Abstract
BACKGROUND The stage of maturity at harvest has a major effect on the fatty acid (FA) content and composition of forage plants consumed by dairy cows. The present study investigated the dynamics of FA content and composition in stover (leaves and stem) and ears (cob, shank and husks) of two maize genotypes (G2 and G6) grown on sandy and clay soils and harvested at 14, 42, 56, 70 and 84 days after flowering (DAF). In addition, the FA content and composition of six maize genotypes (G1-G6) grown on the two soil types were compared at the normal harvest time of early genotypes in the Netherlands (70 DAF). RESULTS The contents of total FAs and major individual FAs in both stover and ears changed significantly (P < 0.001) during the grain-filling period (14-84 DAF). In stover the contents of C16:0, C18:2, C18:3 and total FAs declined (P < 0.001) while those of C18:0 and C18:1 increased (P < 0.001) with progressive grain filling. The rate of decline in C18:3 and total FA contents was slower during 14-56 DAF as compared with 56-84 DAF. In ears, the contents of C16:0, C18:1, C18:2 and total FAs increased up to 56 DAF and then remained more or less constant until 84 DAF. At 70 DAF the content of polyunsaturated fatty acids (PUFAs) in both stover and ears did not differ among the six genotypes. However, the average contents of C16:0, C18:3 and total FAs in stover were higher (P < 0.05) on clay soil, whereas those of C18:0 and C18:1 were higher on sandy soil. CONCLUSION The results demonstrate that the maximum PUFA content in silage maize is harvested around 56 DAF, in the present study at a T(sum) of 927 °C.d or at an ear dry matter content of 440 g kg(-1) , which is before the onset of rapid senescence. Any further delay in harvesting will cause a rapid decline in C18:3 content in maize silages.

Abstract
This study of UK retail milk identified highly significant variations in fat composition. The survey, conducted over 2 yr replicating summer and winter, sampled 22 brands, 10 of which indicated organic production systems. Results corroborate earlier farm-based findings considering fat composition of milk produced under conventional and organic management. Organic milk had higher concentrations of beneficial fatty acids (FA) than conventional milk, including total polyunsaturated fatty acids (PUFA; 39.4 vs. 31.8 g/kg of total FA), conjugated linoleic acid cis-9,trans-11 (CLA9; 7.4 v 5.6 g/kg of FA), and α-linolenic acid (α-LN; 6.9 vs. 4.4 g/kg of FA). As expected, purchase season had a strong effect on fat composition: compared with milk purchased in winter, summer milk had a lower concentration of saturated fatty acids (682 vs. 725 g/kg of FA) and higher concentrations of PUFA (37.6 vs. 32.8 g/kg of FA), CLA9 (8.1 vs. 4.7 g/kg of FA), and α-LN (6.5 vs. 4.6 g/kg of FA). Differences identified between sampling years were more surprising: compared with that in yr 2, milk purchased in year 1 had higher concentrations of PUFA (37.5 vs. 32.9 g/kg of FA), α-LN (6.0 vs. 5.1 g/kg of FA), and linoleic acid (19.9 vs. 17.5 g/kg of FA) and lower concentrations of C16:0 and C14:0 (332 vs. 357 and 110 vs. 118 g/kg of FA, respectively). Strong interactions were identified between management and season as well as between season and year of the study. As in the earlier farm studies, differences in fat composition between systems were greater for summer compared with winter milk. Large between-year differences may be due to changes in weather influencing milk composition through forage availability, quality, and intake. If climate change predictions materialize, both forage and dairy management may have to adapt to maintain current milk quality. Considerable variation existed in milk fat composition between brands.

Abstract
The effect of several flowering dicotyledonous catch crop plants (dicots) on milk fat quality in cows was investigated to test the hypothesis that their phenolic compounds may inhibit ruminal biohydrogenation and thus enhance the transfer to milk of intact, plant-derived polyunsaturated fatty acids. Berseem clover (Trifolium alexandrinum), buckwheat (Fagopyrum esculentum), and phacelia (Phacelia tanacetifolia) were sown in mixture with ryegrass (Lolium multiflorum; intended biomass proportion of 0.2) on 1ha. For comparison, nonflowering chicory (Cichorium intybus, also sown in mixture with ryegrass) and pure ryegrass were cultivated. Realized biomass proportions (wet weight) were 91% for berseem clover, 69% for buckwheat, 54% for phacelia, and 51% for chicory. At the start of flowering (or from d 47 after sowing onward), cultures were harvested daily and fed for 20 d ad libitum to groups of 6 midlactation cows each. Additionally, 1 kg each of energy and protein concentrate and pure ryegrass hay were fed. Individual intake and milk yield of the cows were measured daily. Milk samples were obtained twice daily 5 d before and from 11 to 20 d after the start of treatment feeding. Feed samples were drawn twice a week from the fresh feeds. Apart from standard traits, feeds and milk were analyzed for fatty acids, tocopherols, and phenolic fractions. Only a few substantial treatment effects on intake and performance were observed. All diets based on dicots increased α-linolenic acid (ALA) concentrations in milk fat compared with the ryegrass diet even though the corresponding swards were not generally richer in ALA. The highest ALA concentration in milk fat (1.3 g/100g of fatty acids) occurred with the berseem clover diet. Transfer rate of ALA from feed to milk was highest with the buckwheat diet (0.09) and lowest with ryegrass (0.05). This was congruent with the differences in total extractable phenols, being high in the buckwheat sward (2.6% of dry matter) and low in the ryegrass sward (1.2% of dry matter). Intermediates of ALA biohydrogenation were lowest in the milk fat of the buckwheat group, indicating an inhibitory effect of this treatment, which provided the highest dietary levels of phenols. The α-tocopherol concentration in milk was higher with the buckwheat diet than with berseem clover and phacelia diets. The study provides evidence that the ALA concentration in milk fat could be enhanced by feeding flowering dicots; however, this was due to different modes of action.

Abstract
The purpose of the present study was to assess the influence of phenol-rich tropical ruminant feeds on the extent of ruminal biohydrogenation (BH) of polyunsaturated fatty acids (PUFA). Samples of 27 tropical forages (mainly tree and shrub leaves), characterised by different phenolic profiles, were incubated in vitro (n = 4 replicates) with buffered rumen fluid for 24 h using the Hohenheim gas test method. Linseed oil was added as a rich source of PUFA. In the plants, total extractable phenols (TEP), non-tannin phenols, condensed tannins, and fatty acids were determined. After terminating incubation, the fatty acid profile present in fermentation fluid (total syringe content) was analysed by gas chromatography. The relationship between TEP and the disappearance of α-linolenic acid from the incubation fluid was negative (R2 = 0.48, P < 0.001), indicating that TEP reduced the ruminal BH of this PUFA. Similarly, TEP were negatively related with the disappearances of linoleic acid (R2 = 0.52, P < 0.001) and oleic acid (R2 = 0.58, P < 0.001). The appearance of rumenic acid, an important conjugated linoleic acid isomer, was positively correlated with TEP (R2 = 0.30, P < 0.01), while the opposite result was seen with stearic acid (R2 = 0.22, P < 0.05). Leaves of avocado (Persea americana) were particularly interesting, because they changed the BH pattern at a moderate TEP content of 73 g/kg DM. It is concluded that, in the tropical feedstuffs investigated, TEP have an impact on ruminal fatty acid BH and are associated with an increased bypass of PUFA and the generation of conjugated linoleic acid.

Abstract
To investigate the influence of climatic conditions and season on milk composition, bulk tank milk was sampled on 5 occasions during a period of 15 mo from 20 Swedish dairy farms. These farms included 5 organic and 5 conventional farms in central Sweden and 7 traditional conventional farms and 3 conventional farms growing maize for silage in southern Sweden. Feed data and milk yield were recorded and milk was analyzed for content of fatty acids, carotenoids, and tocopherol. Differences between milk from the 2 regions and between summer and winter seasons were shown. Milk from central Sweden differed from milk from southern Sweden in that it had a higher content of carotenoids, tocopherol, short-chain fatty acids (C4-C14), C18:0, and C18:3 n-3 and a lower content of C16. Summer milk samples had a lower fat content and contained higher amounts of C18:1 cis-9 and conjugated linoleic acid cis-9,trans-11, and lower amounts of C4 to C16 compared with winter milk. Differences between farm types from central Sweden were lower content of conjugated linoleic acid cis-9,trans-11 and higher content of C18:3 n-3 in organic milk compared with conventional milk. In southern Sweden the use of maize silage caused lower milk content of carotenoids and C18:3 n-3 when compared with traditional feeding. Differences in milk composition could be related to climatic differences because legumes are more dominating in the leys of central Sweden and maize growing is limited to southern Sweden.

Abstract
The transfer of ingested alpha-linolenic acid (ALA) and linoleic acid (LA) determines the nutritional quality of milk, but the factors determining this transfer are unclear. The present experiment investigated the influence of roughage to concentrate proportions and the effect of concentrate types on milk fat composition. Respectively, six lactating dairy cows were fed one of three isoenergetic (5.4+/-0.05 MJ net energy for lactation/kg dry matter; DM) and isonitrogenous (215+/-3.5 g crude protein/kg DM) diets, consisting of ryegrass hay only (33 g fatty acids/kg DM; ALA-rich, no concentrate), maize (straw, whole maize pellets and gluten; 36 g fatty acids/kg DM; LA-rich; 560 g concentrate/kg DM), or barley (straw and grain plus soybean meal; 19 g fatty acids/kg DM; LA-rich; 540 g concentrate/kg DM). The fatty acid composition of feeds and resulting milk fat were determined by gas chromatography. The ALA concentration in milk fat was highest (P<0.001) with the hay-diet, but the proportionate transfer of ALA from diet to milk was lower (P<0.001) than with the maize- or barley-diets. The LA concentration in milk fat was highest with the maize-diet (P<0.05, compared with hay) but relative transfer rate was lower (P=0.01). The transfer rates of ALA and LA were reciprocal to the intake of individual fatty acids which thus contributed more to milk fat composition than did roughage to concentrate proportions. The amount of trans-11 18:1 in milk fat was lowest with the barley-diet (P<0.001) and depended on the sum of ALA and LA consumed. The milk fat concentration of cis-9, trans-11 18:2 (rumenic acid) was more effectively promoted by increasing dietary LA (maize) than ALA (hay). Amounts of 18:0 secreted in milk were four (maize) to seven (hay) times higher than the amounts ingested. This was suggestive of a partial inhibition of biohydrogenation in the maize-diet, possibly caused by the high dietary LA level.

Abstract
Grazing cows could produce milk with a higher proportion of polyunsaturated fatty acids, which is beneficial to human health, compared with non-grazing cows, though grazing alone could compromise milk production. Under oceanic climate conditions, a study involving 15 dairy cows, fed total mixed ration (TMR) ad libitum in combination with different grazing times of 12 h (TMR12), 6 h (TMR06) and zero grazing time (TMR00) with the aim to evaluate different strategies on the fatty acids profile of milk and milk production. No differences were seen between the treatments with respect to milk yield (34·4±6·3 kg/d) or milk protein content (30·4±1·8 g/kg). The milk produced by the TMR12 cows had less total fat (36·2 vs. 38·2 g/kg) and saturated fatty acid (FA, 69·39 vs. 71·44 g/100 g FA) than that produced by the TMR00 cows. The concentration of vaccenic acid in the TMR06 and TMR12 milk was twice that of the TMR00 milk (4·22, 4·09 and 2·26 g/100 g FA respectively). Linear increases in conjugated linoleic (CLA) and linolenic acids were observed with increasing grazing time. Pasture was an important source of FA especially C18:3 for TMR06 and TMR12 cows. Under oceanic climatic conditions, the grazing of dairy cows as a complement to feeding with TMR can improve the FA profile of milk and increase its CLA content.

In this study, we determined the detailed composition of and seasonal variation in Dutch dairy milk. Raw milk samples representative of the complete Dutch milk supply were collected weekly from February 2005 until February 2006. Large seasonal variation exists in the concentrations of the main components and milk fatty acid composition. Milk lactose concentration was rather constant throughout the season. Milk true protein content was somewhat more responsive to season, with the lowest content in June (3.21 g/100 g) and the highest content in December (3.38 g/100 g). Milk fat concentration increased from a minimum of 4.10 g/100 g in June to a maximum of 4.57 g/100 g in January. The largest (up to 2-fold) seasonal changes in the fatty acid composition were found for trans fatty acids, including conjugated linoleic acid. Milk protein composition was rather constant throughout the season. Milk unsaturation indices, which were used as an indication of desaturase activity, were lowest in spring and highest in autumn. Compared with a previous investigation of Dutch dairy milk in 1992, the fatty acid composition of Dutch raw milk has changed considerably, in particular with a higher content of saturated fatty acids in 2005 milk.

Abstract
The objective of this study was to investigate the effect of level of 1) pregrazing herbage mass (HM) and 2) level of daily herbage allowance (DHA) on the performance and fatty acid (FA) composition of milk from grazing dairy cows. Sixty-eight Holstein-Friesian dairy cows were allocated to either a high or low pregrazing HM (1,700 vs. 2,400 kg of DM/ha; >40 mm), and within HM treatment, cows were further allocated to either a high or low DHA (16 vs. 20 kg of DM/d per cow; >40 mm) in a 2 x 2 factorial design. Pregrazing HM did not affect dry matter intake (17.5 +/- 0.75 kg/d), milk production (22.1 +/- 0.99 kg/d), milk composition (milk fat, 3.88 +/- 0.114%; milk protein, 3.28 +/- 0.051%), body weight (525 +/- 16 kg), or body condition score (2.65 +/- 0.064). Increasing DHA increased dry matter intake (+1.5 kg/d) but did not affect any other variable measured. Cows grazing the low HM or high DHA had a higher daily intake of total FA (+0.12 and +0.09 kg/d, respectively, for the low HM and high DHA), alpha-linolenic acid (LNA; +0.08 and +0.05 kg/d, respectively, for the low HM and high DHA), and linoleic acid (+0.01 for both the low HM and high DHA) compared with either the high HM or low DHA. Milk conjugated linoleic acid (cis-9, trans-11 isomer) was not affected by treatment (13.0 +/- 0.77 g/kg of total FA); however, large variation was recorded between individual animals (range from 5.9 to 20.6 g/kg of total FA). Milk concentrations of LNA were higher for animals offered the low HM (5.3 g/kg of total FA), but across treatments, milk concentrations of LNA were low (4.9 +/- 0.33 g/kg of total FA). The present study indicates that changes in HM and DHA do not have a great effect on the milk FA composition of grazing dairy cows. Further enhancement of the beneficial FA content in milk purely from changes in grazing strategy may be difficult when pasture quality is already high.

Abstract
AIMS This study aims to maximize the yield of gamma-linolenic acid by a filamentous fungus, Mucor rouxii, using low cost production by solid-state fermentation. METHODS AND RESULTS We optimized substrate types and culture conditions including inoculum size and temperature. The optimal growth of M. rouxii was found in the cultures inoculated with 5 x 10(5) spores g(-1) substrate. The fungal cells grew well on rice bran and soy bean meal, whereas a lower biomass was found in the cultures grown on polished rice, broken rice and spent malt grain. The GLA content was highly accumulated in rice bran ferment and its maximal content of about 6 g kg(-1) fermented mass was observed in the 5th-day culture grown at 30 degrees C. However, the GLA content in the rice bran ferment was not enhanced by low temperature. CONCLUSIONS The GLA production of M. rouxii could be enhanced by optimizing the agricultural by-product substrates and culture condition. SIGNIFICANCE AND IMPACT OF THE STUDY Low cost GLA production process was achieved, and fermented product containing GLA can be incorporated into feed additives without further oil extraction to alternate the expensive plant oils.

Abstract
Psychrotolerant bacteria and their heat-resistant proteases play a major role in the spoilage of UHT-processed dairy products. Summer and winter raw milk samples were screened for the presence of such bacteria. One hundred and three proteolytic psychrotolerant bacteria were isolated, characterized by API tests, rep-PCR fingerprint analysis and evaluated for heat-resistant protease production. Twenty-nine strains (representing 79% of the complete collection) were further identified by 16S rRNA gene sequencing, rpoB gene sequencing and DNA-DNA hybridizations. A seasonal inter- and intra-species influence on milk spoilage capacity (e.g. growth rate and/or protease production) was demonstrated. Moreover, this polyphasic approach led to the identification of Pseudomonas fragi and Pseudomonas lundensis (representing 53% of all isolates) as predominant producers of heat-resistant proteases in raw milk. The role of Pseudomonas fluorescens, historically reported as important milk spoiler, could not unequivocally be established. The use of more reliable identification techniques and further revision of the taxonomy of P. fluorescens will probably result in a different perspective on its role in the milk spoilage issue.

Abstract
Two identical experimental protocols were followed at 200 and 3,600 m above sea level (a.s.l.) determining the changes of the milk fatty acid (FA) profile of Brown Swiss (BS) and indigenous Peruvian Criollo cows (CR) as a response to diets which were designed to cover the variation in feed quality caused by season. At each site (altitude), six BS and six CR cows, adapted to > 3,500 m a.s.l., were fed three dietary treatments (DS, dry-season forage; RS rainy-season forage; OC, diet optimised to meet the cow's requirements) in a 2 x 2 x 3-factorial arrangement. Intakes of FA and milk yield increased from diet DS (low quality diet) to RS and OC (high quality diet) for both cow types. Milk fat proportions of conjugated linoleic acid (CLA), C18:3 c9,c12,c15, total n-3 and polyunsaturated FA (PUFA) were highest (p < 0.05) with diet OC and higher in the lowlands than in the highlands. Low intakes of diet DS obviously resulted in a ruminal energy deficiency and body lipid mobilisation. The ruminal energy deficiency with diet DS was especially pronounced in BS, apparently reducing biohydrogenation rate and leading to lower proportions of C18:0 and higher proportions of C18:3 c9,c12,c15 in milk fat (p < 0.05). Especially C18:3 c9,c12,c15 intake did not concur with its proportion in milk fat, suggesting a strong dependence on energy status. Milk yield and FA excretion with milk were higher for BS than for CR (p < 0.05) with all three diets although milk fat content was lower (p < 0.05) for BS than CR. Milk fat of BS was richer in CLA and PUFA than milk fat of CR (p < 0.05). The desaturase indices for 18 FA were also higher for BS than CR (p < 0.05), suggesting a slightly higher delta9-desaturase activity for BS, especially with diet DS. Milk fat content was generally higher at the high altitude than at the lowland site (p < 0.05), whereas the FA profile was unexpectedly similar across sites. Various interactions were found among diet type, cow type and altitude (site) indicating that a combination of these factors contributes to the characteristic FA profile of the respective milk.

Abstract
Carcass and meat quality of Thai native cattle, fattened for 2 years on Guinea grass (Panicum maxima) and Guinea grass-legume (Stylosanthes guianensis) pastures, were investigated in twelve 3-years old males. Groups had similar carcass quality except for kidney fat percentage (higher in cattle of the grass-legume group). This group also had a lighter meat (Longissimus dorsi, Infraspinatus) than the grass-only fed cattle. Shear force was generally at the borderline to tender meat, and was unaffected by treatment as were other texture-related properties except muscle fibre diameter. Meat of the grass-legume group was perceived less juicy (P<0.05) but more tender (P<0.1). The meat of the grass-legume-fed cattle also had more intramuscular fat (4.3% vs. 3.4%) and a slightly less favourable n-6:n-3 fatty acid ratio (2.2 vs. 2.0). In conclusion, the mostly weak differences in carcass and meat quality did not clearly favour one of the grazing systems.

Abstract
Four groups of eight New Zealand hybrid rabbits were fattened with ad libitum access to the following pelleted experimental diets: ryegrass meal or alfalfa meal fed either alone or with oats meal in a ratio of 1:1. After 25 weeks they were slaughtered and dissected. Fatty acid (FA) profiles of caecotrophs (re-ingested fermentation products of the caecum), perirenal adipose tissue and intramuscular fat in the Musculus quadriceps were determined. With high proportions of branched-chain FA (BFA) and trans FA, and increased proportions of saturated FA relative to the diets, the caecotroph FA profile showed a clear fingerprint of anaerobe microbial lipid metabolism including biohydrogenation. By contrast, the FA profiles of adipose and lean tissue comprised high proportions of polyunsaturated FA (PUFA), whilst BFA and trans FA occurred in much lower proportions compared to the caecotrophs. Thus, coprophagy did not substantially modify the FA composition of the tissues investigated. Use of forage-only diets, compared to the oats supplemented diets, led to extraordinary high proportions of n-3 PUFA (including 18:3 and long-chain n-3) in the fat of adipose (21.3 vs. 6.7%) and lean tissue (15.4 vs. 5.7%). The forage type diet (grass vs. alfalfa) had smaller effects on the FA profiles. Indications of diet effects on endogenous desaturation, chain elongation and differential distribution of functional FA between the two tissues investigated were found.

Abstract
The effects of supplementation with grass silage and replacement of some corn in the concentrate with soybean meal (SBM) on milk production, and milk fatty acid (FA) profiles were evaluated in a replicated 4 x 4 Latin square study using 16 dairy cows grazing pasture composed of ryegrass, Kentucky bluegrass, and white clover. Each experimental period lasted for 3 wk. The 4 dietary treatments were PC, 20 h of access to grazing pasture, supplemented with 6 kg/d of corn-based concentrate mixture (96% corn; C); PCSB, 20 h of access to grazing pasture, supplemented with 6 kg/d of corn- and SBM-based concentrate mixture (78% corn and 18% SBM; CSB); SC, 7 h of access to grazing pasture during the day and 13 h of ad libitum access to grass silage at night, supplemented with 6 kg/d of C concentrate; and SCSB, 7 h of access to grazing pasture during the day and 13 h of ad libitum access to grass silage at night, supplemented with 6 kg/d of CSB concentrate. The concentrate mixtures were offered twice each day in the milking parlor and were consumed completely. Grass silage supplementation reduced dietary crude protein and concentration of total sugars, and dietary SBM inclusion increased dietary crude protein concentration and decreased dietary starch concentration. Milk yield and energy-corrected milk were increased by SBM supplementation of cows with access to grass silage. Milk protein concentration was lower in cows offered grass silage, regardless of whether SBM was fed. Dietary SBM inclusion tended to increase milk fat concentration. Plasma urea N was reduced by silage feeding and increased by SBM supplementation. Supplementation with grass silage overnight could represent a useful strategy for periods of lower pasture availability. Dietary inclusion of SBM in solely grazing cows had no effects on milk production and composition, exacerbated the inefficient capture of dietary N, and increased diet cost. Grass silage supplementation affected milk FA profiles, increasing both the FA derived from de novo synthesis and those derived from rumen microbial biomass, and decreasing the sum of C18 FA (mostly derived from diet or from mobilization of adipose tissue reserves). Milk fat concentrations of conjugated linoleic acid cis-9, trans-11, vaccenic acid (18:1 trans-11), and linolenic acid (18:3n-3) were unaffected by grass silage supplementation, suggesting that partial replacement of pasture by unwilted grass silage does not compromise the dietary quality of milk fat for humans.

Abstract
Based on the potential benefits to long-term human health there is interest in developing sustainable nutritional strategies for reducing saturated and increasing specific unsaturated fatty acids in ruminant milk. The impact of plant oil supplements to diets containing different forages on caprine milk fatty acid composition was examined in two experiments using twenty-seven Alpine goats in replicated 3 x 3 Latin squares with 28 d experimental periods. Treatments comprised of no oil (control) or 130 g/d of sunflower-seed oil (SO) or linseed oil (LO) supplements added to diets based on grass hay (H; experiment 1) or maize silage (M; experiment 2). Milk fat content was enhanced (P<0.01) on HSO, HLO and MLO compared with the corresponding H or M control diets, resulting in 17, 15 and 14% increases in milk fat secretion, respectively. For both experiments, plant oils decreased (P<0.05) milk 10:0-16:0 and odd- and branched-chain fatty acid content and increased 18:0, trans-Delta(6-9,11-14,16)-18:1 (and their corresponding Delta-9 desaturase products), trans-7, trans-9-conjugated linoleic acid (CLA), trans-9, trans-11-CLA and trans-8, cis-10-CLA concentrations. Alterations in the distribution of cis-18:1, trans-18:1, -18:2 and CLA isomers in milk fat were related to plant oil composition and forage in the diet. In conclusion, plant oils represent an effective strategy for altering the fatty acid composition of caprine milk, with evidence that the basal diet is an important determinant of ruminal unsaturated fatty acid metabolism in the goat.

Abstract
Ruminal administration of a triple indigestible marker system comprised of cobalt EDTA (CoEDTA), ytterbium acetate (YbAc), and chromium-mordanted straw (CrS) decreases product:substrate ratios for Delta9-desaturase in bovine milk fat. This experiment was designed to identify the marker(s) responsible and develop an alternative system for simultaneous determination of nutrient flow in the gastro-intestinal tract and milk fatty acid composition. Five lactating dairy cows were used in a 5 x 5 Latin square with 21-d periods to evaluate the effects of YbAc, CoEDTA, and CrS independently or as part of a triple marker system (TMS), and CrEDTA as an alternative to CoEDTA on milk fat composition. Markers were administered in the rumen over a 7-d interval and samples of milk were collected on d -1, 3, 7, and 11. Both TMS and CoEDTA alone reduced the concentrations of milk fatty acids containing a cis-9 double bond, whereas YbAc, CrS, and CrEDTA had no effect. Reductions in product:substrate ratios for Delta9-desaturase were time dependent and evident within 3 d of administration. Ruminal infusion of CoEDTA for 7 d induced mean decreases in milk cis-9 14:1/14:0, cis-9 16:1/16:0, cis-9 18:1/18:0, and cis-9, trans-11 conjugated linoleic acid/trans-11 18:1 concentration ratios of 47.7, 26.7, 40.3, and 42.6%, respectively. In conclusion, ruminal infusion of CoEDTA alters milk fatty acid composition and appears to inhibit Delta9-desaturase activity in the bovine mammary gland. Results indicate that a TMS based on CrEDTA, YbAc, and indigestible neutral detergent fiber can be used for estimating nutrient flow without altering milk fat composition in lactating cows.
