Abstract
Resveratrol, a non-flavonoid polyphenolic compound, possesses various beneficial properties such as anti-cancer, anti-aging, anti-bacterial, and antioxidant effects. It is naturally produced by many plants in response to stimulation. However, the content of resveratrol in natural plants can vary significantly, ranging from micrograms to milligrams per kilogram. As the demand for resveratrol increases, the development of methods for extracting and quantifying resveratrol in food has become a rapidly growing field in recent years. This review aims to comprehensively summarize the progress made in resveratrol analysis in food over the past decade (2012-2022), with a specific focus on the latest advancements in extraction and detection technologies. The objective is to offer a valuable reference for further research and utilization of resveratrol in various food applications.

Abstract
Death-associated protein kinase 1 (DAPK1), a Ca2+/calmodulin-regulated serine/threonine kinase, regulates cell apoptosis and autophagy and has been implicated in the pathogenesis of Alzheimer's disease (AD). Targeting DAPK1 may be a promising approach for treating AD. In our previous study, we found that a natural polyphenol, resveratrol (1), is a moderate DAPK1 inhibitor. In the present study, we investigated the interactions between natural and synthetic derivatives of 1 and DAPK1. Binding assays including intrinsic fluorescence quenching, protein thermal shift and isothermal titration calorimetry indicated that oxyresveratrol (3), a hydroxylated derivative, and pinostilbene (5), a methoxylated derivative, bind to DAPK1 with comparable affinity to 1. The enzymatic assay showed that 3 more effectively inhibits the intrinsic ATPase activity of DAPK1 compared with 1. Crystallographic analysis revealed that the binding modes of the methoxylated derivatives were different from those of 1 and 3, resulting in a unique interaction. Our results suggest that 3 may be helpful in treating AD and provide a clue for the development of promising DAPK1 inhibitors.

Abstract
Wine and grape juice are known to have hydroxylated stilbenes, a group of phytoalexins, health-promoting compounds. The determination of stilbene species in wine and grape juices remains a challenging task. Here, we propose an efficient strategy for the simultaneous determination of eleven hydroxylated stilbenes in grape wines and grape juice by a SALLE in conjunction with an HPLC-ESI-MS/MS. SALLE and HPLC-MS/MS conditions were optimized. The proposed method was validated and found to be a simple, sensitive, and reliable measure for the determination of the stilbene species in wine and grape juice. The SALLE was fast and efficient, taking only 10 min. The HPLC-MS/MS was able to quickly separate and quantitate the eleven stilbenes (9 min running). This method was successfully applied to determine the contents of stilbene species in commercial wine and grape juice in Korea. This method is advantageous in reduced sample preparation time, low labor, and cost efficiency.

Abstract
We present a simple and eco-friendly method for controlled drug release using a surfactant-assisted method. Oxyresveratrol (ORES) was co-loaded with a non-ionic surfactant onto KCC-1, a dendritic fibrous silica, using an ethanol evaporation technique. The carriers were characterized using FE-SEM, TEM, XRD, N2 adsorption-desorption, FTIR, and Raman spectroscopy, and the loading and encapsulation efficiencies were assessed using TGA and DSC techniques. Contact angle and zeta potential were used to determine the surfactant arrangement and the particle charges. To investigate the effects of different surfactants (Tween 20, Tween 40, Tween 80, Tween 85, and Span 80) on ORES release, we conducted experiments under different pH and temperature conditions. Results showed that the types of surfactants, drug loading content, pH, and temperature significantly affected the drug release profile. The percentage of drug loading efficiency of the carriers was in the range of 80 %-100 %, and the release of ORES was in the order of M/KCC-1 > M/K/S80 > M/K/T40 > M/K/T20 > MK/T80 > M/K/T85 at 24 h. Furthermore, the carriers provided excellent protection for ORES against UVA and maintained its antioxidant activity. KCC-1 and Span 80 enhanced the cytotoxicity to HaCaT cells, while Tween 80 suppressed the cytotoxicity.

Abstract
Stilbene metabolites are attracting great interest because many of them exhibit similar or even stronger biological effects than their parent compounds. Furthermore, the metabolized forms are predominant in biological fluids; therefore, their study is highly relevant. After hemisynthesis production, isolation, and structural elucidation, three glucuronide metabolites for oxyresveratrol (ORV) were formed: trans-ORV-4'-O-glucuronide, trans-ORV-3-O-glucuronide, and trans-ORV-2'-O-glucuronide. In addition, two glucuronide metabolites were obtained for gnetol (GN): trans-GN-2'-O-glucuronide and trans-GN-3-O-glucuronide. When the metabolism of ORV and GN is studied in vitro by human and rat hepatic enzymes, four of the five hemisynthesized compounds were identified and quantified. Human enzymes glucuronidated preferably at the C-2' position, whereas rat enzymes do so at the C-3 position. In view of these kinetic findings, rat enzymes have a stronger metabolic capacity than human enzymes. Finally, ORV, GN, and their glucuronide metabolites (mainly at the C-3 position) decreased nitric oxide, reactive oxygen species, interleukin 1β, and tumor necrosis factor α production in lipopolysaccharide-stimulated macrophages.

Abstract
Resveratrol is a polyphenol with antioxidant properties and possible beneficial effects on human health. Grapes, peanuts, berries, cacao beans and red wine contain resveratrol. Resveratrol attracts attention due to its bioactive properties, however, the concentration of this compound is not high in grape and wine. Therefore, different studies have been carried out to increase resveratrol level in these products. Several factors such as the grapevine variety, the climatic conditions and the viticultural practices used to create stress on the vine affect the level of resveratrol. Winemaking technologies applied during pre-fermentation, fermentation and post–fermentation stages could also have an effect on the concentration of this stilbene. In addition, recent studies have evaluated biotechnological approaches through the use of different bacteria and yeast strains to produce wine with increased resveratrol content. In this review, the most important factors contributing to increase the resveratrol concentration in grapes and wines are examined. Besides, analytical methods to determine resveratrol content in wine are addressed.

Abstract
Experimental studies have provided convincing evidence that food bioactive compounds (FBCs) have a positive biological impact on human health, exerting protective effects against non-communicable diseases (NCD) including cancer and cardiovascular (CVDs), metabolic, and neurodegenerative disorders (NDDs). These benefits have been associated with the presence of secondary metabolites, namely polyphenols, glucosinolates, carotenoids, terpenoids, alkaloids, saponins, vitamins, and fibres, among others, derived from their antioxidant, antiatherogenic, anti-inflammatory, antimicrobial, antithrombotic, cardioprotective, and vasodilator properties. Polyphenols as one of the most abundant classes of bioactive compounds present in plant-based foods emerge as a promising approach for the development of efficacious preventive agents against NCDs with reduced side effects. The aim of this review is to present comprehensive and deep insights into the potential of polyphenols, from their chemical structure classification and biosynthesis to preventive effects on NCDs, namely cancer, CVDs, and NDDS. The challenge of polyphenols bioavailability and bioaccessibility will be explored in addition to useful industrial and environmental applications. Advanced and emerging extraction techniques will be highlighted and the high-resolution analytical techniques used for FBCs characterization, identification, and quantification will be considered.

Abstract
Stilbenes represent a class of compounds with a common 1,2-diphenylethylene backbone that have shown extraordinary potential in the biomedical field. As the most well-known example, resveratrol proved to have anti-aging effects and significant potential in the fight against cardiovascular diseases and some types of cancer. Mass spectrometry is an analytical method of critical importance in all studies related to stilbenes that are important in the biomedical field. From the discovery of new natural compounds and mapping the grape metabolome up to advanced investigations of stilbenes' potential for the protection of human health in clinical studies, mass spectrometry has provided critical analytical information. In this review we focus on various approaches related to mass spectrometry for the detection of stilbenes-such as coupling with chromatographic separation methods and direct infusion-with presentation of some illustrative applications. Clearly, the potential of mass spectrometry for assisting in the discovery of new stilbenes of biomedical importance, elucidating their mechanisms of action and quantifying minute quantities in complex matrices is far from being exhausted.

Abstract
This study investigated the protective effect and the molecular mechanism of piceatannol on hydrogen peroxide (H2O2)-induced retinal pigment epithelium cell (ARPE-19) damage. Piceatannol treatment significantly inhibited H2O2-induced RPE cell death and reactive oxygen species (ROS) generation by 64.4% and 75.0%, respectively. Results of flow cytometry showed that H2O2-induced ARPE-19 cells apoptosis was ameliorated by piceatannol supplementation, along with decreased relative protein expressions of Bax/Bcl-2, Cleave-Caspase-3, and Cleave-PARP. Moreover, piceatannol treatment induced NF-E2-related factor 2 (Nrf2) signaling activation, which was evidenced by increased transcription of anti-oxidant genes, glutamate-cysteine ligase catalytic subunit (GCLc), SOD, and HO-1. Knockdown of Nrf2 through targeted siRNA alleviated piceatannol-mediated HO-1 transcription, and significantly abolished piceatannol-mediated cytoprotection. LY294002 (PI3K inhibitor) dramatically blocked piceatannol-mediated increasing of Nrf2 nuclear translocation, HO-1 expression, and cytoprotective activity, indicating the involvement of PI3K/Akt pathway in the cytoprotective effect of piceatannol. The results from this suggest the potential of piceatannol in reducing the risk of age-related macular degeneration.

Abstract
The aim of this study was to determine the content of triterpenoids and polyphenols, and antioxidative activity in leaves, stalks, and roots of plants from the species Fallopia as well as to present the main relationship between them. Polyphenolic compounds and triterpenoids were identified with liquid chromatography-photodiode detector-mass spectrometry/quadrupole time of flight (LC-MS-Q/TOF; qualitatively) and quantified with an ultra-performance liquid chromatography-photodiode detector (UPLC-PDA (quantitatively), and their antioxidative activity was determined with radical scavenging capacity (ABTS) and oxygen radical absorbance capacity (ORAC) assays. Generally, the wild Fallopia japonica Houtt. species had 1.2 times higher content of bioactive compounds and antioxidative activity than Fallopia sachalinensis. Contents of polyphenolic compounds determined in leaves, stalks, and roots were on average 17.81, 10.60, and 9.02 g/100 g of dry weight (DW), whereas the average contents of triterpenoids reached 0.78, 0.70, and 0.50 g/100 g DW, respectively. The leaves were a better source of polymeric procyanidins, phenolic acids, flavones, and flavonols, as well as oleanolic and ursolic acids than the other morphological parts of the tested plants. However, the roots were an excellent source of flavan-3-ols (monomeric and oligomer) and stilbenes, such as resveratrol, and their derivatives. The results obtained showed significant differences between plants of the wild Fallopia species and their morphological parts, and enabled selecting the most valuable morphological part of the tested plants to be used for food enrichment and nutraceuticals production. Therefore, the leaves seem to be the best as potential food additives for health, due to the above-average content of polyphenolic compounds and triterpenoids. In turn, roots, with their high contents of stilbenes and polyphenolic compounds, represent a good material for the medical, pharmaceutical, and cosmetic industries. The principal component analysis of the plants of wild Fallopia species and their morphological parts confirmed significant differences in their chemical composition.

Abstract
In this study, a convenient and sensitive method for the detection of resveratrol was established based on phosphorescence quenching of resveratrol for MPA-capped Mn:ZnS QDs. The quenching intensity was in proportion to the concentration of resveratrol within a certain range. Under optimal conditions, the present assay was valid for detecting resveratrol in the range from 0.03 μM to 14 μM with a detection limit of 0.01 μM. The mechanism of action was also explored, and its application in actual samples was also demonstrated with satisfactory results. This study aims to provide a convenient method for the detection of resveratrol.

Abstract
A new Φ-order kinetic method was proposed in this study for the investigation of trans-cis photoisomerization reaction of Oxyresveratrol (ORVT) subjected to non-isosbestic irradiation. In ethanolic media, it has been proven that forward (ΦA→Bλirr) and reverse (ΦB→Aλirr) reaction quantum yields were dependent on the monochromatic irradiation wavelength according to sigmoid patterns over the spectral ranges of their electronic absorption (260-360nm). An 11.4- and 6.6-fold increases were recorded for ΦB→Aλirr and ΦA→Bλirr, respectively. The efficiencies of the former (ΦB→Aλirr, ranging between 2.3×10-2 and 26.3×10-2) were 33 to 60% smaller than those of the respective ΦA→Bλirr measured at the irradiation wavelengths selected. Overall, between 57 and 97% degradation of the initial trans-ORVT was observed under relatively weak light intensities, with the highest values recorded at the longest wavelengths. These findings strongly recommend protection from light in all situations of this biologically important phytomolecule that possesses therapeutic value of interest to pharmaceutical applications. The Φ-order kinetics also offered a simple way to develop a reliable actinometric method that proved ORVT to be an efficient actinometer for the dynamic range 295-360nm. The usefulness of Φ-order kinetics for the investigation and quantification of phytoproducts' photodegradation was discussed.

Abstract
Oxyresveratrol is a major active compound in the heartwood of Artocarpus lacucha. It plays an important role in anti-tyrosinase, antioxidant, anti-inflammatory, antiviral and neuroprotective properties. There are many A. lacucha commercial products available on the market for skin whitening and anti-aging effects. To evaluate the quality of raw material from the plant, a monoclonal antibody (MAb) against oxyresveratrol was generated in this study. The immunogen was prepared by the Mannich reaction for the conjugation of oxyresveratrol and cationized bovine serum albumin (cBSA). The conjugation of oxyresveratrol-cBSA at a ratio of 1:50 was used for the immunization. The novel MAb (E4) was specific to oxyresveratrol and resveratrol. An indirect competitive enzyme-linked immunosorbent assay (ELISA) using the MAb (E4) was developed for the determination of oxyresveratrol. The linear range for the measurement of oxyresveratrol was 63-500 ng/mL and the precision (% relative standard deviation) was found to be <10% with the percentages of recovery from 95.93-103.55%. According to the validation analysis, the established ELISA can be applied for the determination of oxyresvertrol in the heartwood of A. lacucha and samples of the traditional drug Puag-Haad. With reliability and high sensitivity, this assay can provide an alternative approach for the quantitative analysis of oxyresveratrol in A. lacucha samples.

Abstract
Liquid chromatography (LC) combined with accurate mass spectrometry (MS), based on the use of a hybrid quadrupole time-of-flight (TOF) MS system, is employed to systematically investigate the photo-transformation routes of trans-resveratrol. Experiments were performed in quartz tubes, containing ethanolic solutions (12% v/v) of the precursor compound, exposed to different ultraviolet (UV) sources and to solar light. Time-courses of trans-resveratrol and transformation products (TPs) were investigated by direct injection of different reaction times aliquots in the LC-QTOF-MS system. Structural elucidation of detected TPs was derived from interpretation of their accurate product ion scan spectra. Trans-resveratrol labelled with (13)C6 in the mono-hydroxylated ring was also employed to further confirm the exact positions of some substituents in the generated TPs. In addition to the well-known trans-/cis-isomerization process, three different main reactions pathways were noticed under all the investigated conditions: (1) water addition to the exocycle double bond followed by oxidation to a ketone and cleavage of the molecule, (2) intramolecular cyclization to render a trihydroxylated phenanthrene, and (3) oxidation of the phenanthrene-like derivative to generate an orto-diquinone. Both, the trihydroxylated phenanthrene and the orto-diquinone underwent further aromatic hydroxylation reactions. The above transformation routes were also noticed for cis-resveratrol and the two analogue phytoalexins piceid and piceatannol. In addition to above transformation pathways, under solar light exposure, resveratrol underwent a molecular re-arrangement rendering the so-called resveratrone, whose structure consists of two fused aromatic rings bonded to a linear chain containing a carbonyl group conjugated with a double bond.
