Abstract
The addition of marine macroalgae to animal feed has garnered interest due to the demonstrated benefits of gut health in many livestock species. Most macroalgae have a higher mineral content than terrestrial vegetables, making them an attractive, sustainable source of minerals. However, some macroalgae contain elevated concentrations of iodine and arsenic, which may be transferred to the meat of livestock fed with macroalgae. This study evaluated the mineral profile of rabbit serum, muscle, liver, and kidney of rabbits fed diets supplemented with different marine macroalgae, with the goal of improving post-weaning gut health and reducing reliance on antibiotics. We found increased deposition of iodine in muscle, liver, and kidney due to macroalgae supplementation, which is particularly promising for regions with low iodine endemicity. Higher, though relatively low arsenic concentrations, compared to those in other animal meats and food sources, were also detected in the muscle, liver, and kidney of macroalgae-fed rabbits. The absence of apparent interactions with other micronutrients, particularly selenium, suggests that the inclusion of macroalgae in rabbit diets will not affect the overall mineral content. Enhanced bioavailability of elements such as phosphorus and iron may provide additional benefits, potentially reducing the need for mineral supplementation.

Abstract
The aim of the present review was to assess whether rabbit meat production can help to improve food security in Ukraine and whether it can make a meaningful contribution to the national economy. Rabbit meat is a nutrient-rich and affordable food with a lower environmental impact than red meat from cattle or sheep. Rabbit meat is considered healthy, as it is lower in fat, cholesterol and sodium than other types of meat, and rich in protein. In addition, rabbit meat proteins can serve as a source of bioactive peptides with the angiotensin converting enzyme (ACE) inhibition properties. The health-promoting properties of rabbit meat and role of associated by-products in providing nutritious and safe food for consumers, and in reducing waste in the meat sector, should be promoted. In Ukraine, rabbit meat products are already recommended as part of a healthy diet for children, pregnant women and the elderly, and the market could be broadened by introducing more rabbit-based products for the whole population. Rabbit production in Ukraine is a promising area of economic activity and with a broader market this segment could increase further and become a significant part of the economy. However, the rabbit farming sector in Ukraine needs comprehensive improvement to address existing issues, including the introduction of sustainable production methods in accordance with European animal welfare and meat quality standards.

Abstract
Copper (Cu) is listed as one of the main heavy metal pollutants, which poses potential health risks to humans. Excessive intake of Cu has shown toxic effects on the organs of many animals, and the liver is one of the most important organs to metabolize it. In this study, pigs, the mammal with similar metabolic characteristics to humans, were selected to assess the effects of long-term exposure to Cu on mitochondria-mediated apoptosis, which are of great significance for studying the toxicity of Cu to humans. Pigs were fed a diet with different contents of Cu (10, 125, and 250 mg/kg) for 80 days. Samples of blood and liver tissue were collected on days 40 and 80. Experimental results demonstrated that the accumulation of Cu in the liver was increased in a dose-dependent and time-dependent manner. Meanwhile, the curve of pig's body weight showed that a 125 mg/kg Cu diet promoted the growth of pigs during the first 40 days and then inhibited it from 40 to 80 days, while the 250 mg/kg Cu diet inhibited the growth of pigs during 80 days of feeding. Additionally, the genes and protein expression levels of Caspase-3, p53, Bax, Bak1, Bid, Bad, CytC, and Drp1 in the treatment group were higher than that in the control group, while Bcl-2, Bcl-xL, Opa1, Mfn1, and Mfn2 were decreased. In conclusion, these results indicated that long-term excessive intake of Cu could inhibit the growth of pigs and induced mitochondria-mediated apoptosis by breaking the mitochondrial dynamic balance. Synopsis: Long-term exposure to high doses of Cu could lead to mitochondrial dysfunction by breaking the mitochondrial dynamic balance, which ultimately induced mitochondria-mediated apoptosis in the liver of pigs. This might be closely related to the growth inhibition and liver damage in pigs.

Abstract
Copper is often used as a growth promoter, at the same time copper is one of the most important essential trace elements for fur animals, especially Rex rabbits. However, too much copper added to the diet may harm animal health, and copper excreted in feces can pollute the environment. In this study, 3-month-old Rex rabbits were randomly divided into four groups and fed a basal diet containing 0, 30, 60, or 120 mg/kg Cu for 5 weeks. The diet supplemented with 30 mg/kg Cu significantly increased (P < 0.05) the average daily feed intake (ADFI) and the average daily gain (ADG) and also the activity of serum Cu-Zn (zinc) superoxide dismutase and the digestibility of ether extract. Supplemental Cu up to 120 mg/kg did not significantly adversely affect the Zn metabolism of growing Rex rabbits. Overall, the data in this study indicate that 30 mg/kg is the optimal level of Cu supplementation in the diet of growing Rex rabbits. The results will provide a reference to improve the breeding of Rex rabbits and possibly other animals. In follow-up studies, the amount of copper in the diet should be reduced as much as possible from the baseline of 30 mg/kg copper.

Abstract
The objective was to assess that potential health risk from Cd, Cu, and Pb, through the consumption of hunted red-legged partridge and wild rabbit meat, with special focus on the population of hunters and their relatives. Mineral content was analyzed by atomic absorption methods (F-AAS for Cu and GF-AAS for Cd and Pb) after microwave digestion of lyophilized samples. The average concentrations of these elements were 0.008 and 0.01 mg/kg for Cd; 1.41 and 1.63 mg/kg for Cu and 0.98 and 1.28 mg/kg for Pb in wild rabbit and red-legged partridge meat respectively. The dietary, risk assessment was performed by assuming two intake scenarios based on the obtained results of the survey on game meat consumption and the current maximum recommended intakes of Cd, Cu, and Pb, and then, the hazard quotients (THQ and TTHQ) were calculated. The data show that exposure to these metals from eating red-legged partridge and wild rabbit meat from a hunting provenance is relatively low and generally greater in the hunter population. The risk assessment revealed that moderate or low consumption of meat of these species does not offer a significant public health risk. Moreover, hazard quotients values for these metals of red-legged partridge and rabbit meat consumption in hunters and nonhunters are below 1. However, a high Pb content in the meat of these species and a high consumption may pose a greater health risk to hunters.

Abstract
The present review evaluates and compares the effects achieved after application of rabbit-derived bacteriocin-producing strain Enterococcus faecium CCM7420 with probiotic properties and its bacteriocin Ent7420. The experiments included varying duration of application (14 and 21 days), form of application (fresh culture and lyophilized form), combination with herbal extract and application of the partially purified enterocin-Ent7420, produced by this strain. Results from these studies showed that E. faecium CCM7420 strain was able to colonize the gastrointestinal tract (caecum) of rabbits (in the range < 1.0-6.7 log cycle, respectively 3.66 log cycle on average), to change the composition of intestinal microbiota (increased lactic acid bacteria, reduced counts of coliforms, clostridia and staphylococci), to modulate the immunity (significant increase of phagocytic activity), morphometry (enlargement absorption surface in jejunum, higher villi height:crypt depth (VH:CD) ratio), physiological (serum biochemistry; altered total proteins, glucose and triglycerides levels) and parasitological (Eimeria sp. oocysts) parameters and to improve weight gains (in the range 4.8-22.0%, respectively 11.2% on average), feed conversion ratio and meat quality (physicochemical traits and mineral content).

Abstract
Higher rabbit meat consumption can be ensured by increasing of its quality due to its improved nutritional properties. The effect of enterocin M (EntM) and sage on growth performance, physico-chemical properties, fatty acid (FA), amino acid (AA), and mineral concentrations of rabbit meat was evaluated. Sixty-four rabbits (M91 meatline, both sexes) were divided into three experimental: E (EntM), S (sage), E + S (EntM + sage) groups and control group (C). The additives were administrated in drinking water during 21 days. Lower pH (E, S: P < 0.05; E + S: P < 0.001) and decrease in water content were noted in all experimental groups compared with controls (C). Higher values of lightness (L*), yellowness (b*), and redness (a*; except group E) were measured. The sage administration increased the fat and protein contents (P < 0.05), the meat energy value (S vs. C: P < 0.01; S vs. E and E + S: P < 0.05), the concentrations of arachidonic (P < 0.05), eicosapentaeonic (P < 0.05), and oleic acids (P < 0.01), magnesium (P < 0.05), and potassium (P < 0.01) content. The additives did not influence the rabbit meat AA composition. The sage diet inclusion could improve the quality of rabbit meat due to its higher protein, fat, and energy contents and enhance the PUFA and mineral content of rabbit meat. Moreover, the effect of EntM on meat color parameters, FA and AA composition, has not been tested in rabbits previously.

Abstract
Consumption of rabbit meat traces back to the ancient civilizations that prospered around the Mediterranean. Due to their small size, rabbits have mostly been included in traditional meals for direct consumption, with little historical urgency to develop preservation methods. Therefore, rabbit-based dishes are widespread throughout Europe, but few processed products are found. Despite its longstanding culinary value, an overall decline in the consumption of rabbit meat is discernible. As for all meat, this is related to a complex assemblage of contemporary anxieties about health, animal welfare, and the environment. Also, specific categorial dynamics are at play because rabbits have superimposed roles (e.g., livestock, game, vermin, and pets). For instance, their aspect of cuteness seems to interfere with their acceptability as a food. To counter the declining consumption of this valuable meat, reassuring discourses are required to point out its historical merit in health and culture ("story meat"). Also, its distinctive sensorial traits, nutritional profile, and technological properties should be valorized.

Abstract
Since animal diets have a strong influence on meat quality, a comparative study on farmed brown hares and domestic rabbits offered the same diet was undertaken to assess the physical and chemical properties of their meat. Ten brown hares and ten domestic rabbits were used to characterize the traits of meat from the foreleg, hind leg, and Longissimus lumborum muscles. The study indicated higher protein content in hare meat than in rabbit meat. The meat of hares had a concentration of heme iron that was more than twice as high as that of rabbits. Lower SFA and MUFA content and higher PUFA content contributed to the superior PUFA/SFA ratio in hares. An unfavorable n-6/n-3 ratio but superior atherogenic and thrombogenic indices was observed for hare meat. The higher TBARS of hares indicated a higher susceptibility of hare meat to lipid oxidation. Hare meat was also characterized by a higher water holding capacity and higher color indices (redness and chroma).

Abstract
The effect of freeze-dried bacteriocinogenic and probiotic strain Enterococcus faecium CCM7420 on the mineral content and carcass quality of rabbits was investigated. Significant increase in iron content in the carcass samples was recorded during the probiotic treatment, whereas the concentrations of calcium and copper decreased in the experimental groups compared with the Control. The treatment did not have a negative influence on the pH, colour, water-holding capacity, protein and fat contents or energetic value of the rabbit carcass. Inferring from the higher iron content we conclude that the diet supplementation with bacteriocinogenic and probiotic strain E. faecium CCM7420 may enhance the mineral quality of rabbit meat.

Abstract
BACKGROUND The relationship between meat intake and breast cancer has been inconsistent . OBJECTIVE The aim of this work was to evaluate the association between meat intake and breast cancer, in women. DESIGN A case-control study with 250 consecutive, newly diagnosed breast-cancer-female-patients (56 ± 12 years) and 250, one-to-one age-matched controls was conducted. A standardized, validated questionnaire assessing various socio-demographic, clinical, lifestyle and dietary characteristics was applied through face-to-face interviews. Data on consumption of red, white, processed and grilled meat were also recorded. Overall dietary habits were assessed through the level of adherence to the Mediterranean diet using the MedDietScore (theoretical range 0-55). RESULTS Processed meat intake, even for 1-2 times/week,was associated with a 2.7-fold (OR= 2.65, 95% CI 1.36, 5.14) (p= 0.004) higher likelihood of having breast cancer, while daily intake increased the likelihood by a 2.8-fold (OR = 2.81, 95% CI 1.13, 6.96) (p = 0.026), after various adjustments made. Red, white and grilled meat intake was not significantly associated with the outcome when the same adjustments were made. CONCLUSIONS This study suggested that only daily processed-meat intake was consistently associated with increased odds of breast-cancer.
