Abstract
Background Food plays a dual role in promoting human health and environmental sustainability. Yet, current food systems jeopardize both. Food waste poses a major global challenge due to its significant economic, social, and environmental impacts. Healthcare facilities generate the largest amounts of food waste compared to other forms of catering provision. Food waste correlates with environmental unsustainability and diminished patient satisfaction, compounding the prevalent challenge of hospital malnutrition and contributing to suboptimal patient outcomes. Materials and methods In a three-year interventional study (2020-2022) at a psychiatric tertiary care center, we assessed and mitigated food waste using evidence-based measures. We conducted systematic food wastage audits over three years (2020-2022) in May and June, each lasting four weeks. Costs were analyzed comprehensively, covering food, staff, infrastructure, and disposal. Environmental impact was assessed using Umweltbelastungspunkte (UBP) and CO2e/kg emissions, alongside water usage (H2O - l/kg). Results Economic losses due to food wastage were substantial, primarily from untouched plates and partially consumed dinners, prompting meal planning adjustments. Despite a >3% increase in meals served, both food waste mass and costs decreased by nearly 6%. Environmental impact indicators showed a reduction >20%. Vegetables, salad, and fruits constituted a significant portion of waste. Overproduction minimally contributed to waste, validating portion control efficacy. Conclusion Our study highlights significant economic and environmental losses due to hospital food waste, emphasizing the importance of resource efficiency. The strategies outlined offer promising avenues for enhanced efficiency. The decrease in food waste observed over the three-year period underscores the potential for improvement.

Abstract
This paper aims to conduct a bibliometric mapping and systematic review of the food retail industry's resilience strategy in the context of COVID-19. Specifically, we aim to identify relevant research gaps in the industry during the pre-, during, and post-pandemic periods and highlight the differences between B2B and B2C sectors. We analyzed articles in the Scopus database from 2019 to 2022 using the PRISMA method for article selection, resulting in a total of 69 articles. We employed a VOS viewer for bibliometric mapping. Our analysis revealed that most studies focused on the impact of COVID-19, with only a few examining the pre- and post-pandemic periods critically. In the B2C context, we identified two major topics: changes in purchasing and consumption behavior, and food waste and safety. In the B2B sector, the two most recurrent subjects were retailers' strategies and supply chain management. This study provides valuable insights for policymakers by exploring industry trends and for scholars by highlighting future research agendas based on the identified topics.

Abstract
Strict measures have curbed the spread of COVID-19, but waste generation and movement limitations have had an unintended impact on the environment over the past 3 years (2020-2022). Many studies have summarized the observed and potential environmental impacts associated with COVID-19, however, only a few have quantified and compared the effects of these unintended environmental impacts; moreover, whether COVID-19 policy stringency had the same effects on the main environmental topic (i.e., CO2 emissions) across the 3 years remains unclear. To answer these questions, we conducted a systematic review of the recent literature and analyzed the main findings. We found that the positive environmental effects of COVID-19 have received more attention than the negative ones (50.6 % versus 35.7 %), especially in emissions reduction (34 % of total literature). Medical waste (14.5 %) received the highest attention among the negative impacts. Although global emission reduction, especially in terms of CO2, has received significant attention, the positive impacts were temporary and only detected in 2020. Strict COVID-19 policies had a more profound and significant effect on CO2 emissions in the aviation sector than in the power and industry sectors. For example, compared with 2019, international aviation related CO2 emissions dropped by 59 %, 49 %, and 25 % in 2020, 2021, and 2022, respectively, while industry related ones dropped by only 3.16 % in 2020. According to our developed evaluation matrix, medical wastes and their associated effects, including the persistent pollution caused by antibiotic resistance genes, heavy metals and microplastics, are the main challenges post the pandemic, especially in China and India, which may counteract the temporary environmental benefits of COVID-19. Overall, the presented results demonstrate methods to quantify the environmental effects of COVID-19 and provide directions for policymakers to develop measures to address the associated environmental issues in the post-COVID-19 world.

Abstract
One-third of the annual food produced globally is wasted and much of the food waste (FW) is unutilized; however, FW can be valorized into value-added industrial products such as biofuel, chemicals, and biomaterials. Converting FW into soil amendments such as compost, vermicompost, anaerobic digestate, biofertilizer, biochar, and engineered biochar is one of the best nutrient recovery and FW reuse approaches. The soil application of FW-based amendments can improve soil fertility, increase crop production, and reduce contaminants by altering soil's chemical, physical, microbial, and faunal properties. However, the efficiency of the amendment for improving ecosystem sustainability depends on the type of FW, conversion method, application rate, soil type, and crop type. Engineered biochar/biochar composite materials produced using FW have been identified as promising amendments for soil remediation, reducing commercial fertilizer usage, and increasing soil nutrient use efficiency. The development of quality standards and implementation of policies and regulations at all stages of the food supply chain are necessary to manage (reduce and re-use) FW.

Abstract
Household food waste (HFW) accounted for about 66% of global food waste's total carbon footprints (CF). Based on China's macro-panel food consumption data, this paper measures the urban-rural and provincial differences in the HFW CF from scale, structure, and temporal-spatial evolution perspectives. The results indicate that HFW and CF continue to grow, and the total CF and per capita HFW in urban households are higher than in rural households. The structural differences between urban and rural HFW CF vary significantly over time and spaces, which reflected that rural households in the southeastern coastal areas have higher per capita HFW CF than urban in 2019. The research results help to clarify the distribution and evolution pattern of HFW CF in China and offer new ideas for the differentiated governance of CF reduction in the food system.

Abstract
Household food management behavior changed considerably during the COVID-19 pandemic. A growing body of work has quantified the impact of lockdowns on household food waste. Yet, previous studies used a retrospective study design which undermines the accuracy of the causal effect on household food waste. This paper investigates the causal impact of the COVID-19 pandemic on household food management and food waste using a natural experiment approach. Using two large national-scale longitudinal data sets (n = 8157), this study quantifies the impact of COVID-19 on food waste and food behavior of Australian households. Propensity score matching (PSM) was carried out to address potential endogeneity issues and to select control and treatment groups for analysis. Findings reveal that Australian households reduced food waste by 9% on average in 2020 (during COVID-19) compared to the pre-pandemic (2019) level. The use of a grocery list, discount purchases, and 'just-in-case' purchases, and food refrigeration have recorded a marked increase during the pandemic compared to pre-pandemic times. The changes to food management and food discard behavior during the pandemic offer important insights for behavior change campaigns to reduce household food waste. Interventions to sustain good food planning and storage practices and involving food retailers are promising entry points in addressing household food waste. The study also highlights the considerable challenge in achieving SDG 12.3 target by 2030.

Abstract
The outbreak of the COVID-19 pandemic has significantly increased the demand for personal protective equipment, in particular face masks, thus leading to a huge amount of healthcare waste generated worldwide. Consequently, such an unprecedented amount of newly emerged waste has posed significant challenges to practitioners, policy-makers, and municipal authorities involved in waste management (WM) systems. This research aims at mapping the COVID-19-related scientific production to date in the field of WM. In this vein, the performance indicators of the target literature were analyzed and discussed through conducting a bibliometric analysis. The conceptual structure of COVID-19-related WM research, including seven main research themes, were uncovered and visualized through a text mining analysis as follows: (1) household and food waste, (2) personnel safety and training for waste handling, (3) sustainability and circular economy, (4) personal protective equipment and plastic waste, (5) healthcare waste management practices, (6) wastewater management, and (7) COVID-19 transmission through infectious waste. Finally, a research agenda for WM practices and activities in the post-COVID-19 era was proposed, focusing on the following three identified research gaps: (i) developing a systemic framework to properly manage the pandemic crisis implications for WM practices as a whole, following a systems thinking approach, (ii) building a circular economy model encompassing all activities from the design stage to the implementation stage, and (iii) proposing incentives to effectively involve informal sectors and local capacity in decentralizing municipal waste management, with a specific focus on developing and less-developed countries.

Abstract
A 2-year monitoring campaign was carried out within the Marche Region (Italy) to quantify the potential still edible wasted food (seFW) within the sorted (seFWsorted) and unsorted (seFWunsorted) waste streams. Results were elaborated to estimate the distribution of seFW among the five provinces and the amount per capita. Results in terms of total quantities per inhabitants (seFWindex per capita) depict an important variability between districts but almost constant in years (26-38 kg/inhabitants in 2018 and 26-36 kg/inhabitants in 2019). Scores in Marche were then used to study the national situation, adopting the same percentage factors. Analysis was performed on 2019 data. Gradual colour shade was used to identify the Regions with greater seFW production potential. Worst scores are achieved by Lazio, Lombardia and Sicilia (red), followed by others classified as orange and yellow. More than 1.5 Mt potential seFW was estimated at national level, 29% of which is due to the unsorted fraction. Results at national level were used to assess the potential environmental impact related to seFW in terms of climate change. Carbon footprint indicator was quantified per capita (69 kg equivalent carbon dioxide (CO2e)/inhabitant/year in the case of Marche) and overall (3.5 MtCO2e). In addition, an evaluation of the potential economic implications related to the greenhouse gases emitted was made using the Social Cost of Carbon. Results showed that cost of the tCO2e global damage related to seFW in Italy ranges from 35 to 700 M$.

Abstract
Averting nutrient volatilisation in thermal treatment of organic waste is a challenging task. The dynamics of ammonia volatilisation and the role of additives in preventing the losses of nutrients in thermal digestion of food waste (FW) were explored. The experimental trials were performed in a convective dehydrator at different combinations of temperatures and airflow velocities. The study dictated that ammonia volatilisation rate increased with increase in temperature and airflow velocity. The losses reached to its peak during the initial drying period and then gradually declined in the falling rate period. An artificial intelligence-based random forest model was explored to precisely predict the ammonia losses during the drying process. The SEM-EDX images confirmed enhanced N (2.25%) in the alum treated end product compared to blank (N - 1.8%) and thus reveals alum induced mineralization of nutrients. Higher intensities of the N containing compounds peaks observed in FTIR spectra also supported the mineralization of nitrogen. XRD analysis indicated formation of stable ammonium compounds in the sample digested with alum. Cost benefit analysis of the alum aided digestion revealed that it enhances the nutrient retention and overall cost of N in the end product by ₹626/tonne. The study revealed high potential of alum in reducing the ammonia volatilisation and enhancing the agronomical value of nutrients in the thermal digestion process.

Abstract
The COVID-19 pandemic has greatly impacted the Americas, the continent with the highest number of COVID-related deaths according to WHO statistics. In Latin America, strict confinement conditions at the beginning of the pandemic put recycling activity to a halt and augmented the consumption of plastic as a barrier to stop the spread of the virus. The lack of data to understand waste management dynamics complicates waste management strategy adjustments aimed at coping with COVID-19. As a novel contribution to the waste management data gap for Latin America, this study uses a virtual and participatory methodology that collects and generates information on household solid waste generation and composition. Data was collected between June and November 2021 in six countries in Latin America, with a total of 503 participants. Participants indicated that the pandemic motivated them to initiate or increase waste reduction (41%), waste separation (40%), and waste recovery (33%) activities. Forty-three percent of participants perceived an increase in total volume of their waste; however, the quantitative data showed a decrease in household waste generation in Peru (-31%), Honduras (-25%), and Venezuela (-82%). No changes in waste composition were observed. Despite the limited sample size, this data provides a much-needed approximation of household waste generation and composition in the pandemic situation during 2021.

Abstract
This study presents a detailed typology of Jordanian consumers that identifies the effects of Covid-19 on their personal, social, and purchase and consumption patterns following the pandemic. Based on a qualitative approach using a sample of Jordanian consumers (N = 71), this study identifies three main types of consumers: the rational, suspicious, and cautious. All were distinguished by cognitive, emotional, and behavioral differences: the rational consumers viewed the pandemic as a natural occurrence, were willing to vaccinate, and took the opportunity to improve their lives and consumption behavior; the suspicious consumers viewed the pandemic as a man-made virus and refused to rationalize their behaviors and follow the social-distancing rules or vaccinate; and the cautious consumers were generally somewhere in between, and while they improved some aspects of their consumption, social, and personal lives, other aspects either remained the same or worsened. The findings have implications for managers and governmental bodies.

Abstract
Analyzing household food waste data at the global or national level remains a challenge, especially owing to lack of statistical systems and socio-cultural differences. This study determined the factors affecting the intention of households to reduce food waste on Jeju Island and on the Korean mainland. Socio-demographic factors significantly influence household food waste generation. Therefore, studies are often conducted depending on data availability in the corresponding regions. Based on national data and the theory of planned behavior, this study analyzed data using PLS-SEM (Partial Least Squares Structural Equation Modeling) to test the influence of multiple determinants and parameters on dependent variables and investigated the awareness of household food waste in Korea, focusing on Jeju Province, Korea’s largest tourist destination. A survey of 508 local residents established that all factors evaluated in this study, except for risk concerns due to COVID-19, were statistically significant. Among the three antecedents of age, income, and family size, age significantly affected all mediators, directly affecting behavioral intentions. The results are consistent with those of preceding research on the effects of socio-demographic drivers on household food waste generation. The results also indicate that in Korea, where the COVID-19 infection level is lower than that in other countries, residents did not change their food purchasing and waste production patterns. However, a multi-group analysis revealed that the risk concerns caused by COVID-19 differed between residents of Jeju Island and mainland Korea. Overcoming the vulnerability of waste management, including food dumping, is mandatory for locals and tourists on Jeju Island.

Abstract
Food waste has adverse economic, social, and environmental impacts and increases the prevalence of food insecurity. Panic buying at the beginning of the COVID-19 outbreak raised serious concerns about a potential rise in food waste levels and higher pressure on waste management systems. This article aims to investigate the impact of COVID-19 on food waste behaviour and the extent to which it occurs using the systematic review method. A total of 38 articles were identified and reviewed following the Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA) guidelines. The findings showed that the COVID-19 pandemic led to reductions in household food waste in most countries. Several changes in shopping and cooking behaviours, food consumption, and managing inventory and leftovers have occurred due to COVID-19. Based on these insights, we predicted that some desirable food-management habits would be retained, and others would roll back in the post-COVID-19 world. The review contributes to the food waste literature by offering a comprehensive overview of behavioural changes during the COVID-19 pandemic and future research directions.

Abstract
The COVID-19 pandemic has a negative impact on the environment. Waste generation and improper management during the COVID-19 pandemic posed a major threat to human health and the environment. Irregular and improper waste collection, handling, suspension of waste recycling and unsanitary disposal were all important issues in the processing and management of generated waste. This study emphasised a systematic review and content analysis to categorise all types of waste management (WM) during the COVID-19 pandemic to accomplish a well understanding of the relation between the COVID-19 pandemic and its impacts on WM within the literature. In this systematic review, a number of published papers on different aspects of WM during March 2020 to February 2021 were considered in order to identify major challenges in handling WM during the pandemic time and highlight multi-strategic approaches suggested. A content analysis of the 58 relevant papers was carried out by incorporating different types of WM at local as well as global scales. The present review results revealed that the COVID-19 has impacted the quantity and composition of waste, and the crisis caused by the pandemic has also altered the nature of global WM system. A comprehensive analysis on how the systems of WM were affected through the advancement of COVID-19 and what would be the healthier solutions was also highlighted in this systematic review. The results of this systematic review would be beneficial for better policymakers to holistically address potential future pandemics, if any.

Abstract
The COVID-19 pandemic exposed significant vulnerabilities in systems of production and consumption. In particular, the economic and social implications of the pandemic highlighted the urgent need for more sustainable and less impactful practices of food production and consumption. Through a systematic literature review, this paper seeks to assess how the pandemic affected the phenomenon of food waste, with the aim of assessing whether the pandemic stimulated changes amongst food system actors, especially consumers. The findings indicate that consumers generally reported behavioural changes during the pandemic and claimed to have adopted sustainable practices that could contribute to reducing food waste. The results also reflect the rapid diffusion of practices such as food delivery during the pandemic, which requires further investigation in terms of its effects on the environment. Simultaneously, supply-demand shocks and disruptions were reported in the areas of production, processing, and retailing, suggesting the occurence of ripple effects. A call is made for greater resilience in the food system, through the adoption of sustainable and less impactful practices, supported by policy.

Abstract
To halve per capita global food waste by 2030, policies and programs that effectively reduce household food waste generation are needed. Building upon a previous randomized controlled trial, this study evaluated the long-term effectiveness of the "Reduce Food Waste, Save Money" household food waste reduction intervention by comparing direct measurements of household food waste generated by treatment (n = 47) and control households (n = 52) over three time periods. The results indicate that there has been a long-term, sustained 30% reduction of avoidable food waste sent to landfill by treatment households following the implementation of this intervention. Additionally, this study assessed the impact of pandemic circumstances on the quantity and composition of household food waste by comparing direct measurements of food waste generated by the same households before (October 2017) and during (June 2020) the COVID-19 pandemic. During the first wave of the pandemic in Ontario, Canada, study households (n = 99) sent 2.98 kg of food waste to landfill per week, of which 54% was classified as avoidable food waste, and the remaining 46% as unavoidable food waste. During the pandemic, the generation of unavoidable food waste significantly increased by 65% (p < 0.01). There were also significant changes to the composition of wasted food, including a 78% increase in avoidable fruit and vegetables (p < 0.01), a 228% increase in avoidable other food (p < 0.01), and an 84% increase in unavoidable other food (p = 0.02).

Abstract
The COVID-19 pandemic may have amplified the environmental, social, and economic implications of household food waste. A better understanding of household food wasting during the pandemic is needed to improve the management of waste and develop best practices for municipal waste management programs under crisis circumstances. A waste composition study was undertaken with 100 single-family households across the city of London, Ontario, Canada to determine the quantity and composition of household food waste disposed in June 2020, during the first wave of the COVID-19 pandemic. This study examines how household demographic, socioeconomic, and neighbourhood food environment characteristics influence household food wasting. On average, each household sent 2.81 kg of food waste to landfill per week, of which 52% was classified as avoidable food waste and 48% as unavoidable food waste. The quantity and composition of household food waste was found to be strongly influenced by the number of people and children in a household, and somewhat influenced by socioeconomic factors and neighbourhood food environment characteristics, including the availability, density, and proximity of retail food outlets.

Abstract
Food waste represents a multi-sectoral issue and influences the economy, society and environment. Considering that over 50% of food waste is generated from household consumption, the issue has been included among the 17 Sustainable Development Goals, with the aim of halving its quantity by 2030. However, the COVID-19 pandemic imposed several variations in the agri-food industry in terms of food manufacturing, storage and distribution, changing at the same time food access, food consumption and food waste behavior. The present paper, through an online-based questionnaire among 831 respondents from Italy and the application of the cumulative logit model, investigates consumer behavior after the lockdown with reference to unpredictable lifestyles, improvements in smart food delivery and never-experienced time management. Results illustrate that always-at-home consumers (forced to stay at home 24 h a day) are more likely to perceive food waste and reduce its amount, whereas discontinuous smart working makes food purchase, preparation and consumption activities even more stressful and complex. Furthermore, smart food delivery tends to increase consumers' awareness of meals, improving buying decisions and indirectly reducing food waste generation. The unjustifiable prevalence of household food waste represents a major barrier to the achievement of food security, health insurance and hunger reduction, but also the most promising entry point to stress in the achievement of private and public benefits. Thus, the active role of education among young generations must be enhanced.

Abstract
The COVID-19 pandemic has affected how households buy, prepare and consume food, with resultant impacts on food waste generated. These impacts have not yet been properly understood, especially in the context of developing countries. Better understanding of the impacts of COVID-19 on food management behavior of households can aid in the design of policy interventions to reduce the amounts of wasted food during disastrous events. This becomes particularly important in light of the likely pro-longed effect held by the pandemic on household lifestyles in the future. This study has segmented households in Turkey, a rapidly emerging economy, on the basis of the effects imposed by COVID-19 on their food management behavior. A two-step clustering analysis has been conducted on the factor scores of planned shopping and cooking skills. Three segments were identified: careless planners and cooks, resourceful planners and cooks and careless planners and resourceful cooks. The segments were further described using health orientation, price consciousness, environmental concern, food waste disposal routines and self-perception of the amount of food waste variables. The first and the smallest segment, careless planners and cooks, is characterized by low levels of planned shopping and cooking skills, with resultant significant wastage. The largest segment of resourceful planners and cooks demonstrates excellent planned shopping and cooking skills, with resultant small wastage. The segment of careless planners and resourceful cooks showcases excellent cooking skills, but poor skills of planned shopping. The study provides first known evidence to understand how Turkish households differ on the grounds of their food management behavior in the time of the pandemic, thus laying a foundation for future segmentation studies in Turkey and beyond.

Abstract
OBJECTIVE The COVID-19 pandemic changed consumers' purchasing and cooking behaviours, which may have resulted in changes in food waste. This study aimed to assess the impact of COVID-19 on household food waste, as well as on purchasing, cooking, and food waste-related perceptions and behaviours among 19 households in Guelph, ON, Canada. METHODS Four-week food waste audits and online surveys were conducted in February-March 2020 (pre-COVID-19) and in July-August 2020 (post-COVID-19). Qualitative interviews were also conducted post-COVID-19 to explore participants' perceptions of household food changes due to COVID-19. Food waste results were analyzed using paired t-test, while survey results pre- and post-COVID-19 were analyzed using the Wilcoxon signed-rank test. RESULTS While per capita food waste did not significantly change (meanpre = 1.076 kg per week, meanpost = 1.080 kg per week), total per capita unavoidable food waste (meanpre = 0.388 kg per week, meanpost = 0.614 kg per week) and pre capita unavoidable fruit and vegetable (meanpre = 0.289 kg per week, meanpost = 0.427 kg per week) waste significantly increased (p < 0.01) at post-COVID-19. Total per capita avoidable other waste decreased (meanpre = 0.385 kg per week, meanpost = 0.179 kg per week, p < 0.05). The increase in unavoidable food waste may relate to households cooking more often at home, as reported in interviews, or shopping less frequently and buying more per trip, as identified in the surveys. The decrease in avoidable food waste could be related to the increase in serving of leftovers (p < 0.01), as identified in the surveys, or an increase in meal planning and inventory management, as reported in interviews. CONCLUSION Future studies should investigate whether food waste-related changes in behaviour remain after the pandemic as well as any factors associated with maintaining of these behaviours. Interventions may be an opportunity to help households maintain these changes.

Abstract
The Covid-19 pandemic has changed attitudes of English households towards food consumption at home and when eating out. Little academic research has however examined the scope and the scale of these changes, especially in the context of foodservice provision. This mixed methods study explores the effect of Covid-19 on food consumption in English households at home and away. It reveals increased frequency and variety of cooking during lockdown as a driver of household food wastage. The study demonstrates public hesitance towards eating out post-Covid-19. Foodservice providers are expected to re-design their business settings and adopt protective and preventative measures, such as frequent cleaning and routine health checks, to encourage visitation. After the pandemic, increased preference towards consuming (more) sustainable food at home, but not when eating out, is established. These insights can aid grocery and foodservice providers in offering more tailored products and services in a post-pandemic future.

Abstract
Crisis periods such as the COVID-19 pandemic may reshape consumers' behavior and challenge all food chain actors on how to assure and better respond to consumers' needs and wants. This study aimed to reveal the main concerns of consumers related to food consumption during the COVID-19 pandemic and to identify factors that may influence their behavior. An online survey was performed among 859 Romanian consumers. The Principal Component Analysis revealed five factors: ecofriendly, socio-economic aspects, food waste, plant-based food, and easily accessible food, which affected consumers' food behavior during the COVID-19 pandemic. It was noticed that females tended to be more preoccupied with the socio-economic aspects and food waste components, compared to males. At the same time, older people were more concerned about the ecofriendly, socio-economic aspects and health concerns, compared with the younger group, the differences being statistically significant. These insights provide information on crucial aspects that shape consumers' behavior during crisis periods.

Abstract
PurposeFood waste (FW) reduction, of which household wastage comprises a large fraction, has an important role in promoting the circular economy (CE). This study investigates how certain consumer traits impact household FW, particularly in the face of external shocks.Design/methodology/approachThe authors conducted a qualitative and longitudinal study, spanning three periods in New Zealand. A preliminary model is constructed from the outcomes of a survey with 178 participants. Then, the authors carried out 29 semi-structured interviews to refine the preliminary model and adapt it to the analysis of household waste behavior.FindingsDifferent segments of consumers have distinct response patterns in successive lockdowns, and these patterns impact household FW reduction and food supply chain (FSC) management. The key findings include (1) for government, quick responses to quash unhelpful rumors help to reduce public concerns around FSC interruption; (2) for retailers, the pandemic has hastened the growth of online shopping; being able to expand the distribution channel in a short time is a critical issue; and (3) for consumers, the experience of lockdown has different impacts on different groups of consumers. This variation of experience may either enhance or exacerbate FW in households.Originality/valueThis paper complements the existing literature on the FSC and contributes to household FW and CE literature by providing a framework that integrates external impacts, consumer segmentation to reflect on waste management, and the possible applications of the proposed framework.

Abstract
In addition to the health crisis caused by the coronavirus pandemic, several countries—particularly in developing regions—faced serious additional challenges in the economic, social and environmental areas. In Brazil, one of these challenges refers to the changes in consumption caused by the lockdowns, and the environmental impacts caused by new patterns of waste generation. Against this background, this paper investigates the changes in consumption and waste generation in Brazil during the COVID-19 pandemic. It provides a technical contribution to the topic by comparing the perception of survey respondents on the amount of household waste produced before and during the pandemic, and cross-checking these with information on current aspects of policymaking, the findings suggest that the amount of some specific types of household waste has noticeably increased, challenging even more the local waste management systems. The data instrument was validated by a pre-test, prior to deployment. According to the respondents, packaging (both plastic and paper/cardboard) was the type of waste that reported the highest increase in generation during the lockdowns, which is in line with the results of increased consumption of food delivery within this period. The results also suggest that current waste management policies make Brazil ill-equipped to deal with one of the non-intended effects of the COVID-19 pandemic, which has severely impacted Latin America’s largest country.

Abstract
Existing research recognizes the COVID-19 impact on waste generation. However, the preliminary studies were made at an early pandemic stage, focused on the household waste fraction, and employed descriptive statistics that lacked statistical support. This study tries to fill this gap by providing a reliable statistical analysis setting inferential confidence in the waste generation differences found in Castellón. Repeated measures ANOVA were carried out for all the waste fractions collected and recorded in the city landfill database from 2017 to 2020. Additionally, Bonferroni’s multiple comparison test (p < 0.05) was used to assure confidence level correction and identify which pairs of years’ differences appeared. The longitudinal study identified trends for each waste fraction before the pandemic and showed how they changed with the advent of the crisis. Compared to 2019, waste collection in 2020 significantly grew for glass and packaging; remained unchanged for beaches, paper and cardboard, and dropped substantially for households, streets, markets, bulky waste, hospitals, and recycling centres. Total waste showed no differences between 2017 and 2019 but dropped significantly in 2020. These findings may help us better understand the long-term implications of COVID-19 and improve municipal solid waste management in a similar crisis.

Abstract
There have been significant impacts of the current COVID-19 pandemic on society including high health and economic costs. However, little is known about the potential ecological risks of this virus despite its presence in freshwater systems. In this study, we aimed to evaluate the exposure of Poecilia reticulata juveniles to two peptides derived from Spike protein of SARS-CoV-2, which was synthesized in the laboratory (named PSPD-2002 and PSPD-2003). For this, the animals were exposed for 35 days to the peptides at a concentration of 40 µg/L and different toxicity biomarkers were assessed. Our data indicated that the peptides were able to induce anxiety-like behavior in the open field test and increased acetylcholinesterase (AChE) activity. The biometric evaluation also revealed that the animals exposed to the peptides displayed alterations in the pattern of growth/development. Furthermore, the increased activity of superoxide dismutase (SOD) and catalase (CAT) enzymes were accompanied by increased levels of malondialdehyde (MDA), reactive oxygen species (ROS) and hydrogen peroxide (H2O2), which suggests a redox imbalance induced by SARS-CoV-2 spike protein peptides. Moreover, molecular docking analysis suggested a strong interaction of the peptides with the enzymes AChE, SOD and CAT, allowing us to infer that the observed effects are related to the direct action of the peptides on the functionality of these enzymes. Consequently, our study provided evidence that the presence of SARS-CoV-2 viral particles in the freshwater ecosystems offer a health risk to fish and other aquatic organisms.

Abstract
Islam is the second-largest religion on a global scale. All around the world Muslims are estimated to comprise more than 1.9 billion people. Therefore, the demand for Halal commodities is expected to reach a high growth rate: thus, it is crucial to increase its global market’s reliability and traceability. Based on these grounds, the scope of this paper is to assess Halal food sustainability, examining the barriers and opportunities offered by the certification and blockchain tools. To this purpose, the authors carried out an integrative literature review, selecting 54 contributions in the Web of Science platform. Despite several limitations, such as the lack of a standardized framework or universally accepted and reliable certifying authorities, the implementation of blockchain technology has emerged as an interesting instrument to increase the trustworthiness and traceability of Halal foods. This tool could also help the development of protocols and standard procedures, ensuring hygienic and permitted products that may boost food safety and security. Besides, the enhancement of the Halal certification and the blockchain tool, even if several efforts are required in terms of innovation and cooperation by local authorities, industrial associations and leading consumers, could enhance fair trade, ethical business, green animal breeding and environmental economics, and hence sustainable development.

Abstract
Researchers have pointed out the urgent need to tackle food waste from customers’ plates, considering its environmental and socioeconomic impacts. Nonetheless, little is known about reducing food waste from customers’ plates in the restaurant context. The present research successfully addressed how customers can reduce food waste by using the Norm Activation Model (NAM). A customer survey was employed to collect quantitative data to verify the hypotheses of this study. The NAM of this study involved awareness of environmental impact (of the restaurant industry), ascribed responsibility for food waste, and moral norm for food waste reduction as predictors for food waste reduction intention. In addition, this study adopted self-efficacy to food waste reduction as a moderator on the path from the moral norm for food waste reduction to food waste reduction intention. Our empirical results supported all the hypotheses suggested in the research model. Consequently, the findings of this study adequately explained how restaurant customers form their intention to reduce food waste and thus provided important clues about how it can be encouraged. For example, based on the findings, a nudging message may be displayed on the restaurant wall to raise customers’ self-efficacy, saying, “Saving the earth is as easy as finishing your food or taking it home”.

Abstract
Ensuring the food security of the Russian Federation includes a set of areas in the implementation of which the constituent entities of the Russian Federation are involved, taking into account economic opportunities, natural and climatic conditions of the regions and other circumstances that are important for obtaining positive results in the field of ensuring food security. In connection with the foregoing, the topic of this scientific article is relevant both from a theoretical and practical point of view. The scientific novelty of the study is associated with an in-depth economic analysis of food security in the Sverdlovsk region, taking into account the regulation of regional legislation. The purpose of the study is to identify the interaction of economics and law in the field of ensuring food security of a constituent entity of the Russian Federation in the context of indicators of the Doctrine of Food Security of the Russian Federation. The objective of this study is to assess the impact of the norms of the regional law "On Ensuring Food Security of the Sverdlovsk Region" on the development of agriculture and agro-industrial production in the Sverdlovsk Region in terms of ensuring food security of the constituent entity of the Russian Federation. The theoretical significance of the work is due to the fact that the obtained results and conclusions develop and supplement a number of sections of the agrarian economy in terms of assessing the impact of agriculture on ensuring food security. The practical significance of this study is characterized by the possibility of using the material by the authorities of the constituent entity of the Russian Federation, as well as the subjects of agricultural activity and in the educational process at an agricultural university.

The cessation of deliveries of food and other goods from Western countries has set before Russia the task of overcoming import dependence. Therefore, the main goal now is to strengthen food independence at the expense of domestic production. The food security doctrine is aimed at gradually reducing the dependence of the agro-industrial complex not only on imported products, but also on imported machinery and equipment. Threshold values for the production of domestic products are also set. For grain, this figure is 95%. The same figure for potatoes. For milk and dairy products, the indicator should be at least 90%. For meat products - 85%, for sugar, vegetable oil and fish products - at least 80%. New technologies play a big role in this. New technologies in agriculture are innovations that take agriculture to a new level. The new agricultural revolution is the application of IT technologies in agriculture, which are designed to reduce the amount of manual labor and increase product yields. For these purposes, biotechnology, logistics, processing technologies are used.

Abstract
Purpose
At the end of 2019, the first case of the Corona Virus Disease (COVID-19) was reported in Wuhan city of China. The disease was declared a pandemic without imagining the magnitude of damage currently caused in all branches of the economy. One of the most affected sectors was food and mostly perishable food (PF), which are more susceptible to environmental conditions. Thus, the research examines the effect of the COVID-19 outbreak on Ecuador's perishable food supply chains (PFSCs) during the pandemic. It contributes to new results on the special issue (SI) PFSC response to event risk and uncertainty, such as those that generated the pandemic.
Design/methodology/approach
The data used are from primary information sources, which were collected through a questionnaire. The questionnaire was applied to 298 companies belonging to the sector, and later the information was processed through partial least squares structural equation model. The convergent validity, discriminate and robustness tests provide arguments for the suitability of the model. Therefore, the findings are reliable and valid for the adequate measures to improve the PFSC due to a COVID-19 outbreak.
Findings
The results show that the perception of personal risk (PPR) produced by COVID-19 has caused the companies of the PFSC to adopt preventive policies (PO) to avoid contagion and guarantee the operation of the companies. In addition, the PPR has been responsible for the alterations in the demand and price (DP) of PF. Next, PO and DP have a significant effect on PFSC, which shows the evidence favouring the malfunction of PFSC operations due to anti-contagion PO, the mismatch of DP. On the contrary, circular economy practices contribute to the excellent performance of the PFSC. Finally, the research suggests some policy implications to consider in improving the PFSC.
Originality/value
This study is the first to be carried out in Ecuador's country on the PFSC; its contribution is unprecedented and makes it a road-map to be considered to guarantee the correct functioning of the PFSCs, and it will provide policymakers with valid elements to design efficient PFSCs that better respond to unforeseen events and uncertainties. Future research will focus on analysing the management of PF consumption in Ecuador during the pandemic.

Abstract
The COVID-19 crisis is among the most disruptive events in recent decades. Its profound consequences have garnered the interest of many studies in various disciplines, including consumer behavior, thereby warranting an effort to review and systematize the literature. Thus, this study systematizes the knowledge generated by 70 COVID-19 and consumer behavior studies in the Scopus database. It employs descriptive analysis, highlighting the importance of using quantitative methods and China and the US as research settings. Co-occurrence analysis further identified various thematic clusters among the studies. The input-process-output consumer behavior model guided the systematic review, covering several psychological characteristics and consumer behaviors. Accordingly, measures adopted by governments, technology, and social media stand out as external factors. However, revised marketing strategies have been oriented toward counteracting various consumer risks. Hence, given that technological and digital formats mark consumer behavior, firms must incorporate digital transformations in their process.

Abstract
Household food waste represents one of the main challenges for sustainable development as this directly affects the economy of food consumers, the loss of natural resources and generates additional greenhouse gas emissions. The COVID-19 pandemic and its mitigation strategies caused one of the most serious economic crises in recent decades and could become the worst economic crisis that Latin America has had in its history. The objective of this study is to analyze changes in food waste behavior during the COVID-19 lockdown in Colombia in 2020, applying the Theory of Planned Behavior (TPB). For this purpose, we conducted a survey with 581 Colombian food consumers, which examined the influence of intentions to not waste food, subjective norms, some situational predictors, questions related to the COVID-19 pandemic, and the control of perceived behavior on food waste. The results suggest that the TPB can predict the intention to not waste food and, through it, the actual household food waste behavior, considering the lockdown in Colombia as an external shock. We observe that regarding the intention to not waste food, the most relevant variables are attitudes, subjective norms, control of the perceived behavior, and concerns regarding the Covid-19 pandemic. These variables increase the probability on average by a 0.8 Odds Ratio that the intention not to waste food increases, too. Regarding food waste behavior, whether it is considered ordinal or nominal, we see that the most relevant variables are intention, financial attitudes, and control of perceived behavior, doubling the probability that food waste behavior will improve. Based on the results, we provide recommendations for interested stakeholders that can help in the design of instruments for household food waste reduction.

Abstract
The COVID-19 outbreak forced national governments to the adoption of social distancing and movement limitation measures aimed to reduce the diffusion of the virus and to mitigate its highly disruptive impact on the healthcare systems. Reduced income, job insecurity, distribution system interruptions, product shortages, localized price hikes, and time availability resulted in changes in food-related behaviors of households, including food waste generation. Although the significant progress achieved in the understanding of the multidimensional determinants of food losses and waste, no study has been considering the role of uncertainty generated by exogenous generalized shocks on consumer behavior. Building on an original and nationally representative survey, this work aims to investigate the impact of the measures introduced to contain the outbreak of COVID-19 on the main behavioral factors underpinning household food waste generation. The study develops a theoretical model introducing uncertainty validated through a Structural Equations Modelling approach. Results showed that during the quarantine period declared household food waste decreased, with more than half of the respondents reporting to waste less. The model suggested that the amount of material and non-material resources that consumers can dedicate to food-related activities represents the most influential factor for the generation of household food waste and that uncertainty is significantly affecting the drivers and indirectly influencing the self-declared values of food waste. Results suggest several potential policy implications, of which the most relevant being related to the importance of stimulating improvements in food management opportunities at home.

Abstract
The existing finite natural resources have witnessed unsustainable usage in the past few years, especially for food production, with accompanying environmental devastation and ecosystem damage. Regrettably, the global population and consumption demands are increasing ceaselessly, leading to the need for more resources for food production, which could potentially aggravate the sustainability and ecosystem degradation issues, while stimulating drastic climate change. Meanwhile, the unexpected emergence of the COVID-19 pandemic and some implemented measures to combat its spread disrupted agricultural activities and the food supply chain, which also led to a reduction in ecosystem carbonization. This study sets out to explore policy framework and selected feasible actions that are being adopted during the COVID-19 pandemic, which could potentially reduce the emissions even after the pandemic to promote a resilient and sustainable agri-food system. In this study, we reviewed 27 articles that focus on the current state of the agri-food system in light of the COVID-19 pandemic and its impact on the decarbonization of the agroecosystem. This review has taken the form of a systematic methodology in analyzing the adoption and implementation of various measures to mitigate the spread of COVID-19 on the impact of the agri-food system and reduction in ecosystem degradation. Up to 0.3 Mt of CO2 reduction from the agri-food system alone was reportedly achieved during the first 6 months of the pandemic in 23 European countries. The various adopted measures indicate that the circular economy approach is a panacea to achieve the needed sustainability in the agri-food system. Also, it dictates a need for a paradigm change towards improvement on localized food production that promotes sustainable production and consumption.

To better understand these impacts, their underlying drivers, and their sustainability implications, this study surveyed U.S. consumers about food purchasing, use, and waste behaviors during the pandemic. Survey respondents reported an increase in overall food purchases and a slight decrease in food waste generation due to the pandemic, but the linkages between these outcomes and underlying behaviors were complex. For instance, reduced household food waste was significantly correlated with an increase in behaviors such as meal planning, preserving foods, and using leftovers and shelf-stable items. On the other hand, behaviors aimed at self-sufficiency, including bulk purchasing and stockpiling, were significantly correlated with increased food purchase, which in turn led to increased waste. Results may offer insight for future resource and waste management strategies. For example, over 60% of respondents who started or increased efficient food use behaviors stated an intent to continue these activities after the pandemic. In contrast, less than 10% of respondents reported that they began or increased separating or composting food waste during the pandemic, and many stopped altogether due to suspension of local curbside composting services. Findings suggest that it may be easier to shift food consumption and use behaviors but more challenging to alter food waste separation behaviors, particularly those influenced by external factors, such as infrastructure that may be vulnerable to disruption. Identifying ways to facilitate ongoing behavior change and foster robust food waste management systems can contribute to resilience of food systems now and once the immediate threat of the pandemic has subsided.

Abstract
With the COVID-19 outbreak, structural constraints and social psychological factors changed the dietary habits of many people. This two-wave longitudinal study performed in Italy aimed to explore people’s perceptions of changes in healthy and unhealthy food consumption before and during the first lockdown and the possible persistence of such changes after its official end, as a function of the number of people cohabiting, negative emotion activation, and individual eating styles. A total of 728 Italian adults completed self-reported food consumption measures and related psychological variables at both time points. In the lockdown period, participants reported an increase in healthy food consumption and involvement in cooking and a decrease in the consumption of junk food. This general pattern was stronger for both young and restrained eaters. The intensity of negative emotions and the number of cohabitants were not associated with the examined behaviour. In the post-lockdown period, the new consumption pattern acquired during the confinement was partially discontinued: participants cut down their healthy food consumption as well as their involvement in food preparation, but they continued to reduce their junk food intake. These results suggest that people’s food consumption patterns can easily improve when the situation is favourable (e.g., more time and opportunities for cooking healthy meals) and offer an interesting theoretical contribution to understanding the factors useful in promoting healthy eating, in the event of a future outbreak.

Sustainable Consumption in Consumer Behavior in the Time of COVID-19: Topic Modeling on Twitter Data Using LDA. ENERGIES 2021. Abstract
By using text mining techniques, this study identifies the topics of sustainable consumption that are important during the COVID-19 pandemic. An Application Programming Interface (API) streaming method was used to extract the data from Twitter. A total of 14,591 tweets were collected using Twitter streaming API. However, after data cleaning, 13,635 tweets were considered for analysis. The objectives of the study are to identify (1) the topics users tweet about sustainable consumption and (2) to detect the emotion-based sentiments in the tweets. The study used Latent Dirichlet Allocation (LDA) algorithm for topic modeling and the Louvain algorithm for semantic network clustering. NRC emotion lexicon was used for sentiment analysis. The LDA model discovers six topics: organic food consumption, food waste, vegan food, sustainable tourism, sustainable transport, and sustainable energy consumption. While the Louvain algorithm detects four clusters—lifestyle and climate change, responsible consumption, energy consumption, and renewable energy, sentiment analysis results show more positive emotions among the users than the negative ones. Abstract
Macro-institutional structures and consumerist culture force and urge people to reproduce unsustainable levels of consumption. A crucial role for sociology, the article argues, is to address theoretically and empirically the intersection between social relations and (over)consumption. The purpose with this article is to address how social relations are involved in both reproducing and challenging consumer culture. This is done by emphasizing the intersection of consumer culture and socially integrating everyday rituals and drawing on literature on both voluntary and involuntary (the pandemic) disruption of consumer practices. The Covid-19 pandemic brings unexpected opportunities to highlight this intersection, as the pandemic offers a window of opportunity for lifestyle change. The review shows there are important lessons about both challenges and opportunities, gained from both voluntary and involuntary disruption of consumer practices.

Abstract
We evaluate the immediate impact of a nutrition and gender behaviour change communication on dietary quality in rural communities in Myanmar and assess whether the communication helped mitigate the effect of the COVID‐19 crisis on dietary quality. The intervention was designed and implemented as a cluster‐randomised controlled trial in which 15 villages received the intervention and 15 control villages did not. The intervention was implemented from June to October 2020. This paper provides an assessment of the intervention's impact on dietary quality based on the results of two phone surveys conducted in August and October 2020. Immediate impacts of the intervention indicate an improvement in women's dietary diversity scores by half a food group out of 10. At baseline, 44% of women were likely to have consumed inadequately diverse diets; results indicate that 6% (p‐value: 0.003, SE: 0.02) fewer sample women were likely to have consumed inadequately diverse diets. More women in treatment villages consumed pulses, nuts, eggs and Vitamin A‐rich foods daily than in control villages. In response to economic shocks related to COVID‐19, households in the treatment villages were less likely to reduce the quantity of meat and fish consumption than in control villages. The long‐term impacts of the intervention need to be continuously evaluated.

Abstract
The ongoing Covid-19 pandemic rapidly and dramatically disrupted household behaviours in almost all areas and, among these, eating behaviours and daily food patterns have also been radically altered. All reported changes have potential effects in terms of food waste, which is a global problem that mainly occurs at household level. Many scholars attempted to understand the antecedents of food waste in the framework of Theory of Planned Behaviour (TPB). In this paper we follow this strain of research by focussing on two different behaviours, suggested by the Waste Framework Directive of the EU, namely (a) reducing servings and (b) using leftovers, which may be predicted by the intention to reduce food waste. An online questionnaire containing the key constructs of the TPB and the concern towards the pandemic was administered to a sample of 201 Italian consumers. Results show that the TPB model was confirmed for both behaviours while the Covid-19 concern had no direct effect. However, in the case of portion reduction, there is a significant interaction between concern and intention not to waste food. That is, the effect of intention on reducing servings is increasing as the level of concern increases. Therefore, some indications on how to address food waste policies are drawn.

Abstract
The COVID-19 pandemic has represented a major global challenge. In Latin America, both Brazil and Peru reported the highest levels of impact in terms of proportional infection and death rates. Within this context, this study sought to compare food consumption and wastage patterns in Peruvian and Brazilian households. For these purposes, the authors conducted a quantitative research study based on a self-reported online survey submitted during the pandemic outbreak. Results revealed that the intention of reducing food wastage and implementing leftover management routines are related to the economic value of wasted food. In addition, in both countries, shopping lists are used as planning elements, and food purchases are influenced by on-sale products. Leftover management is also similar in both countries, and the expiration date on the label is the most commonly used criterion for consuming or discarding food items. Nevertheless, within the framework of the health and economic crisis generated, opportunities for change toward the adoption of smarter and more sustainable purchasing behaviors are emerging for both households and companies, in addition to giving equal importance to environmental, social, and economic benefits. This research study provided insights into food consumption and food wastage behaviors in times of crisis, such as a pandemic.

Abstract
This paper explores to what extent product and marketing channel diversification contributed to the economic success of small-scale agricultural producers involved in short food supply chains after the outbreak of the COVID-19 pandemic. A survey was conducted between April and July 2020 in four countries of the European Union–Estonia, Hungary, Portugal and Romania,–resulting in a relatively large sample of farmers (N = 421). The analysis was built on a semi-nonparametric approach. Approximately 19 percent of small-scale producers were able to increase sales during the first wave of the pandemic, although country-level variation was significant. Fruits and vegetables were by far the most popular products. The importance of specific channels varied across countries, but farm gate sales were among the most important marketing channels both before and during the first wave. The importance of channels that were based on digital resources and home delivery increased. Our evidence indicates that diversification was a strategy that paid off, both in terms of marketing channels and different product categories. However, the impact appears to be nonlinear; the initial advantage generated by diversification rapidly tapered off, either temporarily (in the case of products), or permanently (in the case of marketing channels). Later research may clarify whether these findings are generalizable in other socio-economic contexts, as well as in a non-COVID situation.

Abstract
A significant share of food waste originates in the food services domain and HoReCa sector. Organizational improvements leading to the decrease of food waste and related costs in HoReCa are needed to make progress in this issue. A systems engineering approach was applied to examine the links between food waste generated in the HoReCa industry and the Sustainable Development Goals (SDGs). A literature review discovered two dimensions of actions leading to decreasing food waste in HoReCa; i.e., actions triggered by companies and by authorities (e.g., governmental policies). Additionally, customers and society were also considered. A framework is proposed to explicitly illustrate the dependencies of different micro actions devoted to food waste reduction in HoReCa in support of the SDGs. The other dimension of this framework is macro policies and their impact on SDGs. To increase food waste reduction awareness and collaboration, stakeholders on both the macro (launched by authorities for the whole sector) and micro (initiated by single organizations on their own) levels must work together. The results of this research will be useful in coordinating the efforts of all (consumers, HoReCa companies and suppliers, policymakers and administrations on different levels) involved in the supply chain of food production and consumption.

Abstract
The objective of this research was to look into the self-reported food consumption and wastage behavior in Brazil during the COVID-19 pandemic outbreak and the motivations to prevent this waste. The data were collected during the COVID-19 pandemic outbreak in Brazil, May 2020, using a self-administered questionnaire with 60 questions on food consumption behavior and characterization of food waste behaviors. The target audience comprised Brazilian residents responsible for household food purchases; out of 489 responses, 458 were considered valid. The main findings reported that regarding consumption behavior, there are no significant differences in relation to gender, education, and age. The surveyed population preferred shopping in person, despite the recommendation of social distancing, and reported activities to avoid food waste. This behavior suggests the importance of information and consumers’ education in making purchases and reducing waste, mainly amidst a crisis. The results suggest that intention to reduce waste, routines of food purchase in sales and management routines of leftovers or uneaten food are positively related to reducing the economic value of food waste. As a practical contribution, this study expands the understanding in one Latin American country regarding food consumption and wastage. The theoretical contribution leads to understanding of the behavior in times of crisis such as a pandemic.

Abstract
The reduction of food waste, especially in households where more than half of its global quantity is generated, has become an increasing economic, social and environmental concern, and represents one of the 17 Sustainable Development Goals within the Agenda 2030 for Sustainable Development. In this context, the COVID-19 lockdown has significantly changed life, work and food consumption habits all over the world, highlighting food waste as a multi-sectorial issue. This paper explores current attitudes, perception and behavioral patterns related to food waste reduction at domestic consumption at the local scale (Apulia region, Italy), with the aim of identifying different types of “food wasters”. Through an online questionnaire and the application of a k-means clustering model, the authors focus on four emerging constructs in terms of food consumption and food waste habits after the COVID-19 lockdown at household level. Among three theoretical clusters, results have highlighted: (i) the paradox of the “green wasters”, which declared a high level of awareness of the food waste issue but also generates huge amounts of thrown away food; (ii) the “positive unawareness” of the “red wasters”, which have a slight notion of environment and sustainability but waste low quantities of food; (iii) the consistency of the “blue wasters”, which know of the food waste issue and convert theory into practice.

Abstract
Coronavirus disease (COVID-19) is a transmissible illness that was recognized in December 2019 and World Health Organization (WHO) stated a pandemic on 11 March 2020. As no cure has been developed for COVID-19 disease yet, Italy has adopted restrictive measures to avoid the spread of the virus, causing different psychological reactions (e.g., stress, anxiety) that lead people to change lifestyle and in particular the consumer orientation toward food. In addition, the COVID-19 emergency had also affected the Italian economy, causing an 11.3% decrease in GDP (gross domestic product). All these changes gave rise to a sense of instability, but it is known that new possibilities may arise in these situations. In particular, the pandemic could be the turning point to make consumers aware of the close link between human health and the ecosystems, supporting the "One Health" perspective and enhancing the orientation to consumer sustainable food products. However, little is known about how the psychological reactions to COVID-19 emergency have affected the consumers' intention to purchase sustainable food products. In order to answer these questions, a representative sample of 1,004 Italian citizens, extracted by stratified sampling, answered an online survey between May the 12th and 18th 2020. The data were analyzed using ANOVA and contingency tables. The results show that during phase one of COVID-19 disease about 30% of the sample reported that have frequently (often and always) consumed the certified sustainable food products and about 20% of the sample have intention to increase the consumption of them in the next 6 months, percentages that increase among those who feel more vulnerable regarding the risk contagion. Moreover, the psychological impact of the COVID-19 emergency has led to a change in consumers' attitudes, increasing the interest in animal and environmental issues and in human health. These aspects seem to drive the future intention of purchasing sustainable food products. This research highlights how the psychological reactions to the health emergency have changed the consumers' attitudes toward sustainability issues, leading them to follow a more sustainable diet that is recognized as a way to preserve human health, environmental preservation, and animal welfare for present and future generations.
