Abstract
The consumption of insects (entomophagy) is attracting attention for economic, environmental and health reasons. The wide range of edible insect species, rich in protein, fat, minerals, vitamins and fibre, can play an important role in addressing global food insecurity. However, consumer acceptance remains a major barrier to the adoption of insects as a food source in many countries, including Europe. The aim of this study was to determine whether health and environmental concerns, attitudes and intentions towards purchasing edible insects and foods containing edible insects are associated with willingness to consume edible insects and foods containing edible insects among young consumers (Generation Z) in Poland. An empirical study was carried out in 2023, using a questionnaire with an indirect interview method via an online platform. On the basis of surveys conducted among Generation Z in Poland, it can be concluded that health and environmental concerns determine the willingness to consume selected products containing edible insects. At the same time, it should be noted that the more positive the respondents' attitudes towards health and environmental concerns are, the greater their willingness to consume foods containing edible insects is. Attitudes and intentions towards purchasing foods containing edible insects were positively correlated with willingness to purchase and consume this type of food. The results obtained can contribute to efforts to promote the legitimacy of the production of new foods with edible insects in their composition.

Abstract
BACKGROUND Mealworm (Tenebrio molitor) larvae are nutritious edible insects and exhibit the potential to act as protein substitutes in food products. In this study, we added mealworm powder as a substitute to medium-gluten wheat and whole wheat flours to enhance the quality of baked products. We compared the pasting, farinograph and extensograph properties of medium-gluten wheat and whole wheat flours replaced with different concentrations of mealworm powder to explore the interactions between flour and mealworm powder. RESULTS Mealworm powder changed the pasting characteristics of medium-gluten wheat and whole wheat flours. After adding 20% mealworm powder, the pasting temperature of the medium-gluten wheat flour remained unchanged (approximately 89.9 °C), while the pasting temperature of whole wheat flour increased from 88.83 to 90.27 °C. Water absorption of medium-gluten and whole wheat flours exhibited a decreasing trend with increasing mealworm powder concentrations. Mealworm powder substitution resulted in stronger medium-gluten dough but exerted an opposite effect on the farinograph properties of whole wheat dough. Mealworm powder substitution decreased the stretching resistance of medium-gluten dough but increased that of whole wheat dough. With an increase in the concentration of mealworm powder, the specific volume of medium-gluten wheat steamed bread significantly increased from 1.69 mL g-1 (M0) to 3.31 mL g-1 (M10) whereas that of whole wheat steamed bread increased from 1.64 mL g-1 (M0) to 2.34 mL g-1 (M15). The addition of mealworm powder increased the protein, dietary fiber, lipid and sodium contents of steamed bread samples. CONCLUSIONS This study provides a reference for the rheological properties of medium-gluten wheat and whole wheat flours substituted with mealworm powder and supports the addition of insects as a protein source in food products. © 2023 Society of Chemical Industry.

Abstract
Every year, over 30% of food production is wasted. However, promoting a sustainable food supply not only fosters economic stability in agriculture and the food industry, but also safeguards precious natural resources and ensures universal food access and safety. Therefore, the aim of the study was to determine how specific growth conditions (utilizing by-products: sprouted potatoes (1), wheat bran (2), brewers' spent grain (3), and a control sample with agar-agar gels (4)) affect the larvae of yellow mealworms (Tenebrio molitor). This includes their nutritional and energy value, consumer sensory profiling, and technological parameters of processing. The results have indicated that larvae reared on the substrate with wheat bran had the highest energy value, at 708.26 kcal. In larvae, the difference in protein content was not significant when changing the rearing conditions, and ranged between 48.54 and 59.18%. The larvae contained a significant content of fibers, with the highest amount detected in samples with brewers' spent grain. The data indicate that glucose and arabinose were distinctive to larvae. Our study has also revealed a statistical difference in ash content between larvae and the substrate, with higher levels of nitrogen, copper, and zinc detected in the larvae compared to the substrate. We have found that the salt was naturally occurring in the substrates, with the brewers' spent grain sample having the highest amount, at 1.83%. However, the control sample yielded the highest ratings, achieving a score of 7.30 for general smell acceptability. These findings emphasize the potential of utilizing various industrial and farm by-products as substrates for mealworms, transforming them into a sustainable and nutrient-rich food source. This contribution adds to the broader discourse on nutritional value and resource efficiency.

Abstract
Insect consumption is a traditional practice in many countries. Currently, the urgent need for ensuring food sustainability and the high pressure from degrading environment are urging food scientists to rethink the possibility of introducing edible insects as a promising food type. However, due to the lack of the standardized legislative rules and the adequate scientific data that demonstrate the safety of edible insects, many countries still consider it a grey area to introduce edible insects into food supply chains. In this review, we comprehensively reviewed the legal situation, consumer willingness, acceptance, and the knowledge on edible insect harvesting, processing as well as their safety concerns. We found that, despite the great advantage of introducing edible insects in food supply chains, the legal situation and consumer acceptance for edible insects are still unsatisfactory and vary considerably in different countries, which mostly depend on geographical locations and cultural backgrounds involving psychological, social, religious, and anthropological factors. Besides, the safety concern of edible insect consumption is still a major issue hurdling the promotion of edible insects, which is particularly concerning for countries with no practice in consuming insects. Fortunately, the situation is improving. So far, some commercial insect products like energy bars, burgers, and snack foods have emerged in the market. Furthermore, the European Union has also recently issued a specific item for regulating new foods, which is believed to establish an authorized procedure to promote insect-based foods and should be an important step for marketizing edible insects in the near future.

Abstract
House flies, Musca domestica, L., (Diptera: Muscidae) are well-known pests at animal facilities; however, they can be used for manure biodegradation. Utilizing house flies to process animal manure offers a means to recycle nutrients and reduce contaminants (e.g., pathogens and heavy metals), while also producing multiple revenue streams (e.g., protein for feed, fat for biodiesel, frass as a soil amendment). This study determined house fly larval performance on a larger scale (kilogram of wastes; thousands of larvae; single feeding) as a follow-up to a previous experiment performed at a bench-top scale (g of wastes; hundreds of larvae; incremental feeding). Four thousand larvae were fed 1 kg of swine, dairy, or poultry manure, or a control (Gainesville diet: 50% wheat bran, 30% alfalfa meal, and 20% corn meal). Peak larval weight occurred 4 days after inoculation and no significant difference in development time to first pupariation occurred across diets. However, percent survivorship to pupariation varied, with the highest occurring in Gainesville (74%), swine (73%), and poultry (67%) manure, whereas 50% survived when fed dairy manure. The highest pupal weight was found for those fed Gainesville (27 mg), and similar weights were found for those fed swine (21 mg), dairy (24 mg), and poultry (25 mg) manure. Although using house flies to manage manure has received little consideration in Western countries, other regions have this practice in place. Results may provide insight on differences between small- and large-scale studies, which is valuable for industrialization of this species for waste management and creating a more circular economy.

Abstract
Edible insects could be a promising answer to the question of how to feed a growing human population with a healthier and more sustainable source of protein. Despite the increasing interest in entomophagy in food science and industry, however, consumer acceptance for insect-based food products remains low in Western countries. This systematic review provides a comprehensive and timely overview of studies relevant for researchers, practitioners and other stakeholders involved in the marketing of these products. Reviewing data from 45 selected studies, we focus on marketing measures tested for their influence on Western consumers' preference, acceptance, willingness to try, eat and/or buy insect-based food products. Organising the findings according to the 4Ps of the marketing mix framework, five main ways of enhancing the appeal and acceptance of insect-based food products are discussed: 1) developing product attributes that align with the specific preferences of target consumers; 2) a more subtle labelling of the presence of insects; 3) using value-added or competition-based pricing strategies; 4) making products consistently available in the marketplace; and 5) promoting products more effectively through advertising, tasting activities, and social influence. The heterogeneity we find among the studies, whether due to differences in the products researched, in sampling countries, or in data-collection methods, indicates key research gaps for future studies to address.

Abstract
The selected chemical composition (dry matter, ash, total protein, and crude fat) of the integumentary muscles of Dendrobaena veneta were determined, plus the dry matter (DM) percentage content of 17 amino acids and the profile (%) of fatty acids. Results were compared with a more fully studied earthworm, Eisenia fetida. In addition, the composition of exogenous amino acids was compared to the WHO standard for pork, beef, and chicken eggs. Both earthworm species were grown on the same kitchen waste, and protein composition was analyzed using the same methods. Studies indicated that the muscle of D. veneta was characterized by a high level of protein (76.82% DM). A similar content of exogenous amino acids was observed in the protein of both earthworms, but for phenylalanine and isoleucine, slightly higher levels were recorded for E. fetida. More histidine, lysine, threonine, isoleucine, and arginine were found in earthworms compared with chicken egg white. Fatty acids play an essential role in balancing human or animal feed and their content determines the dietary and nutritional value of the food. Both earthworm species contained the appropriate content of saturated and unsaturated acids. In D. veneta, a higher content of arachidonic acid was found, and in E. fetida, lauric, tridecanoic, and palmitic acids were present. Future issues of food security may force us to seriously consider earthworm protein for indirect or even direct human consumption.

Abstract
Edible insects recently gained attention as a potential contributor to the future sustainability of the food system. Insect farming has indeed shown to have environmental and nutritional benefits, but edible insects are still an unusual foodstuff in Europe. The purpose of this article is to analyze the barriers and drivers of insect consumption in Europe and to identify the most promising strategies to convince consumers to include insect-based products in their diets. To answer these research questions, a systematic review of the literature on the consumer's point of view about insects as food was performed. The results show that the main barrier to the development of this market is related to the psychological rejection of consumers induced by disgust toward entomophagy. To break down these barriers, it is essential to increase the general knowledge about the environmental and nutritional benefits of entomophagy. Furthermore, the limited size of the edible insect market appears to be a structural barrier. Expanding the reach of the market and consumer familiarity with edible insects will increase their acceptability. Finally, some product-related strategies are also highlighted. Furthermore, this article brings new knowledge about the effectiveness of the environmental motive in convincing consumers to try edible insects.

Effect of Mealworm Powder Substitution on the Properties of High-Gluten Wheat Dough and Bread Based on Different Baking Methods. Foods 2022; 11:foods11244057. Abstract
Mealworms (Tenebrio molitor) are protein-rich edible insects that have been regarded as novel food ingredients. In this study, high-gluten wheat flour was formulated with dried mealworm powder at various levels (0%, 5%, 10%, 15%, and 20%) to study its influence on the pasting, farinograph, and extensograph properties and microstructure of the dough. A subsequent decrease in the pasting parameters was observed due to starch dilution. The water absorption, dough development time, and dough stability time decreased gradually from 71.9% to 68.67%, 13.6 min to 10.43 min, and 14.1 min to 5.33 min, respectively, with the increase in the substitution of mealworm powder from 0% to 20%. The farinograph characteristics corresponded to a weak gluten network formed through the dilution of gluten by the replacement of wheat flour with a non-gluten ingredient. The stretch ratio of the high-gluten dough increased gradually from 4.37 (M0) to 6.33 (M15). The increased stretching resistance and extensibility of the dough with 5% and 10% mealworm powder indicated that mealworm powder can act as a plasticizer in the gluten network, which might contribute to the decreased strength and increased elasticity and flexibility of the dough network. The bread made with three different baking methods showed similar increases in specific volume and decreased hardness up to the 10% substitution level, owing to the increased elasticity and flexibility of the dough. The GB/T 35869-2018 Rapid-baking method, GB/T 14611-2008 Straight dough method, and automatic bread maker method exhibited the highest specific volumes of 3.70 mL/g, 3.79 mL/g, and 4.14 mL/g when the wheat flour was substituted with 10% mealworm powder. However, 15% and 20% mealworm powder substitution markedly reduced the bread quality owing to the dilution effect and mealworm powder phase separation. These results provide a perspective on the relationship between the rheological properties of mealworm powder-substituted high-gluten dough and application suggestions for insect food development in the food industry.

Abstract
Although extensive research has been conducted on promoting pro-environmental behaviors among consumers, little is known about whether and how negative anthropomorphic message framing (NAMF) and nostalgia affect pro-environmental behavior. To provide a framework for explaining pro-environmental behavior, this study integrates protection motivation theory, the stimulus-organism-response model, and message framing. To create the model of the influences on pro-environmental behavior, NAMF was employed as the external stimulus; the sense of environmental responsibility, environmental empathy, perceived threat, and perceived vulnerability as the psychological and cognitive response factors; pro-environmental behavior as the final decision of consumers; and nostalgia as the moderating variable. An online questionnaire was distributed and 380 usable questionnaires were collected using convenience sampling and analyzed using two complementary approaches: partial least squares structural equation modeling (PLS-SEM) and necessary condition analysis (NCA). PLS-SEM results showed that pro-environmental behavior was significantly affected by NAMF (β = 0.313, t-value = 5.583), environmental responsibility (β = 0.207, t-value = 3.994), and perceived threats (β = 0.252, t-value = 4.889). Meanwhile, an increase in nostalgia increased the effect of NAMF and environmental responsibility on pro-environmental behavior. The NCA results revealed that NAMF (d = 0.108, p < 0.001) and perceived threat (d = 0.209, p < 0.001) were key factors of pro-environmental behavior. In addition, for high level of pro-environmental behavior (>80%), NAMF (12.1%) and perceived threat (39.6%) are required. Finally, we offer several suggestions based on the results of our empirical research. For example, marketing and service offerings should be tailored to the needs of masses with different nostalgic tendencies to enhance their pro-environmental behaviors.

Effect of Partial Substitution of Flour with Mealworm (Tenebrio molitor L.) Powder on Dough and Biscuit Properties. Foods 2022; 11:foods11142156. Abstract
Mealworm (Tenebrio molitor L.) is a type of edible insect rich in protein that has become popular as a protein-alternative ingredient in flour-based products to improve the nutritional properties of baking products. The mealworm powder substitution affected the pasting, farinograph, extensograph properties of wheat flour and the texture, nutritional, and sensory properties of the resulting soda biscuit. The pasting parameters (peak viscosity, trough viscosity, breakdown viscosity, final viscosity, and setback viscosity) and the water absorption decreased with the increased mealworm powder substitution level, which was ascribed to the dilution effect of mealworm powder. The farinograph parameters remained similar up to 15% substitution level. The extensograph results showed that mealworm powder substitution decreased the elastic properties of wheat dough as indicated by the consistently decreased extensibility, stretching energy, and stretching resistance, resulting in a significantly decreased baking expansion ratio of the soda biscuit. The protein, lipid, and dietary fiber content of the biscuits increased accordingly with the increased mealworm powder substitution level. The protein content of the soda biscuit was gradually increased from 9.13/100 g for the control (M0) to 16.0/100 g for that supplemented with 20% mealworm powder (M20), accompanied with the significantly increased essential amino acid content. Meanwhile, the fat and dietary fiber content of M20 exhibited 20.5 and 21.7% increase compared to those of M0. The score of the sensory attributes showed no significant difference up to 15% substitution level. The results demonstrated the 15% mealworm powder substitution level would not significantly affect the farinograph property, microstructure of wheat dough, and sensory acceptability.

Abstract
The literature highlights the importance of insect consumption for nutritional health habits. The increasingly clear legislation, the developed studies demonstrating their nutritional value, and the prospect of overcoming some barriers that have prevented consumers from consuming insects are among the reasons supporting the advantages of consuming insects. The leading determinants of consumption are culture and individual and social beliefs, accessibility to a particular nutritional resource, and individual behavior. The barriers to neophobia were analyzed by evaluating factors of influence and their respective relationship and meaning through quantitative research to measure the significance of the results. To develop a conceptual model that aims to change eating behavior and recognize structural aspects that can be barriers in the process of changing eating behavior, a methodological framework was developed. The methodological framework aimed to identify the characteristics that can be associated with the profile of opinion leaders, and it included a questionnaire which was applied to 213 young people. Moreover, the structural equation model was the statistical technique used. Given the projected population growth and increasing life expectancy, nutrition is a challenge in terms of health, but also in economic, social, and environmental respects. Aiming for sustainability, it is crucial to identify nutritional alternatives within the circular economy.
