Protein blend extrusion: Crafting meat analogues with varied textural structures and characteristics

With an increasing emphasis on health and environmental consciousness, there is a growing inclination toward plant protein-based meat substitutes as viable alternatives to animal meat. In the pursuit of creating diverse and functional plant protein-based substitutes, innovative plant proteins have been introduced in conjunction with soy protein isolate (SPI), encompassing pea protein isolate (PPI), rice bran protein (RBP), fava bean protein isolate (FPI), and spirulina protein isolate (SPPI). Notably, SPI-WG extrudates and SPI-PPI extrudates exhibited superior fiber structures (fiber degrees were 1.72 and 1.88, respectively), with coarse fibers in SPI-WG extrudates and fine, dense fibers in SPI-PPI extrudates. The addition of RBP, FPI and SPPI had minimal effect on fiber structure. Fresh SPI-FPI displayed the slowest rate of water loss, losing about 7.11% of their total weight in 5 h. Different plant proteins can be selected for the preparation of plant protein-based meat substitutes according to practical needs.

Image-based assessment and machine learning-enabled prediction of printability of polysaccharides-based food ink for 3D printing

Despite the growing demand and interest in 3D printing for food manufacturing, predicting printability of food-grade materials based on biopolymer composition and rheological properties is a significant challenge. This study developed two image-based printability assessment metrics: printed filaments' width and roughness and used these metrics to evaluate the printability of hydrogel-based food inks using response surface methodology (RSM) with regression analysis and machine learning. Rheological and compositional properties of food grade inks formulated using low-methoxyl pectin (LMP) and cellulose nanocrystals (CNC) with different ionic crosslinking densities were used as predictors of printability. RSM and linear regression showed good predictability of rheological properties based on formulation parameters but could not predict the printability metrics. For a machine learning based prediction model, the printability metrics were binarized with pre-specified thresholds and random forest classifiers were trained to predict the filament width and roughness labels, as well as the overall printability of the inks using formulation and rheological parameters. Without including formulation parameters, the models trained on rheological measurements alone were able to achieve high prediction accuracy: 82% for the width and roughness labels and 88% for the overall printability label, demonstrating the potential to predict printability of the polysaccharide inks developed in this study and to possibly generalize the models to food inks with different compositions.

Physical properties of UHT light cream: impact of the high-pressure homogenization and addition of hydrocolloids

The beneficial effects of a healthy diet on the quality of life have prompted the food industry to develop low-fat variants, but fat content directly affects the physicochemical and sensory properties of food products. The utilization of high-pressure homogenization (HP) and incorporation of hydrocolloids have been suggested as strategies to improve the physical stability and rheological properties of light cream. Thus, this study aims to analyze the associated effect of high-pressure homogenization (80 MPa) and three different hydrocolloids: microcrystalline cellulose, locust bean gum and xanthan gum, on emulsion stability and rheological properties of ultra-high-temperature (UHT) light cream (ULC) with a 15% w/w fat content. The stability of ULC was determined by the ζ potential of oil droplets and emulsion stability percentage. Rheological characterization was based on flow behavior tests and dynamic oscillatory measurements, which were carried out in a rheometer. Results showed that the high-pressure homogenization process did not influence the emulsion stability of the treatments. Moreover, the hydrocolloids added to systems present weak interactions with milk proteins since all ULC showed macroscopical phase separation. The samples presented the same rheological behavior and were classified as pseudoplastic fluids (n < 1). ULC treated at 80 MPa was significantly (P ≤ 0.05) more consistent than the treatments at 20 MPa. All ULC showed a predominant elastic behavior (G' > G″), and a remarkable increase in both G' and G″ at 80 MPa. The results presented in this study highlight the potential of HP for altering some rheological characteristics of UHT light cream, for example, to increase its consistency. These results are important for the dairy industry and ingredient suppliers, in the standardization of UHT light cream and/or to develop low-fat products.

Rheological and Microstructural Properties of Xanthan Gum-Based Coating Solutions Enriched with Phenolic Mango (Mangifera indica) Peel Extracts

Mango (Mangifera indica) is a tropical fruit highly desired for its vitamin content and flavor, but its peel is considered a byproduct or waste. However, mango peel contains some bioactive compounds that improve food quality matrix for the development of edible coatings or films. The effect of phenolic mango (Mangifera indica) peel extracts on the physicochemical, rheological, and microstructural properties of xanthan gum-based coating solutions was evaluated. The obtained solutions were stable during the study period and presented a non-Newtonian fluid type shear-thinning behavior described by Ostwald-de Waele. Moreover, viscoelastic properties revealed that the elastic modulus was higher than the viscous modulus, showing a characteristic of weak gels. The addition of extracts did not alter the shear rate and viscoelastic character of the solutions, preserving the pseudoplasticity and weak gel behavior of xanthan gum associated with spreadability and adherence of coatings; it modified the gel structure as a function of temperature. Furthermore, the coating solutions of xanthan gum and phenolic mango peel extracts are an alternative to develop complex food systems such as edible coatings, edible films, or delivery systems.

Continuous Manufacturing of a Polymer Stabilized Emulsion Monitored with Process Analytical Technology

Moving from batch to continuous manufacturing (CM) requires implementation of process analytical technology (PAT), as it is crucial to monitor and control these processes. CM of semi-solids has been demonstrated but implementation of a broader range of PAT tools with in- or on-line process interfacing at the end of the CM line has not been demonstrated. The goal of this work was to continuously manufacture creams and to investigate whether in- and on-line measurement of viscosity, changes in the concentration of active pharmaceutical ingredient (API), and pH could be used to support optimization of a model cream product. Additionally, the torque of the mixers was assessed for determination of the physical properties of the cream. Two Raman probes with different probe optics were compared for characterization of the API concentration. The API concentration, amount of neutralizer, and mixing speed of the CM line were systematically varied. Both the PhAT probe with a larger sampling volume and immersion Raman probe with a smaller sampling volume could detect the step changes in the API concentration. The torque from the mixer was compared with the viscosity measurements, but the torque signal could not be correlated with the viscosity due to the dynamic nature of the polymer conformation and the time-dependency of this property. Adjustment of pH of the cream could be monitored with the current installation. The investigated PAT tools could be implemented into a continuous line and, further, be used to support the optimization of a model cream composition and related process parameters.

Rheological and textural studies of arrowroot (Maranta arundinacea) starch-sucrose-whey protein concentrate gels

The aim of this work was to study the effect of adding whey protein concentrate and sucrose on the rheological and textural properties of the gels obtained from arrowroot (Maranta arundinacea) starches. It was found that the starches evaluated presented low levels of protein, ash, lipids and acidity. Arrowroot starch of the common and round root varieties presented 17.80 and 35.96% of amylose content, respectively. The swelling power of the starch from common variety was higher than that of the round root but the solubility index was lower. Dynamic rheological measurement showed strong gel behavior and formulated gels with 4% sucrose and 1% protein were more elastic than the other formulations. Gels formulated with starch of the round root presented a higher gelatinization temperature than gels formulated with the common. The firmness of gels was directly proportional to the sucrose level, while the increase in the protein content led to reduction in the same.
