Abstract
While contributing to the conservation of natural fish stocks, the aquaculture sector imposes environmental repercussions. The growing popularity of colour-graded eco-labels in promoting pro-environmental practices in food production underscores the need for scientific insights into consumer responses to such labels, particularly with the imminent prospect of a harmonized European labelling framework. The existing literature, although limited and divergent, advocates for real-life testing with fresh, perishable food products, emphasizing the inadequacy of standalone labels and the necessity for complementary measures. Furthermore, the mechanisms underlying how consumers process multi-coloured Front-of-Pack (FOP) labels remain ambiguous, with uncertainties regarding induced consumption shifts stemming from both deliberate information processing and less deliberate associations. This article presents findings from a randomized control trial conducted in a simulated fishmonger store in Derio, Bizkaia, Spain, involving 200 consumers. Participants selected various sea bass products out of multiple options. This task was subject to a 2 (Enviroscore: with vs without) x 2 (Supporting info on Enviroscore: with vs without) between-subject design, resulting in four treatment groups. A 16% increase in the likelihood of selecting lower-impact products was observed. Notably, this effect was evident only in the absence of supporting information on Enviroscore, and the observed impact could not be attributed to any indirect attention effect. In conclusion, Enviroscore exhibits potential in steering consumer choices toward more environmentally friendly aquaculture fish options, even in physical retail settings. However, these effects may be rooted in unconscious responses rather than deliberate environmental considerations, raising questions about the suitability of envisaged policy orientations encompassing disaggregated environmental, nutritional, animal welfare, and social welfare scores. Generalization of these findings warrants validation through further research encompassing a more comprehensive range of products.

Abstract
Lactiplantibacillus plantarum OV50 is a novel strain that was isolated from Algerian olives. Prior to its use as a natural biopreservative, OV50 underwent characterization for various functions. OV50 shows no proteolytic, lipolytic, or hemolytic activity. In addition, it is non-cytotoxic to eukaryotic cells and does not exhibit acquired antibiotic resistance. OV50 was tested with Pseudomonas aeruginosa ATCC 27835, Staphylococcus aureus ATCC 6538, Escherichia coli ATCC 8739, and Vibrio cholerae ATCC 14035 in a sardine based-medium at 37 °C and 7 °C. At 37 °C, OV50 completely inhibited the growth of these foodborne pathogens for a maximum of 6 h. At 7 °C, it suppressed their growth for a maximum of 8 days, except for S. aureus ATCC 6538, whose growth was reduced from 4 to 2 log CFU/mL. Microbiological counts, total volatile basic nitrogen (TVB-N), and peroxide values (PV) concentrations were determined in fresh sardines inoculated with OV50 and kept at 7 °C for 12 days. The inoculated sardines showed a significant reduction in TVB-N levels at D8 (34.9 mg/100 g) compared to the control (59.73 mg/100 g) and in PV concentrations at D4 (6.67 meq/kg) compared to the control (11.44 meq/kg), as well as a significant reduction in the numbers of Enterobacterales, Coliforms, Pseudomonas spp., Vibrio spp., and S. aureus At D8 and D12 compared to the control. Taken together, these results indicate that OV50 can improve the microbiological safety, freshness, and quality of sardines.

Abstract
Eco-labels are an instrument for enabling informed food choices and supporting a demand-sided change towards an urgently needed sustainable food system. Lately, novel eco-labels that depict a product's environmental life cycle assessment on a multi-level scale are being tested across Europe's retailers. This study elicits consumers' preferences and willingness to pay (WTP) for a multi-level eco-label. A Discrete Choice Experiment was conducted; a representative sample (n = 536) for the Austrian population was targeted via an online survey. Individual partworth utilities were estimated by means of the Hierarchical Bayes. The results show higher WTP for a positively evaluated multi-level label, revealing consumers' perceived benefits of colorful multi-level labels over binary black-and-white designs. Even a negatively evaluated multi-level label was associated with a higher WTP compared to one with no label, pointing towards the limited effectiveness of eco-labels. Respondents' preferences for eco-labels were independent from their subjective eco-label knowledge, health consciousness, and environmental concern. The attribute "protein source" was most important, and preference for an animal-based protein source (beef) was strongly correlated with consumers' meat attachment, implying that a shift towards more sustainable protein sources is challenging, and sustainability labels have only a small impact on the meat product choice of average consumers.

Abstract
Today’s increased demand and consumption of fish would be impossible to ensure without aquaculture. Farmed fish, however, is often considered inferior among consumers in comparison to its wild counterparts. The aim of this study was to profile Croatian fishery consumers based on their intention to consume farmed fish. The participants in this study were a nationally representative sample of people responsible for food purchasing within the household (n = 977), whose responses were collected by the CAWI (computer-aided web interviewing) method. Four clusters were identified and described: farmed fish enthusiasts (21.1%), farmed fish supporters (17.4%), indifferents (44.7%), and farmed fish sceptics (16.8%). Results showed that consumer segments differed significantly with respect to age, income, employment status, living region, and physical activity. Furthermore, intention to consume farmed fish is related to fish consumption in general (those with higher intention are more frequent fish consumers). Interestingly, prejudices against farmed fish are present in all clusters; however, these prejudices are more pronounced among those with the weakest intention to consume farmed fish. Differences between clusters were observed also in respect to product information and preferences, knowledge about fish, places of usual purchase, and source of information about fishery products. The obtained results could be used in designing marketing strategies to promote farmed fish consumption.

Abstract
Due to importing food and the perpetual changes from conventional wet markets to supermarkets in emerging markets, consumers have the opportunity to base their buying decisions on traceability systems. Seafood traceability systems involve information on production mode, inspection notes, sustainable sources, and sources of origin to provide consumer protection and help ensure that all seafood is safe to consume. This study aims to explore seafood markets by assessing the demand for traceability information attributes by utilising data from an experimental survey in an emerging market such as Bangladesh. The data were analysed using descriptive statistics, exploratory factor analysis, and a conditional logit model. The results demonstrate that consumers are concerned regarding vitamins, cholesterol, and preservatives, while they are little concerned about microbiological contamination, pesticide residues, genetic modification, and additives or artificial colours. The difference between the mean willingness to pay (WTP) for traditional and sustainable farmed fish is higher than that between the mean WTP for conventional and sustainable wild fish. In a ranked-choice voting system, the ‘production mode’ and ‘claim of safety control (e.g., being formalin-free)’ were the first and second most influential attributes in fish choices. The outcomes of the econometric model revealed that consumers are more likely to prefer traceability information about fish control (e.g., formalin-free), and they want to pay a price premium for this information. Alternatively, consumers are less likely to prefer farmed and imported fish, and their WTP for these fishes are highly inflated. This finding may be because consumers use wild and local origin as a cue for food safety or quality. This study hopes that the effects of such traceability information will optimise the production process and supply chain and help make seafood recall management more effective.

Abstract
Sustainable certifications communicate the environmental benefits of food products to consumers, and allow producers to differentiate their products from conventional ones. This study expands existing knowledge on fish consumers by assessing the importance of sustainable certifications in fish selection. A best–worst analysis was applied to a convenient sample of Italian household members responsible for food shopping, segmented with a latent class clustering model based on their socio-demographic characteristics, fish purchase behaviors, as well as attitudinal features. The results show that sustainable certifications were of interest to consumers, as more than 1 out of 10 respondents valued sustainable certifications in purchasing fish. Respondents interested in sustainable certifications on fish were medium-aged consumers, with high working status, well educated, as well as living in a medium-size household without children. These consumers were more interested in organic foods and had an interest in food nutritional information; they likely have a healthy holistic lifestyle, and may purchase organic food, including fish, to improve their health by increasing their physical well-being.

Abstract
Fish is an important source of healthy proteins and an important economic sector in Mediterranean countries. Despite the wealth of knowledge acquired in Western countries, a gap has been found in studies in developing countries, as in the Mediterranean southern shore. Therefore, we aimed to investigate consumers' perceptions of finfish attributes, with qualitative tools as focus groups, given the exploratory nature of the research. The focus groups have been held in Italy, Lebanon, Spain, and Tunisia; in each country, one was held in seaside areas and one in inland areas, in order to control for the availability of fish that shapes consumers' evaluations and expectations. The focus groups have been analysed through content and semantic analyses. Results of the study yielded main themes recurring in the discussions that have been categorized along such dimensions: (1) definition of fish products; (2) context; (3) search attributes; (4) experience attributes; and (5) credence attributes. Among attributes, the ones mostly guiding consumers' choices seem to be freshness and fish species, which are used as proxies for quality and sensory attributes. Most of the respondents preferred delicate white fish, while some exceptions were found in Tunisian respondents preferring blue fish and they also were the only ones who were not looking for convenient and already cleaned products. Trust also represented a critical element in guiding the decisions of consumers: with a lack of trust, consumers deviate from preferring local products, as noticeable especially in Lebanese respondents' opinions. Credence attributes such as animal welfare and sustainability received a minor attention from all the respondents.

Abstract
This review assessed the effects of environmental labels on consumers' demand for more sustainable food products. Six electronic databases were searched for experimental studies of ecolabels and food choices. We followed standard Cochrane methods and results were synthesized using vote counting. Fifty-six studies (N = 42,768 participants, 76 interventions) were included. Outcomes comprised selection (n = 14), purchase (n = 40) and consumption (n = 2). The ecolabel was presented as text (n = 36), logo (n = 13) or combination (n = 27). Message types included: organic (n = 25), environmentally sustainable (n = 27), greenhouse gas emissions (n = 17), and assorted "other" message types (n = 7). Ecolabels were tested in actual (n = 15) and hypothetical (n = 41) environments. Thirty-nine studies received an unclear or high RoB rating. Sixty comparisons favored the intervention and 16 favored control. Ecolabeling with a variety of messages and formats was associated with the selection and purchase of more sustainable food products.

Abstract
As ethical and environmental concerns regarding current poultry production systems arise, consumers look for alternatives. This study assesses consumers’ preferences for chicken meat of dual-purpose breeds (DPBs), regionally produced feedstuff, and specific breeds, along with attitudes and social norms that explain these preferences. We conducted an online survey (n = 934) including a discrete choice experiment and elements of the theory of planned behavior. Results show that after price, product and feedstuff origin are preferred by consumers, followed by breeding form and specific breed. Utilities for each attribute and level were calculated and consumer segments were created using latent class analysis. Three different consumer groups were identified: (1) price-sensitive consumers, (2) price-sensitive and origin-oriented consumers, and (3) origin-oriented consumers. We conclude that although consumers are interested in meat from DPBs, this attribute alone is not enough to influence the purchase decision, and geographical origin seems to be of crucial importance. However, by highlighting important attributes (i.e., animal welfare, regional/local production), DPB products could be introduced to the market. The consumption of these alternative products has economic implications, such as not relying on imports and promoting local production/consumption, along with social implications as refraining from killing day-old chicks.

Abstract
Not least from an ecological and health perspective, it can be posited that a broader part of consumers should practice sustainable diets. People who are already willing to do so are often confronted with the intention-behavior gap, caused by a range of internal and external factors. To eliminate these barriers requires a deeper and more comprehensive understanding of these factors and their interplay. Therefore, a think aloud study with 20 adult German participants was conducted to explore the four chosen external factors of availability, education, advertising and price. Furthermore, questionnaires for all four factors were handed out and a follow-up interview was conducted to gain additional qualitative data. Results show that these four external factors seem to have a major impact on the intention-behavior relation. According to the participants all factors interact in some way with other internal and external factors, making practicing sustainable diets a complex activity. In conclusion, the four external factors availability, education, advertising and price need to be addressed by various stakeholders within our food systems in order to move forward in the process of making sustainable diets practicable and sustainable food systems firmly established.

Abstract
The main objective of this paper is to reinvestigate the impacts of non-tariff measures (NTMs) on bilateral exports among Regional Comprehensive Economic Partnership (RCEP) countries. The study adds to the literature in two areas. First, we calculate coverage ratios for NTMs related to specific sustainable development goals (SDGs) imposed on bilateral trade between RCEP member countries. Second, to avoid aggregation bias, the analysis covers four major sectors, namely agrifood, health, logistics, and other manufacturing. The results of a Poisson pseudo maximum likelihood (PPML) regression in a gravity model, using average import data from 2016 to 2018 at the Harmonized Commodity Description and Coding Systems (HS) two-digit level (97 subsectors), show that the effects of SDG-related NTMs vary by sector. NTMs related to SDG 3 (good health and well-being) distort trade in health but enhance trade in logistics. NTMs related to SDG 12 (responsible consumption and production) have a negative impact on logistics but a positive impact on other manufacturing exports. The findings provide new perspectives on the varying impacts of SDG-related NTMs on trade. Interestingly, the study finds that NTMs addressing SDGs 3 and 12 have positive trade impacts. Policymakers should, however, regulate NTM implementation, to minimize negative impacts and ensure that domestic firms comply to promote sustainable production.

Abstract
Seafood products are important sources of protein and components of a healthy and sustainable diet. Understanding consumers' preferences for fish products is crucial for increasing fish consumption. This article reports the consumer preferences and willingness to pay (WTP) for different fish species and attributes on representative samples in five European countries (n = 2509): France, Germany, Italy, Spain, and the UK. Consumer choices were investigated for fresh fish in a retail market under hypothetical situations arranged by a labelled choice experiment conducted for seven fish species: Cod, herring, seabass, seabream, salmon, trout, and pangasius. The results show the highest premiums for wild-caught fish than farm-raised alternatives. Ready-to-cook products are generally preferred to whole fish, whereas fish fillet preference is more species-specific. The results show positive premiums for a sustainability label and nutrition and health claims, with high heterogeneity across countries and species. With consumers' preferences and WTP being largely country- and fish-dependent, businesses (fish companies, retailers, and others) should consider the specific market context and adapt their labelling strategies accordingly. Public authorities campaigns should inform consumers about the tangible benefits related with health and environmental labels.

Abstract
Aquaculture is an industrial activity that not only aims to be a source of quality food, but also is a way to restock fish populations and to conserve the biodiversity of our oceans. On the other hand, the production system can influence the consumer perceptions about what is purchased and consumed, as well as the subsequent environmental and social effects. Fish feeding production is affected by the growth of aquaculture and the increasing demand that have let to deficit, high prices, and low ecological safety of fish meal and oil. In this regard, the use of microbial biomass obtained from a variety of microorganisms has been reported as a potential substitute for plant- and animal-derived ingredients, satisfying the requirements in protein and energy and even adding functional properties. In addition, microalgae can increase the nutritional value of animal feed, play a key role in the physiological growth and external appearance of aquatic animals. Finally, politicians, industry and society in general should be careful with the numerous uncertainties still present in the sector that can weaken its sustainability from environmental, social and economic perspectives.

Abstract
The call for environmentally sustainable seafood consumption is growing. Seafood-related behavior is often an outcome of assessing attributes of the product (e.g., taste, freshness, source). To shift consumer (i.e., tourists and residents) preferences toward environmentally sustainable products, many coastal communities of the United States (U.S.) promote production (i.e., Wild-caught, Environmentally sustainable) and source (i.e., Harvested locally, Safe from pollutants) attributes of local seafood. Even if consumers believe these production and source attributes are important, they may lack confidence in their ability to distinguish them when purchasing seafood. Expansion of sustainable coastal mariculture is recommended for food security and enhancing economic resilience of local commercial fisheries, but this newer production attribute (i.e., Farmed in marine waters) adds more complexity to consumer decision-making. Research examining the difference between importance and confidence for seafood attributes is limited. This study surveyed tourists and residents in South Carolina and Florida (U.S.) coastal communities where varying levels of tourism and commercial seafood harvest, including marine farming of shellfish, were occurring. The research measured these consumers' level of importance and confidence for production and source attributes when purchasing seafood in the coastal community. Residents rated importance and confidence higher than tourists for some attributes, but there was no difference between states for tourist or resident subgroups. Both tourists and residents rated confidence lower than importance for all attributes. An Importance-Confidence Analysis (ICA), adapted from Importance-Performance Analysis (IPA), identified attributes needing enhanced marketing and consumer education. The ICA indicated that Environmentally sustainable and Safe from pollutants were high priorities for improving confidence. The low priority rating for Farmed in marine waters was deemed misleading because improved outreach for this attribute could reduce barriers to acceptance and improve recognition.

Abstract
The olive tree and oil are iconic in the Mediterranean culture and religions, and producers incorporate those associations into the packaging of olive oil products they distribute regionally. This study examines the impact of religious and cultural information about olive oil on consumer behavior. A choice experiment was conducted to survey Japanese consumers’ willingness to pay for olive oil products. Results show that consumers respond with varying degrees of favor to the characteristic of “produced in pilgrimage destination,” but if cultural and religious information related to olive is provided, their willingness to pay increases 6.7 times. Measurements of cross-effects show that consumers that are more educated respond favorably to cultural and religious imagery, whereas older consumers and those with more children respond less favorably. Empirical results imply those regional religious and cultural allusions could be used to differentiate and promote olive oil products in a culturally distinct market.

Abstract
We draw on outstanding recent research to substantiate factors driving pro-environmental food purchasing behavior. Throwing light on purchasing behavior for environmentally sustainable foods, our study highlights the relevance of consumer trust and motivations in organic product markets together with individuals' perceived value and willingness to buy such items throughout the choice behavior and decision-making process. Our findings prove that most aspects influencing consumers' attitudes for and choices of organic foods are related to their trust and perceptions of the nutritional benefits such products provide. The insights gained from our research extend present knowledge concerning consumer behavior and purchase intention for environmentally sustainable products. The chief gaps and issues identified by the review cover the variety of organic food consumer purchase intentions and behaviors, including the relative environmental performance of organic food production and the link between the motivational values and attitudes concerning the consumption of non-chemical products. Apart from sustainable agriculture and upsides of organic farming, the main disadvantages are as follows: recycling and aligning with natural operations does not necessitate chemical inputs, but organic food is more prohibitive as farmers do not obtain significant crop productivity out of their land, while organic goods may have a price of up to 40% more (production expenses are steeper because farmers demand more labor force), marketing and distribution are not streamlined as organic products are delivered in diminished volumes, food disorders may occur more frequent, and chemical-free agriculture cannot produce sufficient nutrients that the world's population requires to live on.

Abstract
Seafood is highly perishable, presenting a rapid loss of its quality soon after capture. Temperature is the critical parameter that impacts on seafood shelf-life reduction, allowing the growth of foodborne pathogens and spoilage microorganisms. In recent years, the search by additional methods of preserving seafood has increased, able to ensure quality and safety. Several natural preservatives have highlighted and gained considerable attention from the scientific community, consumers, industry, and health sectors as a method with broad action antimicrobial and generally economical. Natural preservatives, from different sources, have been widely studied, such as chitosan from animal sources, essential oils, and plant extracts from a plant source, lactic acid bacteria, and bacteriocins from microbiological sources and organic acid from different sources, all with great potential for use in seafood systems. This review focuses on the natural preservatives studied in seafood matrices, their forms of application, concentrations usually employed, their mechanisms of action, factors that interfere in their use and the synergistic effect of the interactions among the natural preservatives, with a focus for maintenance of quality and ensure of food safety.

Abstract
Aquaponics is an innovative food production method that combines the production of aquatic organisms with plant production. This can have environmental advantages such as reducing land conversion and resource input and waste output through nutrient cycling. To support the dissemination of aquaponics, key stakeholders need to be appropriately informed about this production method, an aspect that has received little attention so far. In this pilot study, visual perception of information about aquaponics was explored using eye tracking combined with a questionnaire. The results show that people distinguish between aquaponics variants when evaluating aquaponics. A production system with a more natural appearance is preferred. Allocation of visual attention is linked to the specific information content and to the assessment of the naturalness of aquaponics production. The results of the present study could form a basis for further research, not only to make information about food production systems more appropriate but also to develop food production systems in a way that people become more aware of the sustainability aspects of production methods and its products.

Abstract
Sustainability certification labels have become an important tool for aiding consumers in evaluating food safety, health concerns, and environmental friendliness. Few studies have explored the attributes of consumers’ environmental consciousnesses from the perspective of environmental concerns; hence, we focus on that lack. Our study contributes to the need to better understand consumer attention to sustainability information when making coffee certification attribute choices. We aimed to explore the importance that consumers attach to coffee certification attributes paid to these attributes while choosing and to willingness to pay (WTP). There were 650 questionnaires completed by those who had purchased coffee beans habitually in Taiwan; after factoring out the invalid questionnaires (i.e., those with omitted answers, incomplete answers, or those in which answers to all the questions received the same scale points were all deemed as invalid and removed), 568 valid ones were collected with a recovery rate of 87.4%. The results indicate that the respondents’ WTP attributes ranked from highest to lowest are traceability, organic, graded, environmentally friendly, and fair-trade certifications. This study provides insights into how consumers’ preferences relate to selection of coffee certification attributes.

Abstract
Due to the decrease in fluid milk consumption as a beverage in the United States, the importance for dairy industry stakeholders to understand attribute preferences for consumer segments has increased. This paper uses a representative sample of U.S. residents to determine shopping behavior and a Best-Worst experimental design to examine consumer preferences for select milk attributes. The Random Parameters Logit model revealed the largest preference shares were for price (19.1%), fat content (17.6%), and humane handling (16.1%). Segmentation of the respondents was analyzed using a Latent Class Model, and the demographics of segments were analyzed by probabilistic assignment. This contribution, which may be applied to other products, allows for a detailed understanding of consumer preferences for fluid milk. Demographics such as gender and age were not statistically different across the five classes for this topic, unlike shopping behavior. Class 2 was named "The Balancing Act" due to respondents' balance between animal welfare aspects and the physical characteristics of milk. Class 5 was dubbed "Value and Volume" due to large preference shares for price and container size. A lower percentage of respondents in "The Balancing Act" (12.2%) reported purchasing fat-free skim milk when compared to the percentage of respondents in "Value and Volume" (18.6%). Due to the large preference shares for traditional milk attributes, Class 3 was named "Traditional Milk Shoppers." A higher percentage of respondents in "Value and Volume" also reported always reading the information on meat, egg, or milk products when compared to "Traditional Milk Shoppers" (12.2%). Although price is still important to many consumers, certain segments have preferences or demand for other attributes that may be satisfied by producers to increase market share or price premiums.

Abstract
Traditionally, a major part of aquaculture technology requires fish oil (FO) and fish meal (FM) to produce the aquafeed for farmed species. FO is the main source of persistent organic pollutants (POPs) in fish feed. In recent years, the use of vegetable-origin ingredients in fish feeds has been increasingly studied as an alternative to reduce the levels of these lipophilic pollutants in farmed species. The aim of this study was to evaluate the effect of the use of dietary vegetable oils in the farming of European sea bass (Dicentrarchus labrax) on the contents in persistent - polychlorinated biphenyls (PCBs) and organochlorine pesticides (OCPs) - and semi persistent pollutants - polycyclic aromatic hydrocarbons (PAHs) and polybrominated diphenyl ethers (BDEs) - of their edible parts. A total of 60 seabass muscle pools were obtained from fish farmed employing six experimental diets, which contained different percentages of FO (6 vs. 3%) and FM (20%, 10% and 5%). We did not observe differences in the contamination level of seabass muscle in relation to the percentage of FM in their diet. However, the fish farmed using feed which had lower levels of FO (3%) showed significantly lower muscle levels of ΣPCBs and carcinogenic PAHs (Σc-PAHs), with a reduction of 25.6% and 95.11% (respectively), as compared with those fished raised with feed with higher levels of FO (6%). Also much lower levels were found in OCPs such as sum of DDTs (30.88% of reduction), sum of chlordanes (42.85% of reduction), and sum of BDEs (48.16% of reduction) in those seabass fed with a lower percentage of FO. The results of this study indicate that the use of alternative feed ingredients that allow the employment of low percentage of FO in feeds help to reduce the load of several toxic pollutants in the fillets of European seabass.
