Abstract
Artificial packaging materials, such as plastic, can cause significant environmental problems. Thus, the use of polysaccharide-based biodegradable polymers (cellulose, starch, and alginate) has the potential in the field of environmental sustainability, reprocessing, or protection of the environment. Morphological and structural alterations caused by material degradation have a substantial impact on polymer material characteristics. To avoid degradation during storage, it is critical to evaluate and comprehend the structure, characteristics, and behavior of modern bio-based materials for potential food packaging applications. Hence, this review focused on the various types of polysaccharide-based biodegradable polymers (cellulose, starch, and alginate), their properties, and their commercial potential for food packaging applications. In addition, we overviewed the recent development of polysaccharide-based biodegradable polymer (cellulose, starch, and alginate) packaging for food products. The review concluded that the membrane and chromatographics are widely used in production of cellulose, starch, and alginate-based biodegradable polymers. Also, nanotechnology-based food packaging is widely used to improve the properties of cellulose, starch, and alginate biodegradable polymers and the incorporation of active agents to enhance the shelf life of food products. Overall, the review highlighted the potential of cellulose, starch, and alginate biodegradable polymers in the food packaging industry and the need for potential research and development to improve their properties and commercial viability.

Abstract
Bacterial nanocellulose (BNC) is a natural polysaccharide produced as extracellular material by bacterial strains and has favorable intrinsic properties for primary use in biomedical applications. In this review, an update on state-of-the art and challenges in BNC production, surface modification and biomedical application is given. Recent insights in biosynthesis allowed for better understanding of governing parameters improving production efficiency. In particular, introduction of different carbon/nitrogen sources from alternative feedstock and industrial upscaling of various production methods is challenging. It is important to have control on the morphology, porosity and forms of BNC depending on biosynthesis conditions, depending on selection of bacterial strains, reactor design, additives and culture conditions. The BNC is intrinsically characterized by high water absorption capacity, good thermal and mechanical stability, biocompatibility and biodegradability to certain extent. However, additional chemical and/or physical surface modifications are required to improve cell compatibility, protein interaction and antimicrobial properties. The novel trends in synthesis include the in-situ culturing of hybrid BNC nanocomposites in combination with organic material, inorganic material or extracellular components. In parallel with toxicity studies, the applications of BNC in wound care, tissue engineering, medical implants, drug delivery systems or carriers for bioactive compounds, and platforms for biosensors are highlighted.

Abstract
Bacterial cellulose (BC) is currently one of the most popular environmentally friendly materials with unique structural and physicochemical properties for obtaining various functional materials for a wide range of applications. In this regard, the literature reporting on bacterial nanocellulose has increased exponentially in the past decade. Currently, extensive investigations aim at promoting the manufacturing of BC-based nanocomposites with other components such as nanoparticles, polymers, and biomolecules, and that will enable to develop of a wide range of materials with advanced and novel functionalities. However, the commercial production of such materials is limited by the high cost and low yield of BC, and the lack of highly efficient industrial production technologies as well. Therefore, the present review aimed at studying the current literature data in the field of highly efficient BC production for the purpose of its further usage to obtain polymer nanocomposites. The review highlights the progress in synthesizing BC-based nanocomposites and their applications in biomedical fields, such as wound healing, drug delivery, tissue engineering. Bacterial nanocellulose-based biosensors and adsorbents were introduced herein.

Abstract
Based on the previous study, in which nisin and bacterial cellulose were utilized, this new experiment loads nisin into bacterial cellulose (N–BC) and evaluates the morphological characteristics, cytotoxicity, antimicrobial activity and stability of the developed system. The load efficiency of nisin in BC was evaluated by an agar diffusion assay, utilizing Lactobacillus sakei, and total proteins. After having found the ideal time and concentration for the loading process, the system stability was evaluated for 100 days at 4, 25 and 37 °C against Staphylococcus aureus and L. sakei. Thus, in this study, there is a system that proves to be efficient, once BC has enhanced the antimicrobial activity of nisin, acting as a selective barrier for other compounds present in the standard solution and protecting the peptide. After 4 h, with 45% of proteins, this activity was almost 2 log10 higher than that of the initial solution. Once the nisin solution was not pure, it is possible to suggest that the BC may have acted as a filter. This barrier enhanced the nisin activity and, as a consequence of the nisin loading, a stable N–BC system formed. The N–BC could create meaningful material for pharmaceutical and food applications.

Abstract
Latilactobacillus sakei is used extensively in industrial production and food fermentations. The species is primarily derived from fermented meat and vegetable products and is also found in human feces. Genomics and metabolomics have revealed unique metabolic pathways in L. sakei and molecular mechanisms underlying its competitive advantages in different habitats, which are mostly attributed to its flexible carbohydrate metabolism, cold tolerance, acid and salt tolerance, ability to cope with oxygen changes, and heme uptake. In recent years, probiotic effects of L. sakei and its metabolites have been identified, including the ability to effectively alleviate metabolic syndrome, inflammatory bowel disease, and atopic dermatitis. This review summarizes the genomic and metabolic characteristics of L. sakei and its metabolites and describes their applications, laying a foundation for their expanded use across the food and healthcare industries.

Abstract
Bacterial cellulose (BC) is a promising unique material for various biomedical and cosmetic applications due to its morphology, mechanical strength, high purity, high water uptake, non-toxicity, chemical controllability, and biocompatibility. Today, extensive investigation is into the manufacturing of BC-based composites with other components such as nanoparticles, synthetic polymers, natural polymers, carbon materials, and biomolecules, which will allow the development of a wide range of biomedical and cosmetic products. Moreover, the addition of different reinforcement substances into BC and the organized arrangement of BC nano-fibers have proven a promising improvement in their properties for biomedical applications. This review paper highlights the progress in synthesizing BC-based composites and their applications in biomedical fields, such as wound healing, drug delivery, tissue engineering, and cancer treatment. It emphasizes high-performance BC-based materials and cosmetic applications. Furthermore, it presents challenges yet to be defeated and future possibilities for BC-based composites for biomedical and cosmetic applications.

Abstract
BACKGROUND Carbon dots (C-dots) with antimicrobial activity were synthesized from the white mulberry extract with the aim of fabricating anti-listeria nanopaper using bacterial nanocellulose (BNC). Highly dispersed synthesized C-dots with a size smaller than 10 nm (approximately 4.9 nm) were impregnated into BNC by an ex situ coating method and then mechanical, morphological, UV-protectant and antibacterial activity were assessed. Randomized response surface methodology using a central composite design was applied to investigate the optimized concentration of C-dots in the BNC membrane. RESULTS An optimized nanopaper including C-dots at a concentration of 530 g L-1 and an impregnation time of 14 h at 30 °C with significant antimicrobial activity on Listeria monocytogenes was designed. The addition of C-dots into BNC significantly increased ultimate tensile strength and decreased strain with respect to breaking BNC. A BNC sheet with high-efficient UV-blocking property was prepared using C-dots. CONCLUSION Based on the results, the designed nanopaper shows a substantial capacity with respect to the fabrication of antimicrobial/UV-blocking sheets for food active packaging. © 2020 Society of Chemical Industry.

Abstract
The application of bacterial cellulose (BC) as a wrapping material for vacuum-packaged beef was studied and compared against unwrapped beef for up to 3 weeks. The impact of BC wrap on the weight loss, purge accumulation, and drip loss were assessed along with low-field nuclear magnetic resonance, physicochemical, microbiological, and sensorial evaluations. The BC wrap significantly (P < 0.05) reduced purge accumulation in vacuum packages which was confirmed by an increased swelling ratio and scanning electron microscopy images. Colorimetric measurements showed significantly (P < 0.05) increased redness and yellowness values in wrapped samples compared to unwrapped samples. BC wrap did not affect pH, tenderness, and odor of meat, but significantly (P < 0.05) increased lipid oxidation, and numbers of lactic acid bacteria and Brochothrix thermosphacta counts. This study shows that BC wrap has potential as a purge absorbent in vacuum packaged meat. PRACTICAL APPLICATION: Bacteria cellulose has good water holding capacity that can be utilized to absorb purge exudate from beef. It helps to improve the appearance and consequently consumer acceptance of vacuum packed beef.

Abstract
Progressive antibiotic resistance is a serious condition adding to the challenges associated with skin wound treatment, and antibacterial wound dressings with alternatives to antibiotics are urgently needed. Cellulose-based membranes are increasingly considered as wound dressings, necessitating further functionalization steps. A bifunctional peptide, combining an antimicrobial peptide (AMP) and a cellulose binding peptide (CBP), is designed. AMPs affect bacteria via multiple modes of action, thereby reducing the evolutionary pressure selecting for antibiotic resistance. The bifunctional peptide is successfully immobilized on cellulose membranes of bacterial origin or electrospun fibers of plant-derived cellulose, with tight control over peptide concentrations (0.2 ± 0.1 to 4.6 ± 1.6 µg mm-2 ). With this approach, new materials with antibacterial activity against Staphylococcus aureus (log4 reduction) and Pseudomonas aeruginosa (log1 reduction) are developed. Furthermore, membranes are cytocompatible in cultures of human fibroblasts. Additionally, a cell adhesive CBP-RGD peptide is designed and immobilized on membranes, inducing a 2.2-fold increased cell spreading compared to pristine cellulose. The versatile concept provides a toolbox for the functionalization of cellulose membranes of different origins and architectures with a broad choice in peptides. Functionalization in tris-buffered saline avoids further purification steps, allowing for translational research and multiple applications outside the field of wound dressings.

Abstract
This study aimed to obtain possible materials for future antimicrobial food packaging applications based on biodegradable bacterial cellulose (BC). BC is a fermentation product obtained by Gluconacetobacter xylinum using food or agricultural wastes as substrate. In this work we investigated the synergistic effect of zinc oxide nanoparticles (ZnO NPs) and propolis extracts deposited on BC. ZnO NPs were generated in the presence of ultrasounds directly on the surface of BC films. The BC-ZnO composites were further impregnated with ethanolic propolis extracts (EEP) with different concentrations.The composition of raw propolis and EEP were previously determined by gas-chromatography mass-spectrometry (GC-MS), while the antioxidant activity was evaluated by TEAC (Trolox equivalent antioxidant capacity). The analysis methods performed on BC-ZnO composites such as scanning electron microscopy (SEM), thermo-gravimetrically analysis (TGA), and energy-dispersive X-ray spectroscopy (EDX) proved that ZnO NPs were formed and embedded in the whole structure of BC films. The BC-ZnO-propolis films were characterized by SEM and X-ray photon spectroscopy (XPS) in order to investigate the surface modifications. The antimicrobial synergistic effect of the BC-ZnO-propolis films were evaluated against Escherichia coli, Bacillus subtilis, and Candida albicans. The experimental results revealed that BC-ZnO had no influence on Gram-negative and eukaryotic cells.
