Potential of microalgae as source of health-beneficial bioactive components in produced eggs

Selenium-Rich Black Soldier Fly Supplementation Enriches Serum Indexes and Egg Selenium Content in Laying Hens

A certain amount of selenium (Se) is usually added to the diet of laying hens to improve the quality and nutritional value of eggs. The present study was carried out to investigate the effect of selenium-rich black soldier fly (BSF) supplementation in diets on laying production performance, egg quality, serum indexes, and egg selenium content of Hy-line variety brown laying hens. A total of 288 at 49-week-old healthy laying hens were divided into 3 treatment groups with 6 replicates per group and 16 hens per replicate using a single-factor completely randomized design. Treatments consisted of (1) control (basal diet without supplemental Se), (2) 0.30 mg/kg supplemental Se, (Se as sodium selenite, SS), and (3) 0.30 mg/kg supplemental Se (Se as selenium-rich black soldier fly, SE-BSF). Laying performance was not affected by dietary Se. There was no effect of selenium-rich BSF on egg quality (P > 0.05). The contents of malonaldehyde (MDA) were significantly reduced (P < 0.05). On the contrary, dietary Se supplementation increased the activity of superoxide dismutase (SOD, P < 0.05) and catalase (CAT, P < 0.05) and increased the concentration of reduced glutathione (P < 0.05). In addition, selenium-rich BSF supplementation significantly increased the Se content of eggs (P < 0.05). These results indicate that Se supplementation did not affect laying production performance and egg quality of laying hens, but the supplementation could improve antioxidant capacity and increased the Se content of eggs.

Determination of Selenium in Selenium-Enriched Products by Specific Ratiometric Fluorescence

Selenium (Se), as one of the essential and nutrient components of living organisms and plants, plays an important role in life activities, while excessive selenium is hazardous to human health. So, the establishment of an effective method for simple, rapid, and highly sensitive determination of selenium content is crucial in the field of food composition analysis and other areas. In this paper, a novel and simple ratiometric fluorescence method for the determination of Se has been developed using 9-anthracenemethanol (AM) as the ratiometric fluorescence reagent on the basis of the conventional fluorometric assay which utilized 2,3-diaminonapthalene (DAN) as fluorescent ligand. The ratiometric method was compared with the conventional method with respect to precision and accuracy. The inter-day and intra-day precisions (RSDs) of the ratiometric fluorescence method ranged from 2.08 to 2.78% and 1.28 to 1.84%, with mean recoveries of 93.2~98.0% and limit of detection (LOD) and limit of quantification (LOQ) of 0.0016 and 0.0049 μg/mL, respectively. This method was successfully applied to the determination of total selenium in selenium-enriched milk and selenium-supplemented shampoo, with the results in agreement with those obtained by inductively coupled plasma mass spectrometer (ICP-MS). The results demonstrated that the precision and accuracy of the ratiometric fluorescence method were superior to those of the conventional fluorescence method, and the interferences of various environmental factors were effectively eliminated. The precision and accuracy of the conventional method can be significantly improved by simply adding an elaborately selected ratiometric fluorescence reagent, and the new method will have broader practical applications.

Carotenoid enrichment in eggs: From biochemistry perspective

The emergence of safe and functional eggs for consumer acceptance has gained focus. The production of carotenoid-enriched eggs has received attention due to its multifunctional biological properties. Nutritional modification of laying hens' diet can be a strategy to produce such eggs. This review presents the chemistry of carotenoids in nature and eggs, the accumulation process of carotenoids into eggs, and the functions of carotenoids in eggs. Our findings showed that carotenoids can be deposited into the egg and contribute to improving its nutritive value. The biosynthesis, chemical structure, and metabolism pathways of carotenoids lead to the deposition of carotenoids into eggs in their original or metabolized forms. Also, some factors modulate the efficiency of carotenoids in fowls before accumulation into eggs. Carotenoid-enriched eggs may be promising, ensuring the availability of highly nutritive eggs. However, further studies are still needed to comprehend the full metabolism process and the extensive functions of carotenoids in eggs.
