Abstract
This review focused on mass spectrometry imaging (MSI), a powerful tool in food analysis, covering its ion source schemes and procedures and their applications in food quality, safety, and nutrition to provide detailed insights into these aspects. The review presented a detailed introduction to both commonly used and emerging ionization sources, including nanoparticle laser desorption/ionization (NPs-LDI), air flow-assisted ionization (AFAI), desorption ionization with through-hole alumina membrane (DIUTHAME), plasma-assisted laser desorption ionization (PALDI), and low-temperature plasma (LTP). In the MSI process, particular emphasis was placed on quantitative MSI (QMSI) and super-resolution algorithms. These two aspects synergistically enhanced MSI's analytical capabilities: QMSI enabled accurate relative and absolute quantification, providing reliable data for composition analysis, while super-resolution algorithms improved molecular spatial imaging resolution, facilitating biomarker and trace substance detection. MSI outperformed conventional methods in comprehensively exploring food functional factors, biomarker discovery, and monitoring processing/storage effects by discerning molecular species and their spatial distributions. However, challenges such as immature techniques, complex data processing, non-standardized instruments, and high costs existed. Future trends in instrument enhancement, multispectral integration, and data analysis improvement were expected to deepen our understanding of food chemistry and safety, highlighting MSI's revolutionary potential in food analysis and research.

Abstract
INTRODUCTION Differentiating whether plant products are natural or artificial is of great importance in many practical fields, including forensic science, food safety, cosmetics, and fast-moving consumer goods. Information about the topographic distribution of compounds is an important criterion for answering this question. However, of equal importance is the likelihood that topographic spatial distribution information may provide important and valuable information for molecular mechanism study. METHODS In this study, we took mescaline, a substance with hallucinogenic properties in cacti of the species Trichocereus pachanoi and Lophophora williamsii, as an example to characterize the spatial distribution of mescaline in plants and flowers by liquid chromatograph-mass spectrometry-matrix-assisted laser desorption/ionization mass spectrometry imaging at the macroscopic, tissue structure, and even cellular levels. RESULTS According to our results, the distribution of mescaline in natural plant was concentrated on the active meristems, epidermal tissues, and protruding parts of Trichocereus pachanoi and Lophophora williamsii, while artificially spiked Lophophora diffusa products showed no such difference in their topographic spatial distribution. DISCUSSION This difference in distribution pattern allowed us to distinguish between flowers that could synthesize mescaline on their own and those that had been artificially spiked with mescaline. The interesting topographic spatial distribution results, such as the overlap of the mescaline distribution map and micrographs of the vascular bundles, were consistent with the synthesis and transport theory of mescaline, indicating the potential for applying matrix-assisted laser desorption/ionization mass spectrometry imaging in botanical research.

Abstract
The detection of chemical species and understanding their respective localisations in tissues have important implications in plant science. The conventional methods for imaging spatial localisation of chemical species are often restricted by the number of species that can be identified and is mostly done in a targeted manner. Mass spectrometry imaging combines the ability of traditional mass spectrometry to detect numerous chemical species in a sample with their spatial localisation information by analysing the specimen in a 2D manner. This article details the popular mass spectrometry imaging methodologies which are widely pursued along with their respective sample preparation and the data analysis methods that are commonly used. We also review the advancements through the years in the usage of the technique for the spatial profiling of endogenous metabolites, detection of xenobiotic agrochemicals and disease detection in plants. As an actively pursued area of research, we also address the hurdles in the analysis of plant tissues, the future scopes and an integrated approach to analyse samples combining different mass spectrometry imaging methods to obtain the most information from a sample of interest.

Abstract
Classic metabolomic methods have proven to be very useful to study functional biology and variation in the chemical composition of different tissues. However, they do not provide any information in terms of spatial localization within fine structures. Matrix-assisted laser desorption ionization mass spectrometry imaging (MALDI MSI) does and reaches at best a spatial resolution of 0.25 μm depending on the laser setup, making it a very powerful tool to analyze the local complexity of biological samples at the cellular level. Here, we intend to give an overview of the diversity of the molecules and localizations analyzed using this method as well as to update on the latest adaptations made to circumvent the complexity of samples. MALDI MSI has been widely used in medical sciences and is now developing in research areas as diverse as entomology, microbiology, plant biology, and plant–microbe interactions, the rhizobia symbiosis being the most exhaustively described so far. Those are the fields of interest on which we will focus to demonstrate MALDI MSI strengths in characterizing the spatial distributions of metabolites, lipids, and peptides in relation to biological questions.

Spatial metabolomics
using mass spectrometry imaging (MSI) is a
powerful tool to map hundreds to thousands of metabolites in biological
systems. One major challenge in MSI is the annotation of m/z values, which is substantially complicated by
background ions introduced throughout the chemicals and equipment
used during experimental procedures. Among many factors, the formation
of adducts with sodium or potassium ions, or in case of matrix-assisted
laser desorption ionization (MALDI)-MSI, the presence of abundant
matrix clusters strongly increases total m/z peak counts. Currently, there is a limitation to identify
the chemistry of the many unknown peaks to interpret their biological
function. We took advantage of the co-localization of adducts with
their parent ions and the accuracy of high mass resolution to estimate
adduct abundance in 20 datasets from different vendors of mass spectrometers.
Metabolites ranging from lipids to amines and amino acids form matrix
adducts with the commonly used 2,5-dihydroxybenzoic acid (DHB) matrix
like [M + (DHB-H2O) + H]+ and [M + DHB + Na]+. Current data analyses neglect those matrix adducts and overestimate
total metabolite numbers, thereby expanding the number of unidentified
peaks. Our study demonstrates that MALDI-MSI data are strongly influenced
by adduct formation across different sample types and vendor platforms
and reveals a major influence of so far unrecognized metabolite–matrix
adducts on total peak counts (up to one third). We developed a software
package, mass2adduct, for the community
for an automated putative assignment and quantification of metabolite–matrix
adducts enabling users to ultimately focus on the biologically relevant
portion of the MSI data.

Abstract
Consuming food is essential for survival, maintaining health, and triggering positive emotions like pleasure. One of the factors that drive us toward such behavior is the presence of various compounds in foods. There are many methods to analyze these molecules in foods; however, it is difficult to analyze the spatial distribution of these compounds using conventional techniques, such as mass spectrometry combined with high-performance liquid chromatography or gas chromatography. Mass spectrometry imaging (MSI) is a two-dimensional ionization technology that enables detection of compounds in tissue sections without extraction, purification, separation, or labeling. There are many methods for ionization of analytes, including secondary ion mass spectrometry, matrix-assisted laser desorption/ionization, and desorption electrospray ionization. Such MSI technologies can provide spatial information on the location of a specific analyte in food. The number of studies utilizing MSI technologies in food science has been increasing in the past decade. This review provides an overview of some of the recent applications of MSI in food science and related fields. In the future, MSI will become one of the most promising technologies for visualizing the distribution of food components and for identifying food-related factors by their molecular weights to improve quality, quality assurance, food safety, nutritional analysis, and to locate administered food factors.

Abstract
Root alkaloids remain highly unexplored in ectomycorrhizae development studies. By employing ultrahigh mass resolution mass spectrometry imaging techniques, we showed substantial relocation and transformation of piperidine alkaloids in pine root tips in response to Suillus mycorrhization. We imaged, in the time frame of ectomycorrhizae formation, a completely different alkaloid profile in Pinus strobus, where basidiospores of Suillus spraguei induce morphogenesis of symbiotic tissues, than in Pinus taeda, where such interaction fails to induce morphogenesis. On the basis of spatial colocalization studies, we proposed some alternative routes for biosynthesis of these alkaloids that supplement existing literature data.

Abstract
Rauvolfia tetraphylla L. (family Apocynaceae), often referred to as the wild snakeroot plant, is an important medicinal plant and produces a number of indole alkaloids in its seeds and roots. The plant is often used as a substitute for Ravuolfia serpentine (L.) Benth. ex Kurz known commonly as the Indian snakeroot plant or sarphagandha in the preparation of Ayurvedic formulations for a range of diseases including hypertension. In this study, we examine the spatial localization of the various indole alkaloids in developing fruits and plants of R. tetraphylla using desorption electrospray ionization mass spectrometry imaging (DESI-MSI). A semi-quantitative analysis of the various indole alkaloids was performed using UPLC-ESI/MS. DESI-MS images showed that the distribution of ajmalcine, yohimbine, demethyl serpentine and mitoridine are largely localized in the fruit coat while that for ajmaline is restricted to mesocarp of the fruit. At a whole plant level, the ESI-MS intensities of many of the ions were highest in the roots and lesser in the shoot region. Within the root tissue, except sarpagine and ajmalcine, all other indole alkaloids occurred in the epidermal and cortex tissues. In leaves, only serpentine, ajmalcine, reserpiline and yohimbine were present. Serpentine was restricted to the petiolar region of leaves. Principal component analysis based on the presence of the indole alkaloids, clearly separated the four tissues (stem, leaves, root and fruits) into distinct clusters. In summary, the DESI-MSI results indicated a clear tissue localization of the various indole alkaloids, in fruits, leaves and roots of R. tetraphylla. While it is not clear of how such localization is attained, we discuss the possible pathways of indole alkaloid biosynthesis and translocation during fruit and seedling development in R. tetraphylla. We also briefly discuss the functional significance of the spatial patterns in distribution of metabolites.

Abstract
This review summarises developments that have been published in the period from mid-2017 to mid-2018 on the analysis of various matrices for mycotoxins. Analytical methods to determine aflatoxins, Alternaria toxins, ergot alkaloids, fumonisins, ochratoxins, patulin, trichothecenes, and zearalenone are covered in individual sections. Advances in sampling strategies are discussed in a dedicated section, as are methods used to analyse botanicals and spices, and newly developed comprehensive liquid chromatographic-mass spectrometric based multi-mycotoxin methods. This critical review aims to briefly discuss the most important recent developments and trends in mycotoxin determination as well as to address limitations of the presented methodologies.
