Abstract
Our current global Food System is facing extraordinary challenges in both size and severity, including a rise in unsustainable consumption behaviours, continued environmental degradation, growing food insecurity, and widening social inequalities. A Food System transformation is now both critically important and overwhelmingly complex, requiring nothing less than a complete overhaul of the entire value chain. Everyone is needed: Small Medium Enterprises (SMEs) with technological solutions, Non-Governmental Organisations (NGOs) with social innovations, researchers with novel methodologies, governments with food policy advancements, professionals with varying expertise, and last but not least, empowered and informed citizens with the ability and resources for better decision-making. Living Labs offer a holistic, place-based approach needed to facilitate multi-actor inputs on various levels, specifically Food System Living Labs (FSLLs) like the ones established as part of the FoodSHIFT 2030 Project. Nine front-runner Food System Living Labs were operationalised alongside a novel framework merging high-level interdisciplinary initiatives with a diverse set of innovative approaches towards more Sustainable Food Systems (SFS). The FoodSHIFT Approach concept was praised by external evaluators for its ground-breaking framework, and the nearly completed project has been listed as a best practice. However, positive applications alone will not ensure a cross-sector European-wide Food System transformation, and the following text offers a critical reflection coupled with experience-based solutions to further improve the FoodSHIFT Approach.

Abstract
Food production is a complex matter, affecting people's lives, organizations' profits, and the well-being of the whole planet, and has multifaceted ethical considerations surrounding its production, distribution, and consumption. This paper addresses the pressing need to confront ethical challenges within the food system, encompassing issues such as environmental sustainability, food security, and individual food choices for better oral and systemic health of all individuals around the globe. From agricultural practices to global trade and food waste, ethical implications are addressed across various domains, highlighting the interconnectedness of ethical decision-making in the food industry. Central themes explored include the ethical dimensions of food production methods, the impact of global trade on food ethics, and the role of individuals in making ethically informed food choices. Additionally, this paper considers the spiritual and physical significance of food, particularly through the lens of oral health as a gateway to holistic well-being. Recognizing the complexity of the food and mouth ecosystem, this paper calls for serious interventions in legislation and economics to promote ethical protocols and techniques for sustainability reasons. It emphasizes the importance of ethical considerations in food safety management systems, regulatory frameworks, and quality standards. Moreover, this paper underlines the need for a comprehensive approach to address ethical dilemmas and moral values inherent in the food industry and oral health policies, adopting the precautionary principle and ethical decision-making frameworks. This article finally aims to serve as a call to action for stakeholders across the food industry and the healthcare sector, to prioritize ethical practices, promote transparency, rearrange economic parameters, and work towards a more sustainable and equitable food system for inner and outer oral and systemic health and human sustainability for all.

Abstract
The COVID-19 pandemic triggered a global crisis with unanticipated and diverse consequences. Moreover, the pandemic has considerably impacted food dynamics in low- and middle-income countries (LMICs), where food systems have already been challenged. These countries also have the highest share of the world's malnourished and food insecure. Therefore, this paper aims to analyze the pandemic's impact on food security dimensions (availability, accessibility, utilization, and stability), with a special emphasis on LMICs. According to the results, the pandemic immediately impacted food security by limiting food production and availability. It also had an indirect impact when lockdowns and other confinement measures (e.g., social distancing, movement restrictions) made it more difficult for individuals to access food and maintain a healthy, balanced diet (cf. food utilization). Indeed, with rising unemployment and poverty, access to food has been the most critically undermined aspect of food security. At the utilization level, COVID-19 adversely influences the nutritional state of both individuals and countries, leading to an increase in all forms of malnutrition. Finally, the impact of COVID-19 on the stability dimension is dependent on the length of the pandemic as well as the effectiveness with which recovery plans are followed to ensure universal vaccine availability, among other factors. As a result, including agricultural and food systems in recovery strategies is crucial to mitigating the pandemic's long-term effects on food security.

Abstract
In this study, the immunological characteristics of a dog's body were established, allowing for a quick reaction to any changes in the immune status and the development of an immunodeficiency state. The immunoregulatory blood index was determined to indicate the ratio of T-helpers and T-suppressors. The immunoregulatory index of the spleen was determined as the ratio of CD4+ cells to CD8+ cells in the field of view of a microscope (eyepiece 10, objective 40) after obtaining histological preparations according to generally accepted methods. It was found that the number of T-helpers decreased by 0.13 × 1012/L, while the number of T-suppressors increased non-significantly by 0.01 × 1012/L after intensive exercise during tasks. The immunoregulatory blood index of dogs was 2.1 ± 0.1 and 1.7 ± 0.13 before and after intensive exercise, respectively. Lymphocytes with markers CD4+ and CD8+ were located almost all in the white pulp; in the red pulp, they were found alone, and their share was 3.4% and 1.9%, respectively. Lymphocytes with CD4+ markers in the spleen's white pulp were mainly concentrated in lymphoid nodules (60.7%), of which 20.1% were focused on the marginal zone, and slightly less in the light center (19.4%) and the periarterial zone (18.1%). Lymphocytes with CD8+ markers in the spleen's white pulp were also mainly concentrated in lymphoid nodules, but their number was 8.1% higher (68.8%). The immunoregulatory index of the spleen is 1.9. These findings emphasize the need for the assessment of the immunoregulatory index in service dogs to prevent the development of secondary immunodeficiency and allow them to properly perform their official duties.

Abstract
Policymakers and scientists regard emerging circular initiatives as levers for transformations towards more sustainable food systems. However, it remains unclear how to determine the extent to which circular initiatives have transformative potential. That is, can these initiatives foster a transformation as a result of how they currently bring circularity into practice? In the transformation literature, the characteristics of transformative initiatives are conceptualised in a generic and abstract way. To address this gap, we develop a heuristic of five characteristics for potentially transformative circular agriculture initiatives, which we illustrate with examples of existing initiatives. The heuristic builds on the 'small wins' and circular agriculture literature. Initiatives that hold transformative potential contribute to circular agriculture principles with outcomes that are concrete, in-depth and both technological and social in nature. Additionally, these initiatives faced barriers and overcame them. The heuristic enables policymakers, who call for circular solutions, to identify truly transformative circular initiatives.

Abstract
The agri-food system needs to transition into a more balanced system that takes into account economic, social, and environmental factors. Young people are a key demographic group to consider as they are open to new trends of consumption, including sustainable buying practices. Public universities can play a significant role in promoting sustainable and healthy eating habits among students. In this paper, we focus on the perceptions of young people regarding sustainable food in the Madrid Region. We conducted a survey using a questionnaire-based approach among 1940 students in 2022. The results highlight that young consumers are highly concerned about food sustainability. They perceive sustainability as local and non-processed foods. However, this perception varies among young consumers, and we identified five different consumer profiles. Principal component analysis and cluster analysis provide insights into potential actions that universities can take to promote sustainable and healthy eating habits among students.

Abstract
This study aims to examine the impact of globalization, renewable energy consumption, and agricultural value addition on the ecological footprint of selected five most populous countries in Asia during the period 1975-2020. The Westerlund cointegration test supports long-term cointegration relationships among the considered variables in selected countries. The long-term resilience results of the second-generation cross-sectionally augmented autoregressive distributed lag approach evidently demonstrate that agricultural value addition and globalization contribute significantly to the long-term ecological footprint of the five most populous countries in Asia. However, renewable energy consumption significantly reduces the ecological footprint. Moreover, the impact of economic growth on ecological footprint is significantly positive, while the square of economic growth had a significantly negative impact on ecological footprint, thus validating the inverted U-shaped environmental Kuznets curve hypothesis for specific Asian densely populated countries. The causality test results of Dumitrescu and Hurlin support the feedback hypothesis by showing a two-way causal relationship between renewable energy consumption and economic growth. There is also a two-way causal relationship between agricultural value added and ecological footprint. Strategically, specific densely populated countries in Asia should encourage clean energy production and consumption in the agricultural sector, and the adoption of environmentally friendly technologies can improve environmental quality and agricultural production.

Abstract
Nutritional warning labels are gaining relevance in the region of the Americas as a policy tool to reduce information asymmetry and encourage healthier food choices. However, empirical evidence about consumer experiences with warning labels after implementation is still scarce. In this context, the aim of the present work was to explore the use of nutritional warning labels after policy implementation in Uruguay, using a combination of eye-tracking and self-reported data. The study was conducted in three supermarkets, in two regional capitals, 19 months after the entry into force of the policy. A total of 224 participants were intercepted while entering the facilities of the supermarket and asked to wear a mobile eye-tracker while making their food purchases. Then, they were asked a series of questions about their awareness and use of warning labels. Although participants reported high awareness and understanding of the labels, active search and use at the point of purchase was low. Only 6% of the consumers declared having actively searched for the warning labels and 7% fixated their gaze on the labels. The majority of the participants (72%) who declared having seen the warnings on a product, purchased it anyway. However, 56% declared having changed their food choice decisions as a consequence of the implementation of the policy. Participants' accounts about reasons for (not) taking into account the warning labels provide relevant insights for the development of strategies to encourage citizens to increase policy effectiveness and encourage healthier food choices.

Abstract
An increasing body of literature has demonstrated COVID-19's harmful impact on agri-food systems, which are a major source of livelihood for millions of people worldwide. Information and communication technology (ICT) has been playing an increasing role in enhancing agri-food systems' resilience amid COVID-19. In this study, the PRISMA approach was employed to perform a systematic review of the literature from January 2020 to December 2021 on the overall impact of COVID-19 on agri-food system networks and ICT's role in enhancing agri-food system resilience in developing countries. This study reveals that COVID-19 has posed abundant obstacles to agri-food systems actors, including a lack of inputs, technical support, challenges to selling the product, transportation barriers, and low pricing. These impediments result in insufficient output, unforeseen stock, and revenue loss. COVID-19's restrictions have caused a significant food deficit by disrupting the demand and supply sides of the agri-food system networks. A high number of small-scale farmers have had to deal with food insecurity. As a result of the cumulative effects, actors in the agri-food system are getting less motivated to continue producing. This study also argues that many challenges in the agri-food systems can be overcome using ICTs, including maintaining precise farm management, product marketing, and access to production inputs. To assist stakeholders in coping with, adapting to, and building resilience in the agri-food system networks, this article emphasizes the critical need to turn to and expand the application of advanced agricultural ICTs to meet the world's growing needs for food production and to ensure the resilience and sustainability of farming systems, particularly in the face of a pandemic like COVID-19.

Abstract
Modern technological agriculture emerged in the 20th century and has expanded into a global enterprise occupying approximately 38% of the Earth's land area and accounting for over 40% of the world's workforce. The United Nations Food and Agriculture Organization estimates that to feed a world population of 9-billion people in 2050 will require an almost doubling of overall food production, including meat, dairy, and egg production over 2010 levels. However, our collective ability to meet this demand cannot be taken for granted. Despite many successes, global agricultural systems now face multiple unprecedented challenges including a dearth of new treatments for livestock diseases. The discovery of antibiotics led to a complacency now reflected in a dependency on exogenous antimicrobials and a growing threat of antimicrobial resistance. Developments within the field of immunobiology had led to significant breakthroughs in understanding of human health and disease. However, despite over 60% of infectious diseases being zoonotic in nature and nonhuman animals acting as an important disease reservoir, research in livestock immunobiology has not been as resourced. As a direct result, recalcitrant animal diseases continue to threaten sustainability of animal production systems, security of the food chain and human health. It is within the context of collective One Health action that ambitious innovation in the connectivity of animal science undergraduate curricula is urgently required, specifically to include threshold concepts in immunobiology. Fostering transformative learning is critical to equip future generations of animal scientists with the knowledge and interdisciplinary skills to counter these existential challenges of our time.

Abstract
Ensuring nutrient adequacy for all is a common goal of the international community, but spatial difference is one of the barriers to its development. Exploring nutrient adequacy in coastal areas of China can help regions where food production systems and economic development systems are under mutual stress to reduce nutritional disparities and improve nutrition levels. This paper used the transformation food-to-nutrient model to calculate nutrient production and nutrient consumption in 11 coastal provinces of China and analyzed their spatial patterns, after which spatial differences in nutrient adequacy (including energy, protein and fat) were analyzed. The results showed that nutrient production and nutrient consumption in coastal areas of China showed significant spatial differences, in which nutrient production was mainly concentrated in land food, and the three provinces of Shandong, Jiangsu and Hebei contributed more. Guangdong had the highest nutrient consumption; in contrast, Shanghai, Tianjin, and Hainan had the lowest consumption. Nutrient adequacy was not optimistic, with fat being particularly significant, and nutrient surplus quantity was mainly concentrated in Shandong and Jiangsu and nutrient deficiency quantity was mainly concentrated in Guangdong. Overall, the study area had adequate levels of protein and was deficient in energy and fat levels, with surplus or shortage of 2.41 million tonnes, 2620 billion kcal and 9.97 million tonnes, respectively.

Abstract
Our dominant food system is a primary driver of worsening human and planetary health. Held in March 2022, the Public Health Association of Australia's Food Futures Conference was an opportunity for people working across the food system to connect and advocate for a comprehensive, intersectoral, whole-of-society food and nutrition policy in Australia to attenuate these issues. Conference themes included food systems for local and global good; ecological nutrition; social mobilisation for planetary and public good; food sovereignty and food equity. Students and young professionals are integral in transforming food systems, yet they are under-represented in the academic workforce, across publishing, scientific societies and conference plenaries. A satellite event was held to platform initiatives from early career researchers (ECR) in areas integral for improving planetary and public good. The research topics discussed in this commentary reflect sub-themes of the conference under investigation by ECR: food systems governance and regulation; local food policies; commercial determinants of health; sustainable healthy diets; and food equity and sovereignty.

Abstract
BACKGROUND There is increasing focus on moving populations towards healthier and more environmentally sustainable dietary patterns. The Australian Dietary Guidelines provide dietary patterns that promote health and wellbeing. It is unclear how these guidelines align with the more recently published global recommendations of the EAT-Lancet Planetary Health Reference Diet, and how Australian diets compare to both sets of recommendations. METHODS Data from one 24-h recall collected for the 2011-13 National Nutrition and Physical Activity Survey were analysed for 5,920 adults aged 19-50 years. Subgroups of this population were identified by diet quality and lower or higher consumption of foods often considered to be environmentally intensive (higher animal meat and dairy foods) or associated with healthiness (higher vegetables and lower discretionary choices). Food group and nutrient composition of Australian diets were compared to diets modelled on the Australian Dietary Guidelines and Planetary Health Reference Diet. The environmental impacts of diets were estimated using an index of combined metrics. RESULTS Compared with the Planetary Health Reference Diet, the Australian Dietary Guidelines contained more servings of the vegetable, dairy and alternatives, fruit, and discretionary choices. The amount of meat and alternatives was higher in the Planetary Health Reference Diet than Australian Dietary Guidelines due to the inclusion of more plant-based meat alternatives. The average Australian diet contained two to almost four times the Australian Dietary Guidelines and Planetary Health Reference Diet maximum recommended intake of discretionary choices, and provided inadequate amounts of the vegetables, cereals, unsaturated fats and meats and alternatives food groups, primarily due to lower intakes of plant-based alternatives. The average Australian diet also contained less dairy and alternatives than the Australian Dietary Guidelines. In the average Australian diet, red meat and poultry contributed 73% to the total servings of meat and alternatives compared to 33% and 10% for the Australian Dietary Guidelines and Planetary Health Reference Diet respectively. The modelled Australian Dietary Guidelines diet met the relevant nutrient reference value for all 22 nutrients examined, whereas the Planetary Health Reference Diet contained an inadequate amount of calcium. The environmental impact scores of the Planetary Health Reference Diet and Australian Dietary Guidelines were 31% and 46% lower than the average Australian diet. CONCLUSIONS Significant changes are required for Australians' dietary intake to align more closely with national and global dietary recommendations for health and environmental sustainability.

Abstract
The wicked nature of sustainability challenges facing food systems demands intentional and synergistic actions at multiple scales and sectors. The Southern Cone of Latin America, with its historical legacy of “feeding the world,” presents interesting opportunities for generating insights into potential trajectories and processes for food system transformation. To foster such changes would require the development of collective understanding and agency to effectively realize purposeful and well-informed action toward desirable and sustainable food futures. This in turn demands the transdisciplinary engagement of academia, the private sector, government/policy-makers, community groups, and other institutions, as well as the broader society as food consumers. While the need for contextualized knowledge, priorities and definitions of what sustainable food systems change means is recognized, there is limited literature reporting these differences and critically reflecting on the role of knowledge brokers in knowledge co-production processes. The political nature of these issues requires arenas for dialogue and learning that are cross-sectoral and transcend knowledge generation. This paper presents a case study developed by SARAS Institute, a bridging organization based in Uruguay. This international community of practice co-designed a 3-year multi-stakeholder transdisciplinary process entitled “Knowledges on the Table.” We describe how the process was designed, structured, and facilitated around three phases, two analytical levels and through principles of knowledge co-production. The case study and its insights offer a model that could be useful to inform similar processes led by transdisciplinary communities of practice or bridging institutions in the early stages of transformative work. In itself, it also represents a unique approach to generate a language of collaboration, dialogue, and imagination informed by design skills and methods. While this is part of a longer-term process toward capitalizing on still-unfolding insights and coalitions, we hope that this example helps inspire similar initiatives to imagine, support, and realize contextualized sustainable food system transformations.

Abstract
Food hubs (FHs) providing neighbourhoods with regional food from agroecological production are a promising concept for a sustainable food system transformation. However, their operationalization and scaling are still unclear. We developed a methodological approach that, for the first time, scales out FHs to an entire city (Berlin) based on a 15-min walking distance and socio-culturally oriented sub-districts as underlying spatial units. We considered the population density and the distance to organic groceries, public transportation and between FHs to estimate their most suitable locations. The results reveal an optimal allocation of 231 FHs covering 91% of the city's populated areas in a radius lower than 1 km and almost the entire city within a 1.5 km radius. We found this approach to be a meaningful way to plan the inner-city allocation of FHs from an integrative perspective and to adopt urban policies by considering the local specificities of each neighbourhood. The scaling out of agroecology-based regional FHs in Berlin allows for the creation of a sustainable city-region food system that increases the resilience of the metropolitan food environment. We generally propose a participative and integrative approach in order to realise this process.

Abstract
Political leaders from around the world are demonstrating interest in adopting food policies that account for the economic, health, social and environmental dimensions of food. In the Pacific Islands, decades of experience in implementing multisectoral NCD and climate policy has indicated that operationalising food systems policies will be challenging. We aimed to identify opportunities for food systems sectors to more strongly promote nutrition and environmental sustainability in addition to economic objectives. We conducted a comparative documentary analysis of 37 food systems sector policies in Vanuatu and the Solomon Islands. We applied theories of agenda- setting to examine how the frames employed by different sectors, and evident in policy content, shaped policy priorities and activities. We identified a predominately economic framing of issues affecting food systems sectors. Though there were clear policy aims to produce enough food to meet population dietary requirements and to promote an environmentally resilient food supply, aims operationalised more predominately through policy content were those that increase the contribution of productive sectors to food exports and import substitution. Food systems sectors in the Pacific Islands have clear aims to promote nutritious and environmentally resilient food systems, but policy instruments could more strongly reflect these aims.

Abstract
Articles published in Food Security in 2021 are reviewed, showing a wide range of topics covered. Many articles are directly linked with "food" and associated terms such as "nutritive", "nutrition", "dietary", and "health". Another important group is linked with (food) "production" and a range of connected terms including: "irrigation", "cultivated", "organic", "varieties", "crop", "vegetable", and "land". A third group of terms refers to the scales at which food security is considered: "household", "farmer", "farm", "smallholder", "community", "nation" and "region". A few themes of Food Security are considered: (1) food supply and demand, food prices, and global trade; (2) food security in households; (3) food production; (4) value chains and food systems; (5) the evolution of the concept of food security; and (6) global nutrition. In a last section, perspectives for Food Security are discussed along four lines of thoughts: the level of inter-disciplinary research published in Food Security; the importance of the Social Sciences for food security as a collective good underpinned by other collective goods within food systems; the balance between the Global South and the Global North in Food Security; and a warning that urgent global challenges that vitally interact with food security may be left unattended as a result of the current public health emergency.
