Physicochemical and gel properties of agar extracted by enzyme and enzyme-assisted methods

Reduction of oxidative rancidification of fungal melanin-coated films in pork lard preservation in trading

Storage of meat has always been challenging due to its deterioration caused by oxidative rancidity and microbial activity, especially in trading. The melanin-coated film acts as a potent antioxidant, prevents the oxidation of fatty acids, and neutralizes the reactive oxygen species (ROS) helping to withstand or perpetuate the oxidative stress of meat. This study emphasizes the production of fungal melanin extracted from Curvularia lunata and the preparation of two different melanin film combinations of gelatin/melanin and agar/melanin at 0.1% and 0.5% formulation for rancidity stability of coated pork lard. Interpretations revealed the delayed rancidity in both peroxide and acid values with 5.76% in 0.5% agar-coated melanin up to the 11th day which was supported by arithmetical analysis showing p < 0.05 are statistically significant. Further, upon testing the brine shrimp assay for melanin toxicity, 7% were in a mortal state at 1000 µg/mL concentration, considered zero lethality. This result implies that modified coatings, particularly when trading meats, that include fungal melanin can effectively prevent the oxidation of pork lard.

A green extraction method for agar with improved thermal stability and water holding capacity

The conventional agar extraction method has drawbacks such as high energy consumption, low yield, poor quality, and possible residual harmful factors, which greatly limit its application in high-end fields such as biomedicine and high-end materials. This work explored a new freezing-thawing-high-temperature coupling technique for agar extraction. It increased the yield and the strength of agar by 10.6 % and 13.7 %, respectively, as compared to direct high-temperature extraction of agar (HA). The greater molecular weight and lower sulfate content of agar obtained from freeze-thaw cycles combined with high temperature extraction (FA) may be attributed to the desulfurization effect caused by freeze-thaw cycles and the preservation of the molecular chain structure. The reduction in sulfate content decreases the steric hindrance resistance of the polysaccharide chains, enhances their interactions, and promotes the regularity and density of the agar structure, while also improving its water retention and thermal stability. In conclusion, this research can offer a theoretical basis and guidance for the eco-friendly extraction of agar with improved agar characteristics and expended its applications.

Effect of the pre-crosslinking of Ba2+ ions on wet spinning of agar fibers

Decreased coagulation bath concentration and difficult recovery are classical issues observed during the wet spinning of fibers. In this paper, a novel method was presented for preparing environment-friendly agar fibers using deionized water as the coagulation and stretch baths. The addition of Ba2+ into the spinning solution increased the crosslinking time and improved the performance of spinning solution. The results showed that the introduction of Ba2+ in the spinning solution increased the viscosity of the spinning solution. Particularly, when the concentration of BaCl2 in the spinning solution was 7 wt%, the viscosity increased to 39.29 Pa·s, which made the molecular chain arrangement of agar more compact and ordered and promoted the gelation transformation of the spinning solution, resulting in an increase in the gel temperature from 0.2 °C (Ba-0/agar) to 5.4 °C (Ba-7/agar). The spinning solution was more conducive to the formation of fibers in deionized water. In addition, the physical and chemical properties of agar fibers were characterized by X-ray diffraction, Fourier transform infrared spectroscopy, tensile testing, and scanning electron microscopy. The results showed that the use of deionized water as the coagulation bath can improve the color of fiber and solve the problem of fiber adhesion, whereas the mechanical strength of agar fibers with pre-cross-linking metal ions was also improved. For example, the breaking strength of Ba-7/agar/DIW was 0.73 cN/dtex while the breaking strength of Ba-0/agar/DIW was only 0.62 cN/dtex.

Media-milled agar particles as a novel emulsifier for food Pickering emulsion

Pickering emulsions was successfully fabricated using ball-milled agar particles with sizes and sulfate content around 7 μm and 0.62 %, respectively. These particles were obtained through a simple media-milling process using agar powders initially sized at 120 μm. The lamellated agar is aggregated into a mass after the milling process. The surface charge and hydrophobicity of the ball-milled agar particles were characterized through zeta potential and contact angle measurements, respectively. The droplet size of Pickering emulsions was related to oil fraction and particle concentration, ranging from approximately 45 μm to 80 μm. Ball-milled agar stabilized emulsions were sensitive to pH and salt conditions. The results of confocal laser scanning microscopy and cryo-SEM showed that at low particle concentrations and oil fractions, ball-milled agar stabilized the emulsions by dispersing particles on the surface of the oil droplets through electrostatic repulsion. Conversely, ball-milled agar stabilized the emulsions under high particle concentrations and oil fractions by forming a gel network structure to bind the oil droplets. In this research, this developed method provides the basis for the high-value application of agar and a new idea for preparing stable food-grade Pickering emulsion-based functional foods using raw-food material without surface wettability.

Sulfated Galactans from Agarophytes: Review of Extraction Methods, Structural Features, and Biological Activities

Agarophytes are important seaweeds of the Rhodophyta type, which have been highly exploited for industrial use as sources of a widely consumed polysaccharide of agar. In addition to that, sulfated galactans (SGs) from agarophytes, which consist of various functional sulfate groups, have attracted the attention of scientists in current studies. SGs possess various biological activities, such as anti-tumor, anticoagulant, anti-inflammatory, antioxidant, anti-obesity, anti-diabetic, anti-microbial, anti-diarrhea, and gut microbiota regulation properties. Meanwhile, the taxonomy, ecological factors, i.e., environmental factors, and harvest period, as well as preparation methods, i.e., the pretreatment, extraction, and purification conditions, have been found to influence the chemical compositions and fine structures of SGs, which have, further, been shown to have an impact on their biological activities. However, the gaps in the knowledge of the properties of SGs due to the above complex factors have hindered their industrial application. The aim of this paper is to collect and systematically review the scientific evidence about SGs and, thus, to pave the way for broader and otherwise valuable industrial applications of agarophytes for human enterprise. In the future, this harvested biomass could be sustainably used not only as a source of agar production but also as natural materials in functional food and pharmaceutical industries.

Detection, production, modification, and application of arylsulfatases

Arylsulfatase is a subset of sulfatase which catalyzes the hydrolysis of aryl sulfate ester. Arylsulfatase is widely distributed among microorganisms, mammals and green algae, but the arylsulfatase-encoding gene has not yet been found in the genomes of higher plants so far. Arylsulfatase plays an important role in the sulfur flows between nature and organisms. In this review, we present the maturation and catalytic mechanism of arylsulfatase, and the recent literature on the expression and production of arylsulfatase in wild-type and engineered microorganisms, as well as the modification of arylsulfatase by genetic engineering are summarized. We focus on arylsulfatases from microbial origin and give an overview of different assays and substrates used to determine the arylsulfatase activity. Furthermore, the researches about arylsulfatase application on the field of agar desulfation, soil sulfur cycle and soil evaluation are also discussed. Finally, the perspectives concerning the future research on arylsulfatase are prospected.

Unveiling the Potential of Marine Biopolymers: Sources, Classification, and Diverse Food Applications

Environmental concerns regarding the usage of nonrenewable materials are driving up the demand for biodegradable marine biopolymers. Marine biopolymers are gaining increasing attention as sustainable alternatives in various industries, including the food sector. This review article aims to provide a comprehensive overview of marine biopolymers and their applications in the food industry. Marine sources are given attention as innovative resources for the production of sea-originated biopolymers, such as agar, alginate, chitin/chitosan, and carrageenan, which are safe, biodegradable, and are widely employed in a broad spectrum of industrial uses. This article begins by discussing the diverse source materials of marine biopolymers, which encompass biopolymers derived from seaweed and marine animals. It explores the unique characteristics and properties of these biopolymers, highlighting their potential for food applications. Furthermore, this review presents a classification of marine biopolymers, categorizing them based on their chemical composition and structural properties. This classification provides a framework for understanding the versatility and functionality of different marine biopolymers in food systems. This article also delves into the various food applications of marine biopolymers across different sectors, including meat, milk products, fruits, and vegetables. Thus, the motive of this review article is to offer a brief outline of (a) the source materials of marine biopolymers, which incorporates marine biopolymers derived from seaweed and marine animals, (b) a marine biopolymer classification, and (c) the various food applications in different food systems such as meat, milk products, fruits, and vegetables.

Synthesis, characterization, antibacterial and emulsifying properties of agar benzoate

Agar benzoate (AB) with different degrees of substitution (DS) was synthesized by the esterification of agar and benzoic anhydride in aqueous solution. The DS could be regulated by adjusting composition ratio, pH, and temperature. Its chemical structure was determined by Fourier transform infrared spectroscopy (FTIR) and nuclear magnetic resonance spectroscopy (NMR). ¹³C NMR spectrum of the AB suggested the main substitution occurred at the C-6 in the d-galactopyranose. Cryo-scanning electron microscopy (Cryo-SEM) showed that the aperture of AB was larger than that of agar. The thermal performance of AB decreased slightly, but this did not affect its performance. AB showed the highest relative antibacterial activity against Escherichia coli, S. aureus and Alternaria alternata, reaching 100 % (AB 20 g/L), 100 % (AB 40 g/L) and 19.35 % (7 d incubation), respectively. Moreover, the obtained AB possessed good emulsion stability. These antibacterial AB have broad application prospects in the field of fruit and vegetable preservation.

Impacts of agar gum and fucoidan on gel properties of surimi products without phosphate

Phosphate is widely used in surimi products to improve the gel properties. However, excess addition of phosphate occurs, which can harm the consumer's health. This study aimed to evaluate the effects of agar gum and fucoidan on maintaining the gel properties of surimi products instead of phosphate. Interestingly, our results showed that 0.125% of agar gum and fucoidan to replace phosphate could enhance water‐holding capacity and maintain gel strength and textual properties of surimi products well. Especially at frozen storage for 1 year, 0.125% of agar gum reduced the expressible moisture content of surimi products by around 10% (p < .05). Sensory evaluation showed that 0.125% of agar gum and fucoidan instead of phosphate can improve tissue and fondness of surimi products in refrigerated storage for 24 h but not in frozen storage for 1 year. The addition of agar gum and fucoidan at a high concentration >0.50% increased the WHC, but significantly decreased gel strength and springiness of surimi products (p < .05). Particularly, 1.00% of agar gum and fucoidan reduced gel strength by around 20% (p < .05). It might be due to the destruction of the gel network structure of surimi protein following the excess addition of these polysaccharides. It can be concluded that 0.125% of agar gum and fucoidan can replace phosphate to develop high‐quality surimi products, and excessive addition of them have negative effects.

Influence of modification methods on physicochemical and structural properties of soluble dietary fiber from corn bran

Soluble dietary fiber (SDF), which is a component of dietary fibers exhibit many physiological functions, biological activity, and good gel forming ability. In this study, extraction of SDF from corn bran was evaluated using twin-screw extrusion and ultrasonic treatment and the combinations of the respective methods with dual enzyme hydrolysis. The monosaccharide compositions, molecular weight, physicochemical properties, and structural and functional characteristics were determined. The results showed that ultrasonic and twin-extrusion treatments significantly increased the SDF content from 2.42 to 4.58 and 6.54%, respectively. Dual enzyme hydrolysis further increased the SDF content. Modification treatment changed the monosaccharide composition, improved physicochemical and functional properties, such as water and oil holding capacity, nitrite adsorption, and antioxidative ability. In conclusion, physical modification combined with enzyme treatment distinctly improved the extraction yield, physicochemical and functional properties of SDF. Therefore, the modified SDF is suitable as a functional food additive.

Advancement of biorefinery-derived platform chemicals from macroalgae: a perspective for bioethanol and lactic acid

The extensive growth of energy and plastic demand has raised concerns over the depletion of fossil fuels. Moreover, the environmental conundrums worldwide integrated with global warming and improper plastic waste management have led to the development of sustainable and environmentally friendly biofuel (bioethanol) and biopolymer (lactic acid, LA) derived from biomass for fossil fuels replacement and biodegradable plastic production, respectively. However, the high production cost of bioethanol and LA had limited its industrial-scale production. This paper has comprehensively reviewed the potential and development of third-generation feedstock for bioethanol and LA production, including significant technological barriers to be overcome for potential commercialization purposes. Then, an insight into the state-of-the-art hydrolysis and fermentation technologies using macroalgae as feedstock is also deliberated in detail. Lastly, the sustainability aspect and perspective of macroalgae biomass are evaluated economically and environmentally using a developed cascading system associated with techno-economic analysis and life cycle assessment, which represent the highlights of this review paper. Furthermore, this review provides a conceivable picture of macroalgae-based bioethanol and lactic acid biorefinery and future research directions that can be served as an important guideline for scientists, policymakers, and industrial players.

Comparison of the Physicochemical Properties of Carboxymethyl Agar Synthesized by Microwave-Assisted and Conventional Methods

The microwave-assisted carboxymethylation of agar to improve its physicochemical properties was investigated. Microwave power, reaction time, and temperature, ethanol concentration, and amounts of chloroacetic acid and sodium hydroxide were assessed for their effects on synthetic yield and degree of substitution (DS). All factors were positively correlated with DS within a certain range. Using optimized conditions, samples with different DS were prepared, and the physicochemical properties of unmodified and carboxymethyl agars prepared by microwave and conventional methods were compared. Carboxymethylation significantly changed the physicochemical properties of the agar, improving gel transparency and reducing dissolution temperature, gel strength, gel hardness, molecular weight, and molecular size; DS was the key factor. Specifically, higher DS values resulted in greater changes. The microwave-assisted method significantly shortened the reaction time and preserved molecular weight, gel strength, and texture hardness of the agar. Therefore, as an environmentally friendly method, microwave-assisted synthesis shows great promise for producing carboxymethyl agar.

Marine Biopolymers: Applications in Food Packaging

Marine sources are gaining popularity and attention as novel materials for manufacturing biopolymers such as proteins and polysaccharides. Due to their biocompatibility, biodegradability, and non-toxicity features, these biopolymers have been claimed to be beneficial in the development of food packaging materials. Several studies have thoroughly researched the extraction, isolation, and latent use of marine biopolymers in the fabrication of environmentally acceptable packaging. Thus, a review was designed to provide an overview of (a) the chemical composition, unique properties, and extraction methods of marine biopolymers; (b) the application of marine biopolymers in film and coating development for improved shelf-life of packaged foods; (c) production flaws and proposed solutions for better isolation of marine biopolymers; (d) methods of preparation of edible films and coatings from marine biopolymers; and (e) safety aspects. According to our review, these biopolymers would make a significant component of a biodegradable food packaging system, reducing the amount of plastic packaging used and resulting in considerable environmental and economic benefits.

Cationic, anionic and neutral polysaccharides for skin tissue engineering and wound healing applications

Today, chronic wound care and management can be regarded as a clinically critical issue. However, the limitations of current approaches for wound healing have encouraged researchers and physicians to develop more efficient alternative approaches. Advances in tissue engineering and regenerative medicine have resulted in the development of promising approaches that can accelerate wound healing and improve the skin regeneration rate and quality. The design and fabrication of scaffolds that can address the multifactorial nature of chronic wound occurrence and provide support for the healing process can be considered an important area requiring improvement. In this regard, polysaccharide-based scaffolds have distinctive properties such as biocompatibility, biodegradability, high water retention capacity and nontoxicity, making them ideal for wound healing applications. Their tunable structure and networked morphology could facilitate a number of functions, such as controlling their diffusion, maintaining wound moisture, absorbing a large amount of exudates and facilitating gas exchange. In this review, the wound healing process and the influential factors, structure and properties of carbohydrate polymers, physical and chemical crosslinking of polysaccharides, scaffold fabrication techniques, and the use of polysaccharide-based scaffolds in skin tissue engineering and wound healing applications are discussed.

Gracilaria gracilis (Gracilariales, Rhodophyta) from Dakhla (Southern Moroccan Atlantic Coast) as Source of Agar: Content, Chemical Characteristics, and Gelling Properties

Agar is a sulfated polysaccharide extracted from certain marine red algae, and its gel properties depend on the seaweed source and extraction conditions. In the present study, the seaweed Gracilaria gracilis (Gracilariales, Rhodophyta) from Dakhla (Moroccan Atlantic Coast) was investigated for its agar content, structure, and gel properties. The agar yields of G. gracilis were 20.5% and 15.6% from alkaline pretreatment and native extraction, respectively. Agar with alkaline pretreatment showed a better gelling property supported by higher gel strength (377 g·cm^-2), gelling (35.4 °C), and melting (82.1 °C) temperatures with a notable increase in 3,6-anhydro-galactose (11.85%) and decrease in sulphate (0.32%) contents. The sulfate falling subsequent to alkaline pretreatment was verified through FT-IR spectroscopy. The ¹³C NMR spectroscopy showed that alkaline-pretreated agar has a typical unsubstituted agar pattern. However, native agar had a partially methylated agarose structure. Overall, this study suggested the possibility of the exploitation of G. gracilis to produce a fine-quality agar. Yet, further investigation may need to determine the seasonal variability of this biopolymer according to the life cycle of G. gracilis.

Pretreatment Techniques and Green Extraction Technologies for Agar from Gracilaria lemaneiformis

Optimizing the alkali treatment process alone without tracking the changes of algae and agar quality with each pretreatment process will not achieve the optimal agar yield and final quality. In this study, we monitored the changes of the morphology and weight of algae with each treatment process, and comprehensively analyzed the effects of each pretreatment process on the quality of agar by combining the changes of the physicochemical properties of agar. In conventional alkali-extraction technology, alkali treatment (7%, w/v) alone significantly reduced the weight of algae (52%), but hindered the dissolution of algae, resulting in a lower yield (4%). Acidification could solve the problem of algal hardening after alkali treatment to improve the yield (12%). In enzymatic extraction technology, agar with high purity cannot be obtained by enzyme treatment alone, but low gel strength (405 g/cm²) and high sulfate content (3.4%) can be obtained by subsequent acidification and bleaching. In enzyme-assisted extraction technology, enzyme damage to the surface fiber of algae promoted the penetration of low-concentration alkali (3%, w/v), which ensured a high desulfurization efficiency and a low gel degradation rate, thus improving yield (24.7%) and gel strength (706 g/cm²), which has the potential to replace the traditional alkali-extraction technology.

Agarose oligosaccharide- silver nanoparticle- antimicrobial peptide- composite for wound dressing

Marine polysaccharides or oligosaccharides have potential to promote wound healing due to their biocompatibility and physicochemical properties. However, microbial infection delays wound healing process, and novel antimicrobial wound dressings are urgently needed. Here, agarose oligosaccharides (AGO) obtained from marine red algae were used as a reducing and stabilizer for green synthesis of silver nanoparticles (AgNPs), and further successfully connected with odorranain A (OA), one of antimicrobial peptides (AMPs), to obtain a novel composite nanomaterial (AGO-AgNPs-OA). Transmission electron microscopy (TEM) and Malvern particle size analyzer showed that AGO-AgNPs-OA was spherical or elliptic with average size of about 100 nm. Circular dichroism (CD) spectroscopy showed that AGO-AgNPs stabilized the α-helical structure of OA. AGO-AgNPs-OA showed stronger anti-bacterial activities than AGO-AgNPs, and had good biocompatibility and significant promoting effect on wound healing. Our data suggest that AMPs conjugated marine oligosaccharides and AgNPs may be effective and safe antibacterial materials for wound therapy.

Perspective on the Therapeutic Applications of Algal Polysaccharides

Abstract

Algae are an enormous source of polysaccharides and have gained much interest in human flourishing as organic drugs. Algal polysaccharides have aroused interest in the health sector owing to the various bioactivities namely anticancer, antiviral, immunoregulation, antidiabetic and antioxidant effects. The research community has comprehensively described the importance of algal polysaccharides regarding their extraction, purification, and potential use in various sectors. However, regardless of all the intriguing properties and potency in the health sector, these algal polysaccharides deserve detailed investigation. Hence, the present review emphasizes extensively on the previous and latest developments in the extraction, purification, structural properties and therapeutic bioactivities of algal polysaccharides to upgrade the knowledge for further advancement in this area of research. Moreover, the review also addresses the challenges, prospective research gaps and future perspective. We believe this review can provide a boost to upgrade the traditional methods of algal polysaccharide production for the development of efficacious drugs that will promote human welfare.

Advances in agaro-oligosaccharides preparation and bioactivities for revealing the structure-function relationship

Agaro-oligosaccharides originating from red algae have attracted increasing attention in both basic theoretical research and applied fields due to their excellent bioactivities, which indicates the wide prospects of agaro-oligosaccharides for application in the food, pharmaceutical and cosmetic industries. Thus, a considerable number of studies regarding functional agaro-oligosaccharides preparation as well as the bioactivities exploration have been carried out. Based on these studies, this review first introduced different methods that have been used in agar extraction from red algae, and further provided research progress on arylsulfatase. Then, different methods used for agaro-oligosaccharides production were summarized. Moreover, the abundant bioactivities of agaro-oligosaccharides were described in detail. Finally, this review has discussed current research problems and further provided critical aspects, which may be helpful for revealing the structure-function relationship of agaro-oligosaccharide.

Optimization of Enzyme-Assisted Extraction and Purification of Flavonoids from Pinus koraiensis Nut-Coated Film and Antioxidant Activity Evaluation

Pinus koraiensis nut-coated film is a kind of by-product of nut processing, which has been shown to contain flavonoids, polyphenols, and other substances that can be used to produce natural antioxidant extracts. In this study, response surface methodology (RSM) was used to optimize the extraction process of flavonoids of P. koraiensis nut-coated film (PNF), and macroporous resin HPD600 was used to purify PNF (P-PNF). Its antioxidant activity was examined by DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging capacity, oxygen free radical absorption capacity (ORAC), total oxygen radical capture (TRAP), and iron ion reduction capacity. Under the ideal extraction conditions comprising a cellulase dosage of 90 U/g, a material/liquid ratio of 1:20 (g/mL), and an extraction time of 2 h, the PNF yield was 3.37%. Purification conditions were sample concentration of 2.0 mg/mL, pH of 5, water washing volume of 3 bed volume (BV), eluent ethanol concentration of 50%, and volume of 2 BV. The P-PNF recovery was 84.32%, and purity increased from 33.80% to 61.70%. Additionally, P-PNF showed increased antioxidant activity compared to PNF. Cumulatively, this study obtained the optimal values for the process parameters in order to achieve the maximum rates of extraction of PNF for economically optimal production at an industrial scale.

Agar-based edible films for food packaging applications - A review

Agar is a biopolymer extracted from certain red algae. The continuous and transparent film made from agar gum is becoming a common and renewable alternative for plastic-based food packaging materials. However, plain agar film suffers from brittleness, high moisture permeability, and poor thermal stability. Considerable researches have been devoted to improving the properties of agar films to extend their applications. These include reinforcements by nanomaterials, blending with other biopolymers, and incorporating plasticizers, hydrophobic components, or antimicrobial agents into their structure. This article comprehensively reviews the functional properties and defects of edible films made from agar gum. Also, it describes various strategies and components used to make an agar film with desirable properties. Moreover, the applications of agar-based edible films with improved functionality for food packaging are discussed.

Review on marine carbohydrate-based gold nanoparticles represented by alginate and chitosan for biomedical application

Gold nanoparticles (AuNPs) have been attracted considerable attention in cancer therapy, drug delivery and other applications due to their unique physical, chemical, and optical properties. Marine carbohydrates are important biological macromolecules that widely exist in marine algae and animals, such as alginate, carrageenan, porphyran, fucoidan, ulvan, agarose, and chitosan. Their excellent properties, such as biocompatibility, biodegradability and no irritation, make them widely used in biomedicine and nanomaterials fields. More importantly, they can be easily modified by functional groups, such as sulfation, acetylation, and carboxylation, to further extend their applications. The marine carbohydrates functionalized AuNPs can increase their biocompatibility and targeting in a green preparation method. Here, we review recent advances on marine carbohydrate-based AuNPs for cancer therapy, imaging, drug delivery and other biomedical fields. The topics of selective surface modification in different carbohydrates and further biomedical applications of AuNPs are also discussed.

Extraction of sulfated agar from Gracilaria lemaneiformis using hydrogen peroxide-assisted enzymatic method

In this study, an eco-friendly extraction method was explored to obtain high sulfate content agar and repair the deficiency of enzymatic extraction by taking full advantage of H₂O₂. The sulfate content of EHA (H₂O₂-assisted enzymatic extracted agar) reached 3.56 %, which is significantly higher than that of traditional alkali-extracted agar (AA, 1.8 %). Moreover, EHA exhibited lower viscosity (9.4 cP), which improved 26.6 % and 14 % of filtration and gel dehydration rates than EA (enzymatic extracted agar), respectively. Additionally, the physicochemical properties of the agars were evaluated and compared. Among these agars, EHA showed some favorable properties, such as high yield (16.08 %) and low dissolution temperature (88.9 °C). The surface of algae became smoother after treatment with H₂O₂ due to effective degradation of cellulose. Besides, mass spectrometry analysis revealed that EHA preserved a great amount of sulfate, while thermogravimetric analysis suggested that the thermal stability of EA and EHA both decreased.

Agar quality promotion prepared by desulfation with hydrogen peroxide

The modified agars were prepared using H₂O₂ in ethanol solution at appropriate pH conditions. Some interesting physical and chemical properties of modified agar were determined and characterized compared with those of raw agar, and the underlying mechanisms were preliminarily studied. Results showed that the maximum gel strength of the modified agar was 1068 g/cm², which increased by 30.9% compared with that of raw agar (816 g/cm²), and the minimum sulfate content of the modified agar was 0.21%, which decreased by 73.4% compared with that of raw agar (0.79%). Moreover, the viscosity, molecular weight, gelling temperature and melting temperature all decreased, whereas the whiteness and transparency increased after modification. Fourier transform infrared spectroscopy, scanning electron microscopy and thermogravimetric analysis indicated that the spatial structure of agar have changed after treated with H₂O₂. Taken together, the results demonstrated that the desulfation of agar with H₂O₂ is a promising approach with practical significance.
