Abstract
As societal progress elevates living standards, the focus on meat consumption has shifted from quantity to quality. In broiler production, optimizing meat quality has become paramount, prompting efforts to refine various meat attributes. Recent advancements in sequencing technologies have revealed the genome's complexity, surpassing previous conceptions. Through experimentation, numerous genetic elements have been linked to crucial meat quality traits in broiler chickens. This review synthesizes the current understanding of genetic determinants associated with meat quality attributes in broilers. Researchers have unveiled the pivotal insights detailed herein by employing diverse genomic methodologies such as QTL-based investigations, candidate gene studies, single-nucleotide polymorphism screening, genome-wide association studies, and RNA sequencing. These studies have identified numerous genes involved in broiler meat quality traits, including meat lightness (COL1A2 and ACAA2), meat yellowness (BCMO1 and GDPD5), fiber diameter (myostatin and LncIRS1), meat pH (PRDX4), tenderness (CAPN1), and intramuscular fat content (miR-24-3p and ANXA6). Consequently, a comprehensive exploration of these genetic elements is imperative to devise novel molecular markers and potential targets, promising to revolutionize strategies for enhancing broiler meat quality.

Abstract
In modern broilers, the period of embryonic development constitutes a greater proportion of a broiler's productive life. Hence, optimum embryonic development can exert a significant influence not only on chick hatchability and hatchling quality but also on overall broiler growth and performance. Further healthy and active hatchlings are correlated with improved posthatch performance. In this regard, probiotics are good candidates to mediate early-life programming. Therefore, we evaluated the effect of In ovo probiotic spray application on broiler hatchability and hatchling quality. The experiment was set out as a completely randomized study with 2 independent trials. In each trial, 540 eggs (Ross 308) were either sprayed with phosphate buffered saline (PBS; control) or probiotics [∼9 log CFU/egg of Lactobacillus rhamnosus NRRL B-442(LR) or Lactobacillus paracasei DUP 13076 (LP)] during incubation. On day 18, eggs were transferred to the hatcher and set up for hatching. Starting on day 19, eggs were observed for hatching to determine the spread of hatch and hatchability. Hatched chicks were then assessed for quality using the Tona and Pasgar score and morphometric measurements including hatchling weight, yolk-free-body-mass and hatchling length were measured. Further, chicks were reared in floor pens for 3 wk to assess posthatch growth. Overall, In ovo probiotic supplementation improved hatchability and hatchling quality. Specifically, the spray application of LP improved hatchability by ∼ 5% without affecting the spread of hatch. Further, both LR and LP significantly improved Pasgar and Tona score, indicating an improvement in hatchling quality. Also, LP and LR significantly improved hatchling weight, yolk-free-body-mass, and posthatch growth in chicks. LR significantly improved hatchling weight and hatchling length (P < 0.05). Moreover, this increase in posthatch growth was positively correlated with hatchling weight in the probiotic groups. Overall, our study demonstrates that In ovo probiotic application exerts a positive effect on hatchability, hatchling quality, and subsequent posthatch growth.

Abstract
Meat quality traits are essential for producing high-quality broilers, but the genetic improvement has been limited by the complexity of measurement methods and the numerous traits involved. To systematically understand the meat quality characteristics of different broiler breeds, this study collected data on slaughter performance, skin color, fat deposition, and meat quality traits of 434 broilers from 12 different breeds in South China. The results showed that there was no significant difference in the live weight and slaughter weight of various broiler breeds at their respective market ages. Commercial broiler breeds such as Xiaobai and Huangma chickens had higher breast muscle and leg muscle rates. The skin and abdominal fat of Huangma chickens cultivated in the consumer market in South China exhibited significantly higher levels of yellowness compared to other varieties. Concerning fat traits, we observed that Wenchang chickens exhibited a strong ability to fat deposition, while the younger breeds showed lower fat deposition. Additionally, there were significant positive correlations found among different traits, including traits related to weight, traits related to fat, and skin color of different parts. Hierarchical clustering analysis revealed that fast-growing and large broiler Xiaobai chickens formed a distinct cluster based on carcass characteristics, skin color, and meat quality traits. Principal component analysis (PCA) was used to extract multiple principal components as substitutes for complex meat quality indicators, establishing a chicken meat quality evaluation model to differentiate between different breeds of chickens. At the same time, we identified 46, 22, and 20 SNP loci and their adjacent genes that were significantly associated with muscle mass traits, fat deposition, and skin color through genome-wide association studies (GWAS). The above results are helpful for systematically understanding the differences and characteristics of meat quality traits among different breeds.

Abstract
This investigation examined the impact of nutritional vitamin E (VE) and Eruca sativa seeds powder (ESSP) on broilers' performance, physiological, and meat quality. A total of 350 two-day-old Arbor Acres broiler chicks were used in this study. Chicks were allocated into five dietary treatments as follows: control (fed a basic diet), VE treatment (fed a basic diet supplemented with 150 mg/kg diet), the third, fourth, and fifth treatments were fed a basic diet supplied by different levels of ESSP (0.1, 0.2 and 0.4 g/kg diet). Outcomes showed that chicks of VE treatment or ESSP (0.2 g/kg) significantly improved vital body weight (BW), body weight gain (BWG) and feed conversion ratio (FCR). Additionally, relevant dressing and hind parts of the carcass for birds of VE treatment or ESSP at different levels were significantly increased. The results showed a significant improvement in meat quality traits. Moreover, ESSP (0.1 and 0.2 g/kg) groups represented a significant decrease in the total bacterial count and E. coli compared with other groups. In conclusion, ESSP positively affected broiler performance, hematological, and immunological indices, carcass characteristics, intestinal bacterial count, meat quality, and cooking properties of the resulting meat, especially at the level of (0.2 g/kg).

Abstract
Poultry meat is an important part of the human diet, and the valorisation of autochthonous breeds is a determinant for the sustainability of the rural areas. The increasing demand for niche products demands for better knowledge of the carcass characteristics and meat quality of these local populations. The present study aims to characterise the roosters' meat from the "Branca" (BR), "Amarela" (AM), "Pedrês Portuguesa" (PP), and "Preta Lusitânica" (PL) breeds. A total of 80 birds (n = 20 per breed) between 38 and 42 weeks old were slaughtered. The physicochemical and nutritional composition were determined in the breast and drumstick meat. The meat of the PL breed had a higher (p ≤ 0.05) pH value, the AM meat revealed a water-holding capacity (WHC) of superior value and moisture content (p ≤ 0.05), while the BR breed had the highest (p ≤ 0.05) ash content. On the other hand, it was observed that the PP meat had a higher (p ≤ 0.05) yellowness index (b*). The breast meat exhibited, in all breeds, a lower pH value, WHC, redness (a*), and lipid content and greater (p ≤ 0.05) lightness (L*), b*, moisture, and ash and protein contents compared to the drumstick. Furthermore, it presented higher (p ≤ 0.05) K, P, and Mg contents and a superior proportion of total and sensorial relevant amino acids. Regarding the fatty acid profile, the breed differences were more significant in the drumstick, with the AM breed lipids presenting a higher (p ≤ 0.05) percentage of MUFAs in the fat, a lower atherogenic index, and a higher (p ≤ 0.05) value for the hypocholesterolemic/hypercholesterolemic fatty acids ratio, while the BR breed lipids presented a higher (p ≤ 0.05) percentage of PUFAs and PUFAs/SFAs ratio and a lower n-6/n-3 ratio. Considering the results obtained, it can be concluded that the meat from these breeds is a wholesome dietary option, distinguished by a favourable overall nutritional composition marked by elevated protein content, reduced lipid amounts, and amino and fatty acid profiles with desirable nutritional indices.

Abstract
A survey was conducted in Hisar, located in Haryana, India, to assess the quality of raw chicken meat. To ensure comprehensive coverage, healthy broiler chickens were obtained from various meat retail outlets in Hisar city, encompassing the majority of such establishments. Additionally, a sample of control chickens was obtained from the Livestock Farm, College of Veterinary Sciences, Lala Lajpat Rai University of Veterinary and Animal Sciences (LUVAS), Hisar, Haryana, India. The raw chicken meat was grouped into two categories, breast cut and thigh cut. The breast muscles, which include pectoralis major and pectoralis minor, and the thigh muscles, which include the abductor muscles, were chosen as the samples for proximate analysis, which included physico-chemical, sensory, and microbiological analyses of raw chicken meat. The analysis of the raw meat in the laboratory revealed inconsistent variations between the control and retail samples in terms of parameters, such as proximate composition, pH, the water-holding capacity (WHC), thiobarbituric acid (TBA), instrumental color analysis, and sensory evaluation. The moisture content of the control breast sample was significantly higher (p < 0.05) than that of the samples from shops 2, 3, and 5. However, it was statistically similar to that of the samples from shops 1, 4, and 6. The total plate and psychrotrophic counts of the control thigh sample were significantly lower than those of the samples from shops 3, 4, 5, and 6. Among the thigh pH values, the samples from shops 1, 2, 5, and 6 had significantly higher pH values than the control sample. The variations in the various parameters were multifactorial and established the superiority of birds slaughtered under laboratory conditions and grown in university farms compared to the raw chicken meat available in retail outlets in Hisar city.

Abstract
The aim of this study was to evaluate the effects of sodium (Na) levels in the drinking water on the performance, carcass yield, and meat quality of slow-growing chickens. A completely randomized design with 4 treatments (4.90; 32.30; 60.53; and 101.0 mg/L of Na in water) and 6 replications, with 20 birds per experimental unit, was adopted. The treatments are evaluated in the following: 10 to 25, 10 to 39, and 10 to 54 days. For slow-growing chickens from 10 to 25 days, the Na levels in the drinking water promoted a quadratic effect for water and feed intake (p<0.05). The inclusion of Na in the drinking water offered to slow-growing chickens from 10 to 39 days resulted in a reduction in voluntary water intake (p<0.05). For slow-growing chickens from 10 to 54 days, the Na levels in the drinking water promoted a quadratic effect for water intake and feed conversion (p<0.05). After 54 days, the slow-growing chickens were slaughtered and it was observed that the Na inclusion in the drinking water offered to slow-growing chickens provided a quadratic effect for cold carcass, breast, and kidney weights and for kidney and liver yields (p<0.05). Liver weight was reduced with increasing Na levels in the drinking water (p<0.05). For the breast cut, the Na levels in the drinking water promoted a quadratic effect for pH24h, drip loss, cooking loss, protein, and fat and an increase in shear force (p<0.05). For the thigh cut, the Na levels in the drinking water increased the pH24h and reduced drip loss and shear force (p<0.05), and a quadratic effect was observed for moisture and fat (p<0.05). Levels of up to 60.53 mg/L of Na promote an increase in feed intake, which provided a higher breast weight and protein content with reduced fat and drip loss.

Abstract
Backyard poultry farming contributes to food security, nutrition, and the regular income of rural farmers in India. Their products have a niche market here and fetch higher prices than those of commercial poultry. Improved varieties are being developed to overcome the slow growth, late sexual maturity, and low production of indigenous breeds, while retaining their positive attributes. A comprehensive study was conducted to analyze the functional attributes of meat from the Jabalpur color (JBC), a colored, improved dual-purpose synthetic line, developed by Nanaji Deshmukh Veterinary Science University, Jabalpur, India. The birds were managed in a deep litter system under a backyard type of housing (night shelter and free range). Primal meat cuts (breast and thigh) of the male birds (n = 20/group) were evaluated at the age of marketing. The corresponding attributes were compared with the results obtained for commercial Cobb (400) broilers. The protein concentration of JBC breast (25.65 ± 0.39 g/100 g of tissue) and thigh (19.04 ± 0.23 g/100 g of tissue) meat was superior (p ≤ 0.05) to that of Cobb broilers. Established assays (in vitro) identified a better (p ≤ 0.05) antioxidation capacity in the JBC meat. High-performance liquid chromatography confirmed a considerable quantity of functional biomolecules (carnosine, anserine, and creatine) in the JBC breast and thigh meat extracts. The average carnosine concentration (mg/g of tissue) was 2.66 ± 0.09 and 1.11 ± 0.04 in the JBC breast and thigh meat, respectively. The mRNA expression was quantified by qRT-PCR for the carnosine-related genes: β-alanine transporter (SLC36A1), carnosine-synthesizing enzyme (CARNS1), and carnosine-degrading enzyme (CNDP2); this explained the comparable carnosine in the JBC and Cobb meat. Meat extracts from both genetic groups (JBC and Cobb) had high anti-glycation potential. Higher protein content and antioxidant capacity, along with the bioactive dipeptides in the JBC meat, herald exciting research opportunities for its use in improving the traditional backyard poultry farming system.

Abstract
Foodborne diseases are mainly caused by the contamination of meat or meat products with pathogenic microorganisms. In this study, we first investigated the in vitro application of TRIS-buffered plasma-activated water (Tb-PAW) on Campylobacter (C.) jejuni and Escherichia (E.) coli, with a reduction of approx. 4.20 ± 0.68 and 5.12 ± 0.46 log10 CFU/mL. Furthermore, chicken and duck thighs (inoculated with C. jejuni or E. coli) and breasts (with natural microflora) with skin were sprayed with Tb-PAW. Samples were packed under a modified atmosphere and stored at 4 °C for 0, 7, and 14 days. The Tb-PAW could reduce C. jejuni on days 7 and 14 (chicken) and E. coli on day 14 (duck) significantly. In chicken, there were no significant differences in sensory, pH-value, color, and antioxidant activity, but %OxyMb levels decreased, whereas %MetMb and %DeoMb increased. In duck, we observed slight differences in pH-value, color, and myoglobin redox forms for the Tb-PAW, which were not perceived by the sensory test persons. With only slight differences in product quality, its application as a spray treatment may be a useful method to reduce C. jejuni and E. coli on chicken and duck carcasses.

Abstract
To meet the demand for chicken meat production, new additives that promote growth and health without adverse effects on meat quality are being investigated. This study was conducted to investigate the effect of protected sodium butyrate (PSB) (0 vs. 2 g/kg), an olive leaf and grape-based by-product (OLG-mix), or a combined supplementation of PSB and OLG-mix on productive performance, antioxidant status, carcass, and meat quality in broilers. PSB improved performance parameters with greater effect in the initial phase. Both, PSB and OLG-mix increased the plasma superoxide dismutase (SOD); however, PSB supplementation was more effective to delay the lipid oxidation of meat from the initial day of storage. OLG-mix produced meat with greater color intensity, b* value and lesser drip losses than PSB. The combination of PSB + OLG-mix did not produce more marked effects that the individual administration; except to control the oxidation of meat. Linear and positive correlations between antioxidant enzymes and weight gain were observed. Significant linear and negative relationships were quantified between plasma SOD and meat lipid oxidation according to dietary treatment. Therefore, the present study would be a first approximation to the possibilities for predicting growth range and meat quality through the evaluation of the blood oxidative status.

<p>The increasing demand for free-range poultry products has led to a surge in their availability in the market, prompting a potential decline in premium prices associated with these products. This shift places considerable pressure on upstream costs in chicken production. A comprehensive under-standing of its impact on the environment is essential to ensure the success of commercial and industrial free-range chicken production. However, there exists a significant knowledge gap concerning the emission and concentrations of volatile organic compounds (VOCs) from organic-free range chicken, and their environmental implications have yet to be understood. We aim to address this critical knowledge gap by elucidating the role of VOC emissions in chicken production and assessing their impact on human and animal health, as well as environmental challenges. Understanding the implications of VOC emissions is essential for promoting sustainable and responsible free-range chicken farming practices. By identifying the sources of VOC emissions and their impacts, stakeholders can implement appropriate measures to optimize air quality and enhance the well-being of chickens and workers. Ultimately, this review highlights the role of VOCs in animal production, providing valuable insights for improving the efficiency, environmental sustainability and welfare aspects of free-range chicken farming.</p>

Abstract
This study aimed to determine the carcass, visceral organ, and meat properties according to the sex in slow growing broilers (SGB) and fast growing broilers (FGB). Six broilers from each genotype and sex group were slaughtered every week. It was determined that the difference between SGB and FGB in terms of carcass yield occurred at the highest level at 5 weeks and this difference continued until the age of 10 weeks. The weight percentages of all visceral organs examined in FGB were lower than in SGB. Higher values of pH, lightness, and cooking loss were determined in breast and thigh meat of FGB compared with SGB (P < 0.05). The effects of genotype on protein levels of breast and leg meats were found to be insignificant. The fat level in breast meat was insignificant between genotypes after the fifth week of fattening period. There was no difference between the sexes regarding meat quality in both genotypes. When FGB and SGB were reared under the intensive conditions for 10 weeks, it was observed that visceral organs developed in harmony with body weight, especially in SGB during the 10 weeks of fattening period and SGB maintained their superiority in terms of meat quality.

Abstract
The aim of the present study was to evaluate the efficiency of selection for body growth and its association with carcass and meat quality traits in the red-winged tinamou. Two experimental groups were selected based on the selection index: selection group with a higher index (TinamouS) and commercial group with a lower index (TinamouC). Weight at 180 days and slaughter weight were significantly higher (p < 0.05) in the TinamouS group, as were hot carcass weight, skinless breast weight, wing weight, and thigh and drumstick weight. The meat quality traits or sensory attributes did not differ significantly (p > 0.05) between groups. A significant positive correlation (0.59; p < 0.05) was found between shear force and chewability and a significant negative correlation (- 0.59; p < 0.05) between aroma intensity and strange aroma. The present study suggests that the selection index promotes greater body growth and preserves meat quality and sensory traits in red-winged tinamou.

Abstract
Broiler farming is the fastest-growing animal production sector and broiler meat is the second most-consumed meat in the world. The intensification of broiler production often has a negative impact on the meat quality and carcass characteristics. Consumers, however, expect a quality product from animals reared extensively on farms providing good animal welfare, often intuitively associated with extensive farming practices. Therefore, this literature review investigates how the critical factors contributing to the degree of extensiveness of broiler production affect the quality of meat. We used the data from scientific articles published in the years 2012-2021 to analyze the effect of diet (n = 409), genetics (n = 86), enrichment (n = 25), and stocking density (n = 20) on meat quality and carcass characteristics. Minerals and microelements supplementation in the diet improved all the meat quality aspects: sensory, physical, and chemical in most studies. Minerals and enzymes in the diet had beneficial effects on carcass characteristics, unlike feed restriction and ingredient substitutions. The impact of outdoor access on meat quality and carcass characteristics was most frequently examined, in contrast to the use of perches or effects of litter quality. Overall, enrichment did not affect the meat's sensory or physical parameters, but outdoor access improved its lipid composition. Lower stocking density deteriorated intramuscular fat content, decreased tenderness and juiciness, yet lowered cooking and drip loss, and increased carcass and breast muscle yields. When it comes to genetics, in general, slow growing broiler strains have better meat quality parameters, especially regarding yellowness (b*), redness (a*), cooking and drip loss. Our review shows that the factors which contribute to extensiveness of broiler production systems and birds' welfare also affect meat quality and the carcass characteristics.

Abstract
The study was carried out to investigate the carcass and meat quality traits and nutritional profile of the meat of the Kadaknath, a unique native chicken breed in comparison with commercial broilers. The yield of the carcass, breast and giblets of the Kadaknath was lesser (p < 0.01), while that of the legs, wings, back, and neck was higher (p < 0.01) than broilers. The meat of the Kadaknath was significantly (p < 0.0001) darker (42.44, 50.92) and more yellow (6.23, 8.99) than broilers. The decline in pH of the meat was lower (p < 0.001) in the Kadaknath compared to broilers. Kadaknath meat had more protein and less fat, moisture and ash content than broilers (p < 0.01). Furthermore, it was richer (p < 0.01) in 11 amino acids, including those which are known to impart a sweet and umami taste, than the meat of broilers (3 amino acids). Both genotypes were almost similar in meeting the daily requirements of indispensable amino acids of adult human. The study concluded that the Kadaknath differed in carcass and meat quality characteristics from the broilers, and the nutritional quality of Kadaknath meat in terms of high protein and less fat and higher content of amino acids (tasty type) was better in Kadaknath meat as compared to broiler meat.

Abstract
Simple Summary Local breeds play a crucial role in the rural economies of many countries, as a considerable valuable genetic resource and, well adapted to the environment, their production can reduce the negative impact of intensive production systems. Portuguese chicken breeds are almost extinct, with the “Branca” population presenting the most worrying situation. Bred as a dual-purpose breed, the characterization of meat quality is fundamental to the conservation and promotion of this population., by increasing the value on these small-scale farms production. The carcass characteristics and meat quality of the “Branca” breed were evaluated, showing an interesting physicochemical profile, with good proportion of minerals, essential fatty acids (EFA) and n-3-PUFAs (docosapentanoic (C22:5n-3, DPA), and docosahexaenoic (C22:6n-3, DHA) acids), ensuring that consumers receive a highly nutritional and differentiated product. Abstract The “Branca” breed is a dual-purpose Portuguese autochthonous chicken breed, produced in extensive systems and in small flocks, especially in the Entre Douro and Minho regions. A total of 40 birds (n = 20/sex) were slaughtered between 38 and 42 weeks (males) and 110 and 120 weeks (females), and carcass and meat quality parameters were evaluated. The results showed significantly higher weights and differences for males between sexes and pieces (p ≤ 0.05) in the meat physicochemical composition. Water holding capacity (WRC), moisture and ash contents were influenced by sex. They were higher in males in the breast and drumstick and lightness (L*) and lipid content were higher in females (p ≤ 0.05). The breast meat presented greater lightness, moisture, ash and protein contents, while the drumstick showed a higher pH value, redness (a*) and lipid content, in both sexes (p ≤ 0.05). Regarding the nutritional properties, “Branca” meat revealed a good proportion of minerals and the female meat showed, in both pieces (p ≤ 0.05), significantly lower values for total saturated fatty acids (SFAs) and higher values for monounsaturated fatty acids (MUFAs). Breast meat was richer in n-3-PUFAs (C22:5n-3 and C22:6n-3) in both sexes (p ≤ 0.05). Considering the results obtained, it can be concluded that “Branca” breed meat is a healthy food characterized by a good general nutritional profile.

Abstract
The study evaluated effects of L-serine on lipid profile, performance, carcass weight and small intestinal parameters in heat-stressed broiler chickens subjected to feed restriction. Broiler chickens were divided into four groups, comprising 30 each. Group 1, feed restriction (FR); Group 2, feed restriction + L-serine (200 mg/kg) (FR + L-serine); Group 3, ad libitum (AL); Group 4, ad libitum + L-serine (200 mg/kg) (AL + L-serine). L-serine was administered orally from days 1 to 14, and feed restriction was performed on days 7-14. Serum harvested from blood samples on days 21, 28 and 35 was evaluated for lipid profile. Feed and water intake, live weight gain, organ and carcass weight were measured. At 35 days old, broiler chickens (n = 7) per group were sacrificed to evaluate small intestinal morphology. Temperature-humidity index in the pen (30.88 ± 0.81) was above thermoneutral zone, indicating that chickens were subjected to heat stress. Concentrations of low-density lipoprotein, total cholesterol and total triglycerides were lower (p < 0.05), while higher concentration of high-density lipoprotein was recorded in L-serine groups than in the controls. Feed intake and live weight gain on day 35 in L-serine groups were higher (p < 0.05) than in controls. In L-serine groups, liver, spleen, pancreas and heart weight were higher, but abdominal fat was lower than in FR and AL groups. Villus height:crypt height ratio and area of villus surface were highest in L-serine groups than any other group. In conclusion, L-serine decreased low-density lipoprotein, increased feed intake, live weight, organ and carcass weight, villus height:crypt height ratio and villus surface area.

Abstract
This study investigated the welfare of a slow-growing broiler with a commercially available fast-growing breed housed in a free-range and conventional deep litter housing system. There were four main groups (2 genotypes x 2 housing systems), and each main group consisted of 5 replicates. Ante-mortem and postmortem health-based welfare indicators wıth fear reactıons and distribution of severity of them in 200 male chicks (100 slow growing, 100 fast growing) were investigated. All welfare parameters investigated were found to be significantly different between both broiler genotypes. No significant differences were detected for all broiler welfare parameters between the two housing systems. There were significant genotype x housing system interactions for breast dirtiness and feather cover of the birds (P < 0.001). In conclusion, it can be said that slow-growing broilers express more health-based indicators of positive welfare, and they might be more suitable for free-range broiler meat production. Planning further studies especially in commercial conditions that take into account economic efficiency as well as animal welfare and growth performance would be very beneficial.

Abstract
Simple Summary The assessment of traditional products is important for the sustainability of agricultural systems and the preservation of a unique gastronomic heritage. The present study aims to determine the chemical composition of “Galo de “Barcelos”” (“Barcelos” Rooster) raw meat, used in the preparation of the typical Portuguese dish “Roasted Rooster from “Barcelos””, in order to evaluate and protect this gastronomic and cultural tradition. The influence of the genotype on the final product was verified, concerning total protein, and fat contents, and a favorable ratio of n-6/n-3 fatty acids of the Sasso line was compared to the “Amarela” breed, contributing to the promotion of its gastronomic potential. Abstract Ten roosters produced according to “Barcelos Confraria” rules and ten roosters of autochthonous “Amarela” breed, reared on a similar traditional production system, were analyzed, and the chemical profile of two of the most significant meat portions, breast and drumstick, was determined. The results demonstrated that the “Barcelos” rooster raw meat is rich in proteins (22.3%) and fat (4.31%), particularly in monounsaturated fatty acids (39.1%). Significant differences (p ≤ 0.01) were observed, with the breast having a higher protein content (25.1 vs. 19.7%) and less fat (1.9% vs. 6.7%), compared to the drumstick. The fatty acid profile revealed (SFA 30.0%, MUFA 39.1%, and PUFA 24.6%) a similar composition to the roosters reared in the traditional or organic production systems, such as the “Amarela” autochthonous rooster. The “Barcelos” rooster can be regarded as a highly nutritional meat, with an interesting chemical profile ensuring a high-quality traditional product to consumers.

Abstract
The objective of the present study was to compare the breast meat quality and metabolomic characteristics from broilers that were raised in conventional (conventional farm reared-broilers; CB, n = 20) and legally approved animal welfare farms (welfare farm reared-broilers; WB, n = 20) in aerobic cold storage (1, 3, 5, and 7 d). Compared to CB chickens, the WB chickens had a larger floor size as well as lower stocking density, atmospheric ammonia, and nipple-shared chicken counts. The results demonstrated significantly higher pH, L⁎- and b⁎-value, and lower shear force in CB compared to WB during cold storage. Using 1H NMR analysis, 25 compounds were identified in the chicken breast meat. Partial least square-discriminant analysis (PLS-DA) was performed based on the identified metabolites. The content of 15 metabolites (1 di-peptide, 9 free amino acids, 2 glycolytic potential-related products, 2 nucleotide-related products, and 1 organic acid) was significantly different due to the rearing environment (CB vs. WB). Among them, all free amino acids were higher in CB than in WB. Six free amino acids (glycine, isoleucine, leucine, phenylalanine, valine, and β-alanine) had variable importance in projection (VIP) score >1, regardless of the number of cold storage days. Therefore, these compounds in the breast meat may be used as potential markers to determine the rearing environment of broilers. Also, this result might be an indication of stress-related meat quality changes in broilers.

Abstract
In order to breed a strain that has heat tolerance and meat productivity, the commercial red-feathered Taiwan native chickens were male (F group), and heat stress resistant strain Taiwan native chickens (Taishu-9, bred by the Taiwan Livestock Research Institute) were female (TR9 group) to hybridize to generate offspring (F9 group). Three breeds of birds (male) were conducted to compare acute heat stress and meat quality. At 12 weeks of age, TR9 group showed the significantly lowest activity of plasma creatine kinase upon acute heat stress which indicated heat stress resistant in TR9 group as expected. In addition, only limited thermoregulation was obtained in F9 group, while F group exhibited almost no acute heat stress tolerance ability. After slaughtered at 16 weeks of age, the F group revealed poor meat quality in breast meat as pale, soft, and exudative (PSE)-like muscle samples according to CIE L* and pH value. The F9 group was an offspring of TR9 group with heat tolerance, but it only demonstrated limitation of heat resistance. However, the improve meat quality was obtained in F9 group compared to F group, and that may be contributed from better anti-stress as like as TR9 group during slaughtering process.

Abstract
The selection of broilers for augmented growth rate and breast yield has been accompanied by deterioration in meat quality. To characterise the meat quality differences between slow- (SG) and fast-growing broilers (FG), Xueshan and Ross 308 chickens were employed to determine the mechanisms causing these differences. SG meat was found to display more redness and yellowness, higher shear force, pH24h, and protein content, with lower intramuscular fat (IMF) content than FG meat. Further, based on comparative phosphoproteomic analysis (SG/FG), upregulated phosphorylated myofibrillar proteins resulted in larger fibres, which contributed to lower pressing loss and tenderness. The phosphoproteins of glycolytic enzymes, phosphorylase kinases, and calcium-related proteins were significantly downregulated, which reduced the acidity of the meat. SLC7A5 at Ser21, MRC2 at Ser1359 and CRAT at Ser341, AUP1 at Ser377 positively affected protein and IMF deposition, respectively. Together, these phosphoproteins elicit vital information for the genetic improvement of chicken meat quality.

Abstract
The risk of salmonellosis is expected to increase with the rise in the consumption of poultry meat. The aim of this study was to investigate the combination treatment of peroxyacetic acid (PAA) or lactic acid (LA) with UV-C against Salmonella Enteritidis biofilms formed on food contact surface (stainless steel [SS], silicone rubber [SR], and ultra-high molecular weight polyethylene [UHMWPE]) and chicken skin. The biofilm on food contact surface and chicken skin was significantly decreased (P < 0.05) by combination treatment of PAA or LA with UV-C. Combination treatment of PAA (50-500 μg/mL) with UV-C (5 and 10 min) reduced 3.10-6.41 log CFU/cm2 and LA (0.5-2.0%) with UV-C (5 and 10 min) reduced 3.35-6.41 log CFU/cm2 of S. Enteritidis biofilms on food contact surface. Salmonella Enteritidis biofilms on chicken skin was reduced around 2 log CFU/g with minor quality changes in color and texture by combination treatment of PAA (500 μg/mL) or LA (2.0%) with UV-C (10 min). Additional reduction occurred on SS and UHMWPE by PAA or LA with UV-C, while only LA with UV-C caused additional reduction on chicken skin. Also, it was visualized that the biofilm on food contact surface and chicken skin was removed through field emission scanning electron microscopy (FESEM) and death of cells constituting the biofilm was confirmed through confocal laser scanning microscopy (CLSM). These results indicating that the combination treatment of PAA or LA with UV-C could be used for S. Enteritidis biofilm control strategy in poultry industry.

Abstract
The aim of this study was to evaluate the effect of different feed restriction regimens on performance, behavioral patterns, blood cortisol, and carcass parameters in Sasso broilers. Sixty healthy 1-day-old unsexed Sasso chicks were randomly assigned to three groups (20 chicks per group) and each group was divided into 4 replicates with 5 chicks each based on feed restriction program during the rearing period (60 days). The first group (G1) is control in which birds were fed ad libitum had free access to feed (no restriction). The second group (G2) was subjected to temporary feed restriction at the first 2 weeks as birds had access to feed for 12 h only after that they had free access to feed until the end of the experimental period. The third one (G3) was subjected to continuous feed restriction as birds had free access to feed for 12 h only throughout the rearing periods. During the study period, growth performance and behavioral patterns were estimated. At the end of the study, blood samples for cortisol testing were taken. Three birds from each group were slaughtered at the end of the study to see how the feed restriction affected carcass parameters. Feed restriction had a substantial impact (P ≤ 0.05) on final body weight and carcass parameters. Feed restriction elevated blood cortisol significantly (P = 0.004). Feed restriction showed a significant impact on some behaviors as feeding, stretching, preening, and aggression. Overall, different feed restriction programs had a wide effect on growth performance, behaviors, cortisol concentration, and carcass parameters of Sasso broilers.

Abstract
Essential oils are potential antimicrobial alternatives and their applications in animal feeds are limited due to their fast absorption in the upper gastrointestinal tract. This study investigated the effects of encapsulated cinnamaldehyde (CIN) at 50 mg/kg or 100 mg/kg on the growth performance, organ weights, meat quality, intestinal morphology, jejunal gene expression, nutrient digestibility, and ileal and cecal microbiota. A total of 320 male day-old broiler Cobb-500 chicks were randomly allocated to four treatments with eight pens per treatment (10 birds per pen): 1) basal diet (negative control, NC); 2) basal diet supplemented with 30 mg/kg avilamycin premix (positive control, PC); 3) basal diet with 50 mg/kg encapsulated CIN (EOL); 4) basal diet with 100 mg/kg encapsulated CIN (EOH). Despite birds fed EOH tended to increase (P = 0.05) meat pH at 24 h, all pH values were normal. Similar to PC group, meats from birds fed EOL and EOH showed a reduced (P < 0.05) Warner-Bratzler force shear (WBFS) compared to the NC group. The highest villus to crypt ratios (VH/CD; P < 0.05) were observed in broilers fed either EOL or EOH, with an average of 14.67% and 15.13% in the duodenum and 15.13% and 13.58% in the jejunum, respectively. For jejunal gene expressions, only six out of the 11 studied genes showed statistically significant differences among the dietary treatments. Gene expressions of cationic amino acid transporter 1 (CAT-1) and neutral amino acid transporter 1 (B0AT-1) were upregulated in EOH-fed birds compared to PC and NC-fed birds (P < 0.05), respectively; while the expression of proliferating cell nuclear antigen (PCNA) was downregulated in EOL-fed birds when compared to NC birds (P < 0.05). Nonetheless, the expressions of cadherin 1 (CDH-1), zonula occludens 1 (ZO-1), and maltase-glucoamylase (MG) were all upregulated (P < 0.05) in EOH-fed birds compared to PC-fed birds. The apparent ileal digestibility (AID) of dry matter, crude protein, crude fat and of all 18 tested amino acids increased in EOL-fed birds (P < 0.01). Additionally, relative abundances (%) of ileal Proteobacteria decreased, while ileal and cecal Lactobacillus increased in EOH-fed birds (P < 0.05). In conclusion, dietary encapsulated CIN improved meat quality and gut health by reducing meat WBFS, increasing VH/CD in intestines, jejunal gene expressions, AID of nutrients and beneficial ileal and cecal microbiota composition.

Abstract
The use of byproducts generated by the food industry is a strategy that can have advantages in economic, technological, nutritional, and environmental terms. The aim of this study was to evaluate the influence of the addition of byproducts of chicken slaughter (skin and abdominal fat) on the quality of fresh sausage stored under freezing. Partial chemical characterization of the byproducts was performed. Three batches of chicken sausage were prepared with skin, abdominal fat, and with skin and abdominal fat added; thereafter were stored for 135 d in freezer. Partial chemical composition, physical characteristics, microbiological quality, and product acceptance were determined. Skin and abdominal fat are rich sources of fat. However, the addition of skin provided to sausage higher protein content, hardness, water retention capacity, and less cooking loss compared to added abdominal fat treatments. In contrast, the addition of abdominal fat provided higher lipid content to the sausages and displaying higher acceptability. The addition of byproducts in fresh sausage manufacture would be a great strategy to increase the chicken sausage value, with physicochemical quality improvement, and without sensory acceptability issues.

Abstract
In the present study, we investigated the characteristics of chicken meat fermented with Penicillium nalgiovense and Penicillium chrysogenum. Hardness and springiness gradually decreased, while gumminess gradually increased during fermentation. Fermentation with P. chrysogenum led to higher hardness and lower gumminess than fermentation with P. nalgiovense. Fermentation with two molds resulted in similar microstructure, such as granule formation and fractured myofibril. The highest percentage of secondary structure was ɑ-helix, and tyrosine residues were buried after fermentation. P. nalgiovense-fermented samples contained more bound water, lower relative content of alkanes, and higher relative content of aldehydes than P. chrysogenum-fermented samples.

Abstract
RESUMO Objetivou-se avaliar a influência da suplementação com minerais biocomplexados sobre a qualidade da carne de frangos da linhagem Label Rouge, de ambos os sexos, criados em sistema alternativo. O delineamento experimental foi inteiramente ao acaso (DIC), disposto em esquema fatorial (3x2), sendo três dietas (controle; 0,50ppm de selênio; 0,40ppm de cromo) e dois sexos. Para a estabilidade lipídica, foi utilizado o DIC, disposto em esquema fatorial (3x2x2), sendo três dietas, dois sexos e dois tempos de armazenamento (zero e 12 meses). Os parâmetros avaliados no peito e na coxa foram: pH final, cor (L* - luminosidade, a* - índice de vermelho, b* - índice de amarelo, C* - índice de saturação e h* - ângulo de tonalidade), perda de peso por cozimento (PPC), força de cisalhamento (FC) e estabilidade lipídica. Além disso, foram avaliadas a proporção das formas químicas da mioglobina da coxa e a quantificação do conteúdo de selênio no peito. Não houve efeito isolado da dieta sobre os parâmetros físicos e químicos do peito e da coxa e sobre a concentração de selênio no peito. As fêmeas apresentaram médias superiores de L* (57,57), b* (10,55) e C* (10,60) do peito; e os machos de L* (55,09) da coxa. Entre os machos, as aves alimentadas com a dieta controle e com cromo expressaram valores superiores de FC da coxa em relação às suplementadas com selênio; para o tratamento com cromo, os machos apresentaram média superior de FC da coxa e, em contrapartida, para o tratamento com selênio, as fêmeas manifestaram a maior média. As amostras submetidas ao período de 12 meses de armazenamento mostraram maiores valores de substâncias reativas ao ácido tiobarbitúrico (TBARS) em ambos os cortes. A suplementação com cromo e selênio biocomplexados não provocou alterações na qualidade da carne; as fêmeas demonstraram melhores atributos de qualidade da carne.

Abstract
The aim of the study was to determine the effect of caponizing on body weight and physicochemical properties of meat of the capons – hybrids obtained from the crossing of hens of the Yellowleg Partridge (Ż-33) breed with meat roosters. The study covered 80 hybrid roosters, which were randomly assigned to two groups of 40 animals each (8 boxes of 10 birds in each group). Group I (control) consisted of uncastrated roosters while group II included birds, which were castrated at 8 weeks of age under local anaesthesia by a vet. Birds were fed ad libitum with the same standard diets and kept on litter under optimal environmental conditions with a stocking density of 7 animals/ m2. At the end of fattening, i.e. in the 20th week of life, 8 birds with a body weight close to the group average were selected from each group for slaughter. After slaughter, the effectiveness of the procedure was checked (lack of testicles), then the slaughter performance of birds, physicochemical parameters of the pectoral and leg muscles were determined, and sensory evaluation was performed. The procedure of castration of hybrid roosters had a positive effect on body weight, feed conversion ratio and carcass traits. The pectoral and leg muscles of the capons were characterized by better water absorption, tenderness and sensory evaluation compared to roosters. Among the assessed groups of birds there was also a variation in the colouring of whole carcasses and muscles, which were lighter (L*), more yellow (b*) and less red (a*) in caponized birds. In addition, the castration procedure had a positive effect on the total protein content in both the pectoral and leg muscles, which in turn, with a higher raw fat content, were distinguished by a favourable ratio of n-6/n-3 polyunsaturated fatty acids (PUFA). Based on the results, it can be concluded that the hybrids obtained from the crossbreeding of the Yellowleg Partridge (Ż-33) and Ross 308 meat roosters are good choice for capon production. They can complement poultry meat production with a niche product for consumers looking for products of exceptional quality.

Abstract
This study was made to determine the effects of genotype and housing system on physical quality characteristics of breast and leg meat of broilers under experimental conditions. The 150 slow-growing and 150 fast-growing 1 d old chicks were divided into three sub-groups with indoor raised slatted plastic floor, indoor concrete floor with rice hull litter, and free-range housing systems (2 genotype groups × 3 housing systems). All birds were offered the same diet and were housed in similar conditions until they were 56 d old. At slaughter, 10 birds from each main group were selected randomly to determine the quality characteristics of the meat. In total, 60 breast meat pieces (pectoralis major muscle) and 60 legs of the chickens were used for meat quality analysis including pH, shear force, and colour characteristics such as lightness ( L ∗ ), redness ( a ∗ ), yellowness ( b ∗ ), saturation ( C ∗ ), and hue angle ( h ∗ ). The pH of breast meat was significantly affected by genotype and housing system ( P < 0.001 and P < 0.001 ). There were significant genotype × housing system interactions for pH ( P < 0.015 and P < 0.001 ) and shear force values ( P < 0.007 and P < 0.012 ) of leg and breast meat. There were no significant effects of genotype and housing system on leg and breast meat colour properties except for effects of genotype on redness ( a ∗ ) of breast meat ( p < 0.005 ) and effects of housing on redness of leg meat colour ( p < 0.031 ). Slow-growing chickens and chickens housed in deep litter had a higher redness (darker) value of breast and leg meat colour compared to fast-growing birds and free range and slatted floor. In conclusion, it can be said that fast-growing broilers may be more appropriate for slatted plastic floor housing and slow-growing broilers may be more suitable for a free-range housing system, but further research on factors affecting meat quality would be very beneficial, especially in slow-growing broilers.

Abstract
Despite consumers' belief that access to an outdoor range improves chicken welfare, still little is known about whether this is true and whether individual ranging profiles relate to the birds' welfare. The aim of the present study was to identify and compare welfare issues of the traditional broiler hybrid Sasso and the Polish heritage chicken Green-legged Partridge, having outdoor access, and examine if the birds' welfare status was associated with the ranging profile: outdoor-preferring, moderate-outdoor, and indoor-preferring. In August 2018, 60 non-beak trimmed birds per genetic strain were housed in groups of 10 from weeks 5 to 10, under conditions exceeding EU requirements of organic meat chicken production. Each pen had access to an individual outdoor range that was video-recorded continuously to obtain frequencies of individual birds' use of the ranges. Plumage condition, comb pecking wounds, skin injuries, dirtiness, toe damage, eye pathologies, footpad dermatitis, hock burns, respiratory infections, diarrhea, and walking difficulties were assessed at the end of the experiment. Statistical analysis was conducted applying generalized linear mixed models, with binomial distribution and logit link using SAS software, applying breed and ranging profile as fixed factors and their interaction, with pen as random factor. A tendency for more respiratory infections was observed in Sasso birds from each ranging profile, as compared to matching ranging profiles presented by Green-legged Partridges (outdoor-preferring: P = 0.0012; moderate-outdoor: P < 0.0001; and indoor-preferring: P = 0.0247). Indoor-preferring Green-legged Partridges tended to present more respiratory infections, as compared to the 2 other ranging profiles within the breed (outdoor-preferring: P = 0.0291; moderate-outdoor: P = 0.0448). Regardless of the breed, toe damages were more frequent in indoor-preferring birds, as compared to other ranging profiles (P = 0.017). It remains unknown whether the use of outdoor areas prevents development of welfare issues or if birds with a suboptimal welfare condition become indoor-preferring individuals.

Abstract
The present study compared certain quality features and sensory attributes of the meat obtained from three different chicken genotypes: two endangered slow-growing indigenous breeds (Padovana: PAD, Polverara: POL) and a commercial broiler (Hybrid). Chickens (n = 42/genotype) were slaughtered at their commercial slaughter age: 183 days for PAD and POL chickens, and 35 days for the Hybrid. Breast and leg meat were dissected and used for qualitative evaluations. Results highlighted that genotype significantly affected final breast weight, with Hybrid showing higher values than both indigenous chickens. Conversely, PAD and POL meat was instrumentally tougher and richer in haem iron compared to the Hybrid. The sensory analysis conducted by a trained panel showed that the textural aspects and metallic flavor perception of PAD and POL meat differed from that of the Hybrid. These aspects were probably responsible for the lower overall acceptability of the PAD and POL meat compared to the Hybrid, as expressed by the consumer panel. A key step in making PAD and POL meat acceptable to consumers and stimulating its market seems thus the development of appropriate marketing strategies to transform product peculiarities in strength points.

Abstract
Two experimental trials on commercial broiler (Ross-308) were conducted to evaluate the carryover effect of artificial insemination (AI) in parent flock (PF) kept in cages (C), and on floor (F) in comparison to natural mating (NM) in floored PF. A total of 900 broiler chicks were obtained from 38-week-old PF (peak production), representing C, F, and NM evenly during first trial, whereas in second trial, similar number of chicks were obtained from same PF during postpeak phase (55 wk of age). Subsequent effects of AI and NM in PF were evaluated by bacteriology, posthatch mortality, growth performance, immune response, and carcass traits on experimental birds (broiler). Chicks being produced through NM exhibited significantly (P ≤ 0.05) improved growth performance (feed conversion ratio, weight gain, European efficiency factor) along with the least (P ≤ 0.05) posthatch mortality and prevalence of Escherichia coli, Salmonella Pullorum, and Mycoplasma gallisepticum. Moreover, the experimental chicks obtained from floored PF subjected to AI particularly during postpeak phase expressed the highest (P ≤ 0.05) contamination of the said pathogens along with posthatch mortality. However, immune response against New Castle disease and infectious bronchitis vaccines and slaughtering parameters remained nonsignificant (P > 0.05) among the 3 treatments under both trials. It is concluded that the best growth performance along with the least depletion and microbial load of concerned pathogens were being pertained by the experimental birds representing NM.

Abstract
The present study was conducted to investigate growth performance, carcass characteristics, short-chain fatty acids, fatty acid composition in abdominal fat, and serum parameters in broiler chickens fed diets containing corn oil, coconut oil, or black soldier fly larvae (BSFL) oil at the level of 50 g per kg of diet during the 30-day-feeding period. A total 450 one-day-old male broiler chicks (Ross 308) were randomly allocated to one of 3 dietary groups. Each treatment had 10 replicates with 15 chicks per replicate. Feed conversion ratio was decreased in the coconut and BSFL oil group compared with the corn oil group. Dietary BSFL oil increased ileal weight-to-length ratio at day 30 after hatch. Dietary BSFL oil increased significantly ileal branched-chain fatty acid (P < 0.05) and moderately total short-chain fatty acid in 15-day-old broilers (P = 0.074). At day 30, ileal propionate was highest in the coconut oil group but cecal propionate was highest (P < 0.05) in the BSFL oil group. Fatty acid composition of abdominal fat was affected by dietary fat sources. Especially, chickens fed diets containing coconut oil or BSFL oil had higher contents (P < 0.05) of saturated fatty acid being dominant in lauric and myristic acids compared with those fed on corn oil. On the other hand, the reverse trend was noted (P < 0.05) as to polyunsaturated fatty acids being dominant in corn oil compared with coconut oil and BSFL oil. Coconut oil vs. corn oil significantly increased total and high-density lipoprotein cholesterol. Finally, BSFL oil vs. corn oil significantly increased total antioxidant capacity in chickens. It is concluded that dietary BSFL oil improves feed conversion ratio and increases the incorporation of medium-chain fatty acids into abdominal fat pad and serum antioxidant capacity in broiler chickens.

Abstract
The aim of this study was to compare egg quality, carcass, meat characteristics, and bone properties of Taihang chickens in 2 different housing systems at various ages. A total of 168 birds were selected and randomly allocated to 2 groups at 23 wks and raised in conventional cage (CC) or flattening on floor (FF) housing system, respectively. FF hens' egg weight, albumen height, and Haugh unit were higher (P < 0.05), and yolk weight was lower (P < 0.001) than those of the CC hens. Egg quantity of FF hens was higher than that of the CC hens (P < 0.01). The FF hens' weight (P < 0.05) and breast meat percent (P < 0.01) were higher than those of the CC hens. The highest live body and carcass weight were observed at 57 wk (both P < 0.01), whereas the highest semieviscerated percentage (P < 0.01) and meat weight of breast and thigh (P < 0.05) were shown at 49 wk. The highest eviscerated percentage and thigh meat were displayed at 41 and 32 wk, respectively (P < 0.01). For meat color, the lightness of both breast and thigh meat in the FF group was significantly reduced compared with those of the CC group (P < 0.01 and P < 0.05). FF hens' humerus weight and breaking strength (both P < 0.01) and tibia breaking strength (P < 0.05) were significantly higher than those of the CC hens. Femur breaking strength was significantly affected by hens' age (P < 0.01). Egg weight, albumen height, Haugh unit, yolk color (all P < 0.01), pH of thigh meat, semieviscerated, and eviscerated weight (all P < 0.05) were influenced by the interaction of housing system and age, whereas no change in moisture loss rate, meat color, shearing force, and bone quality was found (P > 0.05). In summary, in the 2 housing systems, hens' age and their interaction could affect slaughter performance, quality of egg, meat, and bone of Taihang chickens. In addition, the results of the present study support a theoretical basis for the development and utilization of Taihang chickens in accordance with the FF system.

Abstract
Abstract This work describes the analysis of different chicken tissues (gizzard, heart, and liver) both raw and cooked with seasonings in different types of cooking pots (iron pot, , aluminum pot and hammered aluminum pot) commonly used in Brazil. The samples were decomposed using microwave-assisted digestion with diluted nitric acid; and the contents of Al, Ca, Cu, Fe, Mn and Ni were determined using Microwave Induced Plasma Optical Emission Spectrometry (MIP OES). The Fe content was also determined by Flame Atomic Absorption Spectrometry, and the comparison showed good accuracy of the method. The limits of quantification were below 0.011 mg kg-1, showing adequate detectability. Cooking in the different pots increased the ash and protein contents as well as decreased the moisture content. Box-plot and Principal Components Analysis showed that Ca and Fe contents present the largest variations in the samples, followed by Al and moisture. The variables Al, Cu, Mn, Ni, ash, and protein presented similar behavior after cooking in all different pots. In addition, liver cooked in both iron and hammered aluminum pots presented similar Fe contents, while gizzard and heart showed similar Ca contents.

Abstract
Following the ban on the use of antibiotics as growth enhancers in 2006 by the European Union, alternative products have been sought. Inulin is a prebiotic that is found naturally in many plants. It reaches large intestine of animals unaltered, where it is fermented by beneficial bacteria that comprise the intestinal microbiota. Inulin also inhibits the growth of pathogenic bacteria. Consumption of inulin in chicken diets improves performance at slaughter; nevertheless, little is known about its effects on poultry meat. Therefore, the objective of this study was to evaluate the effects of inulin on feeding of broilers challenged with Clostridium perfringens (4.0 × 108 CFU) and its consequences on the quality of breast meat. Four hundred Cobb male broiler chickens were distributed in a completely randomized design with four treatments and five replications each, as follows: T1: control treatment, basal diet (DB); T2: DB + 21-day challenged with C. perfringens orally; T3: DB + 21-day challenge with C. perfringens orally +25 mg/kg inulin; T4: DB + 21-day challenge by C. perfringens orally +4.4 mg/kg lincomycin. There were no significant differences between treatments in terms of pH, color parameters (L, a*, b*), water retention capacity, or shear force cooking weight loss. However, we found that the meat of poultry challenged by C. perfringens showed lower lipid peroxidation and increased activity of the antioxidant enzymes SOD and CAT, suggesting improvement in antioxidant profile. Nitrate/nitrite levels were lower with T3 and higher with T4 than with T1. We therefore conclude that inulin can replace antibiotics as growth promoters without causing changes in the physicochemical characteristics of meat. C. perfringens challenge caused lower lipid peroxidation and stimulated antioxidant responses in breast meat.

Abstract
Farm animals raised under free-range (FR) systems are assumed to have improved welfare and higher-quality products that are better to eat than intensively reared animals. However, the modulations are limited in scientific investigations. In this study, we compared 2 rearing systems (FR and cage) and their effects on chickens, including production performance, product quality, body condition, physiological indicators, and gene expression. By using a match-mismatch design in which each treatment was transferred to the other treatment during the last period of the experiment, we aimed to understand the influence of current and former rearing conditions and the ability of individuals to adapt to the current environment. The results indicated that the FR system led to better chicken welfare (e.g., gait score, feather condition, and physiological indicators, P < 0.05) and contributed to higher product quality (P < 0.05), although it resulted in poorer production performance (P < 0.05) and foot pad condition (P < 0.05) than that of the cage rearing system. Additionally, the FR system triggered a series of inner changes and genetic responses in chickens, such as the upregulation of calcium and GnRH signaling, actin and cytoskeleton regulations, immune functions, and developmental processes, and the downregulation of pathological regulations (q-value < 0.05 for all gene ontology terms and P < 0.05 for all Kyoto Encyclopedia of Genes and Genomes (KEGG) pathways). In conclusion, rearing systems alter chicken gene expression patterns, which provide a genetic basis for the adaptability to rearing environments and ultimately affects chicken welfare and products.
