Evaluation of consumer safety of Polish honey-the content of Cd and Pb in multifloral, monofloral and honeydew honeys

A probabilistic approach to compare the risk associated with heavy metals and bromine in honey from Dominican Republic, Mexico, Mozambique and Spain

This study aims to analyse the risk to consumers given the presence of heavy metals and bromine in honey from different countries. A probabilistic approach was applied to assess carcinogenic risk. Concerning exposure, Al in Spain (3.3E-04 mg/kgBw/day), B in Dominican Republic and Mexico (2E-04 mg/kgBw/day in both cases) and Fe in Mexico and Mozambique had the highest values (5E-05 and 4.8E-05 mg/kgBw/day). In risk characterisation, the values were less than 1 for hazard index (HI), meaning that the consumption of honey represents a low level of concern for non-genotoxic effects. A combination of margin of exposure and probability of exceedance results that exposure to Pb pose no threat. The probability of suffering cancer for Br, Cd, Ni and Pb was lower than 1.0E-06 and, therefore, considered safe. However, the risk at the 95th percentile of Br in Dominican Republic was 1.18E-04 in adults and 2.45E-04 in children, exceeding 1.0E-04, and therefore, considered intolerable. Finally, the sensitivity analysis indicated that the most influential factor in the HI was the consumption in adults and the concentration of Ni in children, whereas for cancer risk, were the concentrations of Ni, Cd, Br and Pb, in both cases.

Relationships Linking the Element, Bioactive, Hydroxymethylfurfural, Color of Kars Honeys: a Chemometric Approach

Honey is a natural food substance considered among functional foods due to its positive effect on human health. Quality of honey is significantly influenced by environmental conditions and botanical origin. This study aimed to determine the element content in honey from Kars, Turkey, as well as the bioactive compounds and certain physicochemical and biochemical properties such as hydroxymethylfurfural (HMF) and color in a chemometric approach. In this study, a total of 41 local honey samples were analyzed. The levels of elements Al, As, B, Cd, Cr, Cu, Fe, Mg, Zn, and Pb were determined by inductively coupled plasma optical emission spectrophotometer (ICP-OES). The mean concentrations of the elements in the samples were identified as 3.09, 0.64, 59.07, 0.02, 0.14, 0.17, 1.76, 9.32, 0.78, and 0.33 µg/g for Al, As, B, Cd, Cr, Cu, Fe, Mg, Zn, and Pb, respectively. The mean bioactive compounds of the honey samples were determined as phenolic content (19.74 mg GAE/100 g), flavonoid content (4.47 mg CE/100 mg), and DPPH (49.08% inhibition). The HMF levels of all samples conformed to the honey standards of the Codex Alimentarius and Turkish Food Codex. HMF was not negatively correlated with the other color parameters except for the a* (redness or greenness) value. This study showed that clustering analysis (CA) and principal component analysis (PCA) are useful for distinguishing the originality of honey samples by using element content, bioactive properties, HMF, and color and were useful in defining the Kars honey type.

Analysis of Mercury Concentration in Honey from the Point of View of Human Body Exposure

Honey is a highly valued product due to its nutritional value, pro-health and healing properties. Pollutants from the environment penetrate into nectar, honeydew, pollen and next into bee products and can cause human exposure after ingestion. Mercury (Hg) is a toxic metal to living organisms. This is why it was important to determine the level of Hg in consumed honey.The aim of this manuscript is to analyse mercury concentration in honeys collected on the territory of Poland. A total of 108 samples of honey purchased in regional apiaries and hypermarkets were tested. The concentration of Hg was analysed in various types of honey (multifloral, honeydew, linden, goldenrod, acacia, buckwheat, rapeseed, sunflower, heather, dandelion, phacelia). The values of the Estimated Daily Intake (EDI), Estimated Weekly Intake (EWI) and % Provisional Tolerable Weekly Intake (% PTWI) were calculated. This allowed estimating the amount of Hg taken during consumption of the tested honeys.The concentration of Hg ranged from 0.01 to 1.71 µg/kg and was 0.43 µg/kg on average. A higher concentration of Hg, which was statistically significant, was recorded in honeydew honey, then in compound honeys. Honeys produced from one raw material had the lowest concentration of Hg. There were no significant differences in the concentration of Hg depending on the origin of honey. The calculations have shown that consumption of a portion (19 g) of the tested honey per week is safe for both adults and children according to the applicable standards.

The impact of packaging design on the perceived quality of honey by Brazilian consumers

This study aimed to construct and validate a scale to evaluate the honey consumer perception. Furthermore, the impact of packaging design on honey's perceived quality and purchase intention was evaluated. Brazilian consumers (n = 343) answered the 21 self-descriptive statements of the scale using 7-point Likert scales. Furthermore, six different packages were presented, and the consumer perception (health, origin, safety, and taste) and purchase intention were evaluated using 5-point and 7-point Likert scales, respectively. Exploratory and confirmatory factor analyses and PLS path modeling were employed. The validated scale had 13 self-descriptive statements (indicators with factor loading higher than 0.4) and showed discriminant (heterotrait-monotrait ratio values < 0.85) and convergent validity (average variance extracted > 0.4) and adequate reliability (composite reliability > 0.70). The consumers associated honey with health properties and a safe product. Furthermore, they preferred honey purchased directly from producers due to its perceived quality (natural and pure). Honey packaged in glass jars with or without dipper was perceived as healthier, tastier, higher quality, and from trusted origin. Furthermore, glass jars were considered more practical and sustainable packages.

Review of harmful chemical pollutants of environmental origin in honey and bee products

Honey is a natural food with many pro-health properties, which comprises a wide variety of valuable ingredients. It can also be the source of chemical contaminants of environmental origin, including POPs that can contribute to adverse health effects to human. Monitoring the degree of pollution of honey/bee products with hazardous chemicals is important from a nutraceutical point of view. In the present work, overview of recent literature data on chemical pollutants in honey/bee products originating from the environment was performed. Their MLs, MRLs and EDI were discussed. It can be concluded that huge amount of research concerned on the presence of TMs and pesticides in honey. Most of the studies have shown that honey/bee products sampled from urban and industrialized areas were more contaminated than these sampled from ecological and rural locations. More pollutants were usually detected in propolis and bee pollen than in honey. Based on their research and regulations, authors stated, that most of the toxic pollutants of environmental origin in honey/bee products are at levels that do not pose a threat to the health of the potential consumer. The greatest concern relates to pesticides and TMs, because in some research MLs in individual samples were highly exceeded.
