Abstract
A molecularly imprinted polymer (MIP) based microfiber differential demodulation sensing system for sodium benzoate (SB) concentration detection is proposed. The specific binding of MIP on the surface of microfibers with SB can lead to changes in local refractive index (RI). RI change induces a drift in the interference wavelength, which can be monitored by the power difference between two fiber Bragg gratings (FBGs). The sensing system can detect SB in the concentration range of 0.1-50 μg/ml, and interference wavelength and FBG power difference sensitivities are 0.55 nm/(μg/ml) and 2.64 dB/(μg/ml) in the low concentration range of 0.1-1 μg/ml, respectively, with a limit of detection (LOD) of 0.1 μg/ml. This microfiber differential demodulation sensing system is not only simple to fabricate, but also simplifies the demodulation equipment to reduce the cost, which providing a simple, reliable and low-cost technique for the quantitative detection of SB concentration in beverages and flavoured foods.

Abstract
High demands for food safety detection and analysis have been advocated with people's increasing living standards. Even though numerous analytical testing techniques have been proposed, their widespread adoption is still constrained by the high limit of detection, narrow detection ranges, and high implementation costs. Due to their advantages, such as reduced sample and reagent consumption, high sensitivity, automation, low cost, and portability, using microfluidic devices for food safety monitoring has generated significant interest. This review provides a comprehensive overview of the latest microfluidic detection platforms (published in recent 4 years) and their applications in food safety, aiming to provide references for developing efficient research strategies for food contaminant detection and facilitating the transition of these platforms from laboratory research to practical field use.

Abstract
Canned food market demand has arisen due to the higher need for instant and ready-to-eat food. Food preservatives are often added to canned and processed foods to prolong their shelf life and help to sustain the quality, taste, color, and food texture. However, excessive usage of such food preservatives can lead to various diseases and health issues including palpitations, allergies, and cancer. Therefore, food preservative detection in food samples is essential for safe consumption and health well-being. This paper proposed a fuzzy logic framework to determine the safety of food products based on the concentration of sulphur dioxide (SD), benzoic acid (BA), and sorbic acid (SA) in five different food categories as referred to the Food Acts 1983 and Food Regulations 1985 in Malaysia. The fuzzy logic framework comprises of Mamdani inference system design with 90 fuzzy rules, 15 and 5 membership functions for both the input and output parameters respectively. 50 random values and 10 lab analysis results based on the industrial samples were used to validate the developed algorithms in ensuring the safety of the food products. The membership functions generated for the three inputs (SD, BA, and SA) during the fuzzification steps are based on the maximum allowable limit from the food acts. The defuzzification of fuzzy logic gave an average output value of 0.1565, 0.1350, 0.1150, 0.1100, and 0.1550 for chicken curry with potatoes, satay sauce, sardine in tomato sauce, anchovies paste, and sardine spread accordingly. Results obtained from the fuzzy logic framework concluded that all the industrial samples are safe to be eaten and comply with the Sixth Schedule, Regulation 20 in both Acts.

Abstract
With the further improvement of food safety requirements, the development of fast, highly sensitive, and portable methods for the determination of foodborne hazardous substances has become a new trend in the food industry. In recent years, biosensors and platforms based on functional nucleic acids, along with a range of signal amplification devices and methods, have been established to enable rapid and sensitive determination of specific substances in samples, opening up a new avenue of analysis and detection. In this paper, functional nucleic acid types including aptamers, deoxyribozymes, and G-quadruplexes which are commonly used in the detection of food source pollutants are introduced. Signal amplification elements include quantum dots, noble metal nanoparticles, magnetic nanoparticles, DNA walkers, and DNA logic gates. Signal amplification technologies including nucleic acid isothermal amplification, hybridization chain reaction, catalytic hairpin assembly, biological barcodes, and microfluidic system are combined with functional nucleic acids sensors and applied to the detection of many foodborne hazardous substances, such as foodborne pathogens, mycotoxins, residual antibiotics, residual pesticides, industrial pollutants, heavy metals, and allergens. Finally, the potential opportunities and broad prospects of functional nucleic acids biosensors in the field of food analysis are discussed.

Abstract
Sodium benzoate (SB) is a common food preservative widely used in the food industry. However, the effects of SB intake on host health at different stages were still unclear. Hence, we investigated the impact of SB with three concentrations (150 mg/kg, 500 mg/kg and 1000 mg/kg) and at three stages (intake for 5-weeks, intake for 10-weeks and removal for 5 weeks) on host health in normal mice. The results showed that SB intake for 5 weeks slightly changed gut microbiota composition, but it significantly increased TG (only 150 mg/kg and 1000 mg/kg) and blood glucose levels (only 500 mg/kg) and promoted the secretion of interleukin (IL)-1β and IL-6 (p < 0.01). However, SB intake for 10 weeks mostly maintained normal glucolipid metabolism; although, IL-1β (p < 0.01) and IL-6 (p < 0.05) levels were also significantly increased and positively regulated the gut microbiota by significantly increasing the relative abundance of Lactobacillus and significantly decreasing the relative abundance of Ileibacterium. Meanwhile, the safety of SB for host metabolism and gut microbiota was also confirmed via a fecal microbiota transplantation experiment. In addition, we found that SB removal after 10 weeks of intake significantly increased the levels of blood glucose, insulin and HOMA-IR index, which might be attributed to gut microbiota dysbiosis. Mechanistically, these positive effects and negative effects had no close relationship with the concentration of short-chain fatty acids in the gut, which might be associated with metabolites of SB or special bacterial strains. In short, this work provided positive evidence for the safety of SB consumption within the recommended range.

Abstract
A microfluidic distillation system is proposed to facilitate the separation and subsequent determination of propionic acid (PA) in foods. The system comprises two main components: (1) a polymethyl methacrylate (PMMA) micro-distillation chip incorporating a micro-evaporator chamber, a sample reservoir, and a serpentine micro-condensation channel; and (2) and a DC-powered distillation module with built-in heating and cooling functions. In the distillation process, homogenized PA sample and de-ionized water are injected into the sample reservoir and micro-evaporator chamber, respectively, and the chip is then mounted on a side of the distillation module. The de-ionized water is heated by the distillation module, and the steam flows from the evaporation chamber to the sample reservoir, where it prompts the formation of PA vapor. The vapor flows through the serpentine microchannel and is condensed under the cooling effects of the distillation module to produce a PA extract solution. A small quantity of the extract is transferred to a macroscale HPLC and photodiode array (PDA) detector system, where the PA concentration is determined using a chromatographic method. The experimental results show that the microfluidic distillation system achieves a distillation (separation) efficiency of around 97% after 15 min. Moreover, in tests performed using 10 commercial baked food samples, the system achieves a limit of detection of 50 mg/L and a limit of quantitation of 96 mg/L, respectively. The practical feasibility of the proposed system is thus confirmed.

Abstract
A novel assay platform consisting of a finger pump microchip (FPM) and a WiFi-based analytical detection platform is presented for measuring the concentration of methylparaben (MP) in commercial foods. In the presented approach, a low quantity (5 μL) of distilled food sample is dripped onto the FPM and undergoes a modified Fenton reaction at a temperature of 40 °C to form a green-colored complex. The MP concentration is then determined by measuring the color intensity (RGB) of the reaction complex using APP software (self-written) installed on a smartphone. The color intensity Red(R) + Green(G) value of the reaction complex is found to be linearly related (R2 = 0.9944) to the MP concentration for standard samples with different MP concentrations ranging from 100 to 3000 ppm. The proposed method is used to detect the MP concentrations of 12 real-world commercial foods. The MP concentrations measurements are found to deviate by no more than 5.88% from the results obtained using a conventional benchtop method. The presented platform thus offers a feasible and low-cost alternative to existing macroscale techniques for measuring the MP concentration in commercial foods.

Abstract
Food safety is a major concern, with several new diseases arising from unhealthy foods and their composition. Our lifestyle leads us to use ready-to-eat and ready-to-cook foods. The use of preservatives is necessary to make these foods long-lasting. Sodium Benzoate (SB) is one of the most used preservatives in foodstuffs due to its antifungal and antibacterial properties and it also works as a microbial agent. SB keeps foodstuffs fresh and prevents mould and spoilage. The permissible limit of SB is 0-5 mg per kg of body weight per day, which is generally recognized to be safe, as a high intake of SB may increase your risk of inflammation, oxidative stress, obesity, allergies, and disrupting hormones. Therefore, one needs to design a rapid, sensitive, and selective sensor for SB detection. Thus, in this work, we report a Kretschmann-based surface plasmon resonance (SPR) sensor for the detection of SB using the molecularly imprinted polymer (MIP) method over silver-coated SF-11 glass. The wavelength interrogation method was used for the characterization of the Ag/MIP probe. The SPR spectra were blue-shifted with increasing concentrations of SB. The detection range of the sensor is found to be from 0-40 μg ml-1 and the sensor gets saturated beyond these concentrations. The proposed sensor has high sensitivity and a high figure of merit (FOM) at low concentrations, with these parameters decreasing with increasing SB concentration. The sensor is highly selective for SB as it does not respond to the other chemical compounds we tested, - atrazine, melamine and chitosan. The limit of detection of the sensor is found to be 0.083 μg ml-1, which is very low compared to other reported methods for SB sensing. The FOM is recorded as 0.026 (μg ml-1)-1 for 4 μg ml-1 concentration. This sensor works within the permissible limit and beyond for SB. This sensor can be utilized for the detection of traces of SB in packed food/juice, pickles, drinks, wines, sauces, and ready-to-cook foodstuffs, and also in personal care products: serums, toothpaste etc. This sensor is cost-effective, highly selective, reliable, easy to handle and has the advantage of online monitoring.

Abstract
Nucleic acid amplification is a sensitive and powerful tool for allergen detection. However, it is limited due to the relatively cumbersome methods required to extract nucleic acids from single plant seed allergen (e.g. peanut and soybean). In view of this, an approach of extracting nucleic acid with untreated glass-fiber paper (paper-based microfluidics) was applied for nucleic acid capture and purification from plant seed allergen and commercial products. After cut by hollow cylindrical cutter, a certain size the paper chip it used to absorb DNA. And this paper-based microfluidics with DNA was directly applied for amplification by loop-mediated isothermal amplification (LAMP). To evaluate the adsorption performance of paper chip to DNA, CTAB and SDS method were used as comparisons. From amplification results, the established technique has good specificity, high repeatability (C.V. values are 4.41% and 6.17% for peanut and soybean) and favorable sensitivity (7.39 ng/μL or peanut and 6.6 ng/μL for soybean), and successfully used for commercial products (2 kinds of candy and 2 kinds of cakes containing peanut, and 2 kinds of drinks, candy and 2 kinds of biscuits containing soybean). This speed and flexible detection method makes it suit for applications in point-of-care (POC) detection at different scenario, such as custom house and import port.

Abstract
In this study, the personal glucose meter (PGM) was first used as a fast and user-friendly meter for analyzing catechol (CA) based on the reduction of the mediator K3[Fe(CN)6] to K4[Fe(CN)6] in the glucose test strip. Then, an easy, low-cost, and convenient PGM-based method for detecting tyrosinase (TYR) activity and sodium benzoate (SBA) was developed on the basis of the TYR-catalyzed reaction. In this method, CA is oxidized to form o-benzoquinone by TYR, thereby reducing the residual amount of CA and the PGM readout. On the other hand, SBA can inhibit the oxidation of CA catalyzed by TYR and increase the residual amount of CA after the enzymatic reaction. Therefore, the activity of TYR is proportional to the difference in the PGM readout of CA, and the concentration of SBA is positively correlated with the residual amount of CA. After the relevant experimental conditions were systematically optimized, the proposed PGM-based method for the detection of TYR and SBA was successfully validated. The liner ranges are 1.0-103.3 U/mL and 6.25-1000 ppm, and the quantification limits are 1.0 U/mL and 6.25 ppm for TYR and SBA, respectively. Moreover, the spiked recovery tests in normal human serum and carbonate beverages (i.e., Cola, Sprite, and Fanta) were performed, and the recoveries (91.6-106.8%) further confirm the applicability of the PGM-based method in real sample analysis.

Abstract
Rapid, reliable, and sensitive colorimetric detection has been regarded as a highly potential technique for visually monitoring the cation ions. Yet, insight into detection kinetics and quantitative analysis for colorimetric sensing of sodium ions has rarely been revealed. Herein, in-depth kinetic investigations of colorimetric detection using surface-modified Au-nanoparticle (AuNP) probes were performed for interpreting the correlation of salt concentration, reaction duration, and light absorbance. To envision these undisclosed issues, modification of AuNP surfaces with ascorbic acid was found to be highly essential for boosting the detection sensitivity due to adjusting the zeta potential of AuNP colloids towards a slightly positive value. Next, modeling the light absorbance of AuNPs under various aggregation circumstances was employed, which visually elucidated the color change so that it was visible to the naked eye, due to the intense field localization on the edges of aggregated AuNPs. In addition, the involved activation energy of AuNP aggregation was found to follow the first-order Arrhenius formula, with the extracted value of 22.5 kJ mol-1. Finally, quantitative visualization of colorimetric Na+ ion sensing was realized, and the experimental relation was obtained for explicitly determining the unknown concentration of Na+ ions in a visual manner.

Abstract
Food safety is an issue that cannot be ignored at any time because of the great impact of food contaminants on people's daily life, social production, and the economy. Because of the extensive demand for high-quality food, it is necessary to develop rapid, reliable, and efficient devices for food contaminant detection. Microfluidic paper-based analytical devices (μPADs) have been applied in a variety of detection fields owing to the advantages of low-cost, ease of handling, and portability. This review systematically discusses the latest progress of μPADs, including the fundamentals of fabrication as well as applications in the detection of chemical and biological hazards in foods, hoping to provide suitable screening strategies for contaminants in foods and accelerating the technology transformation of μPADs from the lab into the field.

Abstract
A novel assay platform consisting of a microfluidic sliding double-track paper-based chip and a hand-held Raspberry Pi detection system is proposed for determining the albumin-to-creatine ratio (ACR) in human urine. It is a clinically important parameter and can be used for the early detection of related diseases, such as renal insufficiency. In the proposed method, the sliding layer of the microchip is applied and the sample diffuses through two parallel filtration channels to the reaction/detection areas of the microchip to complete the detection reaction, which is a simple method well suited for self-diagnosis of ACR index in human urine. The RGB (red, green, and blue) value intensity signals of the reaction complexes in these two reaction zones are analyzed by a Raspberry Pi computer to derive the ACR value (ALB and CRE concentrations). It is shown that the G + B value intensity signal is linearly related to the ALB and CRE concentrations with the correlation coefficients of R2 = 0.9919 and R2 = 0.9923, respectively. It is additionally shown that the ALB and CRE concentration results determined using the proposed method for 23 urine samples were collected from real suffering chronic kidney disease (CKD) patients are in fine agreement with those acquired operating a traditional high-reliability macroscale method. Overall, for point-of-care (POC) CKD diagnosis and monitoring in clinical applications, the results prove that the proposed method offers a convenient, real time, reliable, and low-spending solution for POC CKD diagnosis.

Abstract
A rapid colorimetric method for detecting sodium benzoate in food products was established based on the d-amino acid oxidase (DAAO) and 2D metal organic framework (2D MOF) nanosheets mediated cascade enzyme reactions. Firstly, the synthesized 2D MOF nanosheets served as high efficient nanozyme with outstanding peroxidase-like catalytic activity and catalyzed the color reaction between H2O2 and 3, 3', 5, 5'- tetramethylbenzidine. Secondly, sodium benzoate as a competitive inhibitor of DAAO, could influence the production of H2O2 in DAAO mediated oxidation reaction. After a combination of those two reactions, this colorimetric quantitative method was constructed and validated for sodium benzoate determination with wide linear range (2.0-200.0 μM), low limit of detection (2.0 μM), high accuracy (recovery rate in 95.80-108.00%) and satisfied selectivity. Lastly, this method was utilized to analyze sodium benzoate concentration in juice, wine and vinegar by naked eyes.

Abstract
In the present study, iodide-mediated 3,3',5,5'-tetramethylbenzidine (TMB)-H2O2 reaction system was applied to a microfluidic paper-based analytical device (μPAD) for non-enzymatic colorimetric determination of H2O2. The proposed system is portable and incorporates a μPAD with a machine learning-based smartphone app. A smartphone app called "Hi-perox Sens" capable of image capture, cropping and processing was developed to make the system simple and user-friendly. Briefly, circular μPADs were designed and tested with varying concentrations of H2O2. Following the color change, the images of the μPADs were taken with four different smartphones under seven different illumination conditions. In order to make the system more robust and adaptive against illumination variation and camera optics, the images were first processed for feature extraction and then used to train machine learning classifiers. According to the results, TMB + KI showed the highest classification accuracy (97.8%) with inter-phone repeatability at t = 30 s under versatile illumination and maintained its accuracy for 10 minutes. In addition, the performance of the system was also comparable to two different commercially available H2O2 kits in real samples.

Abstract
Milk is a necessity for human life. However, it is susceptible to contamination and adulteration. Microfluidic analysis devices have attracted significant attention for the high-throughput quality inspection and contaminant analysis of milk samples in recent years. This review describes the major proposals presented in the literature for the pretreatment, contaminant detection, and quality inspection of milk samples using microfluidic lab-on-a-chip and lab-on-paper platforms in the past five years. The review focuses on the sample separation, sample extraction, and sample preconcentration/amplification steps of the pretreatment process and the determination of aflatoxins, antibiotics, drugs, melamine, and foodborne pathogens in the detection process. Recent proposals for the general quality inspection of milk samples, including the viscosity and presence of adulteration, are also discussed. The review concludes with a brief perspective on the challenges facing the future development of microfluidic devices for the analysis of milk samples in the coming years.

Abstract
Lab-on-paper, or microfluidic paper-based analytical devices (μPADs), use paper as a substrate material, and are patterned with a system of microchannels, reaction zones and sensing elements to perform analysis and detection. The sample transfer in such devices is performed by capillary action. As a result, external driving forces are not required, and hence the size and cost of the device are significantly reduced. Lab-on-paper devices have thus attracted significant attention for point-of-care medical diagnostic purposes in recent years, particularly in less-developed regions of the world lacking medical resources and infrastructures. This review discusses the major advances in lab-on-paper technology for blood analysis and diagnosis in the past five years. The review focuses particularly on the many clinical applications of lab-on-paper devices, including diabetes diagnosis, acute myocardial infarction (AMI) detection, kidney function diagnosis, liver function diagnosis, cholesterol and triglyceride (TG) analysis, sickle-cell disease (SCD) and phenylketonuria (PKU) analysis, virus analysis, C-reactive protein (CRP) analysis, blood ion analysis, cancer factor analysis, and drug analysis. The review commences by introducing the basic transmission principles, fabrication methods, structural characteristics, detection techniques, and sample pretreatment process of modern lab-on-paper devices. A comprehensive review of the most recent applications of lab-on-paper devices to the diagnosis of common human diseases using blood samples is then presented. The review concludes with a brief summary of the main challenges and opportunities facing the lab-on-paper technology field in the coming years.
