Abstract
White-fleshed potatoes have health concerns due to high glycemic index. Native and unexplored pigmented potato landraces may offer adequate and future smart alternatives with a balanced nutritional profile. Twenty-five pigmented potato clonal accessions across the eastern sub-Himalayan plateau of India were collected, purified and categorized into 'Badami' (UBAC) and 'Deshi' (UDAC) types. Evaluation of different nutritional attributes revealed that pigmented UBAC accessions are boosted with, high total dietary fibre, and total anthocyanin content and have remarkably low reducing sugar and glycemic index. Non-targeted LC-MS analysis identified caffeoyl and coumaroyl derivatives of delphinidin and petunidin glycosides, as major classes of anthocyanin compounds in pigmented potato accessions. HPLC-mediated quantification revealed high contents of delphinidin in the majority of accessions along with the selective presence of other anthocyanins. Selected accession was found to have polyphenolic compounds like gallic acid, vanillic acid, cinnamic acid and quercetin. The genetic cluster analysis of clonal accessions divided these genotypes into five major clusters. An ISSR repeat motif (AGG)6 was tightly linked with the total anthocyanin content of the accessions in Single Marker Analysis. Altogether, these native pigmented potato accessions offer a nutritious and healthy alternative to the conventional white-fleshed potato genotypes.

Abstract
Walnuts (Juglans regia L.) are an important source of ellagitannins. They have been linked to positive effects on many pathologies, including cardiovascular disorders, neurodegenerative syndromes, and cancer. The limited bioavailability of ellagitannins prevents them from reaching significant circulatory levels, despite their antioxidant, anti-inflammatory, and chemopreventive properties. Urolithins are ellagitannin gut microbiota-derived metabolites. They have better intestinal absorption and may be responsible for the biological activities of ellagitannins. Recent evidence showed that walnut ellagitannins and their metabolites, urolithins, could have positive outcomes for human health. This study aims to synthesize the current literature on the antioxidant activity and mechanistic pathways involved in the therapeutic potential of walnut ellagitannins and their metabolites. In the eligible selected studies (n = 31), glansreginin A, pedunculagin, and casuarictin were the most prevalent ellagitannins in walnuts. A total of 15 urolithins, their glucuronides, and sulfate metabolites have been identified in urine, blood, feces, breast milk, and prostate tissue in analyzed samples. Urolithins A and B were associated with antioxidant, anti-inflammatory, cardioprotective, neuroprotective, anticarcinogenic, and anti-aging activities, both in preclinical and clinical studies. Despite the promising results, further well-designed studies are necessary to fully elucidate the mechanisms and confirm the therapeutic potential of these compounds in human health.

Abstract
Flavonoid compounds have a variety of biological activities and play an essential role in preventing the occurrence of metabolic diseases. However, many structurally similar flavonoids are present in foods and are usually in low concentrations, which increases the difficulty of their isolation and identification. Therefore, developing and optimizing effective extraction and detection methods for extracting flavonoids from food is essential. In this review, we review the structure, classification, and chemical properties of flavonoids. The research progress on the extraction and detection of flavonoids in foods in recent years is comprehensively summarized, as is the application of mathematical models in optimizing experimental conditions. The results provide a theoretical basis and technical support for detecting and analyzing high-purity flavonoids in foods.

Abstract
The aim of this work was to provide an overview of available information on the antibacterial and antifungal properties of Epilobium angustifolium extracts. A literature search of Scopus, PubMed/Medline, and Google Scholar for peer-reviewed articles published between January 2000 and June 2023 was undertaken. A total of 23 studies were eligible for inclusion in this review. Significant variation of antimicrobial activity depending on the tested species and strains, type of extract solvent, or plant organs utilized for the extract preparation was found. E. angustifolium extracts were active against both Gram-positive and Gram-negative bacteria and showed antimycotic effects against the fungi of Microsporum canis and Trichophyton tonsurans and the dermatophytes Arthroderma spp. Greater susceptibility of Gram-positive than Gram-negative bacteria to fireweed extracts was found. A strong antibacterial effect was recorded for Staphylococcus aureus, Bacillus cereus, Micrococcus luteus, Escherichia coli, Klebsiella pneumoniae, Pseudomonas aeruginosa, and Acinetobacter baumannii including multi-drug resistant strains. E. angustifolium extract might find practical application as an antimicrobial in wound healing, components of cosmetic products for human and animals, or as food preservatives.

Abstract
Microbial infections affect both the human population and animals. The appearance of more and more microbial strains resistant to classical treatments led to the need to develop new treatments. Allium plants are known for their antimicrobial properties due to their high content of thiosulfinates, especially allicin, polyphenols or flavonoids. The hydroalcoholic extracts of six Allium species obtained by cold percolation were analyzed regarding their phytochemical compounds and antimicrobial activity. Among the six extracts, Allium sativum L. and Allium ursinum L. have similar contents of thiosulfinates (approx. 300 μg allicin equivalents/g), and the contents of polyphenols and flavonoids were different between the tested species. The HPLC-DAD method was used to detail the phytochemical composition of species rich in thiosulfinates. A. sativum is richer in allicin (280 μg/g) than A. ursinum (130 μg/g). The antimicrobial activity of A. sativum and A. ursinum extracts against Escherichia coli, Staphylococcus aureus, Candida albicans and Candida parapsilosis can be correlated with the presence of large amounts of thiosulfinates. Both extracts have shown results against Candida species (inhibition zones of 20-35 mm) and against Gram-positive bacteria, Staphylococcus aureus (inhibition zones of 15-25 mm). These results demonstrate the antimicrobial effect of the extracts and suggest their use as an adjuvant treatment for microbial infections.

Abstract
Background Acalypha rhomboidea, Asystacia gangetica, Crassocephalum sacrobasis, Crotalaria ochroleuca, Heterosis rotundifolia, Hibiscus cannabinus, Hibiscus sp., Hibiscus surratensis, Ipomoea eriocarpa, Maerua angolensis, Senna obtusifolia and Vigna membranacea are among the common wild edible plants in the Acholi sub-region, northern Uganda. This study evaluated the phytochemical constituents and antioxidant potential of the plants. Methods Fresh leaves collected from each plant species were air-dried under shade. The phytochemical contents of the ethanol and petroleum ether extracts were determined using standard protocols. The antioxidant content of the methanolic extracts was assessed by 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay. Results Preliminary phytochemical analyses indicated the presence of tannins, reducing compounds, alkaloids, flavonoids, flavons aglycones, flavanosides, anthracenosides, anthocyanosides, volatile oils, coumarins, steroid glycosides, sterols and triterpenes. However, the extracts did not contain any emodols and saponins. The results of the quantitative phytochemical analysis showed that the contents of different phytochemicals detected varied significantly (p < 0.05) among the selected plants. The amount of tannins in mg/g (gallic acid equivalent) of dry weight varied from 3.90 ± 0.16 in C. ochroleuca to 10.41 ± 0.78 in I. eriocarpa, total flavonoids in RE, mg/g dry matter from 4.07 ± 0.11 in I. eriocarpa to 14.94 ± 0.08 in S. obtusifolia. Total alkaloids in mg/100 g ranged from 1.59 ± 0.30 in I. eriocarpa to 6.37 ± 0.24 in Hibiscus sp. Total phenolic content in GAE, mg/g dry matter ranged from 13.39 ± 0.26 in A. rhomboidea to 64.25 ± 0.54 in I. eriocarpa. The in vitro antioxidant assays revealed substantial free radical scavenging activity in all the plants. Antioxidant activity expressed as IC50 (ppm) ranged from 13.39 for A. rhomboidea to 64.84 for I. eriocarpa, compared to 12.82 for ascorbic acid standard. The total phenolic compounds and total tannins had significant and positive correlations with DPPH free radical scavenging activity. Conclusion The findings of this study provide evidence that the species are good natural sources of phytochemicals and antioxidants, whose regular consumption could provide human health benefits by protecting against oxidative stress related diseases. Further research is needed on the structural characterization of the phytochemicals, profiling the plant extracts with high antioxidant activity and determining the antimicrobial activities.

Abstract
Maya nut (Brosimum alicastrum) is a novel food with high nutritional value. This research aimed to evaluate the nutritional and antioxidant properties of Maya nut flour (MNF) made from seeds dried by different methods (sun-dried and using hot air at 45 °C and 60 °C) to explore its incorporation into cookies and evaluate its nutritional and functional properties. The naturally sun-dried flour (NF) had the highest content of ash (3.64 ± 0.11 g/100 g), protein (6.35 ± 0.44 g/100 g), crude fiber (6.75 ± 0.29 g/100 g), and functional properties (water and oil absorption). The color of the flour was affected by the different drying methods. While the drying methods influenced the total polyphenolic content (TPC) and antioxidant activity (AA) of MNF, they did not affect the morphology of the native starch or generated important molecular-structural changes. The substitution of 60% of wheat flour with NF in the cookie’s formula increased the protein and fiber content, whereas 20% substitution increased its AA. MNF is a source of protein, dietary fiber, micronutrients, and functional compounds that can enrich cookie formulations.

Abstract
The present study aims to identify and quantify the phenolic compounds of Azadirachta indica leaf extract using HPLC-MS and to evaluate the antioxidant, antibacterial (against different Gram-positive and negative bacteria) and in vitro anti-proliferative activities of this extract (against breast, human liver and cervix adenocarcinoma-derived cells). The application of this extract as a natural antioxidant for food preservation was also tested on oil-in-water food emulsions for the first time in the present work in order to determine the use of Azadirachta indica leaves as a natural additive to preserve the food against lipid oxidation and rancidity. The results obtained revealed that 50%-aqueous ethanol leaf extract showed the best extraction yield (25.14%), which was characterized by a high content in phenolic compounds and strong antioxidant activity. Moreover, this leaf extract inhibited the growth of the bacterial strains tested (Staphylococcus aureus, Escherichia coli, Salmonella paratyphi and Micrococcus luteus) and showed better anti-proliferative activity against breast and cervix adenocarcinoma-derived cells than human liver cancer cells after 48 h of treatment. Additionally, Azadirachta indica leaf extract showed almost similar effects as gallic acid solutions (0.25% and 0.5%) in preserving the oxidation of oil-in-water food emulsions and prevented the formation of secondary oxidation products (malondialdehyde) as well. The results obtained suggested that extracts of Azadirachta indica leaves are a potential source of antioxidant and antibacterial compounds and pointed to the potential of these natural extracts as therapeutic agents.

Abstract
The free, esterified and bound forms of 37 phenolic compounds (including hydroxybenzoic acid, hydroxycinnamic acids, flavanols, flavonols and flavones) from walnut kernel (Juglans regia L.) were investigated in this study. Results showed that the majority of walnut phenolics were presented in the free form (51.1%-68.1%), followed by bound (21.0%-38.0%) and esterified forms (9.7%-18.7%). Ellagic acid, gallic acid, ferulic acid, sinapic acid and caffeic acid were widely distributed in three forms. Differently, jeuglone, kaempferol, quercetin-7-o-β-d-glucoside and dihydroquercetin were only found in free phenolics. Among the three forms, free phenolics had the highest radical scavenging activity (IC50: DPPH, 15.5 µg/ml; ABTS, 13.6 µg/ml). The correlation coefficients between the antioxidant activities of phenolics and their corresponding contents were 0.82-0.92. More soluble phenolics (free and esterified forms) could be extracted by acetone, while methanol was better at extracting insoluble bound phenolics.

Abstract
Pistachio nuts (Pistacia vera) have been consumed by past and present-day civilizations because of their organoleptic characteristics and potential health benefits. However, they can also produce moderate to severe IgE-mediated reactions in allergic individuals. In this work, we report the isolation of the first recombinant antibodies against pistachio nut, produced without animal immunization, to be used in immunoassays for detection of allergenic pistachio in food products. Several phage display biopanning strategies were evaluated to screen the human-based domain antibody library (dAb) in search for pistachio-specific probes. The clone producing the PVF4 phage-dAb was finally selected, and it does not cross-react with cashew despite the phylogenetic proximity with pistachio. Western blot and matrix-assisted laser desorption/ionization tandem mass spectrometry (MALDI-TOF/TOF) analysis demonstrated that this clone recognised a unique band of ∼22 kDa related to the basic subunit of pistachio 11S globulin (allergen Pis v 2). The PVF4 phage-dAb allowed detection of pistachio in a food matrix with a limit of detection (LOD) of 3983 mg kg−1 in an indirect phage-enzyme-linked immunosorbent assay (ELISA). The ELISA method developed was used to assess applicability of the PVF4 phage-dAb for analysis of 77 commercial food products.

Abstract
Leptospermum petersonii is a native Australian medicinal and aromatic plant. This study was designed to evaluate the influence of solvents and ultrasound-assisted extraction (UAE) parameters including time, temperature, and sonication power on the yield of phenolic compounds and antioxidant capacity from lemon scented tea tree leaves. Extraction efficiency of the optimal UAE conditions were compared with that of shaking water bath technique. The results show that extraction solvents significantly affect extraction yield of phenolic compounds and antioxidant properties, and 50% acetone in water was found to be the most suitable solvent. The UAE optimal conditions were 60 min, 50 °C and sonication power of 200 W. Under these optimal conditions the yields of total phenolics, flavonoids, proanthocyanidins were 98.91 ± 1.20 (mg GAE/g DW), 76.12 ± 0.79 (mg CE/g DW), 117.71 ± 2.18 (mg CE/g DW), respectively. Antioxidant properties from four assays including FRAP, CUPRAC, ABTS and DPPH were 581.29 ± 14.23, 5534.87 ± 19.56, 1636.18 ± 4.11, and 889.29 ± 20.68 (mM TE/g DW) respectively. The UAE extraction technique was found to be more efficient in extraction of total phenolics and antioxidant capacity in comparison with conventional shaking water bath extraction. This study also observed a strong correlation between phenolic compounds and antioxidant capacities. All three phenolic compound groups (TPC, TFC, and Pro.A) were contributed to both free radical scavenging and ion reducing properties in the lemon scented tea tree leaves extract. However, the order of the phenolic groups was TPC > Pro.A > TFC for antioxidant properties.
