Abstract
The intricate balance between the beneficial and harmful effects of selenium (Se) intake means that its quantification in food needs to be done correctly. Therefore, in this review, we systematized 105 articles to identify the most studied methodologies, analytical techniques, and food matrices. Among the analytical techniques employed, inductively coupled plasma mass spectrometry (ICP-MS) (n = 29) emerged as the most commonly used method. The most prevalent hydrolysis methodology to digest Se in food matrices involved the use of nitric acid combined with ultrasound, which improved both the yield and digestion time. Optimal recovery values were achieved when total Se quantification accounted for the sum of Se(IV) and Se(VI) (94.4-99.4%) and for SeCys (88-96.5%). These findings are relevant for advancing methodological approaches, and their results emphasize the importance of developing alternative, faster, and lower-cost protocols for Se quantification in foods and beverages.

Abstract
Selenium (Se) is considered to be an essential trace element needed for all living organisms. The importance, deficiency, and toxic effects of Se mainly depend on its quantity and chemical nature. It has been observed that the inorganic versions of Se are more hazardous than the organic versions. This review is mainly focused on the application of different extraction methods used for Se extraction and determination such as microextraction, solid-phase extraction (SPE), and their modified modes in the last 12 years. The use of different dispersive medium (magnetic field, ultrasonic radiation, and vortex agitator) to enhance Se separation is also part of this review. The usage of environmentally friendly solvents such as supramolecular solvents, hydrophobic deep eutectic solvents (DESs), and ionic liquids (ILs) are also the focus of attention in this review. This review is also emphasized the application of advanced microextraction methods, particularly liquid-phase microextraction (LPME). The most recent advances in LPME extraction techniques for Se in various environmental samples, as well as their prospects, are reviewed. Additionally, a summary of cheap, simple, and accurate techniques that have not yet been used to determine small amounts of Se has been provided.

Abstract
Cereals and soybeans are the main food sources for the majority of Chinese. This study evaluated the effects of four common cooking methods including steaming, boiling, frying, and milking on selenium (Se) content and speciation in seven selenium bio-fortified cereals and soybeans samples. The Se concentrations in the selected samples ranged from 0.91 to 110.8 mg/kg and selenomethionine (SeMet) was detected to be the main Se species. Total Se loss was less than 8.1% during the processes of cooking except milking, while 49.1% of the total Se was lost in milking soybean for soy milk due to high level of Se in residuals. It was estimated that about 13.5, 24.0, 3.1, and 46.9% of SeMet were lost during the processes of steaming, boiling, frying, and milking, respectively. Meanwhile, selenocystine (SeCys₂) and methylselenocysteine (SeMeCys) were lost completely from the boiled cereals. Hence, steaming and frying were recommended to cook Se-biofortified cereals in order to minimize the loss of Se.

Abstract
A novel ultrasound-assisted liquid phase microextraction (UALPME) based on environmental friendly extractants, deep eutectic solvent (DES) was first time presented for speciation of selenium. In present study, five DES solvents of different composition was prepared and used as efficient extractive medium for hydrophobic chelate of Se(IV) with 3,3'-Diaminobenzidine (DAB). The total inorganic Se species were determined after pre-reduction of Se(VI) to Se(IV), prior to applying developed method. The concentration of Se(VI) was calculated by the difference of Se(IV) values and total selenium contents. The concentration of Se in DES rich phase was measured with electrothermal atomic absorption spectrometer (ETAAS). The effects of different parameters on extraction efficiency of study analyte, including pH, ligand concentration, type and volume of DES, sonication time, volumes tetrahydrofuran and aqueous samples were examined. At the optimum conditions, limit of detection and quantification, preconcentration factor, and relative standard deviation (RSD %) were determined as 4.61ngL-1, 15.4ngL-1, 50% and 4.1%, respectively. The accuracy of the presented method was confirmed by analysis of certified reference material and standard addition method for different water and ice tea samples. The developed method was effectively applied to real water and food samples.

Abstract
In the existing study, a new, simple and low cost process for separation/preconcentration of ultra-trace level of inorganic Sb and Se from natural waters, beverages and foods using ultrasonic-assisted cloud point extraction (UA-CPE) prior to their speciation and determination by hydride generation AAS, is proposed. The process is based on charge transfer sensitized complex formations of Sb(III) and Se(IV) with 3-amino-7-dimethylamino-2-methylphenazine hydrochloride (Neutral red, NRH(+)) in presence of pyrogallol and cetyltrimethylammonium bromide (CTAB) as both sensitivity enhancement and counter ion at pH 6.0. Under the optimized reagent conditions, the calibration curves were highly linear in the ranges of 8-300ngL(-1) and 12-250ngL(-1) (r(2)≥0.993) for Se(IV) and Sb(III), respectively. The limits of detection were 2.45 and 3.60ngL(-1) with sensitivity enhancement factors of 155 and 120, respectively. The recovery rate was higher than 96% with a relative standard deviation lower than 5.3% for five replicate measurements of 25, 75 and 150ngL(-1) Se(IV) and Sb(III), respectively. The method was validated by analysis of two certified reference materials (CRMs), and was successfully applied to the accurate and reliable speciation and determination of the contents of total Sb/Sb(III), and total Se/Se(IV) after UA-CPE of the pretreated sample matrices with and without pre-reduction with a mixture of l-cysteine and tartaric acid. Their Sb(V) and Se(VI) contents were calculated from the differences between total Sb and Sb(III) and/or total Se and Se(IV) levels.

Abstract
A preconcentration system has been developed to determine inorganic selenium species. Selenium was retained by a column filled with polyvinyl chloride (PVC) with lanthanum hydroxide co-precipitation. Speciation was achieved by selective photoreduction previous Se preconcentration. The retention pH was optimized at 10.0. Two multivariate calibrations and a central composite design were employed for optimization of the system. Sample, reagents and acid flow rates are significant variables affecting the system. Employing HG-ICP-OES as detection, the optimized system reached a detection limit of 0.03μg/L, and an enhancement factor of 14875 (25 for preconcentration system, 595 for hydride generation). To verify the method' accuracy, two certified reference materials, BCR® 414 Plankton & IRMM-804 Rice Flour, were analysed. The system was applied to inorganic selenium speciation in several Argentinean beverages to estimate their selenium contribution to diet.

Abstract
In this work, rapidly synergistic cloud point extraction (RS-CPE) and ultrasound-assisted cloud point extraction (UA-CPE) were firstly compared and coupled with spectrophotometer for selenium preconcentration and detection. The established RS-CPE pretreatment was simple, rapid and high effective. The extraction time was only 1min without heating process. Under the effect of ultrasound, UA-CPE accomplished extraction efficiently although the extraction procedure was relatively time-consuming. In this study, RS-CPE and UA-CPE were firstly applied for selenium preconcentration and coupled with conventional spectrophotometer. Their applications were expanded and the analytical performance of spectrophotometric determination for selenium was considerably improved. The influence factors relevant to RS-CPE and UA-CPE were studied in detail. Under the optimal conditions, the limits of detection (LODs) for selenium were respectively 0.2μgL(-1) of RS-CPE and 0.3μgL(-1) of UA-CPE with sensitivity enhancement factors (EFs) of 124 and 103. The developed methods were applied to the determination of trace selenium in real water samples with satisfactory analytical results.
