed dry DGS had greater (P < 0.05) ultimate pH values (5.52 vs. 5.49) than LM from steers fed wet DGS. Ground beef from steers fed DGS had greater (P < 0.05) concentrations of α-tocopherol (1.77 vs. 1.43 μg/g) than ground beef from steers fed the control diet. Ground beef from steers fed 40% DGS had greater (P < 0.05) thiobarbituric acid-reactive substances (2.84 vs. 2.13 mg/kg) on d 2 of retail display than ground beef from steers fed 20% DGS. Longissimus muscle of steers fed DGS had less (P < 0.05) C17:0 and more (P < 0.05) C18:0, C18:1t, C16:1c9, C18:2c9c12 (where t is trans and c is cis), and total PUFA than LM of steers fed the control diet. Feedlot steers fed DGS may need to be marketed earlier than normal to avoid excess external fat and carcasses with a greater numerical yield grade. These data suggest feeding DGS to finishing steers will have no adverse or beneficial effects on glycolytic variables (dark cutters), retail display life of ground beef, or meat tenderness. However, beef from cattle finished on diets containing DGS will likely have a greater proportion of PUFA and therefore may be more susceptible to oxidative rancidity.

Abstract
Our objectives were to evaluate the prevalence of Escherichia coli O157:H7 in cattle fed diets supplemented with 20 or 40% dried distillers' grains (DG) (DDG) or wet DG (WDG) and assess whether removing DG from diets before slaughter affected fecal shedding of E. coli O157:H7. Eight hundred forty steers were allocated to 70 pens (12 steers/pen). Treatments were no DG (control), 20% DDG or WDG, and 40% DDG or WDG, and each was replicated in 14 pens. In phase 1, eight floor fecal samples were collected from each pen every 2 weeks for 12 weeks for isolation of E. coli O157:H7 and detection of high shedders. In phase 2, half of the pens with DG were transitioned to the no-DG control diet, and pen floor fecal samples were collected weekly from all pens for 4 weeks. During phase 1, prevalence of E. coli O157:H7 was 20.8% and 3.2% for high shedders. The form of DG had no significant effect on fecal E. coli O157:H7 shedding. The prevalence levels of E. coli O157:H7 and the numbers of high shedders were not different between diets with 0 or 20% DG; however, cattle fed 40% DG had a higher prevalence and more high shedders than cattle fed 0 or 20% DG (P ≤ 0.05). During phase 2, overall and high-shedder prevalence estimates were 3.3% and <0.1%, respectively, and there were no differences between those for different DG forms and inclusion levels or when DG was removed from diets. The form of DG had no impact on E. coli O157:H7; however, fecal shedding was associated with the DG inclusion level.

Abstract
BACKGROUND Little research has been conducted to determine the magnitude of the differences in nutritive value among wheat dried distillers' grains with solubles (DDGS), corn DDGS and blend DDGS, or between different bioethanol plants. The objectives of this study were to compare different types of DDGS and different bioethanol plants in terms of: (1) rumen degradation kinetics profile of each DDGS component and rumen availability; (2) intestinal digestion profile of rumen undegraded protein; (3) hourly effective rumen degradation ratio and potential N-to-energy synchronization; (4) the role of acid detergent insoluble nitrogen in the determination of nutrient availability of DDGS. In addition, these parameters were compared in DDGS as opposed to parental grain. RESULTS (1) The effective degradability of dry matter in DDGS samples increased as the content of feedstock wheat increased. DDGS are a good source of rumen-undegradable protein. The protein content of DDGS derived from wheat is higher relative to that derived from corn; however, the undegradability of the protein fraction increases as the proportion of corn in the feedstock augments. (2) In addition, DDGS provide significant amounts of rumen-degradable protein, which increased as the content of wheat in the feedstock increased. This indicates a potential loss of N when high levels of DDGS are included in the diet. (3) Acid detergent insoluble crude protein (ADICP) levels were low across DDGS samples, revealing no effect on ruminal and intestinal disappearance of protein. However, consideration should be given to the numerical differences in digestibility of rumen-undegradable protein and the relation to ADICP content. (4) Further research with a higher number of samples and higher variability in the ADICP content should be undertaken to investigate the effect of ADICP on rumen and intestinal disappearance of DDGS protein. CONCLUSION The digestive characteristics of each DDGS component (dry matter, organic matter, crude protein and neutral detergent fiber), the hourly effective degradation ratio between N and organic matter, and the intestinal availability of rumen-undegradable protein differed significantly (P < 0.05) among wheat DDGS, blend DDGS and corn DDGS, and to a lesser extent between the different bioethanol plants. These results indicate that it is inappropriate to assume fixed rumen and intestinal degradation characteristics for DDGS without considering factors such as DDGS type and bioethanol plant origin.

Abstract
To date, there has been no study of protein molecular structures affected by bioethanol processing in relation to protein nutritive values of the new co-products of bioethanol production. The objective of the present study was to investigate the relationship between protein molecular structures (in terms of protein α-helix and β-sheet spectral intensity and their ratio and amide I to amide II spectral intensity and their ratio) and protein rumen degradation kinetics (rate and extent), estimated protein intestinal digestibility and total truly absorbed protein in small intestine (metabolisable protein) in different types of dried distillers grains with solubles (DDGS), such as wheat DDGS, maize DDGS and blend DDGS (wheat:maize = 70:30). The protein molecular structures of the different types of DDGS affected by processing were identified using diffuse reflectance IR Fourier transform spectroscopy. The results showed that the protein structure α-helix to β-sheet ratio in the DDGS had a strongly negative correlation with estimated intestinal digestibility of ruminally undegraded protein (%dRUP, R − 0·95, P = 0·04), tended to have a significant correlation with the protein PC subfraction (which was undegradable and contained proteins associated with lignin and tannins and heat-damaged proteins) (R 0·91, P = 0·09) and had no correlation (P>0·10) with rumen degradation kinetics (rate and extent), total intestinally absorbed protein supply and degraded protein balance. However, the protein amide I to amide II ratio in the DDGS had a strongly positive correlation with soluble crude protein (CP) (R 0·99, P < 0·01), protein PA subfraction (which was instantaneously solubilised at time zero) (R 0·99, P < 0·01), protein PB2 subfraction (which was intermediately degradable) (R − 0·95, P = 0·04) and total digestible CP (R 0·95, P = 0·04). The amide I to amide II ratio also had strongly negative correlations with ruminally undegraded protein (%RUP: R − 0·96, P = 0·03) and the degraded protein balance (OEB: R − 0·97, P = 0·02), but had no correlation (P>0·10) with the total intestinally absorbed protein supply. Multiple regression results show that the protein structure α-helix to β-sheet ratio was a better predictor of %dRUP with R2 0·92. The amide I to II ratio was a better predictor of the degraded protein balance with R2 0·93 in the DDGS. In conclusion, the changes in the protein molecular structure α-helix to β-sheet ratio and the amide I to amide II ratio during bioethanol processing (either due to fermentation processing or due to heat drying) were highly associated with estimated protein intestinal digestibility and degraded protein balance, but were not associated with total intestinally absorbed protein supply from the DDGS to dairy cattle. The present study indicates that a potential novel method could be developed based on the protein molecular structure parameters to improve the estimation of protein value after a validation in a large-scale in vivo study is done.

This study evaluated feeding 0 and 40% wet distillers grains with solubles (WDGS) diets to cattle and the effects on feedlot manure collected from soil-based pens and incubated for 28 d. Steers (n = 603; 261 +/- 32 kg) were fed in eight pens (15 x 150 m) of 75 to 77 steers per pen. Two consecutive experiments were conducted with WDGS--one in which the corn source fed with WDGS was high-moisture and one in which WDGS was fed with dry-rolled corn. We compared odorants (volatile fatty acids [VFAs], aromatic compounds, NH3, H2S) and persistence of Escherichia coli in feedlot manure slurries stored from 0 to 28 d. From both experiments, manure collected from cattle fed 40% WDGS had lower (P < 0.05) total VFAs, including acetate, propionate, and butyrate, all of which continued to be lower to 28 d. However, these slurries had greater concentrations (P < 0.05) of branched-chained VFAs (isobutyrate and isovalerate), especially after 14 d of incubations. Similarly, p-cresol and skatole concentrations tended to be greater in slurries originating from 40% WDGS diets and increased with incubation time. Indole was initially greater in the slurries from 40% WDGS diets; however, it was metabolized by microbes during incubation. Manure slurries from the 40% WDGS diets had greater quantities of H2S, NH3, and P (P < 0.05). Levels of E. coli in 0 and 40% WDGS manure slurries were similar when high-moisture corn was used in the diets. However, when dry-rolled corn was used, E. coli persisted longer in 40% WDGS manure slurries in comparison to 0% WDGS. Results here support earlier studies that suggest feeding WDGS increases odor emissions, N loss, E. coli survival, and surface water contamination due to greater potential P runoff.

Abstract
The objective of this study was to assess the value of triticale dried distillers grains with solubles (DDGS) as a replacement for barley silage in addition to a portion of the dry-rolled barley (DRB) in a grain-based feedlot finishing diet. The trial used 160 crossbred yearling steers: 144 noncannulated (478 +/- 84 kg) in a complete randomized design, and 16 ruminally cannulated (494 +/- 50 kg) in a replicated 4 x 4 Latin square design. The noncannulated steers were assigned to 8 standard pens (10 per pen) and 8 pens equipped with the GrowSafe system (GrowSafe Systems Ltd., Airdrie, Alberta, Canada; 8 per pen). The cannulated steers were placed (2 per pen) in the 8 GrowSafe pens and moved between pens at 28-d intervals. Each of 4 experimental diets was fed in 2 standard and 2 GrowSafe pens. The diets contained (DM basis) 1) 85% DRB and 10% barley silage (CON); 2) 65% DRB, 20% triticale DDGS, and 10% barley silage (D-10S), 3) 65% DRB, 25% triticale DDGS, and 5% barley silage, and 4) 65% DRB, 30% triticale DDGS, and no barley silage. Supplement (5% of dietary DM) was included in all diets. Ruminal pH was measured over four 7-d periods using indwelling electrodes. Replacing barley silage with triticale DDGS linearly decreased mean ruminal pH (P = 0.006), linearly increased duration (P = 0.006 and P = 0.01) and area under the curve (P = 0.02 and P = 0.05) below pH 5.5 and 5.2, and linearly increased the frequency of subacute (P = 0.005) and acute (P = 0.05) bouts of ruminal acidosis. Variation in mean ruminal pH decreased (P = 0.008) in steers fed D-10S compared with CON. Similarly, variation in DMI was less for steers fed triticale DDGS compared with CON. Steers fed D-10S tended to have greater DMI (P = 0.08) but similar ADG and G:F compared with CON steers. Replacing barley silage with triticale DDGS tended to linearly decrease DMI (P = 0.10) and increase (P = 0.06) G:F. Compared with CON, steers fed D-10S tended to have greater backfat thickness (P = 0.10) and decreased dressing percentage (P = 0.06), ribeye area (P = 0.10), and meat yield (P = 0.06). Severity and number of abscessed livers was greater (P = 0.006) in steers fed D-10S compared with those fed CON. Although mean ruminal pH decreased as barley silage was replaced with triticale DDGS, the trend for improved growth suggests that reduced ruminal pH did not affect animal performance. Triticale DDGS can be substituted for barley silage in finishing diets in addition to a portion of barley grain without affecting growth performance or carcass quality, but it is recommended that an antimicrobial be included in the diet to reduce liver abscesses.

Abstract
Two studies were conducted to evaluate the effects of corn (CDG) and sorghum (SDG) wet distillers grains with solubles on feedlot cattle performance, carcass characteristics, and apparent total tract digestion of nutrients. In Exp. 1, 224 steers were used in a randomized complete block design (initial BW 391.1 +/- 9.51 kg) and fed steam-flaked corn (SFC)-based diets consisting of (DM basis) 0% distillers grains (CON), 15% SDG, 30% SDG, 15% CDG, 30% CDG, 15% of a 50:50 blend of SDG and CDG, and 30% of a 50:50 blend of CDG and SDG. Decreased carcass-adjusted final BW and HCW (P < or = 0.05) were noted as the inclusion amount of distillers grains increased in the diet. Body weight gain efficiency did not differ among the CDG, 50:50 SDG and CDG blend, and CON treatments, but G:F was numerically less with either amount of SDG than for CON, and decreased (P < or = 0.05) as distillers grains were increased from 15 to 30%. Cattle fed CON had greater carcass yield grades than those fed the distillers grain diets (P < or = 0.05). In Exp. 2, crossbred beef steers (n = 36; initial BW 567.3 +/- 53.1 kg) were used in a generalized randomized block design and fed SFC-based diets with 0% distillers grains (CON) and 15% (DM basis) CDG or SDG. Digestibility was determined with a pulse dose of Cr(2)O(3). Feeding steers 15% CDG or SDG increased intakes of CP and NDF (P < or = 0.05), but intakes of DM, OM, and starch did not differ among treatments (P >o r = 0.07). Apparent total tract digestibilities of DM, OM, CP, NDF, and starch (P > or = 0.25) did not differ among the 3 treatments. Fecal pH averaged over all sampling times was not affected by treatment, nor were average fecal pH values for prefeeding samples (0, 24, 48, and 72 h after the pulse dose) or for samples taken after feeding (12, 36, and 60 h after the pulse dose; P > or = 0.11). Results suggest that with 15% distillers grains in the DM, G:F was similar for cattle fed the CDG, 50:50 SDG and CDG blend, and CON diets. Feeding 30 vs. 15% distillers grains decreased G:F, but including 15% CDG or SDG in SFC-based diets did not affect apparent total tract digestibilities in feedlot steers.

Abstract
The effects of wet distillers grains with solubles (WDG) on in vitro rate of gas production, IVDMD, H(2)S production, and VFA were evaluated. Five substrate treatments that were balanced for ether extract content were arranged in a 2 x 2 + 1 factorial. Factors were concentration (15 or 30%; DM basis) and source of WDG (corn or sorghum WDG; CDG and SDG, respectively) plus a 0% WDG control in substrates with steam-flaked corn as the basal grain. Control substrates had greater (P < 0.01) IVDMD and total gas production per gram of substrate DM than WDG-based substrates, and IVDMD was greater (P = 0.03) for CDG than for SDG substrates. Increasing WDG inclusion from 15 to 30% decreased IVDMD and total gas production (P < 0.05), but H(2)S production (micromol/g of fermentable DM) increased (P = 0.01) as inclusion of WDG increased. There were no differences (P > or = 0.10) among treatments in proportions of major VFA, acetate:propionate ratio, and total VFA concentration. These results suggest that including WDG in the substrate decreased IVDMD and gas production, which was particularly evident as WDG increased from 15 to 30% of substrate DM. In addition, CDG seemed to be more digestible than SDG. Hydrogen sulfide production increased with increasing WDG in the substrate, reflecting greater S concentrations in WDG, but in vitro VFA profiles were not affected by WDG concentration or source.

Abstract
Limited data are available regarding the influence of thiamine supplementation on the incidence of polioencephalomalacia (PEM) in lambs fed diets containing increased concentrations of S in the diet (>0.7%). Therefore, our objective was to evaluate the influence of thiamine supplementation on feedlot performance, carcass quality, ruminal hydrogen sulfide gas concentrations, and incidence of PEM in lambs fed a finishing diet containing 60% distillers dried grains with solubles (DDGS; DM basis). Two studies were conducted using completely randomized designs to evaluate the influence of concentration of thiamine supplementation. Study 1 used 240 lambs fed in 16 pens, whereas study 2 used 55 individually fed lambs. Lamb finishing diets contained 60% DDGS, which resulted in a dietary S concentration of 0.73% (DM basis). Treatments diets were based on the amount of supplemental thiamine provided: 1) no supplemental thiamine (CON), 2) 50 mg/animal per day (LO), 3) 100 mg/animal per day (MED), or 4) 150 mg/animal per day (HI). Additionally, in study 2, a fifth treatment was included, which contained 0.87% S (DM basis; increased S provided by addition of dilute sulfuric acid) and provided 150 mg of thiamine/animal per day (HI+S). In study 1, ADG decreased quadratically (P = 0.04), with lambs fed the CON, LO, and MED diets gaining BW at a greater rate than lambs fed the HI diet. In study 1, DMI responded quadratically (P < 0.01), whereas G:F tended to differ linearly (P = 0.08) to concentration of thiamine supplementation, with MED lambs having greater DMI and decreased G:F. No differences (P > or = 0.17) in lamb performance were observed in study 2. In both studies, most carcass characteristics were unaffected, with the exception of a tendency for decreased carcass conformation (study 1; P = 0.09) and greater flank streaking (study 2; P = 0.03). No differences in ruminal hydrogen sulfide concentration (P > 0.05) among treatments were apparent until d 10, at which point lambs fed the LO diet had less hydrogen sulfide concentrations than all other treatments. Lambs fed HI had the greatest concentrations of hydrogen sulfide on d 31 (1.07 g of hydrogen sulfide /m(3); P < 0.009). Ruminal pH did not differ (P = 0.13) and averaged 5.6 +/- 0.06. No clinical cases of PEM were observed during the course of either study. The use of thiamine as a dietary additive to aid in the prevention of PEM in finishing lambs does not appear to be necessary under the conditions of this study.

Abstract
The objectives of this study were to determine the protein molecular structures of the new coproducts from bioethanol production, quantify protein structure amide I to II and alpha-helix to beta-sheet spectral peak intensity ratio, and illustrate multivariate molecular spectral analyses as a novel research tool for rapid characterization of protein molecular structures in bioethonal bioproducts. The study demonstrated that the grains had a significantly higher ratio of alpha-helix to beta-sheet in the protein structure than their coproducts produced from bioethanol processing (1.38 vs 1.03, P < 0.05). There were significant differences between wheat and corn (1.47 vs 1.29, P < 0.05) but no difference between wheat dried distiller grains with solubles (DDGS) and corn DDGS (1.04 vs 1.03, P > 0.05). The grains had a significantly higher ratio of protein amide I to II in the protein structure than their coproducts produced from bioethanol processing (4.58 vs 2.84, P < 0.05). There were no significant differences between wheat and corn (4.61 vs 4.56, P > 0.05), but there were significant differences between wheat DDGS and corn DDGS (3.08 vs 2.21, P < 0.05). This preliminary study indicated that bioethanol processing changes protein molecular structures, compared with original grains. Further study is needed with a large set of the new bioethanol coproducts to quantify protein molecular structures (alpha-helix to beta-sheet ratio; amide I to II ratio) of the bioethanol coproducts in relation to nutrient supply and availability in animals.

Abstract
Forty Holstein cows were used in a completely randomized design with a 2-wk covariate period followed by a 6-wk experimental period to evaluate incremental substitution of nonforage fiber provided by dried distillers grains with solubles (DDGS) and soyhulls (SH) for starch provided by corn in the diet. Diets provided decreasing concentrations of starch: 29% starch with 0% DDGS; 26% starch with 7% DDGS; 23% starch with 14% DDGS; and 20% starch with 21% DDGS. Diets contained 27% corn silage, 22% alfalfa hay, and 51% concentrate mix and were formulated to be 17% crude protein, 4.7% fat, and 23% neutral detergent fiber from forage. Total neutral detergent fiber increased as DDGS and SH were included in the diet. Soyhulls were included in a linear fashion along with DDGS to replace soybean meal and expeller soybean meal, thereby maintaining a similar crude protein content across diets. Dry matter intake decreased linearly; consequently, feed efficiency tended to increase linearly as starch was replaced by nonforage fiber. There was no effect of diet on milk production or milk fat and protein percentage or yield. Milk fatty acid profiles were similar across diets. Other response variables, including 4% fat-corrected milk, total solids, and milk urea nitrogen, were unaffected by dietary treatments. Ruminal volatile fatty acid concentration did not differ between diets. Concentrations of blood glucose and beta-hydroxybutyrate were similar across diets. Results from this research suggest that nonforage fiber from DDGS can partially substitute for starch from corn in dairy cow diets without affecting milk production and milk composition. Economic analysis of the diets showed that feeding DDGS and SH in substitution of corn was cost-effective. Results from this experiment indicate that DDGS and SH can replace corn as an energy source to decrease feed costs.

Abstract
Escherichia coli O157 is an important foodborne pathogen affecting human health and the beef cattle industry. Contamination of carcasses at slaughter is correlated to the prevalence of E. coli O157 in cattle feces. Many associations have been made between dietary factors and E. coli O157 prevalence in cattle feces. Preharvest interventions, such as diet management, could reduce the fecal prevalence and diminish the impact of this adulterant. Dietary influences, including grain type and processing method, forage quality, and distillers grains have all been associated with E. coli O157 prevalence. In addition, several plant compounds, including phenolic acids and essential oils, have been proposed as in-feed intervention strategies. The specific mechanisms responsible for increased or decreased E. coli O157 shedding or survival are not known but are often attributed to changes in hindgut ecology induced by diet types. Some interventions may have a direct bacterial effect. Frequently, results of studies are conflicting or not repeatable, which speaks to the complexity of the hindgut ecosystem, variation in animal feed utilization, and variation within feed products. Still, understanding specific mechanisms, driven by diet influences, responsible for E. coli O157 shedding will aid in the development and implementation of better and practical preharvest intervention strategies.

Abstract
Use of coproducts such as corn and sorghum distillers grain (DG) and corn gluten feed (CGF) in beef cattle finishing diets has increased significantly in recent years, but research to evaluate the efficacy of traditional feeding practices and feed additives when coproducts are fed has not kept pace. Grain processing methods that increase starch availability seem equally effective in traditional diets and diets with wet CGF; however, in wet DG diets, some studies have shown decreased efficacy of grain processing, whereas others have shown no evidence of an interaction. Limited data are available on the physical and nutritional value of the fiber in wet DG and CGF; however, CGF at concentrations >/=25% of the dietary DM seems to have some degree of "roughage value," whereas fiber in wet DG seems to have less potential to replace traditional roughage sources. There is little evidence that efficacy of ionophores and antibiotics is changed with diets based on wet CGF or that they interact when wet DG is added to finishing diets. In vitro data from our laboratory suggest no loss of monensin efficacy in substrates with 15% (DM basis) corn DG in terms of changes in VFA and gas production. Moreover, efficacy of ionophores was not affected in our data by diet substrates with increasing concentrations of S, and in vitro H(2)S production in substrates containing wet DG seems predictable from substrate S concentrations. Nonetheless, limited in vivo data indicate decreased ruminal acetate-to-propionate ratios in diets with increased wet DG, which may minimize the potential for ionophores to alter propionate. Likewise, in vivo results indicate that feeding wet DG may decrease ruminal pH; thus, to maximize DMI and minimize digestive upsets, optimal concentrations of roughage need to be evaluated in diets containing wet DG. Research is needed on other potential technology interactions with coproducts of biofuel production such as glycerol and condensed distillers solubles. The effects of yeast products and live microbial cultures in diets with coproduct feeds have generally not been determined. Because of the elevated fiber concentrations in CGF and DG, effects of exogenous enzyme preparations on ruminal fermentation and fiber digestion of diets containing these coproducts should be evaluated.

Abstract
Two studies were conducted to evaluate effects of dried distillers grains with solubles (DDGS) and alfalfa hay (AH) or corn silage (CS) on feedlot performance, carcass characteristics, ruminal fermentation, and diet digestibility in cattle fed steam-flaked corn (SFC) diets. In trial 1, crossbred heifers (n = 358; BW = 353 +/- 13 kg) were used in a finishing trial to evaluate interactions between corn-DDGS and roughage source (AH or CS) in terms of impact on feedlot performance and carcass characteristics. Experimental diets (DM basis) consisted of SFC and 11% CS without DDGS (SFC-CS), SFC and 11% CS with 25% DDGS (DDGS-CS), SFC and 6% AH without DDGS (SFC-AH), and SFC with 25% DDGS and 6% AH (DDGS-AH). Heifers were fed for ad libitum intake once daily for 97 d. Results indicated no interaction between DDGS and roughage source with respect to animal performance. Feeding DDGS did not affect ADG (P = 0.19), DMI (P = 0.14), or feed conversion (P = 0.67). Heifers fed CS had greater DMI than those fed AH (P = 0.05), but ADG (P = 0.56) and G:F (P = 0.63) were not different. There were no differences among treatments with respect to HCW, dressing percentage, subcutaneous fat thickness, quality grades, or yield grades (P > 0.20). Cattle fed CS tended (P = 0.10) to have greater marbling scores than those fed AH. There was an interaction (P = 0.02) between roughage and DDGS with respect to incidence of liver abscess. The greatest incidence was observed in cattle fed diets without DDGS when CS was fed, and the least was observed in cattle fed diets without DDGS when AH was used. In the second trial, ruminal fermentation characteristics and diet digestibility were examined in 12 cannulated Holstein steers fed similar diets to those fed in the finishing trial. Ruminal pH for all treatments was below 5.8 for 14 h after feeding. Acetate:propionate ratios were less (P = 0.02) in steers fed 25% DDGS but had greater (P = 0.02) ruminal lactate concentrations compared with cattle fed 0% DDGS. Feeding 25% DDGS decreased (P < 0.01) ruminal ammonia concentrations, and digestion of DM and OM was less (P < 0.01) compared with diets without DDGS. The decrease in digestibility was largely attributable to decreases in digestion of CP (P = 0.03) and NDF (P < 0.01). Feeding strategies aimed at increasing ruminal pH and ruminally available protein may improve digestion of DDGS in steam-flaked corn-based finishing diets.

Abstract
The objective of this study was to determine if wet distillers grains with solubles (WDGS) from corn in diets affected Escherichia coli O157:H7 in growing and finishing cattle; steers (n = 603) were randomly assigned to diets with or without WDGS. Hide and fecal samples were collected monthly (October through June) from each animal for enumeration and enrichment of E. coli O157:H7. In the growing phase (0 or 13.9% WDGS diets), fecal prevalence for E. coli O157:H7 in steers fed a diet with WDGS was twice that of the prevalence in control steers (P < 0.001). In the finishing phase (0 or 40% WDGS diets), the average prevalence in feces (P < 0.001) and on hides (P < 0.001) was higher for cattle fed WDGS. The average percentage of fecal E. coli O157:H7 enumerable samples during the finishing phase for cattle fed WDGS was 2.7% compared with 0.1% for control steers (P < 0.001). The average percentage of E. coli O157:H7 enumerable hide samples was not different between diets, but the cattle fed WDGS had higher levels (P < 0.05) of the pathogen. Animals fed WDGS had higher levels of E. coli (P < 0.001), higher pH values (P < 0.001), and lower concentrations of L-lactate (P < 0.001) in feces than those values of the control steers. These results indicate that feeding 40% WDGS could increase the level and prevalence of E. coli O157:H7 in and on feedlot cattle when E. coli O157:H7 is seasonally low.

Abstract
Two experiments were conducted to evaluate the fermentation characteristics of ensiled wet corn distillers grains with solubles (WDG) alone or mixed with soybean hulls (SH) and the ability of the mixture to maintain growth performance in dairy heifers. The first experiment was an ensiling study using laboratory silos. Ensiled blends were 100% WDG, 85% WDG with 15% SH, and 70% WDG with 30% SH on an as-fed basis. Silos were opened for analysis on d 0, 3, 7, and 21. The pH was less in the 100% WDG compared with other treatments (P < 0.01), but all treatments had a pH near 4. Lactic acid concentration was greater in 100% WDG compared with the blends of WDG and SH (P < 0.01). Acetic acid was not found in 100% WDG and increased over time in the 2 blends (P < 0.01). Other differences between blends, such as DM, CP, ammonia N, fiber, and fat, were reflective of the different concentrations of WDG and SH in the blends. In the second experiment, the 70% WDG and 30% SH (as-fed) blend was ensiled in a silo bag and then evaluated as a feed for growing dairy heifer diets. Twenty-four heifers were used in a randomized complete block design and assigned to be fed 1 of 3 diets: 1) control, 2) low inclusion of WDGSH, and 3) a high inclusion of WDGSH. All treatment diets consisted of 50% brome grass hay on a DM basis. The control diet had 50% of the diet (DM basis) as a grain mix, which was composed of corn, soybean meal, and minerals. The low WDGSH diet contained 24.4% of the blend and 25.6% grain mix. The high WDGSH diet contained 48.7% of the blend and 1.3% mineral mix. Average daily gain and most of the body growth measures were similar among treatments. However, DMI decreased linearly (P < 0.01) as the WDGSH blends were fed, resulting in improved (P = 0.02) G:F. Results from these experiments indicated that WDG can be effectively ensiled with SH and sustain adequate growth rate when fed to growing dairy heifers.

Abstract
The objective of this study was to evaluate the influence of dietary protein and fat from distillers dried grains with solubles (DDGS) on feedlot performance, carcass characteristics, and meat quality in finishing steers. Angus-cross steers (n = 105; 443 +/- 20 kg of BW) were blocked by BW and randomly assigned to 1 of 5 dietary treatments: 1) corn-based diet with DDGS included at 25% of DM (CON), 2) CON with DDGS included at twice the amount of CON (50% of DM; 50DDGS), 3) CON with added corn protein to equal the CP in the 50DDGS diet (CON+CP), 4) CON with added vegetable oil to equal the fat in the 50DDGS diet (CON+VO), and 5) CON with protein and fat added to equal the CP and fat in the 50DDGS diet (CON+CPVO). Steers were fed to a common 12th-rib fat depth endpoint (1.3 +/- 0.2 cm; 68 to 125 d on trial). Loins and rounds were collected from 44 carcasses for Warner-Bratzler shear force (WBSF), ether extract, and case-life analyses. Data were analyzed using the MIXED procedure of SAS. Contrasts between 1) CON vs. elevated CP diets (50DDGS, CON+CP, and CON+CPVO; EP), 2) CON vs. elevated fat diets (50DDGS, CON+VO, and CON+CPVO; EF) and 3) CON vs. diets with elevated CP and fat (50DDGS and CON+CPVO; EPF) were analyzed. There were no differences in days on feed or DMI among treatments. Steers fed CON had greater ADG (P <or= 0.03) than EP, EF, and EPF diets. Steers fed CON also had greater G:F (P <or= 0.04) than EP and EPF steers. Final BW was greater for CON than EP and EPF diets (P <or= 0.03). Likewise, CON steers had heavier HCW than EPF steers (P = 0.04). Dressing percent, 12th-rib fat depth, LM area, KPH, and yield grade were not affected by treatment (P >or= 0.06). Steers fed the CON diet had greater marbling scores (P <or= 0.03) and quality grades (P <or= 0.02) compared with those fed EP, EF, and EPF diets. There were no differences in WBSF, ether extract, or lipid oxidation due to treatment (P >or= 0.44). However, CON steers had greater (P = 0.02) L* values than EF-fed steers and greater b* values than EP, EF, and EPF steers (P <or= 0.02) during retail display of ground product. Data from this study illustrate that live animal performance, marbling and quality grade, and color stability of ground product during retail display are negatively affected when DDGS are increased from 25 to 50% of the diet DM. This response appears to be due to elevated dietary fat, elevated CP, and a combination of elevated fat and protein within in the diet.

Abstract
Two hundred ninety-nine crossbred yearling steers (363 +/- 15 kg initial BW) were fed for an average of 114 d in a finishing study comparing 7 diets in which steam-flaked corn was used as the principal energy source. Forty-nine pens were used in this study with 7 BW blocks, 7 pens per treatment, and 5 to 7 steers per pen. A control diet with no distillers grains with solubles (DGS) was compared with 6 diets containing 15% DGS (DM basis). The diets contained wet sorghum DGS with 0 or 6% alfalfa hay, dried sorghum DGS with 0 or 6% alfalfa hay, wet corn DGS with 6% alfalfa hay, or dried corn DGS with 6% alfalfa hay. Apparent total tract digestibilities were calculated by total collection of fecal material from the concrete-surfaced pens over a 72-h period. Dry matter intake, ADG, G:F, and carcass characteristics were similar (P > or = 0.18) for steers fed finishing diets with or without 15% DGS. However, apparent total tract digestibilities of DM and OM were 2.8% less (P < or = 0.03) for finishing diets containing 15% DGS (DM basis). Dry matter intake, ADG, G:F, apparent total tract digestibility, and carcass characteristics were not different (P > or = 0.09) for steers fed finishing diets containing sorghum or corn DGS. Dry matter intake, ADG, G:F, apparent total tract digestibility, and carcass characteristics also were not different (P > or = 0.10) for steers fed finishing diets containing wet or dried DGS. Steers fed sorghum DGS with 6% hay consumed more DM (P < 0.01) and gained more BW (P < 0.01) than steers fed diets without hay, but G:F were not different (P > 0.78). Sorghum DGS diets containing alfalfa hay were 4% less (P = 0.01) digestible than sorghum DGS diets containing no hay. Carcasses of steers fed sorghum DGS diets without hay were lighter, leaner, and had decreased USDA yield grades (P = 0.01) compared with steers fed sorghum DGS diets containing hay. Feeding moderate levels (i.e., 15%, DM basis) of DGS resulted in growth performance and carcass characteristics similar to those of cattle fed no DGS. In addition, sorghum- and corn-based DGS had similar feeding values, and wet (approximately 31% DM) and dried (approximately 91% DM) DGS also had similar feeding values. Complete removal of alfalfa hay in diets containing DGS improved diet digestibility but reduced growth performance and carcass finish.

Abstract
Three experiments evaluated the lipids in distillers grains plus solubles compared with corn or other sources of lipid in finishing diets. Experiment 1 utilized 60 individually fed yearling heifers (349 +/- 34 kg of BW) fed treatments consisting of 0, 20, or 40% (DM basis) wet distillers grains plus solubles (WDGS), or 0, 2.5, or 5.0% (DM basis) corn oil in a finishing diet based on high-moisture corn (HMC) and dry-rolled corn. Cattle fed 20 and 40% WDGS had greater (P < 0.10) G:F than cattle fed 0% WDGS. Cattle fed the 5.0% corn oil had less overall performance than cattle fed the other diets. Results from Exp. 1 indicated that adding fat from WDGS improves performance, whereas supplementing 5.0% corn oil depressed G:F, suggesting that the fat within WDGS is different than corn oil. Experiment 2 used 234 yearling steers (352 +/- 16 kg of BW) fed 1 of 5 treatments consisting of 20 or 40% (DM basis) dry distillers grains plus solubles, 1.3 or 2.6% (DM basis) tallow, or HMC. All diets contained 20% (DM basis) wet corn gluten feed as a method of controlling acidosis. No differences between treatments for any performance variables were observed in Exp. 2. The dry distillers grains plus solubles may be similar to tallow and HMC in finishing diets containing 20% wet corn gluten feed. Experiment 3 used 5 Holstein steers equipped with ruminal and duodenal cannulas in a 5 x 5 Latin square design. Treatments were a 40% WDGS diet, 2 composites, one consisting of corn bran and corn gluten meal; and one consisting of corn bran, corn gluten meal, and corn oil; and 2 dry-rolled corn-based diets supplemented with corn oil or not. Cattle fed the WDGS diet had numerically less rumen pH compared with cattle fed other treatments. Cattle fed WDGS had greater (P < 0.10) molar proportions of propionate, decreased (P < 0.10) acetate:propionate ratios, greater (P < 0.10) total tract fat digestion, and a greater (P < 0.10) proportion of unsaturated fatty acids reaching the duodenum than cattle fed other treatments. Therefore, the greater energy value of WDGS compared with corn may be due to more propionate production, greater fat digestibility, and more unsaturated fatty acids reaching the duodenum.

Abstract
Corn ethanol production removes starch and concentrates the remaining nutrients, including CP and minerals. When wet distillers grains with solubles (WDGS) are fed to cattle in place of corn, CP and minerals often exceed dietary needs. This may increase N emission, P run-off, and odor production. These variables are evaluated in this study. Crossbred steers (n = 160; 434 +/- 8 kg) were assigned in a completely randomized block design to 9 x 9 m pens with concrete floor (10 animals/pen; 4 pens/treatment). Steers were fed a finishing diet that contained 0, 20, 40, or 60% WDGS on a DM basis, and provided 13.3, 15.5, 20.6, or 24.9% CP, respectively. Two kilograms of manure slurry (14 to 23% DM) were collected from each pen monthly (Aug. 20, Sep. 24, and Oct. 22). Samples were analyzed immediately for odorants, DM, pH, NH(3), total alcohol, l-lactate, and concentrations of generic Escherichia coli. After incubation of the samples at 22 degrees C for 2, 4, 7, 10, 15, 21, and 28 d, samples were analyzed for methane production in addition to the above characteristics. Before incubation, NH(3), H(2)S, indole, phenol, isovalerate, isobutyrate, and acetate increased (P < 0.01) with increasing amounts of WDGS in the diet. Other odorants, including skatole, caproate, valerate, butyrate, and propionate, were greater (P < 0.01) in manure slurries from cattle fed 20 or 40% WDGS, compared to 0% WDGS. The l-lactate was greater (P < 0.01) in slurries from cattle fed 0% WDGS (447 mu mol/g of DM) compared with the other treatment slurries (14 to 15 mu mol/g of DM). After incubation, l-lactate contributed to lowered slurry pH (6.3, 7.1, 7.6, and 8.2, respectively, for 0, 20, 40, and 60% WDGS), which inhibited microbial fermentation, E. coli persistence, and methane production. Because of the favorable, more neutral pH in the 40 and 60% WDGS slurries, many of the odorant compounds were rapidly converted to methane during a 28-d static incubation. Escherichia coli O157:H7 inoculated into subsamples of the manure slurries exhibited behavior similar to that of naturally present generic E. coli, surviving in greater numbers longer (P < 0.05) in 20 and 40% WDGS slurries than in 0% WDGS. These data indicate feeding WDGS can increase odorants in manure slurries and extend the persistence of E. coli.
