Abstract
Adulteration of high-value agricultural products is a critical issue worldwide for consumers and industries. Discrimination of the geographical origin can verify food authenticity by reducing risk and detecting adulteration. Between agricultural products, beans are a very important crop cultivated worldwide that provides food rich in iron and vitamins, especially for people in third-world countries. The aim of this study is the construction of a map of the locally characteristic isotopic fingerprint of giant beans, "Fasolia Gigantes-Elefantes PGI", a Protected Geographical Indication product cultivated in the region of Kastoria and Prespes, Western Macedonia, Greece, with the ultimate goal of the discrimination of beans from the two areas. In total, 160 samples were collected from different fields in the Prespes region and 120 samples from Kastoria during each cultivation period (2020-2021 and 2021-2022). The light element (C, N, and S) isotope ratios were measured using Isotope Ratio Mass Spectrometry (IRMS), and the results obtained were analyzed using chemometric techniques, including a one-way ANOVA and Binomial logistic regression. The mean values from the one-way ANOVA were δ15NAIR = 1.875‱, δ13CV-PDB = -25.483‱, and δ34SV-CDT = 4.779‱ for Kastoria and δ15NAIR = 1.654‱, δ13CV-PDB = -25.928‱, and δ34SV-CDT = -0.174‱ for Prespes, and showed that stable isotope ratios of C and S were statistically different for the areas studied while the Binomial logistic regression analysis that followed correctly classified more than 78% of the samples.

Abstract
This study aims to investigate the effects of canning variables (cooking time, storage time, volume of vinegar, salt and sugar) on the mineral composition of canned cowpea (Vigna unguiculata (L.) Walp) and which conditions provide optimised preservation of the mineral content of the grains. Different formulations of canned cowpeas were produced following two levels factorial experimental design using five variables. A set of 11 different formulations were evaluated using the desirability function with essential minerals (Ca, Cu, Fe, Mn, Mg, P and Zn) as the response. The optimal multi-response conditions for higher mineral retention were: 360 days of storage at 30 ± 5 °C (ST2), 30 ml of vinegar, 9.0 g of NaCl, 18 min of cooking time, and 9.0 g, 19.5 g or 30 g of sugar (the effect of the sugar content at the evaluated range was not significant at 95% confidence level).

Abstract
(1) Background: In order to study the effects of different electric cookers on the nutritional components of millet porridge, five different electric cookers (No. 1–5) were selected to cook millet porridge, then sensory and nutritional components in millet porridge, millet soup, and millet grains were analyzed; (2) Methods: Using principal component and cluster analysis, a variety of nutritional components were comprehensively compared; (3) Results: The results showed that among the different cooked samples, the content of amylose and reducing sugars was the highest in the samples cooked by electric cooker No. 3. The electric cooker No. 4 samples had the highest sensory evaluation score, crude fat, and protein content. The contents of ash, fatty acids, bound amino acids, and minerals were the highest in the electric cooker No. 5 samples. The sensory evaluation score and content of crude fat, ash, reducing sugars, direct starch, and Cu were higher in millet grains than in millet soup or porridge. The content of fatty acids, protein, amino acid, Zn, Fe, Mg, Mn, and Ca was highest in millet soup. Different electric cookers produced millet porridge with varying nutritional levels; (4) Conclusions: This study provides a reference for the further development of new electric cookers.

Abstract
In many acidic soils, high concentrations of toxic Al3+ hamper plant growth by restricting root growth which in turn restricts water and nutrient absorption. Previous research showed variation among chickpea (Cicer arietinum L.) and wild Cicer species in root elongation at 15 μM Al or more, but effects on nutrient absorption have not been examined. The variation in nutrient uptake of two chickpea varieties (PBA HatTrick and PBA Striker) and two wild Cicer species (C. echinospermum (C. echi) and C. reticulatum (C. reti)) was determined in low pH (4.2) nutrient solution with increasing Al concentrations (0, 7.5, 15, 30 μM Al). While C. echi, PBA HatTrick and PBA Striker had thicker roots and more lateral roots compared to C. reti, C. reti had greater aluminium tolerance index (AlTI) at 15 and 30 μM Al. The C. echi had higher uptake of root and shoot Al (7.5, 15 and 30 μM Al), P and S (15 and 30 μM Al) while its uptake was marginally lower for Mg, Ca (all Al treatments) and K (15 and 30 μM Al). By contrast, C. reti contained higher shoot Ca concentration at 15 and 30 μM Al and it had lower root Al uptake. Manganese uptake by C. reti roots and shoots were high enough to induce moderate Mn toxicity at 0 and 7.5 μM Al. Therefore, in response to Al toxicity, C. reti maintained greater AlTI and restricted Al uptake while increasing Ca uptake.

Abstract
A new method for the decomposition of soybean based edible products (soy extract, textured soy protein, transgenic soybeans, and whole soy flour) was developed to essential (Co, Cr, Cu, Fe, Mn, Ni, Se, V, and Zn) and non-essential (As, Ba, Cd, Pb, and Sr) trace elements determination by ICP OES and ICP-MS respectively. Effects related to the concentration of HNO3 (2.1-14.5 mol L(-1)) and the use of hydrogen peroxide on the efficiency of decomposition was evaluated based on the residual carbon content (RCC). It was demonstrated that 2.1 mol L(-1) HNO3 plus 1.0 mL H2O2 was suitable for an efficient digestion, since RCC was lower than 18% and the agreement with certified values and spike recoveries were higher than 90% for all analytes. The concentrations of analytes in the samples (minimum-maximum in mgkg(-1)) were: The concentrations of analytes in the samples (minimum-maximum in mgkg(-1)) were: As (<0.007-0.040), Ba (0.064-10.6), Cd (<0.006-0.028), Co (0.012-102), Cr (0.56-5.88), Cu (6.53-13.9), Fe (24.9-126), Mn (16.4-35.2), Ni (0.74-4.78), Se (<2.90-25), Sr (2.48-20.1), Pb (<0.029-0.11), V (<0.027-20), and Zn (30.1-47.3). Soy-based foods investigated in this study presented variable composition in terms of essential and potentially toxic elements, which can be attributed to different methods of processing.
